The objective of this study was to investigate the effects of supplemental levels of Bamboo vinegar (BV) on meat quality characteristics of Hanwoo. A total of 15 cows $(400.0\pm15.0\;kg)$ was fed with a commercial diet (control) or $3\%$ bamboo vinegar supplemented diets $(3\%\;BV),\;6\%$ BV for four months. Then, cows were slaughtered and M. longissimus dorsi (LD) was collected from each treatment group During storage at $4^{\circ}C$ for 21day, physico-chemical, microbiological and sensory characteristics were determined It increased (p<0.05) in at 3 and 9 days of the refrigeration storage. Hunter a value decreased (p<0.05) in the meat fed with $3\%\;and\;6\%$ BV at 1, 3 and 9 days. Hunter b value increased (p<0.05) in $3\%\;and\;6\%$ BV at 1 and 3 days. TBA and total bacterial count were significantly (p<0.05) low in $3\%\;and\;6\%$ BV at 1 and 3 days. Supplementation of $3\%\;or\;6\%$ BV showed a significant (p<0.05) decrease in cooking loss at 9 and 15 days. $3\%\;and\;6\%$ BV showed a significant (p<0.05) decrease in shear force at 1, 3 and 9 days; it tended to decrease throughout the whole storage period The treatments $3\%\;and\;6\%$ BV scored high in area of taste; taste increased significantly (p<0.05) at 1 and 3 days.
Biological functionality of nineteen commercially available carbonated vinegar liquors including wood vinegar liquor (WVL), bamboo vinegar liquor (BVL) and chaff vinegar liquor (CVL) were evaluated, focusing mainly on electron donating ability to DPPH radical, reducing power against ferricyanide ($Fe^{3+}$), blockading ability to linoleic acid autoxidation and NO production from LPS-stimulated RAW264.7 cells plus cytotoxicity to RAW264.7 cells. The results showed that crude carbonated vinegar liquors, regardless of their source materials, have high capacity of antioxidation such as electron donating ability, reducing power, blockading ability to lipid peroxidation and NO production, as well as cell cytotoxicity. Refined carbonated vinegar liquors for skin care or bath showed significantly low cell cytotoxicity, however, overall antioxidant potencies were also low. Especially, these carbonated vinegar liquors revealed low levels of inhibition for NO production deeply involved in inflammation. Among nineteen carbonated vinegar liquors examined, chaff vinegar liquor was observed to be the most potent carbonated vinegar liquor with high antioxidant activities together with low cytotoxicity to mammalian cells.
Volatile compounds in three different kinds of crude vinegars obtained from oak (Quercus serrata), bamboo (phyllostachys) and pine (Pinus densiflora) species were analyzed by the solid-phase microextraction (SPME) method. A total of 264 peaks were detected on the chromatograms obtained from the polar (CBP 20) and the nonpolar (CBP 1) columns, which were used for analyzing the volatile compounds in these vinegars. The major volatile compounds identified by using the polar column were 2-butanone, acetic acid, guaiacol, phenol, cresols, 4-ethyl guaiacol, 4-ethyl phenol, and syringol. Using the nonpolar column, seven compounds could be identified: 1,2-dimethoxybenzyl alcohol, 1-hydroxy-2-butanone, 1-(2-furanyl)-1-propane, ethisolide, furfuryl acetate, 1,2-dimethoxybenzene, phenyl acetate. The volatile compounds were classified into five groups: phenols, neutral compounds, organic acids, esters and others. The phenols were the main component and comprised 49~65% of the volatile compounds of these vinegars. In the case of bamboo vinegar, the proportion of the phenols in the volatile compounds was lower than that of the two wood vinegars. However, the proportions of the neutral compounds and the organic acids were higher than those of the wood vinegars. Therefore, it seems that these differences of the proportions of the volatile compounds would make a certain difference of a smoke flavor between the bamboo vinegar and the wood vinegars.
To develop a color stable and fine bamboo leaf powder (BLP) as a functional green biomaterial, bamboo leaf (BL) purchased from Sasa borealis and cultivated in Damyang, Jeonnam was treated with different conditions and BLP was evaluated. The four treatments comprised of boiling in water, in zinc chloride, sodium bicarbonate, and vinegar solutions, BLP4 was treated with 2% $ZnCl_2$ for 1 h, BLP5 was treated with 1% $ZnCl_2$ for 2 h, and BLP6 was treated with 1% $ZnCl_2+10%$ NaCl for 1 h. The particle size distribution, ash content, water binding capacity, and color change after heating in acidic solution were compared to commercial fine green tea (GTP) and bamboo leaf powders (CBLP). The particle size (cumulative 90%) of BLP was finest in BLP4 followed by BLP6 < BLP5 < GTP < CBLP. The water binding capacity of GTP was the highest and that of BLP was negatively correlated with particle size. After heating in acidic solution, the color of commercial GTP and CBLP changed from bright green to olive green, but the treated BLPs remained bright green. Especially, the -a (greenness) values for the commercial powders decreased from 11.2-13.6 to 3.1-3.8, while those of the treated BLPs did not change.

This experiment was conducted to investigate the effects of Bamboo Vinegar Liquid(BVL) on performance and meat quality of broiler ducks for 5 weeks. One hundred broiler ducks were divided into 4 groups with S replicates per treatment. Dietary levels of food waste 0%, 1%, 2% and 4% were included in experimental diets. The growth performance and carcass weight of broiler duck fed BVL supplement diets were not significantly different(P>0.05) from the control birds. The lipid content was decreased(P<0.n) by addition of BVL 2% and 4%, whereas the protein was increased(P<0.05). The cholesterol content and TBA in breast meat were significantly(P<0.05) decreased by addition of BVL. palmitic acid of fatty acid composition were decreased by addition BVL 2% and 4% whereas linoleic acid was increased by addition of BVI. 2% and 4%. The odor, appearance and taste of sensory evaluation were improved by addition BVL 1% and 2%. The results of this study indicate that dietary supplemental BVL 1% and 2% may improve the meat quality of broiler ducks.

This experiment was conducted to investigate the effects of Bamboo Vinegar Liquid(BVL) on performance and meat quality of Korean native chicken(KNC) for 8 weeks. One hundreds KNC were divided into 4 groups with 5 replicates per treatment and placed in pens. Dietary levels of food waste 0%, 1%, 2% and 4% were included in experimental diets. The growth performance and carcass weight of KNC fed BVL supplement diet were significantly different(P<0.05) from the control group. The lipid content, cholesterol content and TBA in breast meat were significantly(P<0.05) decreased by addition of BVL. However, the addition of BVL did not affect the meat color. The saturated fatty acid composition of breast meat was decreased(P<0.05), whereas unsaturated fatty acid was increased(P<0.05) by addition of BVL 1% and 2%. Taste of sensory evaluation was improved by addition BVL. The results of this study indicate that dietary supplemental BVL 1% and 2% may improve the performance and meat quality of KNC. The prevention effect of KNC which challenged with Salmonella gallinarum (1${\times}$10$\^$9/ CFU/ml) was evaluated. A reisolation of S.gallinarum in liver, pathological index of villus and colon were evaluated. There was no reisolation of S.gallinarum in liver and a few pathological index of colon in 4% BVL supplement fed KNC than 1 and 2%. These results indicate that dietary supplemental BVL 4% may improve the prevention effect to salmonellosis in chickens.
This experiment was conducted to investigate the changes in meat quality characteristics on refri- gerated(4$^{\circ}C$) pork loin fed with supplemental levels of Bamboo vinegar(BV). Thirty pigs were divided into 3 groups of 10 pigs. Dietary levels of Bamboo vinegar 0%(control), 2% and 4% were included in experimental diets of each of the groups. The pH value was decreased(P<0.05) in 2% and 4% BV compared to the control after 3d of storage. Lightness was increased(P<0.05) in 2% and 4% BV compared to the control at 1d and 3d. Redness was decreased(P<0.05) in 4% VB compared to the control at 1d and 3d. The 2% and 4% BV showed a significant(P<0.05) increase in yellowness throughout the whole experiment compared to control. Cooking loss was increased(P<0.05) in 2% and 4% BV compared to the control after 3d of storage. Shear force was decreased(P<0.05) in 2% and 4% BV compared to control at 1d and 3d. TBA was decreased(P<0.05) in 2% and 4% BV at 6d and 9d. Total microbial counts was decreased(P<0.05) in 2% and 4% BV compared to control. The 2% and 4% BV scored higher(P<0.05) in odor evaluation compared to the control at 1d and 3d. The 2% and 4% BV also scored higher(P<0.05) than the control in the evaluation of appearance at 1d. The taste was increased(P<0.05) in 2% and 4% BV compared to control at 1d, 3d, and 6d. These results showed that the addition of 2% or 4% BV improved the meat quality and storage characteristics of refrigerated pork.

Three different species of green and air-dried Korean bamboos were carbonized by using three different types of kilns designated as special (800~1000℃), improved (600~700℃) and simple kiln (400~500℃), and the bamboo vinegars obtained from the carbonization processes were characterized. In the case of the special kiln, most of the bamboo vinegars obtained at the first recovery stage showed high values of specific gravity and also in content of organic acid and water-soluble tar. The bamboo vinegars obtained from the improved kiln showed various physical properties depending on their species. In the case of simple kiln, the bamboo vinegars obtained from air-dried bamboos and at temperatures below 80℃, showed a higher specific gravity and more water-soluble tar as well as total organic components than those obtained at 80~150℃. A good linear relationship (correlation coefficient of ca. 0.90) was obtained between the specific gravities and the sum of organic acids and water-soluble tars. Therefore, this correlation coefficient might be a good index to determine the quality of bamboo vinegars. The major chemical constituents of the bamboo vinegars were acetic acid and considerable amounts of phenols: guaiacol, ethyl guaiacol, syringol, and methyl syringol.

The objective of this study was to find optimum amount of bamboo smoke distillate (BSD) and reaction time (RT) for ammonia removal in food waste compost (FWC). BSD amount (30 to 90 mL BSD/600 g FWC) and RT (1 to 3 h) significantly affected the ammonia removal in FWC. Within the design boundaries, the optimum conditions for maximum ammonia removal (8.47 ppm $NH_3$/600g FWC) were 74 mL BSD/600 g FWC (0.123 mL BSD/g FWC) and 3 h RT. The BSD was effective on ammonia removal in FWC, rather than vinegar (p < 0.05). Our results proved a good potential of BSD to serve as an alternative deodorant for FWC.

The effectiveness of various additives in reduction of an unpleasant odor and inhibition of Bacillus cereus growth in Cheonggukjang (CKJ) was investigated. Sensory evaluations of unpleasant odor intensity and taste preference for CKJ were conducted with a 5-point scale. Raw CKJ was rated to have the highest unpleasant odor intensity, followed by CKJ-salt, CKJ-wood vinegar salt, CKJ-red pepper seed oil, and CKJ-bamboo salt in the given order. The test panel had a greater preference for CKJ-red pepper seed oil than for the other CKJ products. The addition of bamboo salt to CKJ was the most effective in inhibition of B. cereus growth in comparison to the other three additives. Volatile compounds in CKJ and CKJ-bamboo salt were identified by GC/MS analysis. 1-Ethoxy-1-methoxy-ethane was responsible for the pleasant odor and its level significantly increased in CKJ-bamboo salt. Consequently, adding bamboo salt to CKJ not only masked and reduced the unpleasant odor, but also inhibited B. cereus growth in CKJ.
