Information about the processing method of additional starter can be found in the 39 traditional kinds of classical literature. The traditional of Yakju, was analyzed and classified according to classical literature consist of 105 items relating to starters on those compounded alcoholics. 105 selected items were distributed among 5 groups of alcoholic beverages: processing methods of starter, additional starters for sweet and alcoholics, additional starters for Kwahaju, and those additional function for quality and quantity to the periodical conversion of the processing method through four centuries.
The use of yeast assist kefir fermentation, but also can cause food spoilage if uncontrolled. Hence, in this study, the microbial composition of an existing commercial kefir starter was modified to produce a functional starter, where Lactobacillus acidophilus KCNU and Lactobacillus brevis Bmb6 were used to replace yeast in the original starter to produce non-yeast kefir-like fermented milk. The functional starter containing L. acidophilus KCNU and L. brevis Bmb6 demonstrated excellent stability with 1010 CFU/g of total viable cells throughout the 12 weeks low-temperature storage. The newly developed functional starter also displayed a similar fermentation efficacy as the yeast-containing control starter, by completing the milk fermentation within 12 h, with a comparable total number of viable cells (108 CFU/mL) in the final products, as in control. Sensory evaluation revealed that the functional starter-fermented milk highly resembled the flavor of the control kefir, with enhanced sourness. Furthermore, oral administration of functional starter-fermented milk significantly improved the disease activity index score by preventing drastic weight-loss and further deterioration of disease symptoms in DSS-induced mice. Altogether, L. acidophilus KCNU and L. brevis Bmb6 have successfully replaced yeast in a commercial starter pack to produce a kefir-like fermented milk beverage with additional health benefits. The outcome of this study provides an insight that the specific role of yeast in the fermentation process could be replaced with suitable probiotic candidates.
A low-cost electronic starter is developed to decrease ignition failure significantly through successive starting trial and to prevent overheating at the end of fluorescent lamp life. Moreover, it has an additional feature of being capable of ignition at the recovered lamp voltage without any circuit correction. The developed electronic starter is consisted of four parts - a half wave rectifier circuit, a timer circuit, a switching circuit and a protection circuit. The protection circuit made up of a transistor and capacitors utilizing capacitive characteristics, carries out successive starting trial and end-of-life protection. Lamp ignition is completed within 0.5 seconds with taking advantage of a high preheating current from the half-wave rectifier circuit. Nevertheless, its performance is proved to be very excellent through a standard switching endurance test.
In Western countries, kimchi, the Korean traditional fermented cabbage, is considered to be a healthy. However, it is one of the main sources of the high sodium content of the Korean diet. In order to decrease the sodium content, we manufactured a low-sodium kimchi (LK, salinity 1.0%) and 4 additional low-sodium kimchi starters in which each of 4 lactic acid bacteria (Lb. sakei 1, Lb. sakei 2, Lb. palntarum and W. koreensis) were added. The LKL1 to LKL4 samples were prepared by adding 4 single LAB starters, each with an inoculum size of $10^6CFU/g$, when the cabbage was mixed with kimchi sauce. The kimchi starters were fermented at $10^{\circ}C$ until reaching 0.5% acidity, and then stored at $-1.5^{\circ}C$ until reaching 0.75% acidity. The pH and acidity of the starter kimchi changed more rapidly in the early phase of fermentation (up to 0.75% acidity) than control low-sodium kimchi. After the acidity of the kimchi starters reached 0.75% it remained constant. As the fermentation progressed, the total aerobic and lactic acid bacteria concentrations in the kimchi starter with added Lb. sakei 1 were the same as in the control low-sodium kimchi. The low-sodium kimchi fermentation of the kimchi starter with added Lb. palntarum progressed differently due to a difference in acid resistance. The kimchi starter with added Lb. sakei 2 had an overall liking score that was slightly higher than that of the control low-sodium kimchi due to a lower off-flavor.
Effect of molasses addition to complete calf starter (CCS) and the following pellet processing was evaluated with 12 Holstein-Friesian (HF) calves (7-14 d old with $42\;{\pm}\;5.5\;kg$ average BW), with 6 calves (replicate) per treatment. The CCS was formulated with 65% concentrate calf starter and 35% local corn fodder. On the CCS, molasses was added either 5% (M5) or 10% (M10), then the mixture was pelleted and fed to the calves for 7 weeks. Molasses addition, regardless of addition level, improved (p<0.05) both the durability and hardness of the pellet which contains 35% of high fibrous local corn fodder. Upon feeding to calves, the feed intake and daily gain were numerically higher with 5% molasses addition compared to 10% molasses addition. Blood VFA level was remarkably higher (p<0.01) in calves fed M10 than calves fed M5. There was no difference (p>0.05) in blood glucose level between M5 and M10. Length and number of papillae were not different (p>0.05) by the addition levels of molasses. However, there was one exception in number of papillae at caudo-dorsal sac which were higher (p<0.05) number in M5 than M10 calves. Considering the quality of CCS pellet, calf performance and rumen development, there was no additional benefit of 10% molasses addition compared to 5%. From the results of this study, 5% molasses addition could be recommended for local farmer when they utilize local corn fodder to make CCS for HF calves in Indonesia.
The diversity and composition of yeast populations may greatly impact wine quality. This study investigated the yeast microbiota in two different types of wine fermentations: direct inoculation of a commercial starter versus pied de cuve method at an industrial scale. The pied de cuve fermentation entailed growth of the commercial inoculum used in the direct inoculation fermentation for further inoculation of additional fermentations. Yeast isolates were collected from different stages of wine fermentation and identified to the species level using Wallersterin Laboratory nutrient (WLN) agar followed by analysis of the 26S rDNA D1/D2 domain. Genetic characteristics of the Saccharomyces cerevisiae strains were assessed by a rapid PCR-based method, relying on the amplification of interdelta sequences. A total of 412 yeast colonies were obtained from all fermentations and eight different WL morphotypes were observed. Non-Saccharomyces yeast mainly appeared in the grape must and at the early stages of wine fermentation. S. cerevisiae was the dominant yeast species using both fermentation techniques. Seven distinguishing interdelta sequence patterns were found among S. cerevisiae strains, and the inoculated commercial starter, AWRI 796, dominated all stages in both direct inoculation and pied de cuve fermentations. This study revealed that S. cerevisiae was the dominant species and an inoculated starter could dominate fermentations with the pied de cuve method under controlled conditions.

As a trial for the development of a new starter culture for yogurt products, more than two hundred lactic acid bacteria strains were isolated from raw milk and healthy human feces. The strains that showed excellent growth and acid production ability in the 10% skim milk media were selected and identified as Lactobacillus casei through the API carbohydrate fermentation pattern and 16S rDNA sequence analysis. L. casei CU2604 was further investigated for its physiological characteristics as a starter culture compared with a commercial strain. The CU2604 strain showed good acid production and growth characteristics in milk, which were comparable to those of the L. casei Shirota strain. Despite the fact that both these strains displayed the same sugar fermenting pattern and PFGE band pattern, and had similar growth characteristic in milk, L. casei CU2604 exhibited different fatty acid composition in the cell wall, showed more tolerance to bile and to pH, and presented better growth inhibition activity against pathogenic bacteria. Based on these results, the L. casei CU2604 strain holds great promise for use as a novel and efficient starter culture in the production of yogurt. Additional studies on the probiotic characteristics of this strain are currently being conducted.
The volatile flavor components in mash of nonglutinous rice Takju brewed with or without addition of the starter were determined by GC and GC-MS using polar column. Various kinds of volatile components including alcohols(10), esters(9), organic acids(2) and aldehydes(7) were found in mash of nonglutinous rice Takjus. At the beginning stage of fermentation, 3 to 7 volatile flavor components were detected. The number of volatile flavor components were increased to 26 of to 28 after 16 days fermentation. Early in the brewing, just 3 kinds of flavor components including ethyl acetate, ${\beta}-phenylethyl$ acetate and acetic acid were detected in mash of nonglutinous rice Takju without the addition of the starter, when starter is added additional compounds of alcohol including ethanol were detected, which is suggested to be the effect of flavors originated from the starter. The common flavor compounds through the entire process of fermentation in mash of nonglutinous rice Takju were ethyl acetate, ${\beta}-phenylethyl$ acetate and acetic acid. The relative amount(peak area %) of flavor components were changed with the fermentation period, but the major volatile flavor components were ethyl alcohol, iso-amyl alcohol, hexenyl alcohol, ethyl acetate, ${\beta}-phenylethyl$ acetate and ${\beta}-phenylethyl$ alcohol. The relative amount(peak area %) of ethyl alcohol was the highest in mash of nonglutinous rice Takju with addition of starter. When the starter was not added in the mash of nonglutinous rice Takju, any alcoholic components were not detected in the early stage of fermentation. But the percent of peak area hexenyl alcohol was the highest after 16 days fermentation. Especially few sorts of ester were detected in mash of nonglutious rice Takju without addition of starter by 3 days fermentation.

Several advantages of larger diameter evaporators observed experimentally in startup are explained and quantified by the model. This analysis is appropriate for standard capillary pumped loop evaporators during a fully-flooded startup as well as starter pump designs and loop heat pipes.

The results of the analysis allow for the determination of applied power levels fur which nucleation is likely to occur only within the vapor grooves of the evaporator while maintaining subcooling in the liquid core, thereby increasing the likelihood of a successful startup. Also, limits are fecund for which additional increases in the applied heat flux do not increase the temperature difference between the vapor grooves and the wick-liquid core interface. This analysis is appropriate for the microscale evaporators of micro-cooler during a fully-flooded startup as well as starter pump designs and micro-CPLs(capillary pumped loops). The results are useful in the initial basic design of microscale heat transfer devices.
