Physicochemical properties and mineral composition of seaweed salts prepared by incineration and osmotic dehydration methods were determined. As the incineration temperature increased, yield of seaweed salts, insoluble solids, pH, alkalinity, and oxidation-reduction potential (ORP) decreased. Alkalinity of salt prepared with sea tangle was higher than that of sea mustard. ORP decreased by incineration above $700^{\circ}C$, and was lower in salt with sea tangle. As incineration temperature increased, amounts of K and Ca in seaweed salt increased, whereas that of Mg decreased. Potassium and Ca contents of seaweed salt increased remarkably compared with those of common salt. Potassium content of sea tangle salt was higher than that of sea mustard. As incineration time increased, yield of seaweed salts, insoluble solid content, and pH decreased, whereas ORP of the salt increased. Potassium content of seaweed salt with incineration time, while Ca and Na contents decreased after incineration of 8 and 4 hr, respectively. Yield of seaweed salt by osmotic dehydration increased as immersion time in sea water increased. pH of salt from sea mustard was higher than that of sea tangle. ORP of seaweed salt dried three times was -128.8 mV, significantly lower than that of salt prepared by incineration method. As sea water immersion time increased, Mg content of seaweed salt increased significantly, while Ca content decreased. Potassium content of seaweed salt was higher in sea tangle salt. In case of salt prepared by incineration of residuals, pH increased with immersion time but ORP decreased.
Two experiments were conducted to investigate the effect of betaine on egg production, lipid metabolism, and osmoregulation in 18-to 42-week-old ISA Brown laying hens. In experiment 1, three hundred and sixty one hens were fed a com-soy basal diet contailing 16% crude protein (CP), 2800 kcal/kg metabolizable energy (ME), 0.33% methionine, and 0, 300, 600, or 1200 mg betaine per kg diet. Egg production, egg weight, feed consumption, feed conversion, and egg quality were measured every eight weeks. Betaine concentration in live and egg were determined along with serum cholesterol, abdominal fat, total serum protein and albumin levels. In experiment 2, twenty thirty-three-week-old laying hens were fed the same diets as those used in experiment 1 in individual cages and the amount of feed and water consumption were measured for two weeks. At the end of experiment 2, all birds were killed to determine blood plasma and ileal osmopressure, arginine vasotocin (AVT), and liver moisture content. In experiment 1, egg production between the treatments during the first eight weeks were not different, whereas the significant increment of egg production were noticed in the birds fed more than 600 ppm betaine after reaching the peak egg production stage (p<0.05). The egg weight was reduced significantly by the betaine supplementation for the first 8 weeks (p<0.05). Feed conversion tended to improve by betaine supplement. Egg quality was not enhanced by betaine supplementation. Liver betaine level increased with betaine feeding compared to the control but betaine concentration in eggs decreased with betaine supplementation. Betaine supplementation elevated the level of serum total cholesterol and triglyeerides compared to the control. Abdominal fat content was increased by betaine supplementation, whereas liver fat content decreased. In experiment 2, water consumption significantly increased in hens fed diets containing 300 and 600 mg betaine/kg (p<0.05) and osmotic pressure of ileal digesta increased with betaine supplement. Liver moisture content was not affected by betaine, but AVT increased in hens fed betaine. The overal results suggested the possibility of using betaine as a feed additives in the laying hens beacuse of its positive contribution to improving egg production and other metabolic parameters related to lipid metabolism.
The effects of organic material application on soil physical properties were reviewed in relation to soil productivity. The organic matter contents and soil physical properties of the cultivated land in Korea were summarized and the effects of organic matter were compared in terms of land uses and soil types. Soil physical properties related to crop yield potential, such as soil aggregation, permeability, water holding capacity, erodibility, and compactibility, were used in evaluating the effects of organic materials as a soil physical amendment. The benefical effects of organic matter addition on soil physical conditions include (1) better aeration and increased infiltration in silty and clayey soils, (2) increased water holding capacity and moisture availability in sandy soils, (3) decreased soil erodibility, and (4) increased resistance to compaction. It is, therefore, concluded that continuous application of organic materials could greatly improve the various soil physical properties and favor the growth and yield of crops. A high rate of organic matter addition could contribute to reducing not only the soil erosion on sloping land, but also the possible detrimental effect of farm mechanization. In general, the effects of organic matter on soil physical improvement were estimated to be much higher in upland than in paddy. Organic matter would have a more pronounced effect on low productive lands such as heavy clayey or sandy soils and newly reclaimed soil. The optimum level of soil organic matter content was estimated to be about 3.0 to 3.5% for the best soil physical condition. Since the organic matter contents of the cultivated lands in Korea are much lower than optimum level, it would be desiable to use more organic materials to soil for the increase of soil productivity, continuation of stabilized high productivity and soil erosion control.

Similar to the $^{42}K$ uptake, $^{86}Rb$ uptake by the roots of Hordeum distichum grown in the hydroponic culture was negatively correlated with the concentration of K supplied previously, showing that $^{86}Rb$ can be used for the K-bioassay. $^{86}Rb$ having longer half life (18.86 day) than $^{42}K$ (12.36 hr) allowed the use of larger number of root samples. $^{86}Rb$ uptake of 3 years old Citrus unshiu Marc. grown in water culture decreased drastically with the increase of K concentration of the culture solution, thus demonstrating that the nutrition status of K for citrus trees can be diagnosed by K-bioassay using $^{86}Rb$ tracer. $^{86}Rb$ uptake by the excised roots of Hordeum distichum grown in the pot with different K fertilizations was well correlated with the exchangeable K in soil. The amount of exchangeable K in soil for the optimal plant growth can be determined by its relationship. $^{42}K$ and $^{86}Rb-uptake$ by the Hordeum distichum roots were markedly inhibited by $5{\times}10^{-3}\; M$ KCN in the bioassay solution, indicating that uptake is energy-dependent. There was no significant relationship between K content in citrus leaves and K concentration in the water-culture medium. It is concluded that K-bioassay is a potentially useful tool for determining of K requirement in citrus trees.
Sweetpotato shoot tops (leaves, tips and petioles) are known to be very useful parts as vegetables because of their high nutritive values and great biomass yield. In this study, the phenolic compound contents, antibacterial activity, mutagenic activity, and antimutagenic activity were investigated in sweetpotato tips that were 10-15cm of shoot top including stems, petioles and tender leaves after sprout of storage roots. The study was done by extracting sweetpotato tips with 80% ethanol and the ethanol fraction was re-extracted with hexane, chloroform, ethyl acetate, butanol and water. In ethyl acetate and butanol fractions, total phenolic compounds contained 95. 6mg/g extract and 69.3 mg/g extract, respectively, The antibacterial activity was measured using the paper disk method with concentrations of 1, 2, 5 and 10 mg/disk of butanol and ethyl acetate fractions against L. monocytogenes and S. Typhimurium strains. Higher doses of solvent extracts showed the higher antibacterial activities. In addition, 5, 10 and 20 mg/mL of the extracts were tested to determine the antibacterial activity in liquid culture. The sweetpotato leaf extract by ethyl acetate showed 1 log reduction compared to control after 24 hrs on Listeria monocytogenes, but 20 mg/ml of butanol extract completely inhibited the growth of the pathogen after 12 hrs. The extracts from ethyl acetate or butanol on Salmonella Typhimurium did less than 1 log reduction during cultivation compared to control. The numbers of S. Typhimirium TA98 and TA100 revertant colonies were 29-33 and 159-188 CFU/plate, respectively, indicating that solvent extracts were no mutagenic activity. The antimutagenic test was performed by adding direct mutagen 2-NF and MMS, and butanol and ethyl acetate showed antimutagenic effect. Thus, this study showed that sweetpotato tips had high phenolic contents and both antimicrobiol and antimutagenic properties. Sweetpotato tips would be good nutritive source because of their high nutrient content without any toxicity in consuming.
This study was conducted to elucidate the characteristics of equine meat traits and to evaluate the utilization of dried-citrus pulp abundantly produced in Jeju Island as feed ingredient in the diet of finished meat horses. Treatment groups consisted of wheat bran (A) and the dried-pellet mixture of citrus pulp (20%) and wheat bran (80%) (B). Feeding of agricultural by-products were 2 times in a day at the level of 1.5% of body weights. Water and dried-grass forage was not restricted. The average daily gain was similar in both groups. Feed conversion of treatment B showed lower level than that of A. Carcass rate of B was relatively lower than that of A, but meat yield grade of B was higher than that of A. For meat color traits, $L^*$ of B was lighter than that of A, and $b^*$ of group B was lower than that of group A. From the analysis of physical characteristics of equine meats, shearing force had decreased in the treatment B but the levels of drip loss and water holding cavity had increased in the treatment B compared to A. The level of crude fat is lower in the treatment B than the treatment A. For the mineral contents, the treatment B showed higher levels of Ca, K, Mg, Cu and Mn than that of A. For the fatty acid contents, the treatment B showed increased levels of stearic acid, oleic acid, eicosenoic acid, and arachidonic acid compared to A. Consequently, these results suggested that dried-citrus pulp might be utilized as replacement material for equine forage. The effect of Artemisia argyi H. under liquid-state fermentation by Monascus purpureus (AAFM) on cognitive impairments has been studied in a mice model of diabetes-associated cognitive decline induced by streptozotocin (STZ). C57BL/6 mice (9 weeks of age, male) were separated into four groups: a normal control, STZ-induced diabetic mouse group (STZ group), Artemisia argyi H. (AA) 10 group (diabetic mouse+AA 10 mg/kg/day), AAFM 10 group (diabetic mouse+AAFM 10 mg/kg/day). Administration of AA and AAFM significantly improved glucose tolerance, as shown by the intraperitoneal glucose tolerance test (IPGTT), and ameliorated cognitive deficit, as shown by the behavioral tests including passive avoidance, Morris water maze, and Y-maze tests. After behavioral tests, the cholinergic system was examined by assessment of the acetylcholine (ACh) level and acetylcholinesterase (AChE) inhibitory activity, and the antioxidant system was also assessed by measuring malondialdehyde (MDA) and superoxide dismutase (SOD) levels in the brain and liver.

The purpose of this study is to rapidly produce a sauce using paprika powder in a short period. The test results of moisture content, pH, salinity, color, texture, reducing sugar, amino-nitrogen, and sensory testing are as follows. The water content of sauce (CON) using paprika powder was 26.31%, whereas 31.58% in SP1, 31.40% in SP2, 30.84% in SP3, and 24.08% in SP4. pH value increased with increasing paprika powder (P<0.001). Salinity ranged from 4.87% to 5.22%, which showed a lower value than that of a former study. In terms of color, SP3 showed the highest L value (28.01), and CON showed the highest a and b values (P<0.001). In textural properties, CON showed the highest hardness of 205.50, whereas SP3 showed the lowest hardness of 106.53. Contrary to the results for hardenss (ED:?) CON showed the lowest adhesiveness which was -704.17, SP3 showed the highest value which was -348.93. SP1, and SP2 showed the highest reducing sugar value (P<0.001), and SP1 and SP4 showed the highest and lowest values of amino-nitrogen, respectively (P<0.001). In the results of sensory tesating, SP2 showed the greatest appearance and flavor, but was not found to be significantly different to any of the others. CON, SP1 and SP2 showed the best texture(P<0.05) and SP2 showed the best interest among them with no significant difference. According to these results, SP2 made with 200g of paprika powder, 150g of soy powder, 600g of grain syrup, 500g of water, and 75g of salt showed the highest sensory interest value and was determined to be the most suitable for making the paprika sauce.

Sumaeyaksuk (Artemisia Argyi H.) is one of the original mugwort spices in Namhae-gun, Korea. This study was conducted to investigate the physicochemical characteristics and biological activities of water extracts from dried and aging Sumaeyaksuk samples during the May-July harvest season. One (SD) was dried under shade for 12 days, while the other (AD) was aged for 7 days at $60^{\circ}C$ and then roasted for 220 minutes at over $90^{\circ}C$. Glucose was solely detected as a free sugar, and its SD and AD content were $0.42{\pm}0.02{\sim}0.43{\pm}0.01g/100g$, and $0.41{\pm}0.02{\sim}0.47{\pm}0.04g/100g$, respectively. The total phenolic contents of SD were $1.85{\pm}0.09{\sim}3.45{\pm}0.14g/100g$, which were higher than those of AD ($1.29{\pm}0.08{\sim}2.90{\pm}0.08g/100g$). The antioxidant activities of the water extract powder from each Sumaeyaksuk were assessed by different in vitro methods, such as the DPPH and ABTS radical scavenging activity, FRAP, and decoloration prevention activity in ${\beta}$-carotene linoleic system. The DPPH and ABTS radical scavenging activity of AD extract were significantly higher than those of the SD extract (p<0.05). Moreover, at the concentrations of 31.25, 62.5, 125, 250, $500{\mu}g/mL$, the FRAP of the SD-May extract showed $1.67{\pm}0.58{\sim}489.90{\pm}7.59{\mu}M$, while the AD-July extract showed $9.70{\pm}1.07{\sim}590.40{\pm}7.45{\mu}M$. The ${\beta}$-carotene decoloration prevention activity of the SD-May and AD-July extracts were $25.53{\pm}2.85{\sim}81.43{\pm}2.56%$, $35.98{\pm}2.22{\sim}79.00{\pm}1.42%$, respectively. Based on these results, the extracts of SD-May and AD-July were promising as a functional food source due to their high antioxidant activites.
The aim of this study was to determine the residual amounts of PAHs in environmental samples such as crop, soil and water collected from paddy, upland fields and forestlands near industrial zone and/or a thermal power plant in South Korea. All of the samples were analyzed by GC-mass spectrometer. The average contents of total PAHs in soil samples were 140.2 ${\mu}g\;kg^{-1}$ and the range was from 4.3 to $662.9{\mu}g\;kg^{-1}$. The detection of benzo(a)anthracene, chrysene, benzo(b)fluoranthene, benzo(k)fluoranthene, benzo(a)pyrene and dibenzo(a,h) anthracene which have strong carcinogenecity was ranged from 14.2 to 167.8 ${\mu}g\;kg^{-1}$. The residual amounts and detection frequency of PAHs in soil samples from the iron and heavy industrial areas near Pohang and Busan were 3-folds more than those of the other areas. Amounts of PAHs in upland soil samples was 1.5 folds higher than those of paddy soil samples, suggesting that it may be related to the content of organic matter in soil. The average contents of total PAHs in crop samples were 9.7 ${\mu}g\;kg^{-1}$ which ranged from 4.5 to 52.2 ${\mu}g\;kg^{-1}$. However, the residual amounts of PAHs in water samples were not detected. These results showed that soils and crops were slightly contaminated with PAHs. Therefore, the investigation should be continued for evaluating a safety or risk assessment through expansion of regions and crops.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
