The biological activity of hot water extract from Ecklonia cava Kjellman (ECE) was investigated to assess antioxidative, anti-skin aging, and nitrite scavenging abilities, as well as alcohol metabolizing activities. Antioxidant activity of ECE was measured by using 2,2-diphenyl-1-picryl-hydrazyl (DPPH) radical scavenging activity and superoxide dismutase (SOD)-like activity. DPPH radical scavenging activity and SOD-like activity of ECE increased in a remarkably dose-dependent manner, and were about 91.4% and 75% at 1 mg/ml, respectively. The xanthine oxidase inhibitory activity was indicated to be about 70% at 1 mg/ml of ECE. Nitrite scavenging ability of ECE showed to be 93.6% at 1 mg/ml and pH 1.2. The influence of ECE on alcohol metabolism was demonstrated through the generating activity of reduced-nicotinamide adenine dinucleotide (NADH) by alcohol dehydrogenase (ADH) and acetaldehyde dehydrogenase (ALDH). The facilitating rate of ADH and ALDH activity by ECE was 167.2% and 334% at 10 mg/ml, respectively. In addition, tyrosinase and elastase inhibitory activities of ECE were 58% and 72% at 10 mg/ml, respectively. These results indicated that ECE has valuable biological attributes owing to its antioxidant, nitrite scavenging, alcohol metabolizing, and elastase and tyrosinase inhibitory activities.

The rising concentration of atmospheric carbon dioxide is causing ocean acidification and global warming. The seahorse is an important species in marine ecosystems and fishery markets, however, their populations have recently decreased due to ocean acidification. As a result, we examined changes in the physiological responses of the spotted seahorse Hippocampus kuda when it was exposed to acidic sea water (pH 6.0, 6.5, and 7.0) and normal seawater (pH 8.0 as the control) over a period of 15 days. As the pH decreased, the seahorses' body weight and length also decreased. Components in body of ash, the crude lipids and crude proteins also differed significantly with changes in pH, due to stress caused by the seahorses' exposure to the acidic water conditions. The superoxide dismutase levels were significantly lower in the pH 6.0 and 6.5 groups than they were in the pH 7.0 and pH 8.0 groups. However, the catalase and glutathione levels were significantly higher in the acidic sea water groups. We suggest that decreasing the pH level of rearing water induces a stress response in H. kuda, damaging their ability to maintain their homeostasis and energy metabolism. Antioxidant enzymes are generally sensitive to acidic stress; in this study, the antioxidant activity was significantly affected by the pH level of the rearing water. These results indicate that physiological stress, induced by exposure to acidification, induces an antioxidant reaction, which can reduce general components in the body and the growth of H. kuda.
Perilla leaves cultivated in greenhouses (Jan., May) and in the fields (Aug.) of Geumsan province were investigated for their extract yields and physiological functionalities. The yield was highest in 30% ethanol extracts of the August perilla leaves. The highest fibrinolytic activity (8.2 U) was observed in 30% ethanol extracts of the May perilla leaves, while the HMG-CoA reductase inhibition level, which is related to the inhibition of cholesterol biosynthesis, was 83% in water extracts of the August perilla leaves. Anti-hypertensive ACE inhibitory activity was 64.5% in the water extracts of the January perilla leaves, and antioxidative electron donating ability was the highest (69%) in 30% ethanol extracts of the August perilla leaves. Elastase inhibitory activity, which is related to the inhibition of skin aging, was highest (47.5%) in 30% ethanol extracts of the May perilla leaves. However, SOD-like activity, nitrite scavenging activity, and tyrosinase inhibitory activity were not detected were very weak in all samples.

This study was carried out to investigate the effect of the active ingredients from ginseng on paraquat(PQ) toxicity. Oxidative stress was induced by intraperitreatneal injection of PQ at a single dose of 25 mg/kg. Saponin treated groups were given protopanaxadiol saponins(PPD) or protopanaxatriol saponins(PPT)(5 mg/kg, orally) per day for 1, 3, & 7 days. We also investigated the relationship between lipid peroxidation and ginseng saponins by measuring the levels of superoxide dismutase(SOD), catalase(CAT), glutathione peroxidase (GPx), reduced glutathione(GSH), malondialdehyde (MDA), and hydrogen peroxide(H$_2$O$_2$) in liver tissue. The activities of SOD, CAT, and GPx were generally high in the PPD group; the SOD activity on each day was the highest in the PPD group. The H$_2$O$_2$ content was the lowest in the PPD group. The GSH levels were significantly increased in the PPD. The levels of MDA(the end product of lipid peroxidation) were significantly lower in the red ginseng component groups than in the PQ group; the levels were especially low in the PPD groups. These results led us to conclude that the antioxidant effects of extracts from red ginseng prevent oxidative damage by direct antioxidant effects involving SOD, CAT, & GPx, and increasing the ability of the body to synthesize endogenous antioxidants.
Phenolic acids of white ginseng were extracted and fractionated into free, esterified, and insoluble-bound forms. The contents of individual phenolic acids in different forms were quantified by gas liquid chromatography. Nine different phenolic acids as free, esterified, and insoluble-bound forms were identified in white ginseng. Total phenolic compounds in different forms of extracts was 0.309% (free form), 0.230% (esterified form) and 0.138% (insoluble-bound form), respectively. Total phenolic acid contents in free, esterified and insoluble-bound form were 889.3, 356.8, 1,176.9 mg/100g fraction, respectively. Ferulic acid was the predominant phenolic acid, representing 63.7% and 50.9% of total phenolic acids in esterified fom and insoluble-bound form, respectively. While caffeic acid was only detected in esterified form. At 10 mg/ml insoluble-bound form quenched 95.9% ABTS free radicals generated from 2,2-azobis(2-amidinopropane) dihydrochloride (AAPH). Also, electron donating ability and lipid peroxidation inhibitory activity of insoluble-bound fom were higher than other fraction. All phenolic acid fractions scavenged over 80% of hydroxyl radical at 10 mg/ml.

This study was to demonstrate the additional effect of fat-soluble vitamins on inhibitory action of Korean ginseng (Panax ginseng C. A. Meyer) saponin to lipoperoxide formation in vitro and in vivo. The ginseng saponin and vitamins were added to the substrate of linoleic acid and incubated on a shaking water-bath at $60^{\circ}C$, and the inhibitory action on lipoperoxide formation was examined by measuring the TBA value (532 nm), POV (500 nm) and EDA (electorn donating ability to ${\alpha}$, ${\alpha}$-diphenyl-${\beta}$-picrylhydrazyl at 525nm) for in vitro. The ginseng saponin and vitamins were administered to Sprague-Dawley rats (♂, 100~120g) orally, and the inhibitory effect on lipoperoxide formation was examined by measuring the TBA value in vivo. EDA to DPPH of ginseng saponin added with vitamin A and D were higher than that of ginseng saponin only. Ginseng saponin added with vitamin A and D inhibited strongly lipoperoxide formation of initial step by extension of induction period in vitro. Fat-soluble vitamins such as vitamin E and A were approved the additional effect on inhibitory action of lipoperoxide formation in vitro. The additional effect of fat-soluble vitamins to ginseng saponin for inhibitory action of lipoperoxide formation was effective vitamin E and D for blood, vitamin A and E for liver in vivo.

This study was conducted to investigate the quality characteristics, antioxidant activity, and ${\alpha}$-glucoamylase inhibitory activity of Dahyang, a Chungnam Agricultural Research & Extension Service's newly bred cultivar of brown button mushroom. Total phenolic compound contents of Dahyang and the no. 705 mushroom were 189${\pm}$12 mg% and 168${\pm}$8 mg%, respectively. The major free sugars in Dahyang were mannitol (3.11%), xylose (0.12%), and trehalose (0.08%). ${\beta}$-Glucan content was 28.34% in Dahyang and 26.55% in the no. 705 mushroom, respectively. Electron donating ability by DPPH in Dahyang and the no. 705 mushroom was 52.14% and 45.27% for the water extract, and 57.81% and 46.93% for the 80% ethanol extract, respectively. ${\alpha}$-Glucoamylase inhibitory activity in a 10 mg/mL concentration of water extract were was 33.25% in Dahyang and 29.22% in the no. 705 mushroom, respectively.

The functions of anti-oxidation and anti-inflammation were investigated with the crude 80% methanol extract, subfractions and henryin isolated from Isodon inflexus (Thunb.) Kudo (I. inflexus (Thunb.) Kudo). Antioxidative ability was evaluated by bioassays using 2, 2-diphenyl-1-1-picrydrazyl (DPPH) free radical scavenging activity, xanthine oxidase inhibition, and superoxide radical scavenging effects. Ethyl acetate and butanol fractions exhibited free radical scavenging activity on superoxide with $IC_{50}$ values of $0.9{\mu}g/mL$, $0.2{\mu}g/mL$, respectively, which were stronger activity than that of allopurinol ($2.2{\mu}g/mL$) as reference. For the inhibition of anti-inflammatory activity in RAW 264.7 cell, the ethyl acetate fraction showed strong inhibition activity NO production, and henryin isolated from its subfraction reduced the activity in a dose-dependent manner. Ethyl acetate fraction and henryin suppressed not only mRNA expression of iNOS and COX-2, but also the mRNA expression of pre-inflammatory cytokines such as, TNF-${\alpha}$, 1L-$1{\beta}$, IL-6, in a dose-dependent manner. These results suggested that ethyl acetate fraction of I. inflexus (Thunb.) Kudo has considerable potential as a cosmetics ingredient with an antioxidant and anti-inflammatory effects and henryin can be applied as an functional reference.
Quality characteristics of Yanggaeng prepared with water extract (CRE) and powder (CRP) of roasted coffee ground (CR) were investigated. Total polyphenol content and DPPH raidcal scavenging ability of water extract of CRE were 13.52 g/mL and 78.75%, respectively. The pH ranges of Yanggaeng prepared with CRE (CREY) and CRP (CRPY) were 7.10~7.29 and 6.95~7.15, respectively. The DPPH radical scavenging activities of CREY containing 0.1~1.0% CRE showed 8.77~43.10% and CRPY containing 0.1~1.0% CRP showed 5.28~14.92%. The total polyphenol contents and DPPH radical scavenging activity of CREY and CRPY increased significantly with increasing CRE and CRP concentrations (p<0.05). Sensory evaluation which includes taste, flavor, texture, and overall acceptability of CREY and CRPY were higher than that of control. The overall acceptability showed the highest levels in Yanggaeng containing 0.5% CRE and containing 0.3% CRP. These results indicate the potential use of roasted coffee ground residue as a valuable resource for development of side menu in coffee restaurants.
Acetaminophen(APAP) is one of the most extensively used analgesics and antipyreics worldwide. In order to investigate preventive effects of white and red ginseng extracts, male ICR mice pretreated with white or red ginseng extracts(50 or 250 mg/kg/day, for 5 days, orally) before treatment with acetaminophen(800mg/kg, i.p, single dose). In an attempt to elucidate the possible mechanism of hepatoprotective effect, superoxide dismutase(SOD), catalase(CAT), hydroperoxide, malondialdehyde(MDA) contents were studied. In pretreatment with red ginseng extract(250 mg/kg), the activities of SOD, CAT were generally highest and the hydrogen peroxide content was lowest. The levels of MDA were significantly lower in white and red ginseng extract groups than those in the APAP groups. By treatment with ginseng extract, high content of hydrogen peroxide and increased lipid peroxidatiion level caused by APAP could be lowered. Also, ginseng extracts were found to increase antioxidative enzyme activity. Finally, the results suggest that the antioxidant effects of (white and red) ginseng extracts prevent oxidative damage by direct antioxidant effects involving SOD, CAT and increasing the ability to synthesize endogenous antioxidants. It was concluded that ginseng can protect against APAP intoxication through its antioxidant properties.
