증편의 sponge상의 망상구조에 쌀 단백질의 영향을 조사하기 위하여 증편제조시 주원료인 쌀 단백질을 분리하고 증편 발효시 그 변화를 살펴보았으며 protease 첨가가 증편의 점도 및 부피에 미치는 영향을 살펴보았다. 또한 쌀 전분에 단백질을 첨가하여 증편의 점도 및 부피에 미치는 영향을 살펴본 결과 쌀 단백질이 증편의 부피 팽창에 영향을 주는 것으로 생각되었다. 쌀 및 증편 반죽에서는 SDS 가용성 단백질 함량이 밀가루와 비교해 높게 나타났으며 발효시간에 따른 단백질 추출량은 큰 변화가 없었다. 그러나 증편반죽의 시간별 FPLC패턴은 발효시간에 따라 저분자 peak가 감소하여 고분자화함을 알 수 있었다. 단백질 분해효소 protease를 첨가하여 본 결과 증편의 점도 및 부피는 현저히 감소하였고 쌀 전분에 단백질을 첨가하여 증편을 재구성한 결과, 점도, 부피는 증가하는 것으로 나타나 증편내에서 쌀 단백질이 증편의 부피 내지는 조직감 형성에 크게 영향을 미치는 것으로 생각되어진다.
발아 전과 후의 현미와 미강을 첨가한 밀가루 복합분으로 만들어진 국수의 품질 특성과 GABA 함량 및 항산화 활성의 변화를 조사하였다. 발아 전후의 현미와 미강을 각각 5, 10, 15% 첨가하여 국수를 제조하였다. 이렇게 제조된 국수는 조리 및 제면특성(cooking loss, swelling index, water holding capacity), 조리에 따른 GABA 함량과 항산화 성분(polyphenol) 및 활성(ABTS와 DPPH의 radical scavenging activities) 변화를 통해 기능성 국수로의 이용가능성을 알아보고자 하였다. 실험결과, 발아 후 rice bran의 첨가에 따른 cooking loss가 증가하는 것으로 관찰되었으며 반면에 swelling index에서는 차이를 나타내지 않았다. 발아 후 현미와 미강을 첨가한 조리 전후 국수에서 발아 전 현미와 미강을 첨가한 국수보다 높은 GABA 함량을 확인하였으며 발아에 따른 polyphenol 함량과 항산화 활성에서는 큰 변화가 없음을 확인할 수 있었다. 따라서 발아현미가 첨가된 국수는 밀가루 국수의 영양학적 가치와 항산화 기능을 향상시킬 수 있는 소재로써 이용 가능할 것으로 생각된다.
This study was designed to test the effects of dietary distillers dried grain (DDG) level on the growth performance, feed utilization, body composition and antioxidant activity of juvenile red seabream (Pagrus major). Six isonitrogenous and isocaloric diets were formulated to contain 0%, 5%, 10%, 15%, 20%, and 25% DDG from rice (designated as DDG0, DDG5, DDG10, DDG15, DDG20, and DDG25), respectively. Juvenile red seabream averaging $10.1{\pm}0.05g$ were randomly distributed into 400-L tanks in a flow through systems. Three replicate groups of fish were fed one of the experimental diets to visual satiation two times a day for 10 weeks. Survival, weight gain, feed efficiency, protein efficiency ratio and hepatosomatic index of fish were not affected by dietary DDG levels (p>0.05). Proximate and amino acid composition of whole body in juvenile red seabream were not affected by dietary DDG levels (p>0.05). Plasma content of total protein, glucose, cholesterol, glutamic-pyruvic transaminase, phospholipid and triglyceride were not affected by dietary DDG levels (p>0.05). 1, 1-Diphenyl-2-picryl-hydrazyl radical and alkyl radical scavenging activities in plasma and liver of fish were not affected by dietary DDG levels (p>0.05). The results of this experiment suggest that DDG has the potential to replace plant origin ingredients such as wheat flour and corn gluten meal and could be used up to 25% in diet without incurring negative effects on the growth performance of juvenile red seabream.
To develop a value-added product from individually quick-frozen oyster Crassostrea gigas extract (IQFOE), we prepared two types of oyster sauce (OS): bottled OS (BOS) and retort pouched OS (ROS). We investigated processing conditions, quality metrics and flavor compounds in each type of sauce. We found that the most appropriate base formular for both BOS and ROS consisted of 40.0% IQFOE (Brix $30^{\circ}$), 15.0% sugar, 6.0% salt, 4.0% monosodium glutamate, 4.0% soy sauce, 3.5% starch, 3.0% yeast extract, 3.5% wheat flour and 21.0% water. The crude protein, salinity and amino-nitrogen contents of the BOS and ROS were 8.2 and 8.3%, 9.3 and 9.2%, and 539.2 and 535.2 mg/100 g, respectively. In commercial oyster sauces (COS), these values were 4.7-6.5%, 9.7-12.0%, and 244.7-504.2 mg/100 g, respectively. The total free amino acids content of ROS was 7,346.9 mg/100 g, and the main free amino acids were glutamic acid, taurine, proline, glycine and alanine. The inosinic monophosphate (IMP) content of the ROS was 131.6 mg/100 g, and the primary inorganic ions were Na, K, S and P. The present BOS and ROS have favorable organoleptic qualities and storage stability compared with COS, and are suitable for commercialization as high-flavor seasoning sauces.
The effects of dietary supplementing natural additives [yacon (YC), ginger (GG), and blueberry (BB)] on growth, feed utilization, and body composition of juvenile rockfish were compared to those of ethoxyquin (EQ), which is commonly used to prevent rancidity of fish feed. A total of 480 fish were distributed randomly into 12 50-L flow-through tanks (40 fish/tank). Four experimental diets were prepared: the control diet (Con) with 0.01% EQ, and the YC, GG and BB diets containing 1% YC, GG, and BB instead of wheat flour. Each diet was assigned randomly to triplicate tanks of fish, which were hand fed to satiation twice daily for 8 weeks. Weight gain of fish fed the YC diet was higher than that of fish fed all other diets. Feed efficiency (FE), protein efficiency ratio (PER), and protein retention (PR) in fish fed the YC diet were higher than those in fish fed the other diets. Whole-body chemical composition of the fish was affected by the additive sources. In conclusion, dietary supplementation with GG effectively improved weight gain and feed utilization (FE, PER, and PR) of juvenile rockfish.
To develop a highly value-added product from extract from small and damaged sea mussels Mytilus edulis, we prepared two types of sea mussel sauce (MS): bottled (BMS) and retort pouched (RMS). We investigated the processing conditions, quality metrics and flavor compounds in each type of sauce. We found that the most appropriate base formulation for both BMS and RMS consisted of 40.0% SME (Brix $30^{\circ}$), 15.0% sugar, 6.0% salt, 4.0% monosodium glutamate, 4.0% soy sauce, 3.5% starch, 3.0% yeast extract, 3.5% wheat flour and 21.0% water. The crude protein, salinity, volatile basic nitrogen and amino-nitrogen content of the BMS and RMS were 8.7% and 8.8%, 9.3% and 9.2%, 24.9 and 31.4 mg/100 g, and 468.5 and 455.1 mg/100 g, respectively. For comparison, the ranges of these values in commercial oyster sauces (COS) are 4.7-7.5%, 10.7-12.0%, 8.2-12.5 mg/100 g, and 225.7-448.2 mg/100 g, respectively. The total free amino acid content of RMS and Premium COS was 7,215.7 and 6,160.7 mg/100 g, respectively, and the main free amino acids were glutamic acid, taurine, glycine, alanine, arginine, proline and lysine. These results demonstrate that BMS and RMS have favorable organoleptic qualities and good storage stability compared to COS, and are suitable for commercialization as high-flavor seasoning sauces.
The effects of medicinal mushroom (Sparassis crispa) powder supplementation on the rheological property of dough and the quality of bread were investigated. Naturally dried S. crispa powders (NDSCP) and freeze-dried ones (FDSCP) were prepared. Farinograph profiles of dough showed that mushroom powder addition at levels higher than 1% led to reduced dough stability suggested by decreased development time and increased weakness. The incorporation of S. crispa powders was significantly (p<0.05) lower compared to other mushrooms which might be attributed to its high content of beta-glucan. FDSCP was chosen over NDSCP because of its fragrant flavor which could be ascribed to the preservation of volatile polyphenol components. The quality of FDSCP bread was evaluated with respect to specific volume, texture, color, and organoleptic qualities. The specific volume of bread with S. crispa powder decreased compared to the control, while textural properties, such as hardness, chewiness, and gumminess, were enhanced. Sensory evaluation showed that 0.3% FDSCP incorporation presented the highest bread quality. With its daily consumption, S. crispa supplemented bread can provide consumers with multiple health benefits.
장류 발효기술과 유용 천연물을 활용한 프리미엄 발효소스의 개발을 목적으로 소맥분과 콩의 발효물(페이스트 형태), 미더덕 껍질, 뽕잎, 양파 추출물을 단독 또는 혼합하여 첨가한 발효소스를 제조한 후, ACE 저해능과 DPPH 라디칼 소거능을 측정하였다. 그 결과 무첨가 대조구에 비하여 추출물 첨가 발효소스의 ACE 저해능과 라디칼 소거능은 증가하였다. 특히 뽕잎과 양파 추출물을 혼합하여 첨가한 발효소스가 대조구에 비하여 상대적으로 ACE 저해능이 26.92% 증가하였고, DPPH 라디칼 소거능은 40.66% 증가하였다. 이러한 결과는 항고혈압능과 항산화능을 보유한 고품질 소스의 제조에 소맥분과 콩의 발효물, 뽕잎과 양파 추출물 등이 활용될 수 있음을 시사한다.

BACKGROUND/OBJECTIVES: The purpose of this study was to examine whether plasma lipid profiles are affected differently by snack kinds with equal calorific values. SUBJECTS/METHODS: We compared a Korean traditional confectionery (dasik) with Western confectionery (cookie) in this regard. Controlled cross-over study consisted of two 3-week snack intake phases and for separating, a 2-week washout period (3-2-3) was carried out with 30 healthy women aged between 40-59 years old. Brown rice based Korean traditional confectionery and wheat flour based Western confectionery were used. The participants consumed either dasik or cookie every day for 3 weeks, providing 93 kcal a day. RESULTS: The total cholesterol (TC) in the dasik group had decreased significantly after 3 weeks (P < 0.05). Furthermore, in the dasik group, reduction in TC and low-density lipoprotein-cholesterol were greater than those in the cookie group (P < 0.05). CONCLUSIONS: Prioritizing functional snacks like dasik improves plasma lipid profiles; this may be useful information for individuals who cannot refrain from snacking.
This study was carried out to investigate the block shear strength of the 2ply laminated wood composed of Pinus thunbergii with ureaformaldehyde resin as adhesives according to pressure (6, 9, 12, 15kg/$cm^2$), pressing time(5, 10, 20, 30 hrs.), amount of spread(54, 108, 217, 324g/$cm^2$), hardener(10, 20, 30, 40% of 10% $NH_4CL$ on resin) and extender(0, 5, 10, 15% wheat flour on resin), and the bending strength and bending young's modulus of laminated beam according to the number of ply. The results were summarized as follows; 1. According to pressing pressure with amount of spread 217g/$cm^2$ both dry and wet shear strength of laminated wood showed the highest in 15kg/$cm^2$, and hot-cold soaking treatment showed the highest in 9kg/$cm^2$, while all shear strength of dry, wet and hot-cold soaked laminated wood have been reduced with the increasing of pressing time. 2. According to amount of spread, adhesion strength with the dry, wet and hot-cold soaking treatments revealed the highest in 217g/$cm^2$ and have been reduced under or over 217g/$cm^2$ of spread. 3. According to addition of hardener and extender, all shear strength of laminated block with the dry, wet and hot-cold soaking treatments have been reduced in increasing of addition amount of hardener and extender. The bending strength of beam according to the number of ply showed the highest in 2ply laminated wood and horizontal loading beam to glue line had the higher in strength than the vertical loading.
