Objectives: The study was performed to examine the dietary behaviors and life stress of middle school students in the Gyeonggi area. Methods: A total of 580 middle school students (295 males, 285 females) in the Gyeonggi area participated in the study between July and August in 2011. The study was a questionnaire-based survey that included dietary habits, dietary behaviors, and life stress. Results: For dietary habits, the score for drinking milk was higher in male students than in female students, whereas the score for eating fruits was higher in female students compared to male students. There were significant differences in foods eaten and preferred under stress between male and female students. Male students showed significantly less changes in the number of meals, amount of meal intake, number of snacks, snack intake, frequency of overeating, and appetite during stress than female students. Life stress score of students largely came from academic factors, and female students showed higher stress levels in personal and surrounding environment factors than male students. Life stress score was significantly lower in students with high and moderate levels of dietary habits than in students with a low level of dietary habits. Total score for dietary habits and scores for eating adequate amounts of foods for each meal, considering a combination of food groups at each meal and eating green and orange vegetables, were significantly negatively correlated with life stress score. Life stress score was significantly negatively correlated with meal regularity and positively with the level of overeating. Conclusions: This study may provide basic information on dietary habits and life stress according to gender and the relationship between dietary behaviors and life stress of middle school students, and it suggests gender-based nutrition education programs to solve undesirable dietary habits and dietary behaviors in students with higher stress.
The purpose of this study was to investigate dietary habits, dietary attitudes, perceptions for nutritional importance, nutritional knowledge and frequency of food intake to get the basic data of effective nutritional knowledge to form desirable dietary habits of students. This study was carried out through a questionnaire. The subjects were 362 teenagers (boys 161, girls 201) in some farming and fishing regions of Jeonnam. The most desirable dietary habit was that both boys and girls never skipped their lunch, the undesirable dietary habit was that boys ate too fast and girls had too many snacks. While boys ate faster than girls (p < 0.01), girls skipped dinner more frequently than boys (p < 0.01). In terms of dietary attitudes, boys had more desirable attitudes than girls in that they "choose nutritious food" (p < 0.01), "enjoyed healthy food more than favorite food" (p < 0.01), "think about basic food groups when having something" (p < 0.01) while girls had more desirable attitudes than boys in that they "only have favorite food" (p < 0.01). In nutritional knowledge, girls showed a percentage of more correct answers than boys in "is likely to suffer anemia without enough iron" (p < 0.05), and "it doesn't need to eat fat, which causes obesity" (p < 0.05). In general, girls had higher nutritional knowledge than boys. For frequency of food intake, boys ate more fried and broiled food than girls (p < 0.05). In general, boys had nutritional unbalanced diets more than girls. As a result, girls had higher levels of nutritional knowledge and boys had more desirable dietary habits and attitudes. We should have systematic and repetitive education about nutrition so that teenagers could practice their nutritional knowledge in diets. Moreover, it is necessary to develop proper education for their genders.
The purpose of this study was to develop a basic life habit scale for infant early childhood. The participants of this study were composed of 1,000 parents of children aged from two to five years old in the Seoul, Gyeong-gi, and In-cheon areas. For the purposes of data analysis, the study made use of the following methods : descriptive statistics for SES variables, item-analysis, factor analysis for validity, and Cronbach's a for reliability. Most items were acceptable in terms of item response rates, and item discrimination. The results of factor analysis uncovered six factors, and 46 items were selected from a total of 69 items in the original scale. The six factors were (1) safety and rules (2) neatness (3) manners (4) self-help (5) eating habits (6) cleanliness. A nutrition education program has been designed for the children of obese or unbalanced dietary habits. A total of 120 children(60-obese and 60-unbalanced dietary habits) who were in 5th-6th grade was chosen for the program and the effectiveness of the nutrition education was evaluated. The nutrition education program was organized into daily lessons(3 wks). A booklet was made for the education and used during the education period, dealing with 5-Basic Food Groups and their functions, excess or deficiency in a human body, food exchange list, importance of health, obesity, unbalance dietary habits and of school lunch program were emphasized in every day session. dietary recall records were collected to assess their daily food intake and the amounts of meals were discussed. During the education period, booklets, wall charts, photographs, food models, VTR films and slide films were utilized. Assessment of effects of the nutrition education program was carried out by a nutrition knowledge test, food habit records, anthropometric measurements and food preference test. The nutrition knowledge scores were significantly improved after the education and the scores were higher on the children in the school with school lunch program. The anthropometric measurements and food preference test revealed no significant influences of the education on the children, showing that the education period was too short to change their eating behavior any may need a long-term education program. Food habit scores were improved after the education in both experimental and control groups. The experimental groups showed higher scores than the control group.
This study was conducted to provide basic information on toothbrushing habits, snack intake frequency, and current dental caries in elementary school students. A total of 188 students (105 boys and 83 girls) in Changwon city participated in this study. Dental examination was conducted by two dental hygienists in July, 2010. The results were as follows. Exactly 86.2% of students were shown to have dental caries, which includes a sealant and removed teeth due to decay. The average number of teeth with dental caries per student was 3.8. Exactly 60.6% of students were shown to maintain correct toothbrushing habits to prevent dental caries, but only 12.8% brushed their teeth immediately after a meal or snack. Exactly 82.4% percent of participants received toothbrushing education, 47.1% of them received it from an expert, 43.9% received from their parents, and 28.2% used tooth paste with fluorine. Regarding snack intake frequency, ice cream was the most consumed cariogenic food and white milk was the most consumed protective food. The >=7 teeth with dental caries group consumed higher frequency of carbonated beverages intake than the 'no dental caries' group (P<0.05), and the '5~6 teeth with dental caries' group consumed higher frequency of chocolate intake than 'no dental caries' group (P<0.05).
The 297 middle school girls in Inchon were devided into three groups according to body mass index(BMI), the under weight group, the normal weight group and obese group to find out relationship between their food habits, food preference, and obesity. The average height and weight are 159.40cm, 67.02kg for obese group, 158.17cm, 39.11kg for under weight group, 156.93cm, 53.78kg for normal weight group. Obese group feels that they are healthy and fat, and their parents are fat also than the other groups. Obese group took more exercise. Total Food habits scores of obese group were lower than the other two groups. In terms of supper, bedtime-smack, unbalanced diet, balanced intake of five basic food groups obese group had lower scores. Especially, intake of carbohydrate, protein, milk group were irregular. There is no significant different in size of meal, overeating eating speed. The preferences of fast food, instant food, high caloric density food were lower in obese group than in the other two groups. The mother of obese group prepared meals according to food composition and prepared little snakes.
The purpose of this survey was to investigate eating habits, life styles and nutritional care of diabetic outpatients and to provide basic data for developing individualized nutritional care and diabetic education programs. This survey was carried out by nutritional counseling with a questionnaire and checking medical record. Information about the general characteristics of the subjects, eating habits, health-related life styles and attitude and perception of subjects to diet therapy was gathered from 200 randomly-sampled diabetic outpatients at a University Hospital located in Inchon. All data were analyzed by Statistical Analysis System(SAS) software. The results are summarized as follows : Female subjects were 63.5% of total subjects and 65.5% of total subjects were 50 years or more. The average Body Mas Index(BMI) of male and female subjects were 23.06kg/㎡ and 25.02kg/㎡ respectively and 44% of all subjects wee obese. Among subjects, type II diabetic patients were 81.0% and 82.5% of subjects had suffered from diabetes for more than one year. Also 41% subjects had diabetic history in their family. More than half of the subjects had nutrition education concerning diabetes. Also 75.5% of them thought that nutrition education was effective. The most important guideline in diet therapy was to eat cooked rice with dietary fiber-rich grains. Therefore, it might be necessary to develop nutrition education program adjusted according to diabetic patient's needs and life styles, which may increase feasibility of self-care and implementation of management guidelines.
The principal objective of this study was to determine the effects of mothers' nutrition knowledge on preschoolers' obesity and dietary habits. The subject population included 456 mothers and their preschoolers, aged 3 to 5 years, who were enrolling in kindergartens located in Seoul and KyongGi-Do, Korea. The results of this study are as follows: 1. The majority of mothers responded correctly to those questions concerning obesity-related nutritional knowledge, but responded incorrectly to questions regarding basic nutritional knowledge. 2. The mothers' nutritional knowledge was associated significantly with the mother's age (p<0.05) and degree of education (p<0.05). 3. The mothers' nutritional knowledge was significantly and negatively correlated with their obesity, but not with their preschoolers' obesity. 4. Mothers' nutritional knowledge was determined to be positively associated with higher interest in nutritional information and food selection in regard to weight management strategies for their kids. 5. In general, preschoolers whose mother had excellent nutrition knowledge evidenced better dietary habits than preschoolers whose mothers had poor nutrition knowledge. In particular, one question regarding serving size was significantly associated with mothers' general level of nutritional knowledge(p<0.05).

The purpose of this study was to investigate food habits, nutritional knowledge, nutritional risk factors, health-related lifestyle, health status and dietetic therapy in Korean middle-aged and elderly outpatients taking supplements. A cross-sectional survey was conducted from July to December in 2001. Subjects were 1702 (male 731, female 971) age-related chronic disease outpatients aged over 50 years. Data was collected using a standardized Questionnaire by in-person interview and analyzed by SPSS system. The subjects with supplement had significantly lower nutritional knowledge, higher nutritional risk factors, undesirable lifestyle, and lower self-reported health status compared to those without supplement. However, the subjects with supplement had desirable (cod habits and more concern about health compared to those without supplement. Age-related chronic disease group with supplement had significantly undesirable food habits, lower nutritional knowledge and higher nutritional risk factors compared to control group with supplement. Age-related chronic disease group without supplement had significantly desirable food habits, higher nutritional knowledge, lower self-reported health status and higher stress compared to control group without supplement. Therefore, these results may provide basic information for proper supplement of Korean middle-aged and elderly outpatients.
The purpose of this study is the examination of stress levels and the eating habits that are affected by stress, and the provision of basic nutritional education data for the improvement of the eating habits of students who have experienced stress-related nutritional problems. Using the BEPSI-K instruments, a questionnaire survey was administered to 327 student subjects (166 male and 161 female) in the areas of Seoul and Gangwon province. The subjects were classified into 3 groups (low-stress, medium-stress and high-stress), and 59 students (18%) belonged the high-stress group. The BMI readings of the Gangwon province students are significantly higher than those of the Seoul students. The survey results show that the lunch frequency and vegetable intake levels are lower in the high-stress group, whereas the intakes of hot spicy food is higher in this group; they also show that Gangwon province students had eating habits that are relatively undesirable compared with the Seoul students. There are significant differences between the Seoul students and Gangwon porvince students regarding residence type, household economic level, types of leisure activities and level of some stresses. The Gangwon province students ate occasionally breakfast, lunch and snacks, but their midnight snack consumption is relatively frequent compared with the Seoul students. The results of the survey indicate that the BEPSI-K score has a negative correlation with the following variables : sleeping time, economic level of household, degrees of satisfaction regarding appearance and academic achievements, lunch frequency and vegetable intakes. Desirable eating habits are essential for the maintenance of a favorable health status and for the stress-management of university students who need to be a healthy members of society in the near future. To facilitate the formation of desirable eating habits among university students, community-based nutritional assistance and appropriate nutritional education programs should be considered necessary.
