Body Mass Index, Dietary Intake, Serum Lipids and Antioxidant Status of Young Females (여대생의 BMI에 따른 식이섭취와 혈중지질 농도 및 항산화능)

  • Many epidemiological and observational studies show that distorted body image of normal body weight is widespread among Korean young females. This study was performed to evaluate the prevalence of overweight and underweight of young females and, to compare nutrient intakes, body composition, serum indices (lipids, MDA: Malondialdehyde, TAS : Total Antioxidant Status) with different BMI groups. The subjects were 75 university students in Seoul. We divided the subjects into 3 groups according to their BMI by IOTF guideline (UW: underweight group, BMI < 18.5, NW: normal body weight group; 18.5 $\leq$ BMI < 23.0, OW: overweight group; BMI $\geq$ 23.0). Data on dietary intakes, body compositions and serum indices were obtained in 3 groups. Differences on all of the above variables were assessed by body weight groups. Using IOTF guidelines, the prevalence of overweight and underweight in young females were 23%, 61%, 16% respectively. $\beta$-carotene and vitamin A intake of UW were significantly higher than that of NW (p < 0.05). Fiber intakes of NW was significantly higher than that of W (p < 0.05). But intakes of energy and the other nutrients were not significantly different among BMI groups. Calcium and folate intakes were 75%, 61% of KDRIs. Serum TGs were significantly higher in OW than that of NW, UW (p < 0.05), but level of MDA and TAS were not significantly different. The association of overweight and low intake of $\beta$-carotene and vitamin A may be one of many factors predisposing obese females to a high risk of oxidative stress later in life. This requires urgent nutritional intervention programs involving enough intake of fruit and vegetables, with modification of inappropriate dietary habits.

  • Purpose: People have long been interested about antioxidant nutrients such as vitamin A and E to stay in healthy states. This present study provides trustworthy nutritional information and evaluates vitamin A and E contents in emphasized food items. Methods: Vitamin A or vitamin E emphasized foods including beverage, cereal, snack, chocolate product, other cocoa products, and sugar products were analyzed. The contents of vitamin A, E in samples were examined by high performance liquid chromatography. Vitamin A and vitamin E contents were compared with the labeled value indicated on the nutrition label. Results: Vitamin A (n=18) value ranged from 90% to 248% and vitamin E (n=20) value ranged between 96-413% of labeled value. Analyzed samples ranged more than 80% of the labeled value, which complied with food labeling rules. Conclusion: Providing accurate information for nutrition label is essential to confirm nutrient contents in foods. It will help to decide the adequate level of nutrient intake. Therefore, the nutrition labeling system should be supervised continuously with regular monitoring analysis.

An Analysis of Dietary Intakes and Plasma Biochemical Indices in Female College Students by Skin Types (여대생들의 피부유형에 따른 식이섭취 실태조사 및 혈장 생화학적 성분분석)

  • This study was done to investigate the nutrient intakes and plasma biochemcial indices in 68 female college students according to their skin types. Nutrient intakes were investigated by quick estimation. The plasma TG and total cholesterol levels were measured by the Spotchem sp-4410. The plasma levels of retinol and $\alpha$-tocopherol were measured by HPLC. In addition, the activities of antioxidant defense enzymes such as plasma glutathione peroxidase(GSH-Px) and glutathione reductase(GHS-Rd) were determined. All data were statistically analyzed by SAS PC package program. The results of this study were as follows : The average age, height, weight, BMI, systolic blood pressure and diastolic blood pressure ofthe subjects were $20.9{\pm}1.9yr, 160.7{\pm}4.3cm, 53.0{\pm}7.1kg, 20.5{\pm}2.4kg/m^2, 105.3{\pm}11.5mmHg and 70.6{\pm}7.7mmHg$, respectively. Ten students(14.7%) had normal skin type, 19 students(27.9%) had dry skin type, 11 students(16.2%) had oily skin type, 17 students(25.0%) had acne and 11 students(16.2%) had mixed skin type. The intakes of energy and fats in oily skin group were significantly higher(p<0.05) than those of the dry skin group, but vitamin C intake in the mixed skin group was significantly higher(p<0.05) than those of the dry skin group, but vitamin C intake in the mixed skin group was significantly lower(p<0.05) than that in other skin types. The intakes of other nutrients were not significantly different among skin types. The analysis of lipids showed that the plasma total-cholesterol level of mixed skin group was significantly lower(p<0.05) than that of the oily skin group, whereas other lipid levels were not significantly different. The other parameters such as retinol, $\alpha$-tocopherol, GSH-Px and GSH-Rd of plasma were not significantly different among skin types. Overall results indicate that dietary intake pattern may influence skin type and thereby some blood biochemical indices can be different by skin types.

Effects of dietary inclusion of Moringa oleifera leaf meal on growth performance of Muscovy ducklings (Cairina moschata)

  • Objective: The current experiment was performed to investigate the influence of different dietary levels of Moringa oleifera leaf meal (MOLM) on productive performance, nutrient digestibility, blood parameters, immune response, caecal microbiota, and carcass characteristics of Muscovy ducks (Cairina moschata) during 7 to 63 d of age. Methods: A total of 240 unsexed 7-d-old ducklings were distributed into five (treatment) groups; each one contained six replicates with eight ducklings each. Birds of the first group were fed basal diet without MOLM and served as control, while the other four groups were fed basal diet with 0.25%, 0.50%, 1.0%, and 2.0% MOLM inclusion level, respectively. Results: The obtained results revealed that including MOLM in the diets significantly improved body weight, body weight gain, feed conversion ratio and economic efficiency compared with the control group. Among the different MOLM inclusion treatments, increasing MOLM inclusion level decreased (p<0.05) such previous parameters. Decreasing MOLM inclusion levels in duckling diets increased (p>0.05) the digestibility of organic matter, crude protein, ether extract, and nitrogen free extract, however all MOLM treatments were significantly higher than the control group. Results also revealed that feeding ducks lower MOLM inclusion levels (0.25% or 0.50%) improved blood parameters (p<0.05) compared with the higher inclusion levels (1.0% or 2.0% MOLM) and the control group. Ducks fed different MOLM levels had significantly higher phagocyte index and activity, immunoglobulin G (IgG), IgM, total antioxidant capacity, glutathione peroxidase activity, and superoxide dismutase activity compared with control group. Conclusion: Despite the beneficial effects of all MOLM treatments on growth performance, nutrient digestibility, physiological status, and immune response of duckling, the increasing MOLM inclusion level in the diet had deleterious effects on such studied traits, consequently 0.25% was the best MOLM inclusion level in duckling diets.

Purification of Antioxidant substance from the stem bark of Rhus verniciflua

  • The Rhus verniciflua contains alkly(en)-catechol type allergens with a saiurated or unsaturated alkly chain of 15 or 17 carbon atoms. It has been recognized as an extremely active allergen causing skin reactions similar In poison ivy. The allergic contact dermatitis induced by the urushiol is known to be mediated be T lymphocytes whicht specifically recognize the hepten urushiol. Therefore. direct use of this plant as a medicinal purpose might imply a considerable hazard in Korea. In this study, using the established method for the detoxification from the stem bark of Rhus verniciflua, an strong antioxidant substance was isolated and characterized DPPH (diphenypricryl hydrazyl) assay measures hydrogen atom-donating activity and hence provides a measure of free radical scavenging antioxidant activity. DPPH, a purple-colored stable free radical, is reduced to yellow-colored diphenylpicryl hydrazine by antioxidants to deducing agents. Antioxidative effects of the water extract from RV were measured by DPPH assay. Twenty microliters of the extract was added to 1ml of 100mM DPPH solution in ethanol The mixture was shaken and left to stand for 10min at room temperature. The crude water extracts was purified by using HPLC method with a DEAE (anionic type), CN, ODS column. The purified compound remained stable at pH 3.0-6,0, but unstable above pH 6.5. It was stable heat at 10$0^{\circ}C$ for 4 hours, but still had about 80% of residual activity after treatment at 10$0^{\circ}C$ for 5 hours. The elemental composition of the HR-EI mass spectrum at m/z 170.02 was estimated the empirical formula as $C_{7}$ $H_{6}$ $O_{5}$. $C_{10}$ $H_4$ $O_2$N$_1$, $C_{5}$ $H_4$ $O_4$N$_3$, $C_{8}$$H_2O$$_1$N$_4$. In antimicrobial test, no inhibition was observed against Gram-positive and negative bacteria. This compound was stronger than that of commercial antioxidant by DPPH test, such as BHT, BHC at the same concentration (20$\mu$g/ml).ml).

Effects of Mushroom Supplementation on Blood Glucose Concentration, Lipid Profile, and Antioxidant Enzyme Activities in Patients with Type 2 Diabetes Mellitus (표고버섯 보충이 제 2 형 당뇨병 환자의 혈당, 지질 대사 및 항산화 효소 활성에 미치는 영향)

  • The present study was carried out to evaluate the physiological effects of mushroom supplementation on blood glucose levels, lipid profile, and antioxidant enzyme activities in subjects with type 2 diabetes mellitus. Subjects were randomized into either a control group or mushroom supplementation group. Mushroom supplementation was provided 3 times a day for 4 weeks. We found that total dietary fiber intake was about 2.5 times higher (30.3 g vs. 12.3 g) in subjects receiving mushroom supplementation than in the control group. Two groups maintained the same food intake and amount of activity, exercise during the supplementation. We observed no difference in age, height, weight, BMI (body mass index), blood pressure between the groups. Nutrient intake did not differ appreciably between the two groups, except for fiber intake, during the supplementation. Fasting blood glucose levels and 2-hour postprandial blood glucose levels were significantly lower in those ingesting mushroom than in controls. Furthermore, the concentrations of low-density lipoprotein cholesterol were decreased significantly in the mushroom supplementation group. Small changes were observed in the concentration of total cholesterol, triglyceride, high-density lipoprotein cholesterol of those supplemented with mushroom, but these changes were not statistically significant. Activities of superoxide dismutase and catalase with mushroom supplementation were higher than in controls, but and glutathione peroxidase activity was not affected. The levels of thiobarbituric acid reactive substance of mushroom group were lower than control group, but were not significant. We conclude that addition of mushroom influences glycemic control and may be effective in lowering blood lipids and improving antioxidant enzyme activities. Accordingly, such effects may reduce risk factors for cardiovascular disease in patients with type 2 diabetes. However, to confirm these effects and to make dietary recommendations for patients with type 2 diabetes, further studies are necessary.

Antioxidant Enzyme Activities and Soil Properties of Healthy and Declining Abies koreana (Wils.) in Mt. Halla (한라산 구상나무 건전개체와 쇠약개체의 항산화효소활성 및 토양특성)

  • In order to examine the differences in antioxidant enzyme activities which represent defence mechanism to stressful environments, and soil properties between healthy and declining (or unhealthy) trees, we selected three sites, Witseorum, Youngsil and Sungpanak (Jindallebat). Antioxidant enzymes including Ascorbate peroxidase (APX) and Glutathione Reductase (GR), forest soil properties including soil texture, soil pH, organic matter, total nitrogen, available phosphate, cation exchange capacity, exchangeable cation content and nutrient contents in leaves of Abies koreana (Korean fir) trees were analyzed. There were no significant differences between healthy and declining trees in GR activity. However, seasonal difference in antioxidant enzyme activity was observed. GR activity was lower in June and August than that of September. Soil chemical and physical properties of each site showed a tendency that organic content, total nitrogen content, available phosphorus, cation exchange capacity and cation content were lower at the site of declining trees than the site of healthy trees.

Antioxidant Activity and Quality Characteristics of Soypaste Salad Dressing Stored at Two Different Temperatures (저장온도에 따른 된장 샐러드 드레싱의 항산화성 및 이화학적, 관능적 특성)

  • In this study, salad dressing was prepared with added soypaste and its quality characteristics were evaluated. In terms of nutrient composition, the soypaste dressing contained higher levels of protein, minerals, and vitamins, and fewer calories, as compared to commercial mayonnaise. In addition, sensory evaluations revealed that the soypaste dressing received higher scores for flavor, taste, viscosity, and over-all preference than the commercial mayonnaise. The viscosity and emulsion stability of the freshly made soypaste salad dressing were 2,400 cP and 80%, respectively. And during 8 weeks of storage at $5^{\circ}C$, the viscosity and emulsion stability values remained similar to those of freshly made dressing. With prolonged storage time, the Hunter's color b-value slightly increased, whereas the L- and a-values slightly decreased. In terms of antioxidant activity, DPPH radical scavenging activity and lipid peroxidation inhibition were 2- to 3-fold higher in the soypaste salad dressing as compared to the commercial mayonnaise. And the soypaste dressing's antioxidant activity increased according to the storage temperature and time. Total microbial numbers increased to 6.2 log CFU/mL in the soypaste dressing, but E. coli was not detected. Overall, the results suggest that soypaste salad dressing could be introduced as a commercial product.

Vitamin contents and antioxidant characteristics of red and gold kimchi cabbages (Brassica rapa. L. ssp. pekinensis)

  • Kimchi cabbage is widely consumed in Korea, with the popularity of this pickled vegetable dish growing internationally due to its health benefits. In this study, the physical (size, color), functional (antioxidant activity, total polyphenol, and flavonoid content), and nutritional (water- and fat-soluble vitamins) characteristics of two new kimchi cabbage varieties, namely red and gold kimchi cabbages (RKC and GKC, respectively), were analyzed and compared with those of the common kimchi cabbage (CKC). There were no significant differences in the thickness or length of the three kimchi cabbages, although RKC had the narrowest outer leaves among the three varieties (11.94 cm). Regarding chromaticity, yellowness was highest in GKC (29.86), whereas redness was highest in RKC (9.31). Furthermore, RKC had the highest recorded vitamin B6 and B9 (1,288.5 ㎍/100 g and 776.7 ㎍ dietary folate equivalent/100 g, respectively). On the other hand, the fat-soluble vitamins vitamin A (β-carotene) and K (Phylloquinone) were both highest in GKC (907.1 ㎍/100 g and 712.2 ㎍/100 g, respectively). Generally, all kimchi cabbage samples contained high levels of vitamin E (1.8-4.9 mg α-tocopherol equivalent/100 g). RKC attained the highest antioxidant activity and total polyphenol and total flavonoid contents among the three kimchi cabbages. These results show that gold and red kimchi cabbage can be used as raw materials in the food-processing industry.

Association between antioxidant vitamin intake and obesity among Korean women: using the Korea National Health and Nutrition Examination Survey 2007 ~ 2016 (우리나라 성인 여성의 항산화비타민 섭취량과 비만의 연관성 : 2007 ~ 2016년 국민 건강영양조사 자료를 이용하여)

  • Purpose: This study examined the association between the antioxidant vitamin intake and obesity in Korean women. Methods: Adult women aged ${\geq}19years$ who completed a health examination and nutrition survey from the Korea National Health and Nutrition Examination Survey between 2007 ~ 2016 were selected for the study (n = 30,425). A BMI ${\geq}25kg/m^2$ and waist circumference ${\geq}85cm$ were defined as obesity and abdominal obesity, respectively. The individual antioxidant vitamin intake was estimated by linking the antioxidant vitamin composition database of commonly consumed foods and the subjects' 24-hour recall food consumption data. Carotenoids, retinol, vitamin A (retinol activity equivalent), vitamin C, tocopherols, and vitamin E (${\alpha}$-tocopherol equivalent) were included in the analysis. Each vitamin intake was converted to the nutrient density per 1,000 kcal. Odds ratio (ORs) and 95% confidence interval (CI) for obesity according to each tertile of the nutrient density was obtained from multiple logistic regression adjusted for age, household income, education level, smoking, alcohol consumption, and physical activity. Results: The mean intake of ${\alpha}$-carotene, retinol, vitamin E, ${\alpha}$-tocopherol, and ${\gamma}$-tocopherol per 1,000 kcal was significantly lower in the obese group than in the normal group. A higher intake of lycopene was inversely associated with obesity (highest vs. lowest; OR = 0.89, 95% CI: 0.83-0.96) and abdominal obesity (highest vs. lowest; OR = 0.88, 95% CI: 0.81-0.95). Higher intakes of ${\alpha}$-carotene, total carotenoids, vitamin A, and ${\gamma}$-tocopherol also had a negative relationship with abdominal obesity. The antioxidant vitamin intakes from eggs, milk and dairy products, seasoning, and grains were significantly lower in the obese group than in the normal group. Conclusion: This study showed that the dietary intake of antioxidant vitamins was inversely associated with obesity and abdominal obesity among Korean women. Further study will be needed to examine the causal relationship between the antioxidant vitamin and obesity.
