This study investigated quality characteristics of commercial frozen chopped garlic. We collected six kinds of commercial frozen chopped garlic, four of which were domestic and the remaining two made in China. The moisture contents and drip loss of domestic frozen chopped garlic were significantly lower than those of Chinese garlic. Drip loss was positively correlated with moisture content (r=0.918, P<0.01). Total pyruvate contents of frozen chopped garlic ranged from $118.69{\pm}5.97{\sim}224.81{\pm}9.92{\mu}mol/g$ in domestic garlic and $75.27{\pm}5.91{\sim}79.35{\pm}1.79{\mu}mol/g$ in Chinese garlic. Allicin contents of frozen chopped garlic ranged from $8.91{\pm}0.34{\sim}13.09{\pm}0.35mg/g$ in domestic garlic and $5.91{\pm}0.08{\sim}6.05{\pm}0.27mg/g$ in Chinese garlic. Total thiosulfinate content of commercial frozen chopped garlic ranged from $0.60{\pm}0.07{\sim}1.33{\pm}0.12$ optical density/g. Total thiosulfinate content of commercial frozen chopped garlic was positively correlated with allicin content (r=0.892, P<0.01). Flavor patterns of commercial frozen chopped garlic measured by an electronic nose showed no difference between domestic and Chinese garlics.
The aim of this study was to screen lactic acid bacteria for the fermentation of garlic and to assess the increase in inhibitory activity of garlic fermented against antibiotic-resistant pathogens for use as an animal feed supplement. We screened 45 strains of lactobacillus for the fermentation of garlic. Of these strains, 23 showed similar growth rates with or without allicin. Cultures of the 23 strains were mixed with an equivalent amount of garlic juice and incubated overnight at $37^{\circ}C$. The three strains with the lowest pH values were Lactobacillus paracasei KCTC 3169, L5 strain, and L. reuteri SW. Garlic juice fermented by the L5 strain more strongly inhibited antibiotic-resistant pathogenic bacteria than L. paracasei KCTC 3169, L. reuteri SW, or garlic juice itself. By examining carbohydrate utilization, morphologic properties and 16S rRNA gene sequences, we identified the L5 strain as Pediococcus pentosaceus and deposited it in the name of P. pentosaceus KACC 91419 into the Korea Agricultural Culture Collection. To identify the antimicrobial compound from the garlic filtrate fermented by P. pentosaceus KACC 91419, we fractionated P. pentosaceus KACC 91419 culture on a C18 column and checked the antimicrobial activity of fractions A6 to A10. Only fraction A9 showed inhibitory activity on Staphylococcus aureus. Comparing the mass spectra of the fractions with and without antimicrobial activity, we observed a single dominant product ion (m/z 157.99) from the fraction showing antimicrobial activity. Its molecular mass (157.99) was 2 atomic mass units less than that of allicin (162.02). This suggests that allicin might be converted to its derivative, which has antimicrobial activity, during fermentation by P. pentosaceus KACC 91419.
Much research is conducted on the biological activities of medicinal herbs, traditional plants, and agricultural products, cultivated in Korea. This study focused on optimization of hot-water extraction methods for such products, by analyzing and monitoring extraction characteristics using a response surface methodology. We found that the total phenolics contents, electron-donating abilities, and nitrite-scavenging abilities of extracts were significantly affected both by the solvent used for extraction, and by the nature of the particular herb or plant under study. The extraction efficiencies of valuable ingredients such as alliin, allicin, and total thiosulfinate, were greatly affected by extraction temperature, but not by extraction time or the solvent used. We elicited a regression formula for each variable. We first entered the optimal values of all extraction conditions giving active ingredients into the model. Next, we entered the optimal values of all extraction conditions favoring the retention of valuable antioxidant characteristics. Finally, we entered processing factors into the model. Overall, the optimal extraction was at $80^{\circ}C$ for 3.5 hr with 8.5 ml of solvent/g of sample. The predicted values of each variable were similar to the actual values.
Recently, the market for ready-to-use vegetables has increased largely due to consumer demands, which led to the production of minimally-processed frozen crushed garlic products. This study was designed to determine the effect of electron beam irradiation (0-7 kGy) on microbial decontamination, bioactive compounds, and antimicrobial activities of frozen crushed garlic obtained from Korea and China. The microbial counts (total bacteria, yeasts & molds) were reduced from log 3-4 CFU/g to non-detectable levels as a result of irradiation at 4 kGy. Irradiation treatment at 4 kGy did not affect the amount of alliin, allicin, total pyruvate, and total thiosulfinate of crushed garlic, however, this dose induced insignificant changes in antibacterial activities against pathogenic bacteria including Bacillus subtilis, Staphylococcus aureus, Salmonella enteritidis, Vibrio parahaemolyticus, and Yersinia enterocolitica. Therefore, electron beam irradiation less than 4 kGy can be considered suitable to improve the microbial decontamination without altering the biological activity of frozen garlics.
In this study, we analyzed and compared the constituents of Southern ecotype garlic cultivars, Namdo and Daeseo garlic, cultivated in volcanic and non-volcanic ash soil in Jeju Island and compared the soil properties in these regions. The volcanic ash soil in which Namdo garlic grew had higher electrical conductivity and more available sulfur, whereas the volcanic ash soil in which Daeseo garlic was cultivated had a higher amount of organic matter and total nitrogen. Also, non-volcanic ash soil in which Namdo garlic was cultivated had higher levels of available phosphorous. Namdo garlic cultivated in volcanic ash soil had high levels of total soluble solids and a high allicin content and Daeseo garlic exhibited a higher reducing sugar content. Furthermore, amongst the macroelements found in garlic grown on Jeju Island, potassium was highest, followed by sulfur, magnesium, calcium, and sodium. Iron was the most abundant micronutrient, followed by zinc, manganese, and copper. These results will be of interest to farmers aiming to cultivate high-quality garlic.

Antioxidant compounds and activities of raw and cooked (blanching, pan-frying, soy sauce pickle, Kochugang pickle) domestic garlic stems were investigated. The contents of chlorophyll, carotenoid, vitamin C, phenolic compounds and allicin in raw and cooked garlic stems were measured. Various cooking process increased significantly chlorophyll and $\beta$-carotene contents of garlic stem, but decreased vitamin C, phenolic compounds and allicin contents (p<0.05). Antioxidant activities of methanol extracts from raw and cooked garlic stem such as electronic donating ability (EDA), superoxide dismutase (SOD)-like activity and nitrite scavenging ability (NSA) were compared. The antioxidant activities were found to have lowered in the order of raw> pan-frying> blanching> garlic stem soy sauce pickle> garlic stem Kochujang pickle. Antioxidant activities of cooked garlic stems were more than 65% of cooked garlic bulbs.
Garlic (Allium sativum) are an agronomically important genus because of their sulfur flavour components. The majority of the volatiles flavour principles are generated through the enzymatic hydrolysis of the non-volatile organosulfur compounds. However, these compounds may be possible sources of new novel bioacuve and therapeutic principles. Garlic has strong antioxidant activity, and epidemiological studies support the fad that diets rich of garlic may prevent some of the chronic diseases. The health cares of garlic likely arise from a wide variety of components, which may work synergistically. The chemical changes of garlic composition makes it plausible that a variation in processing can lead to acquisition of differential chemical compositions of garlic products. Especially highly unstable allicin can easily disappear during processing and are quickly transformed into a various organosulfur compounds. Various supplements of garlic, particularly aged garlic extract (AGE), are known to possess a promising antioxidant potential and are effective in prevention of chronic diseases because of the bioactive constituents. Although all of active ingredients of AGE are not elucidated, water-soluble components of AGE, including S-allylcysteine, S-allylmercaptane, steroid saponins, tetrahydro-${\beta}$-carboline derivatives, and fructosyl-arginine, appears to be associated with the pharmacological effects of AGE. Consequently, the allicin free garlic components such as S-allylcysteine, S-allylmercaptane, steroid saponins, tetrahydro-${\beta}$-carboline derivatives, and fructosyl-arginine can be applicable to standardization of the quality of commercial garlic products. This review provides an insight into garlic's biomarkers and presents evidence that they may either prevent or delay chronic disease associated with aging.
The effects of high pressure on alliinase and on flavor of garlic (Alliiium sativum L.) were investigated. After pressurized at 150 MPa, 300 MPa, and 500 MPa for 10 min, the activities of purified alliinase were reduced approximately 30%, 80%, and 100%, respectively, while the enzyme activities of pressurized garlic cloves were reduced 0%, 7%, and 100%, respectively. This indicated that the intact garlic has a protective effect against pressure-inactivation of alliinase. Alliinase was more effectively inactivated when high pressure treatment was carried out at high ($>40^{\circ}C$) or low temperature ($>10^{\circ}C$) than ambient temperature. Pressure treated garlic at 500 MPa had little pungency and sulfuryl odor compared to raw garlic indicating that high-pressure processing can be used to produce garlic without pungent flavor.
In this study, we determined the ingredient analysis of harvested garlic bulb and soil analysis of four garlic-cultivated regions in Jeju, being one of the major areas of Namdo garlic production. Soil pH and electric conductivity were 7.02 and 1.03 dS/m, respectively. Soil organic matter was 4.31%. The mineral elements (potassium, calcium, magnesium, sodium, iron, manganese, copper and zinc) of Namdo garlic cultivated soil were analyzed by ICP, and calcium was the most highly contained mineral with $14.67cmol_+/kg$ and in the decreasing order of magnesium ($2.25cmol_+/kg$), potassium ($1.51cmol_+/kg$). Soluble solid and total acidity were 7.60 oBrix and 0.49%, respectively. The mineral contents of garlic bulb were in order of potassium (12,728 ppm) > sulfur (7,778 ppm) > phosphorus (4,916 ppm) > magnesium (691 ppm) > calcium (359 ppm). The content of total phenolic, total flavonoid and reducing sugar were 71.14 mg GAE/100 g, 17.64 mg QE/100 g and 26.53 mg GE/g, respectively. Alliin and allicin were 8.78 mg/g and 2.10 mg/g, respectively. The Pearson's correlation coefficients between mineral contents of soil and garlic bulb are analyzed. Macronutrients of soil is correlated with macronutrients of garlic (positive) and micronutrients of garlic (negative) contents.
Exposure of freshly laid eggs of Exorista bombycis (Louis) to volatiles emanating from bulbs of Allium sativum L. for different durations resulted in signigicant reduction in their hatchability. Maggots hatched from the eggs exposured for 64 h and 72 h were failed to emerge from host larvae. The duration of development stages of E. bombycis was prolonged besides reduction in rate of pupation and adult emergence as the egg exposure period increased. The findings are interpreted as the chronic effects of volatiles of garlic affecting maggots following developmental defects sustainable during embryonic development. The known major chemical components of A. sativum such as allicin, thioacrolein, ajoune, 2-propene sulfenic acid, 2-propene thiol and propylene were presumed to be responsible for the adverse consequences reported in this paper.
