Electrospinning was used to load curcumin (a natural compound that has antiinflammatory properties) into zein nanofibers. An emulsifier, Tween 80, was combined with curcumin in the zein nanofibers. The morphology of the curcumin-loaded zein nanofibers (CLZNFs) was observed using field emission scanning electron microscopy. Investigation of curcumin released from the zein nanofibers into phosphate buffer saline at pH 7 indicated that the Tween 80 had increased the amount of curcumin released from the CLZNFs. The antibacterial activity of the CLZNFs against Staphylococcus aureus (S. aureus) was determined by measuring the optical density of bacterial solutions containing CLZNFs. The zein nanofibers fabricated with 10 wt% surfactant and 1.6 wt% curcumin showed high (i.e., 83%) efficiency in inhibiting the growth of S. aureus in the solution incubated for 21 h. These results suggest that the electrospun CLZNFs show potential application as antibacterial nonwoven mats.
Zein/Poria cocos extract nanofibers were prepared based on the electrospinning of aqueous solutions with different Poria cocos extract concentrations (0, 5, 10, and 15 wt.%). The electrospinning parameters, including the polymer contents, voltage, and tip-to-collector distance (TCD), were optimized for the fabrication process. The resulting electrospun materials were all characterized using field-emission scanningelectron microscopy (FE-SEM). The diameters of the electrospun zein nanofibers were found to increase when increasing the zein concentration.
Squid oil is an abundant source of polyunsaturated fatty acids. This is particularly true for eicosapentaenoic acid and docosahexaenoic acid. The principal objective of this study was to extend the stability and improve the process aptitude of squid liver oil. Fluidized bed coatings were employed for coating with microencapsulated oil. The efficiency of the fluidized bed coating of the microencapsulated powder was over 90%. The apparent density with zein-DP was 0.6 g/mL, thereby indicating that flow ability had been improved as the result of an increase in specific gravity. The solubility of artificial gastric and enteric fluids with HPMC-FCC was 59.9 and 0%, respectively, whereas with zein-DP solubility was 0 and 31.0%, respectively. Polyunsaturated fatty acid retention results demonstrated that zein-DP coating was higher than HPMC-FCC, followed by the microencapsulated squid liver oil method. These results demonstrated that the application of microencapsulation and fluidized bed micro-coating techniques improved the stability and processing compatibility of squid liver oil.

A study was carried out to produce antimicrobial peptides from zein treated with pretenses of six kinds. Among the pretenses of six kinds, zein hydrolysate treated with pepsin showed the highest antimicrobial activity. The zein hydrolysate with pepsin was fractionated with membrane filter (30,000 10,000 and 3,000 molecular weight cut-off) and antimicrobial activity was measured for each fractions. Antimicrobial activity appeared greatly in the fraction below 3,000 (molecular weight cut-off) . The fraction was re-fractionated by HPLC and substances of two peaks collected as a sample to measure antimicrobial activity. All of both peaks showed the antimicrobial activity but 1st peak exhibited a consistently higher antimicrobial activity than 2nd peak. Minimum inhibitory concentrations (MIC) were between 2.5 and 3.0 mg/mL. The peptide was heat-stable since antimicrobial activity was maintained after treated with heat for 20 min at $121^{\circ}C$. N-terminal amino acid sequence of peptide fractionated by HPLC was leucine, glutamic acid, proline, phenylalanine, aspartic acid and argenine. These results indicated that peptide isolated from zein hydrosate with pepsin can use as a natural preservative ingredient in food industry.
Moisture sorption characteristics of edible composite films were determined and compared against moisture barrier properties. Edible composite films were Z1 (zein film with polyethylene glycol(PEG) and glycerol), Z2 (zein film with oleic acid), ZA1 (zein-coated high amylose corn starch film with PEG and glycerol), and ZA2 (zein-coated high amylose corn starch film with oleic acid). Z2 film showed the lowest equilibrium moisture content (EMC), monolayer value ($W_m$), water vapor permeability (WVP), and water solubility (WS). Surface structure of Z2 was relatively denser and finer than that of other edible films. GAB $W_m$ and C values decreased, while K values increased with increasing temperature. Correlation coefficients of WS:EMC and WVP:EMC at Aw 0.75 were higher than those of WS: $W_m$ and WVP: $W_m$, respectively. EMC values at Aw 0.75 appeared useful for evaluating or predicting moisture barrier properties of edible films.

Corn proteins have been known as nutritionally poor, being deficient in the essential amino acids. lysine and tryptophan. Improving the quality of protein in the corn grain would be a great benefit to the farmer. This study was conducted to evaluate the variation of the protein content and the protein constitution of the maize germplasms in the Crop Experiment Station in 1989. The average protein content of 101 germplasms was 11.5% with range from 8.0% to 17.3%. Elite hybrid field corns and table corns possessed 9.1-13.9% protein for the dried whole kernel. Major amino acids were glutamic acid and leucine. Lysine and methionine were limited. Varietal differences were observed in the amino acid composition. Qpm, a modified opaque-2 mutant had 1.4-1.7 times higher lysine content than Suwon 19, a dent corn and Suwon SS-21, a sweet corn. Suwon SS-21 had high threonine content. Maize seed protein gave three fractions. an alchol-soluble fraction (zein), an alkali-soluble fraction (glutelin), and a salt-soluble fraction (globulin) by the Osborne method. The zein fraction accounted respectively for 50.7% and 41.7% of the total protein is Suwon 19 and Suwon SS-21. The nonzein fractions increased in percentage of total protein in Qpm kernels. The amino acid composition of zein fraction from three types maize endoperms of dent, sweet and opaque-2 was essentially identical. Zein contained the high contents of glutamic acid and leucine but low content of lysine. The glutelin fractions of three types maize endosperms were mainly similar in overall amino acid composition. The lysine content of glutelin was higher than that of zein. The amino acid composition of globulin fraction was some different from those of zein and glutelin In Qpm it had higher levels of histidine and lysine than both of zein and glutelin. The increased lysine content in Qpm was resulted from changing the proportions of proteins which contained different levels of lysine.

나노섬유를 제조하는 방법 중에는 상분리 현상을 이용한 방법, 자가 조립성을 이용한 방법, 템플레이트를 이용한 방법, 전기방사법이 있으며 특히 전기방사법은 연속적으로 균일한 나노섬유를 제조할 수 있다. 또한 전기방사법은 장비가 간단하며 고분자 blend ratio와 무기재료의 함량에 따라 뛰어난 특성을 나타내는 나노복합섬유를 만들 수 있다. 최근 식물에서 추출한 단백질을 전기방사법을 이용하여 나노입자 및 나노섬유를 제조하고 이를 의료 분야 등에 적용하기 위한 연구가 활발히 진행되고 있으며 이런 식물성 단백질은 동물성 단백질에 비하여 인체 적용이 용이하고 매장량이 풍부한 장점이 있다. 본 연구에서는 전기방사법을 이용하여 옥수수에서 추출한 단백질인 zein의 나노입자 및 나노섬유를 제조하였다. 또한 천연 추출물이 혼입된 복합 나노입자 및 나노섬유를 제조하여 zein이 가진 고유 특성 이외에 천연 추출물의 특성을 추가로 부여해서 더욱 발전된 나노입자 및 나노섬유를 제조하였다. 고분자 농도, 전압, 방사거리 등 다양한 공정변수를 조절하여 최적의 조건을 확립하였으며 제조된 나노입자 및 나노섬유는 field-emission type scanning electron microscope (FE-SEM), transmission electron microscopy (TEM), ultraviolet-visible spectroscopy (UV/vis), fourier transform infrared spectroscopy (FT-IR), differential scanning calorimetry (DSC)를 이용하여 특성분석을 실시하였다.
Soy protein isolate (SPI) film was laminated with corn zein or wheat gluten to improve functional properties. Both SPI/corn zein-laminated film (Film B) and SPI/wheat gluten-laminated film (Film C) showed increased tensile strength by 150%, compared to control (Film A). Film C showed significant 253% increase in percentage elongation. Water vapor permeability (WVP) of Films B and C decreased slightly compared to Film A. Solubility values of Films B and C were lower than that of Film A. Hunter color values of Films A and C were not significantly different, while Film B showed yellowness due to presence of corn zein. These results suggest SPI/wheat gluten-laminated film is suitable as packaging material.
A multiplex polymerase chain reaction (PCR) method was developed to simultaneously detect 3 events of genetically modified (GM) maize. The event-specific primers were used to discriminate the following 3 events of GM maize (DAS-59122-7, TC6275, and MIR604) using multiplex PCR method. The zein gene was used as an endogenous maize reference gene in the multiplex PCR detection. The primer pair Zein-FIR producing a 99 bp amplicon was used to amplify the zein gene. The primer JI-Das-F1/R1 for DAS-59122-7, JI-TC6275-F3/R3 for TC6275, and JI-MIR F1/R1 for MIR604 yielded an amplicon of 130, 162, and 197 bp, respectively. The detection limit of multiplex PCR was 1% for DAS-59122-7, TC6275, and MIR604 for one reaction.
This study was performed to investigate the sorption characteristics and shelf-life of coated ascorbic acid Stability of ascorbic acid, which oxidizes easily during storage and processing, was achieved by applying a fluidized bed coating using Zein-DP and HPMC-FCC as covering materials. The monolayer moisture content calculated using the GAB equation showed a higher level of significance than when calculated using the BET equation. The fit to the isotherm curve was in the order of Halsey, Caurie, Oswin and Khun. The equilibrium relative humidity prediction model was established in terms of time and water activity, it had higher significance. The stability of the coated ascoribic acid during storage was investigated in terms of radical-scavenging activity, which decreased with increasing time of storage and was more affected at higher storage temperatures. The quality reduction rate constant (k) was calculated by a first-order reaction rate. The reaction rate constant increased with increasing storage temperature. The shelf-life of Zein-DP-coated ascorbic acid was estimated to be 45.83 days at 20C and 63.19 days at 10C, and the shelf-life for HPMC-FCC-coated ascorbic acid was estimated to be 28.84 days at 20C and 36.14 days at 10, the ascorbic acid was 24.52 days at $20^{\circ}C$ and 27.22 days at $10^{\circ}C$, respectively. Therefore, the fluidized bed coating effectively increased the stability of ascorbic acid.
