The Diversification of Alcoholic Drinks in Uymsikdimibang and its Social Meaning (『음식디미방』에 나타난 술의 다양성과 그 사회적 의미)

  • Uymsikdimibang(음식디미방) - a book written around 1670 and implying the methods of understanding the taste of food and drink - records many kinds of alcoholic drinks. it is obviously a practical problem to explain the process of brewing alcoholic drinks. However, if we intend to approach the alcoholic drinks on the practical aspect, we can not explain why many kinds of alcoholic drinks were brewed. I acknowledge only that it was true to have brewed rice wine easily on the basis of the increase of the production of rice and the two-crop farming system of rice and barley in a paddy field as well as, for many kinds of alcoholic drinks to have increased as a result of the development of brewage since the middle and second half of Chosun. It is not until we approach the alcoholic drinks of those days on the level of meaning, value, and symbol that we can get a correct answer as to why Uymsikdimibang records many kinds of alcoholic drinks. In the second half of Chosun, confucian ideology was firmly established in country village societies, the idea of clan rules was instituted, and patriarchal system was organized. Such a social atmosphere was to emphasize the practice of confucian moral principle such as performing religious service on one's ancestors and receiving a guest, and in the course of it, the alcoholic drinks were recognized as important materials all the more. It seems that the subdivision and elaborateness of the meaning of the alcoholic drinks were in progress. As a result, I think that the alcoholic drinks would vary in kind and be graded. From ancient times, the alcoholic drinks were men's favorite foods, and the significance of the authority and prestige given to the alcoholic drinks was increasingly promoted by the rise of the social position of men in the second half of Chosun under the influence of confucian ideology. Subsequently, the alcoholic drinks became symbols which represented even the family's tradition and dignity. Therefore, men born of the nobility(Yangban) tried to brew the various and dignified alcoholic drinks relatively. Through the brewage such as this, they endeavored to maintain their privilege. I think that the diversification of alcoholic drinks was developed in the process of a series of social-institutional change.

The Characteristics of the Participants of Alcoholics Anonymous (단주동맹 참여자의 특성)

  • The purpose of this study is to evaluate the demographic characteristics, alcohol-related characteristics and personality trends in the participants of Alcoholics Anonymous. We compared the 33 participants of Alcoholics Anonymous maintaining abstinence at least over 6 months with 35 hospitalized alcoholic patients who have never attended Alcoholics Anonymous and 32 normal controls. The personality trend was measured by Catell's 16 Personality Factors Questionnaire. -Korean Version. The results were as follows: 1) In the demographic data, the participants of Alcoholics Anonymous were mainly 40's, graduated from high school, married, unemployed, middle class in economic state, first or second sons. 2) In alcohol related characteristics, age of first drinking was mainly distributed from 15 to 19 years-old. The most common psychosocial and environmental problem as precipitating factor of alcohol consumption was the problem with primary supper group and the second one was occupational. Most of them drank everyday, and admitted one time. 3) In the first stratum sources traits, the participants of Alcoholics Anonymous demonstrated significantly higher score than hospitalized alcoholic Patients, but lower than normal control in C-factor(stableness). They demonstrated significantly higher score than hospitalized alcoholic patients and normal controls in O-factor(Guilt-proness) and demonstrated significantly higher score than hospitalized alcoholic patients in Q3-factor(self-control). 4) In the second stratum sources traits, they demonstrated significantly higher score than hospitalized alcoholic patients in EXT-factor(extroversions), and lower score than hospitalized alcoholic patients and normal controls in IND-factor(independence).

Diagnostic Process Analysis of Prescribing Injinho-tang in Non Alcohoic Fatty Liver Disease Using by AHP (AHP 기법을 이용한 비알콜성 지방간에 인진호탕(茵蔯蒿湯) 선택과정 분석)

  • Objectives: Lately, non alcoholic fatty liver patients are increasing rapidly and the average age of patients are getting younger. Non alcoholic fatty liver often represents asymptomatic and korean pattern diagnosis is difficult to implement without symptoms. This study aimed to analyze interrelationship between non alcoholic fatty liver disease and Injinho-tang. Methods The AHP is a systematic procedure for analyzing the elements of any problem hierarchically. Based on survey of expertise, as series of pairwise comparison judgements is performed to evaluate the various elements in the hierarchy. We are expected to use the AHP analysis that would apply to oriental doctor's diagnostic process analysis. Results and conclusion Non-alcoholic fatty liver disease induced complex causes of the metabolic syndrome. Injinho-tang has been widely used disease that causes jaundice and liver biliary disease. According to AHP analysis, LFT is the most important facor in choosing Injinho-tang on non alcoholic fatty liver disease. BMI and body composition by bioelectrical impedance analysis are the next important factors. Personal hot temper also gives a big impact on choicing Injinho-tang on non alcoholic fatty liver disease.

Comprehensive Laboratory Analysis of Korean Acute Alcoholic Intoxication Patients Reveals the Need for a National Hepatitis B Virus Vaccination Program in Korea

  • Background: Acute alcoholic intoxication patients (AAIP) are a common public health problem. The aim of this study was to perform a comprehensive laboratory analysis for these patients to investigate the co-morbid medical problem. Methods: We retrospectively reviewed laboratory findings of AAIP who were transferred to the emergency department (ED) from January 2017 to June 2017. Results: A total of 160 male patients were enrolled. Sixteen patients (16/160, 10.0%) and three patients (3/160, 1.9%) had macrocytic anemia and microcytic anemia, respectively. A total of 33 patients (33/160, 20.6%) showed thrombocytopenia ($<150{\times}10^9/L$). Twelve patients (12/159, 7.5%) showed low serum albumin level (<3.5 g/dL). Three patients (3/160, 1.9%) had chronic kidney disease stages 3-4 based on estimated glomerular filtration rate. Six patients (6/27, 22.2%) had high hemoglobin A1c (HbA1c) level (>7.0%). Positive rates of hepatitis B surface antigen and antiHBs antibody (anti-HBs Ab) were 3.5% (5/141) and 49.0% (68/141), respectively. Conclusion: Patients with AAIP who were transferred to ED had various laboratory abnormalities (anemia, thrombocytopenia, high HbA1c). They had low positive rate of anti-HBs Ab. This might be a public health problem, suggesting the need of hepatitis B virus vaccination program for AAIP. Our data suggest the need of further nationwide studies.

A Case Study on the Family Therapy to Remarried Wife with Alcoholic Problem (알코올 중독문제를 가진 재혼한 부인에 대한 가족치료사례 연구)

  • This study investigated the problems of remarried wife with alcoholic problem. Specifically, this study regarded the wife's alcoholic problem as the problems of dysfunctional interaction among family members rather than an individual problem. The study had three purposes as follows. First, what were the interactions sustaining the conflict of remarried family? Second, what were the characteristics of remarried family relating to family conflict? Third, what were the interventions of family therapy to resolve the conflicts of remarried family? The total family counseling was 9 sessions, which included individual, couple, and family counseling. The study used constant comparative analysis by using open coding method to find the factors relating interactions sustaining the conflict of remarried family, the characteristics of remarried family relating to family conflict, and the interventions of family therapy to resolve the conflicts of remarried family. Also, the study used Miles and Huberman's matrix and graphical network display to show the interaction of family members. The study found intriguing factors, counteracting factors, relationship level, and relational elements to wife's alcoholic problems among family members. The study revealed husband's rigid family rules, husband's execution of patriarchal authority, husband's pursuit of family identity, and husband's emphasis of union among family members as the characteristics of remarried family. On the other hand, the study found the reinforcement of spousal subsystem, the pursuit of change in communication pattern between husband and wife, the amelioration of rigid family rules, and the acceptance of differences among family members as the intervention of family therapy to resolve the conflicts of remarried family.

  • It is the problem point of stability for this study to produce cosmetics and to occur in the circulation process, and specially in a case of alcoholic toilet water the precipitation materials to float on content materials has study on the solubility of perfume, and it has practiced in order to examine the problem point whether the raw materials of plastic vessel is or not harmful in content materials. In testing result, A study on stability of alcoholic toilet water is above all the precipitation materials which floats in content materials, and It is appeared by combination ratio to the raw materials of perfume, ethanol, solubilizer and refining water etcs, and in second the alkali degree which has gushed out of glass vessel can understand the thing that the change of PH is largely increased following to the passage of time, and in third the harmful component of content materials out of raw material in plastics vessel must certainly consider a stability and a safety in quality control of products.

  • More and more children are becoming obese and overweight due to several factors that include a high energy density in the diet (a high fat intake) and low energy expenditure. Consequently childhood obesity is becoming a significant health problem. Fat tissue releases many cytokines such as resistin, tumor necrosis factor-${\alpha}$, leptin, interleukin-6. These adipocytokines induce obesity-related insulin resistance. Insulin resistance is a key component of obesity-related metabolic problems such as hypertension, type 2 diabetes mellitus, dyslipidemia, non-alcoholic steatohepatitis, acanthosis nigricans and polycystic ovarian syndrome. This review article focused on insulin resistance and its related metabolic diseases.

Investigation of Blood Betatrophin Levels in Obese Children with Non-Alcoholic Fatty Liver Disease

  • Purpose: The prevalence of obesity has significantly increased among children and adolescents worldwide and is becoming an important health care problem in parallel with the increased prevalence of obesity pediatric non-alcoholic fatty liver disease. Betatrophin is a newly define hormone that is commonly secreted by liver and plays role in glucose tolerance. This study aimed to investigate the relationship between serum betatrophin levels and non-alcoholic fatty liver disease in obese children. Methods: The study included 40 obese children with a body mass index (BMI) above 95th centile, and 35 non-obese subjects with a BMI 3-85th centile, whose age and gender were similar to those of the patient group. For the evaluation of metabolic parameters fasting serum glucose, insulin, alanine aminotransferase, aspartate aminotransferase, lipid profile and serum betatrophin levels were measured. Total cholesterol: high-density lipoprotein cholesterol and low-density lipoprotein cholesterol: high-density lipoprotein cholesterol ratios were calculated as "atherogenic indices." Results: Serum betatrophin levels of the obese subjects were similar to that of non-obese subjects (p=0.90). Betatrophin levels were not correlated with the metabolic parameters. Conclusion: In the present study, levels of betatrophin are not different between obese and insulin resistant children and non-obese subjects, and they are not correlated with atherogenic indices. To elucidate the exact role of betatrophin in obesity, further studies are required to identify the betatrophin receptor and/or other possible cofactors.

Cordyceps militaris alleviates non-alcoholic fatty liver disease in ob/ob mice

  • BACKGROUND/OBJECTIVES: Non-alcoholic fatty liver disease (NAFLD) is becoming an important public health problem as metabolic syndrome and type 2 diabetes have become epidemic. In this study we investigated the protective effect of Cordyceps militaris (C. militaris) against NAFLD in an obese mouse model. MATERIALS/METHODS: Four-week-old male ob/ob mice were fed an AIN-93G diet or a diet containing 1% C. militaris water extract for 10 weeks after 1 week of adaptation. Serum glucose, insulin, free fatty acid (FFA), alanine transaminase (ALT), and proinflammatory cytokines were measured. Hepatic levels of lipids, glutathione (GSH), and lipid peroxide were determined. RESULTS: Consumption of C. militaris significantly decreased serum glucose, as well as homeostasis model assessment for insulin resistance (HOMA-IR), in ob/ob mice. In addition to lowering serum FFA levels, C. militaris also significantly decreased hepatic total lipids and triglyceride contents. Serum ALT activities and tumor necrosis factor-${\alpha}$ (TNF-${\alpha}$) and interleukin-6 (IL-6) levels were reduced by C. militaris. Consumption of C. militaris increased hepatic GSH and reduced lipid peroxide levels. CONCLUSIONS: These results indicate that C. militaris can exert protective effects against development of NAFLD, partly by reducing inflammatory cytokines and improving hepatic antioxidant status in ob/ob mice.

탁주 발효에 대한 Nisin의 이용

  • Takju is a traditional alcoholic beverage that has been prepared by fermenting the cooked rice and Nuruk (Korean-style bran koji). During fermentation. bacterial contamination is a problem which inhibits the growth of yeast and thus lowers the ethanol production from starch of rice, and causes souring. Major contaminants were known to be gram-positive acid producers at the early stage of fermentation. This problem would be solved if the contaminated bacteria could be controlled. Nisin, a GRAS-grade preservative, was added at the level of 500 iu/g as it retards the growth of the gram-positive bacteria. It was possible to control acid and ethanol production during fermentation. This process increased the ethanol production by 2 % comparing with control.
