한국인 영양 권장량의 개정에 따른 기초식품군의 변화 (Changes of Basic Food Groups accoriding to the Revision of Korea RDAs)

  • Due to the continuous change of socio-economic circumstances and dietary pattern, the need to change recommended dietary allowances and the basic food groups has been required. Consequently, there have been six revisions of the Korea RDAs, the national recommanded dietary allowances. I reviewed the six sequences of revisions concerning the basic food groups. Up to the fifth revision, the ranks of the basic food groups were based upon the dietary needs of the people of the perspective era. However, in the sixth revision, there was no rank associated with the food groups, but the food groups were portrayed in a food composition tower that explained their importance and their necessary consumption amounts. I could indirectly observe the dietary pattern of each era by analyzing the basic food groups and the representative foods of each food group. I also studied information of pictorial representations of the basic food groups and compared the items of the representative foods with nutrient analysis table. By observing nutrient analysis table, I analyzed whether the clarified representative foods of the basic food groups are indeed foods that were eaten frequently by people daily.

영양가 계산을 위한 새로운 식품코드화 (New Food Code Numbering for Calculation of Nutritive Value)

  • New food item numbers for each food included in Food Composition Table in Korea (4th ed) and other Food Composition Table. New Food item numbers classified to base 5-basic food groups and its classification was as follows. 1 As for the 1569 food items , they were classified as 20 food sub-groups(82 food sorts) for 5-basic food groups. 2. As for the 82 food sorts, they were individually classified with raw prepared , fat sugar content and arranged in order, ㄱ , ㄴ and ㄷ and made the item number. 3. The data set of nutritive value of food with new item numbers was accessed on computer files. 4. The Food & Description Table was drafted as 1572 food items were arranged in order, ㄱ, ㄴand ㄷ. 5. The Food Table arranged in the order or each nutrient content (energy, carbohydrate, protein , etc....) was drafted. Clipper program for computing nutritive values and tabulation of nutrients of daily diet were coded by applying new food item numbers. It is expected that should utilized as a basic data of computer program for calculating the nutritive value of diet, evaluating the nutrition and counseling the nutrition.

  • The food composition tables are frequently used to health and nutrition practices. But it is difficult to find out food exchange lists with food exchange groups in the food composition table. Over 2500 items and many kinds of nutrients are in the food composition table. But now food exchange lists are used a few foods. The internet demands the users needs for obtaining more food exchange lists and nutrient information from food composition. This basic study is to solve the users need and the supply more efficient and effective manipulation system for e-food exchange database construction and search system:ENECC/e-food exchnage(E-Nutrition Education and Couseling Center/e-food exchange). This paper introduces the food exchange database construction and search system(ENECC/e-food exchange) using the formula which calculates the food exchange quantity of 6 food exchange groups and added one extra groups(alcohol) based on the internet. The ENECC/e-food exchange database is basically based on the 6th food composition table(2001) of the National Rural Living Science Institution in Rural Development Administration, Korea. The e-food exchange database are consisted of 2,261 foods in 6 basic food groups and one extra groups by using ENECC calculating formula. Also, the e-food exchange database has the proximate composition, mineral and vitamin content such as energy, moisture, protein, fat, carbohydrate, ash, calcium, phosphorus, iron, sodium, potassium, retinol equivalent, retinol, â-carotene, thiamin, riboflavin, niacin, ascorbic acid, refuse per 100g of each food.

대학생의 체격지수와 식습관의 관계에 관한 연구 (A Study on the Relationship between Body Mass Index and the Food Habits of College Students)

  • This study was undertaken to investigate the relationship between body mass index and the food habits of college students. For this purpose, 1030 students of Seoul National University were asked to fill out the questionnaires for the food habit and weight control. Actual weights were also measured, on the spot. The results obtained were as follows. 1. Average height and weight were 173.15 cm, 63.83 kg for male, and 160.52 cm, 52.73 kg for females. The prevalence of underweight, normal and overweight was 32.3, 61.7, 5.5%, respectively. 2. Food habit scores of obese females were lower than normal or underweight females. Male subjects did not show significantly different scores among three groups. 3. Female obese subjects have lower scores than the other groups on the balanced intake of five basic food groups and on the regular meal intakes. Male obese subjects have cholesterol-rich food and animal fat more frequently than normal and underweight males. Male underweight subjects have lower food habit scores on the balanced intake of five basic food groups. 4. Males want to gain weight slightly and females want to lose 4.65 kg weight. All females want to lose weights. Obese males and females want to lose 10 kg weights.

단체급식에 관한 연구 (A Study on Group Feeding for Institution)

  • I. This study on planing menu for group feeding is based on the following ; 1) Decision of nutritive value is based on age, sex, and energy consumption of the students. 2) Selection of food is based on their preference for food through questionaire. 3) Amount of food calorie for each meal is based on data on energy consumption of their daily life. 4) Three data for planing menu for group feeding were based on food rice of each season, favourite foods of girl students and length of their stay at the institution. II. The menu for group feeding was evaluated on nutritive value calorie and protein, 5 basic food groups and price ; 1) The amount of calorie and protein for each season was satisfactory. 2) Each menu was composed of 5 basic food groups but the third group was not satisfactory compared with the other groups. 3) Average price of per day turned out to be 193 won which is less than the standard price, 200 won.

  • The purpose of this study was to determine the detailed customer satisfaction and dissatisfaction factors of family restaurants in Korea, and to then classify the factors into 3 groups, inlcuding core service, quality service, and basic service. ‘Core service’ represents the critical factors that generate both satisfaction and dissatisfaction; ‘quality service’ generates only satisfaction; and ‘basic service’ generates only dissatisfaction. This categorization is based on Herzberg’s motivation-hygiene theory (1976) as well as Cadotte & Turgeon (1988). Based on the characteristics of the three groups, differentiation strategies in managing customer service were suggested to the family restaurant managers. A qualitative research method, termed the critical incident technique (CIT), was used in the study. This method helps researchers find new factors or attributes by grouping key issues from the anecdotes (critical incidents) and then categorizing common factors from the key issues. This research categorized key satisfiers and dissatisfiers into 33 factors, which were from 402 critical incidents described by 261 respondents. Eleven factors (response to service failures, food taste and quality, attention paid to customers, coupon/mileage point/discount card, customer’s ordinary requests, waiting, food diversity, food price, facility sanitation, checking out, customer’s special requests) were classified into core service, which required maximum management not regarding the level of customer satisfaction. Six factors (employee attitude, event, education and explanation, complementary food, customer’s mistakes, attention paid to children) were classified into quality service, which required differentiation strategy management. Finally, nine factors (speed of food service, employee’s mistakes, food sanitation, atmosphere and interior, seating, forcing orders, parking, other customers, reservations) were classified into basic service, which required minimum management at the level of the industry standards.

인천지역 여자 중학생의 식습관이 비만에 미치는 영향 (The Effect of Food Habits in the Obesity of Middle School Girls in Inchon Area)

  • The 297 middle school girls in Inchon were devided into three groups according to body mass index(BMI), the under weight group, the normal weight group and obese group to find out relationship between their food habits, food preference, and obesity. The average height and weight are 159.40cm, 67.02kg for obese group, 158.17cm, 39.11kg for under weight group, 156.93cm, 53.78kg for normal weight group. Obese group feels that they are healthy and fat, and their parents are fat also than the other groups. Obese group took more exercise. Total Food habits scores of obese group were lower than the other two groups. In terms of supper, bedtime-smack, unbalanced diet, balanced intake of five basic food groups obese group had lower scores. Especially, intake of carbohydrate, protein, milk group were irregular. There is no significant different in size of meal, overeating eating speed. The preferences of fast food, instant food, high caloric density food were lower in obese group than in the other two groups. The mother of obese group prepared meals according to food composition and prepared little snakes.

  • This study attempted to identify differences in Korean food consumption behaviors between groups of Japanese consumers segmented in accordance to their food-related lifestyles. This study was performed to provide Korean food service companies basic information to implement a strategy for the globalization of Korean food. As a result of the empirical analysis, the food-related lifestyles of Japanese consumers were deduced to the following four factors: "health and safetyoriented lifestyle", "palate and safety-oriented lifestyle", "economic efficiency-oriented lifestyle", and "simplicity-oriented lifestyle". Further, as a result of the cluster analysis, food-related lifestyles were classified into the following three groups: "a group highly interested in food-related life", "an economic efficiency-oriented group", and "a simplicity-oriented group". Second, there were significant differences in demographic characteristics and the characteristics of Korean food consumption behaviors between the groups. Third, also in a comparison of satisfaction with and loyalty to Korean restaurants with crucial attributes during the selection of Korean food, there were significant differences between the groups. Therefore, it is necessary to develop various Korean food products that will cater to Japanese consumers in accordance with each segmented group.

서울지역 중년 및 노년 여성의 골밀도와 가공식품 섭취태도 (Bone Density and Processed Food Intake Behavior of Middle Aged and Elderly Women In the Seoul Area)

  • The principal objective of this study was to assess the bone density and processed food intake behavior of middle-aged and elderly women in the Seoul area. The subjects were assigned to one of the following groups on the basis of BMI: namely, the underweight, normal, and overweight groups. The results are summarized as follows: The average BMI and systolic blood pressure of the three groups were 19.0, 127.3 mmHg; 22.4, 132.8 mmHg; and 26.8, 136.1 mmHg respectively. The BQI and T-scores of the three groups were as follows: 56.6, -2.50; 62.3, -2.22; 66.0, -2.03 respectively. The bone status of the three groups, in terms of the percentage of normal and osteoporosis, were 9.5%, 52.4%; 8.3% 33.0%; and 8.8%, 23.6% respectively. We noted no significant differences in processed food intake (frozen, cold and can processed food, instant and convenience store food, basic side dishes) behavior among the three groups. However, we recorded a negative value between processed food intake and bone density (BQI, T-score, %young adult, Z-score, %age-matched) generally. In particular, ramyeon (r=-0.1574, p<0.05) and cup-ramyeon (r=-0.1996, p<0.05) intake were significantly associated with the T-scores of bone density levels. The results of this study revealed that processed food intake was not generally desirable for healthy bone. Thus, practically and systematically organized education regarding a good and healthy dietary life is highly recommended.

개인용 컴퓨터를 이용한 단체급식 식단 작성 프로그램에 관한 연구 (A Study on a Menu Planning Program in Institutional Food Service by Personal Computer)

  • 본 연구에서는 영양사들의 주업무인 식단 작성 및 영양량 계산, 식품의 구입량 및 식재료비 계산 등에 소요되는 비능률적인 시간을 절약하여 급식 관리의 효율화를 기하기 위해서 컴퓨터를 이용한 단체 급식 식단 작성 프로그램을 개발하였다. 본 연구에서 개발된 프로그램은 영양상담 프로그램, 식단 작성 프로그램, 기준 자료관리 프로그램 등으로 구성되어 있으며, 이들 프로그램은 서로 연결되어 있다. 영양 상담 관리 프로그램은 식이 섭취 조사표 입력, 영양 분석 결과 검색, 영양 상담 결과 출력 등의 system으로 이루어졌으며, 식단 작성 관리 프로그램은 식단 작성 조건 입력 및 변경 system과 일일 영양 분석 system으로 이루어졌다. 이 식단 작성 조건 및 변경 system은 다시, 식품군별 구성량 검색, 기초 식단 입력 및 변경, 영양 섭취량 합계 및 영양 권장량 검색, 식단표 출력 등의 subsystem으로 이루어졌다. 일일 영양 분석 system은 작성된 3끼의 식단을 영양 상담 관리 프로그램에 연결시켜 그 group의 1일 영양 판정을 할 수 있는 보조 프로그램이다. 그리고 기준 자료 관리 프로그램은 식품 분석표 입력${\cdot}$변경, 다량 조리 목록표 입력${\cdot}$변경, 식품 가격표 입력${\cdot}$변경 등의 system으로 이루어졌다. 이 프로그램은 사용자가 직접 가격 및 모든 data file을 검색, 수정, 삭제하거나 추가로 입력할 수 있게 되어 있어 매우 편리하다. 또 특정 단가에 맞게 영양과 기호를 모두 만족시킬 수 있으며, 단지 컴퓨터의 존재만으로는 이루어질 수 없는 영양사의 창의성이 고려된다는 점에서 매우 특징적이라 할 수 있다.
