Characteristics of Plasma Blacks Used as an Electrode of Direct Formic Acid Fuel Cell

  • Plasma carbon blacks of 20~30 nm diameter were synthesized by direct decomposition of natural gas using a hybrid plasma torch system with 50 kW direct current and 4 MHz of radio frequency. The insulating rector which inside diameter of 400 mm and length of 1500 mm, respectively was kept at 300~$400^{\circ}C$ during the preparation. The ultimate analysis of plasma carbon blacks reveals that the raw plasma carbon blacks contains a large quantity of volatile which is mainly consist of hydrogen. Therefore devolatilization of raw plasma carbon blacks were carried out at $900^{\circ}C$ for one hour under nitrogen atmosphere. The devolatilization leads to the decrease in electrical resistivity and surface oxygen functional groups of plasma carbon black significantly. In order to investigate the plasma carbon as a catalyst support, devolatilized plasma black at $900^{\circ}C$ (DPB) supported PtAu catalyst was synthesized by sodium boronhydride reduction method. Electrochemical measurements and direct formic acid fuel cell test indicated that catalytic activity of DPB supported PtAu catalyst for formic acid oxidation was similar to that of Vulcan XC-72 of commercial carbon black supported one.

유색미의 품종별 화학성분의 조성 (Chemical Composition of Pigmented Rice Varieties)

  • 유색미의 이화학적 특성을 구명하고자 유색미를 품종별로 수집하여 색도, 일반성분, 지방산, 무기질, 비타민, 식이섬유 등 주요 화학성분을 비교분석하였다. 그 결과 유색미의 색도는 L값은 일반현미>적미>흑미의 순으로 낮았고 a값은 적미>일반현미>흑미의 순이었다. 단백질 함량은 $8.4{\sim}11.0%$의 범위를 나타내어 시료에 따른 차이가 컸고 그중 수원 415 흑미가 가장 높았으며 지방함량은 $2.7{\sim}3.3%$의 범위로 큰 차이가 없었다. 비타민 $B_{1},\;B_{2}$의 함량도 일반현미에 비하여 유색미가 현저하게 높은 값을 나타내었으며 식이섬유의 함량도 유색미가 일반현미에 비하여 높았다. 지방산 조성을 분석한 결과, 추청과 동진은 oleic acid와 linoleic acid의 조성 비율이 비슷하였으나 흑미는 oleic acid보다는 linoleic acid의 비율이 높았고 적미는 반대로 linoleic acid보다 oleic acid의 조성비율이 더 높게 나타났다. Fe, Zn, Mn을 제외한 대부분의 무기질 함량은 유색미가 일반현미보다 높은 값을 보였고 그 중에서도 흑미가 가장 높았다.

복분자 열매(Rubus coreanus Miquel)의 항산화 활성 및 생리활성물질 (Antioxidant Activity and Effective Compounds of Black Raspberry (Rubus coreanus Miquel) Extracted by Different Solvents)

  • The black raspberry (Rubus coreanus Miquel) contains anthocyanin, tannins, gallotannin, gallic acid, ferulic acid and phenolics. It brightens the eyes and protects the liver and kidneys. It was effective for anti-aging. Thus, the purpose of this study was to inform the excellence of black raspberry and to screen antioxidant activity to ensure the possibility as a functional material. In this study, bioactive compounds in black raspberry were determined. Additionally, black raspberry was extracted by CM (chloroform:methanol, 2:1, v/v), 70% methanol and 70% ethanol, and were investigated and compared in vitro methods. Total phenol and flavonoid contents were measured to compare each different solvents. In addition, DPPH radical scavenging activity and ABTS radical scavenging activity, ferric reducing antioxidant power, reducing power were determined to measure the antioxidant activity. The results were the highest in 70% ethanol extracts, and the higher the concentration showed a significantly higher antioxidant capacity. When observed the relationship between the study, antioxidant activity of black raspberry was supposed to affect by the anthocyanin, phenol and flavonoid contents.

유색미의 영양학적 특성 (Nutritional Characteristics of Pigmented Rice)

  • 유색미의 영양학적 특성을 알리고, 소비를 촉진하기 위해 전라남도 내에서 생산되는 유색미 5종을 대상으로 영양학적, 이화학적 특성을 조사하였다. 일반성분 중 조단백질의 경우 보성 흑미가 10.15%로 가장 높았고 진도 정미(7.85%)와 녹미(7.57%)가 가장 낮아 도정된 쌀보다 유색미가 전반적으로 높은 함량을 보였으며, 조지방은 모든 시료가 도정된 흑미(1.55%)보다 높게(2.73~3.08%) 나타났다. 유리당의 경우 glucose, fructose, maltose와 mannose가 검출되었으며, maltose는 찰흑미에서, mannose는 흑향미와 적미에서, fructose는 찰흑미, 흑향미에서 높은 결과를 보였다. 무기질의 경우 P, K, Mg, Na, Ca과 Mn 등은 분석 시료에서 고루 함유하고 있었으며, 흑미와 적미가 녹미와 도정된 진도산 흑미에 비해 무기성분 함량이 다소 높은 결과를 보였다. 특히 P (361.32~570.11 mg%), K (196.63~210.04 mg%)과 Mg (104.11~128.02 mg%)는 도정된 정미에 비해 높은 함량을 나타냈다. 지방산 조성은 적미를 제외한 모든 품종에서 linoleic acid가 oleic acid 보다는 더 높게 분석되었으며, 적미에서는 oleic acid가 높게 검출되었다. 구성 아미노산은 보성 흑미, 진도 흑미, 녹미, 적미, 진도 정미 순으로서 보성 흑미가 가장 높게 나타났으며, 특히 녹미는 필수아미노산인 lysine이 996.8 mg%로 높은 함량을 보였다. 쌀의 색도는 낱알에서 L값이 녹미, 진도 정미, 적미, 진도 흑미, 보성 흑미의 순이었고, a값은 적미, 진도 정미, 진도 흑미, 보성 흑미, 녹미 순이며 b값은 녹미, 적미, 진도 정미, 진도 흑미, 보성 흑미 순으로 높게 나타났다. 비타민 $B_1$$B_2$는 적미가 각각 0.48 mg/100 g, 0.14 mg/100 g으로 타 시료에 비해 높게 분석되었으며, 시료별 경도는 10.75~14.64 kg/$cm^2$으로 시료간 차이를 보였으며 정미보다는 현미 상태가 더 높은 결과를 보였다.

Monitoring of optimal conditions for producing fermented black soybeans rich in sulfur-containing amino acids

  • The optimal fermentation conditions for producing fermented black soybeans rich in sulfur-containing amino acids were investigated. Response surface methodology monitored fermentation conditions. A central composite design examined the effect of independent variables: enzyme concentration (X1) and fermentation time (X2) on yield and methionine content. Both factors significantly influenced these dependent variables. Enzyme concentration more profoundly affected amino nitrogen content than fermentation time. β-Glucan content and cystine level were primarily affected by fermentation time. We elicited each variable's regression formula and identified optimal fermentation conditions for functional compounds. The predicted optimum conditions were an enzyme concentration of 0.28-0.32% and a fermentation time of 58.0-62.0 min. Under these optimal conditions, each black soybean variety's sulfur amino acid content ranged from 818.62 to 922.62 mg/100 g, demonstrating significant variety differences.

서로 다른 대립계 포도 품종(4배체)의 저장력 비교 (Comparison on the Storage Life of Different Large Seed Grapes (tetraploid))

  • Grapes (large seed strains)were treated with fumigation using SO\ulcorner and seal-packaged by PE film, then storage at 0$^{\circ}C$ at 90$^{\circ}C$ RH for the test of storage life. The fruits weight loss and abnormal fruits increased with storage. The abnormal fruits were rapidly produced after 80 days, however, these rates of Rubel muscat and Shingyoku were only 8.0 and 8.3%, respectively. After 90 days, the rate of Rubel muscat was 19.1%, resulting in the least rate. Moisture content of Kaiji and Honey black slightly increased and that of other grapes decreased. Soluble solids content and acidity decreased except Shingyoku and Honey black, however, sugar/acid ratio increased with these strains. The external appearances were depressed with storage but sensory test value of Shingyoku, Honey black, Rubel muscat were ranged from 7 to 9, showing good evaluation. The hardness of Honey black after 90 days resulted in the highest value 0.51 and that of Izunishiki and Kaiji were 0.23-0.25, showing the least value.

Chemical Composition of Aromas and Lipophilic Extracts from Black Morel (Morchella importuna) Grown in China

  • Morels (Morchella spp.) are valuable medicinal and edible mushrooms. In this study, chemical profiles of aromas and lipophilic extracts of black morel (Morchella importuna) grown in China were analyzed by gas chromatography/mass spectroscopy, along with the evaluation of antioxidant and antimicrobial activities for the lipophilic extracts. Sixty-five compounds in total were identified from the aromas, and 1-octen-3-ol was the main component for aromas of fresh (34.40%) and freeze-dried (68.61%) black morels, while the most abundant compound for the aroma of the oven-dried sample was 2(5H)-furanone (13.95%). From the lipophilic extracts, 29 compounds were identified with linoleic acid as the main compound for fresh (77.37%) and freeze-dried (56.46%) black morels and steroids (92.41%) as the main constituent for an oven-dried sample. All three lipophilic extracts showed moderate antioxidant activities against 2,2-diphenyl-1-picrylhydrazyl and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) with the IC50 values ranging 7.56~17.52 mg/mL and 5.75~9.73 mg/mL, respectively, and no obvious antimicrobial activity was observed for lipophilic extracts. The drying methods affect the chemical profile of black morel, and freeze-drying was favorable for retaining nutrients and morel smell. This is the first report on the aroma and lipophilic extracts of M. importuna grown in China.

Fatty acid profiles and flavour-related compounds of retorted Korean ginseng chicken soup (Samgyetang) affected by pre-treated black garlic extract

  • Objective: This study aimed to characterize the effect of pre-treated black garlic (BG) extracts addition into retorted Korean ginseng chicken soup (Samgyetang) on the fatty acid composition and flavour-related indexes. Methods: Four different treatments; Samgyetang made with a 5% (w/w) addition of garlic (G), fresh BG (FBG), oven-dried BG (DBG), or encapsulated BG (EBG) extracts were developed and compared to negative control (NC) without any extract addition. Prepared samples were cooked via retorting at 121.1℃, 1.5 kgf/cm2 for 1 h. Results: The BG treated samples were higher in C18:3n3 and C18:2n6 fatty acids, with thrombogenic index was 18% to 20% lower than the NC. EBG yielded the highest umami-related nucleotides (5'-guanosine monophosphate and 5'-inosine monophosphate) and modified some free amino acid (alyne, phenylalanine and leucine) thus possessed the highest equivalent umami concentration among samples. Some individual aldehydes (pentanal, hexanal, and heptanal) were lower, while furans and volatile sulfur compounds were higher than the NC and G treatment group, indicating a potential suppression of unpleasant flavour alongwith the intensificiation of favourable flavour from the addition of BG extracts into retorted Samgyetang. Conclusion: Taken together, the synergistic results of this study indicate that incorportating suitable pre-treatment of BG extract could be of critical importance for the development of the retorted Samgyetang with improved flavour and functionalities.

무증자 발아흑미를 이용한 막걸리 제조 시 온도가 미치는 영향 (Comparison of Temperature Effects on Brewing of Makgeolli Using Uncooked Germinated Black Rice)

  • In this study we investigated the effect of temperature on the two-stage fermentation of Makgeolli using uncooked germinated black rice. The fermentation processes were conducted at $15^{\circ}C$ for three weeks and $25^{\circ}C$ for 7 days. The pH of Makgeolli at $25^{\circ}C$ increased from pH3.0 to pH 4.2, which was consistent with that at $15^{\circ}C$. In contrast total acidity of Makgeolli at $15^{\circ}C$ was about half of that at $25^{\circ}C$ (0.36% and 0.59%, respectively). By the 7 days-fermentation at $25^{\circ}C$, 11% of alcohol was produced, whereas three weeks were required for the same alcohol production at $15^{\circ}C$. In the case of sugar contents, the amounts of total glucose-equivalent reducing sugars and glucose increased at the end of the fermentation at $25^{\circ}C$ up to 2.25 mg/mL and 3.4 mM, respectively, whereas those at $15^{\circ}C$ were maintained at very low levels (0.18 mg/mL and 0.1 mM, respectively). Such limited supplement of sugars at $15^{\circ}C$ seemed to affect metabolism of yeast, resulting in different composition of organic acid. At $25^{\circ}C$, citric acid that was 73.4 ppm at the initial fermentation was consumed completely, whereas 20 ppm of citiric acid was remained at $15^{\circ}C$. In addition, acetic acid and lactic acid in Makgealli at $15^{\circ}C$ were 53% and 14% of those at $25^{\circ}C$.

이란산 흑석류 농축액과 그 제품의 성분 및 함유된 Phyto 에스트로겐류에 관한 연구 (Proximate Compositions and Selected Phytoestrogens of Iranian Black Pomegranate Extract and Its Products)

  • 천연 호르몬 보충 제제의 개발을 위한 기초 연구로 이란산 흑석류 과즙 농축액과 이를 이용한 제품의 화학성분들을 분석하였다. 석류 농축액의 일반성분은 수분 39.3%, 조지방 0.4%, 조단백질 0.9%, 조회분 1.4%, 그리고 탄수화물은 42.0%이었다. 아미노산 함량은 글루탐산이 1310.0ppm, 아스파르트산이 896.2ppm, 아르기닌이 877.7ppm, 페닐알라닌이 57.5ppm순으로 무기 성분들은 철분 6640.0ppm, 염소 3464.0ppm, 칼륨 2550.8ppm, 인 150.0ppm, 칼슘 80.0ppm순으로 많이 함유되어 있었다. 비타민은 5가지의 수용성 비타민이 함유되어 있었으며 그 중 비타민 C(20mg/100g)를 제외한 나머지 비타민들이 아주 적은 양이 있었다. 주요 지방산은 palmitic acid(8.3%)와 stearic acid(69.4%)로 전체 지방산의 약 60~80%를 차지하고 있었다. 또한 6종의 Phyto 및 에스트로겐류가 들어 있었으며 각각 daidzein 23.72ppm, quercetin 9,75ppm, catechin 1.48ppm, genistein 0.29ppm, 2,3-di-MeO-estradiol이 0.04ppm, 그리고 17$\beta$-에스트라디올이 0.15ppm이 함유되어 있었다. 이상의 결과들을 석류 농축액으로 제조한 제품 포에버 120과 칡과 대두 isoflavon 농축분말과 비교하였다.
