This study investigated the effect of UV-B irradiation on the quality of Pleurotus ostreatus. The changes of vitamin $D_2$ contents, color value and flavor pattern in mushrooms were analyzed by high-performance liquid chromatography (HPLC), chromameter and gas chromatography - surface acoustic wave (GC-SAW) electronic nose. By exposure to UV-B irradiation (0 kj/m$^2$, 10 kj/m$^2$, 20 kj/m$^2$), vitamin $D_2$ content increased from 0 (control) to 48.50 g/g (DM: dry matter, 10 kj/m$^2$) and 61.58 g/g (DM, 20 kj/m$^2$). Although there was no significant difference in L, a, b values among the three groups, flavor changes were detected by GC-SAW electronic nose. The number of peaks increased from 10 in the control group (0 kj/m$^2$), to 14 and 15 for the 10 kj/m$^2$ and 20 kj/m$^2$ groups, respectively. Nevertheless, the changes of flavor pattern were not detrimental to the mushroom quality. These results suggested that UV-B irradiation is an effective method to increase the vitamin $D_2$ content without degrading the quality.
자외선 B파 조사가 톱밥배지에서 재배되고 있는 표고버섯의 비타민, 색도, 향기패턴에 미치는 영향에 대해 조사하였으며 그 결과는 다음과 같다. 1. 자외선 B파 조사에 따른 표고버섯의 비타민 D$_2$ 함량 변화. 자외선 B파를 자실체에 각각 0(대조군), 25, 50KJ/$m^2$ 조사한 결과 대조군의 비타민 D$_2$ 함량은 25.36$\mu\textrm{g}$/g인 반면, 25, 50KJ/$m^2$의 자외선 조사로 비타민 D$_2$ 함량은 각각 39.73, 52.35$\mu\textrm{g}$/g로 증가하였다. 2. 자외선 B파 조사량에 따른 색도 변화. 색도 측정 결과 명도를 나타내는 L$^{*}$ 값은 대조군이 94.84로 25(92.19), 50KJ/$m^2$(92.26)보다 높은 것으로 나타났으며 적색을 나타내는 a$^{*}$ 값은 각 시험군 간에 차이는 없었으나 황색을 나타내는 b$^{*}$ 값은 대조군이 -1.35로 25(-1.06), 50KJ/$m^2$(-0.80)보다 낮은 치수를 보였다. 3. 자외선 B파 조사량에 따른 표고버섯의 향기패턴 분석. GC-SAW 전자코를 통해 분석된 향기 패턴은 대조군의 경우 peak가 10개가 감지되었으나 25, 50KJ/$m^2$군의 경우는 14개의 peak들이 감지되었다. 자외선 조사로 표고버섯의 향기 패턴의 변화가 생긴 것을 알 수 있었다.
비타민 D3는 난각 형성에 필요한 칼슘의 흡수와 대사에 필수적일 뿐 아니라 칼슘과 인의 대사를 조절하여 뼈 건강에 필수적인 요소이며 건강한 면역체계를 유지하는 영양소이다. 계란과 관련된 비타민 D3에 관한 연구는 많이 이루어져 왔으나 산란계 농장에서 수행한 연구는 보고된 바가 거의 없다. 본 연구는 비타민 D3 강화계란을 생산하는 산란계 농가에서 생산되는 계란의 난각 품질과 계란 내 비타민 D3 함량을 분석하고자 농가 조사를 수행하였다. 산란계 4개 농가를 선정하여 16,500 IU 및 29,000 IU 함유한 사료 급여 전과 후에 계란을 수거하여 난각 품질과 계란내 비타민 D3 함량을 측정하였다. 분석 결과 비타민 D3 첨가는 난각두께를 개선하는 효과는 있었으나, 난각색과 난각강도에는 미치는 영향은 미미하였다. 산란계 사료내 비타민 D3를 첨가하면 계란 내 비타민 D3 함량이 증가하는 것으로 조사되었다. 결과적으로 산란계 농가에서 사료 내비타민 D3를 추가로 공급한다면 난각 품질의 개선과 비타민 D3 강화계란을 생산할 수 있는 것으로 확인되었다. 향후 더 많은 산란계 농가에서 사료와 계란 내 비타민 D3 함량에 대한 추가 조사를 진행한다면 계란 내 비타민 D3 함량을 추정할 수 있는 회귀식을 도출할 수 있을 것으로 사료되었다.
본 연구는 맥주박과 옥수수 위주의 발효사료에 대한 coated vitamin C+E 및 면실의 첨가 급여가 거세한우의 육조성분, 육색 및 도체등급에 미치는 영향을 구명하고자 평균체중 550.4±42.8kg의 거세한우 24두를 공시하여 실시하였다. 시험구 배치는 발효사료급여구(T1)와 coated vitamin C+E 및 면실 첨가 발효사료구(T2)의 2처리로 하였다. 배최장근의 조지방 함량은 T2구에서 T1구에 비해 높았다(p< 0.05). 배최장근의 표면 육색 중 황색도와 색상색은 T2구에서 T1구에 비해 낮았고(p<0.05) 명도는 T1구에 비해 T2구에서 높았다(p<0.05). 육량 A 등급의 출현은 T2구에서 T1구에 비해 높았다. 근내지방도는 T1구에 비해 T2구에서 높았다. 이상의 결과에서 맥주박과 옥수수 위주의 발효사료에 대한 CVCE 및 면실의 첨가는 거세한우 배최장근의 조지방 함량, 육색 및 근내지방도에 효과적인 것으로 판단된다.

This experiment was designed to examine the effects of supplemental vitamin D on laying performance, metabolic profile and egg quality of hens fed diets containing different fat sources and levels. Lohman strains (n = 480) were assigned to one of 10 diets: basal diet (BD), BD plus 2.5 and 5.0% sunflower oil (SO) or tallow (T) at vitamin D provided $1{\times}$ and $3{\times}$ of the current recommendation. The experiment lasted from week 30 to 44 of age. Each diet was tested in 12 replicate cages of 4 hens. Production, metabolism, and egg quality data were subjected to three-way ANOVA. Both fats decreased feed intake (FI) as compared to BD. Increasing SO and T levels linearly decreased and quadratically increased FI, respectively. The dietary factors did not affect egg production (EP) and egg weight. Vitamin D supplementation increased and decreased EP when diets contained SO and T, respectively. Feed conversion efficiency (FCE) for hens fed SO was lower than for hens fed T. However, increasing T level improved FCE, whereas increasing SO level worsened FCR. Vitamin D supplementation increased serum vitamin D and glucose concentrations. Vitamin D supplementation also caused a decrease and an increase in serum vitamin D concentration when diets contained SO and T, respectively. Serum glucose concentration for hens fed SO was lower than hens fed T. Increasing fat level linearly increased serum triglyceride and VLDL concentrations, regardless of the fat type. Increasing SO level linearly decreased serum cholesterol concentration. Vitamin D supplementation did not alter lipid metabolites. The dietary factors did not affect serum total protein, Ca, and P concentrations. As compared with BD, feeding SO decreased dry tibia and ash weights more than feeding T. Vitamin D supplementation tended to increase dry tibia weight and decrease tibia ash weight. Eggshell strength and thickness, yolk and albumen indexes, and Haugh unit were not responsive to the dietary factors. Eggshell strength quadratically increased with increasing T level. Yolk color for hens fed SO was lower than for hens fed T. The dietary factors did not affect most of yolk fatty acids. Increasing SO level quadratically decreased yolk $C_{18:2}$ concentration. Vitamin D supplementation increased and decreased yolk $C_{18:2}$ concentration when diets contained SO and T, respectively. In conclusion, increasing fat level improved laying performance without altering metabolic profile and egg quality. Vitamin D supplementation had minor alteration effects on laying performance, metabolic profile, and egg quality in response to fat feeding.
This study was conducted to effectively supplement vitamin D and increase the consumption of ear mushroom based on the investigation of the quality characteristics of cookies containing ear mushroom supplemented with vitamin D. Cookies were made of 0%, 1%, 3%, and 5% ear mushroom powder treated by ultraviolet B. Increased addition of ear mushroom powder led to a decrease in the bulk density of the dough as well as a spread factor, color value, and hardness of the cookies. There was no significant difference in the loss rate, but the water content of the dough and cookies was increased. The total polyphenol content of cookies added with 1~5% ear mushroom powder was higher than that of the 0%. The DPPH free radical scavenging activity of cookies added with 5% ear mushroom powder (23.8%) was 2 times higher than that of the 0% (10.9%). The vitamin D2 content of cookies added with 5% ear mushroom powder (835.5 ㎍/100 g D.W.) was 44 times higher than that of the 0% (19.0 ㎍/100 g D.W.). Consequently, ear mushroom powder is considered to be suitable for the production of functional cookies because of high values of antioxidant activity and vitamin D2 content.
The effect of mugwort extract (ME) and vitamin C (VC), added individually or in combination, on color, lipid oxidation, and sensory characteristics of chicken nuggets stored for 12 d was investigated. Eight treatments of chicken nuggets contained the following: Control (no antioxidant added), VC (0.05% VC), ME 0.05 (0.05% ME), ME 0.1 (0.1% ME), ME 0.2 (0.2% ME), VC+ME 0.05 (0.05% VC + 0.05% ME) and VC+ME 0.1 (0.05% VC + 0.1% ME), VC+ME 0.2 (0.05% VC + 0.2% ME). Results showed that the mixture of 0.05% VC and 0.2% ME was most effective for delaying lipid oxidation (thiobarbituric acid reactive substances, conjugated dienies, and peroxide formation) when compared to the control or ME alone added. The color values of all treatments were significantly affected by adding ME. Additionally, the total color difference (${\Delta}E$), chroma ($C^*$), and hue angle ($H^{\circ}$) values of all treatments, except for VC, were lower than those of the control as the amount of ME increased. The sensory characteristics (flavor, odor, and overall acceptability) did not differ significantly in any of the chicken nugget samples, whereas storage time had a significant effect. The results suggest that the possibility of utilizing chicken nuggets with a mixture of mugwort extract and vitamin C for the increase of shelf-life and quality.
The aim of this study was to investigate the effects of UV-B irradiation on the physicochemical characteristics of oyster mushrooms (Pleurotus ostreatus). Vitamin $D_2$ concentration, weight loss rate, color value, total plate counts and consumer acceptability of irradiated oyster mushrooms were measured. UV-B irradiation at doses of $0\;kj/m^2$, $20\;kj/m^2$ and $40\;kj/m^2$, significantly increased the vitamin $D_2$ concentrations from $0\;{\mu}g/g$ dry weight (control) to $85.87\;{\mu}g/g$ dw and $116.28\;{\mu}g/g$ dw, respectively, at 5% level. Rate of weight loss was also significantly increased from 0% (control) to 2.21% and 4.31% at $20\;kj/m^2$ and $40\;kj/m^2$ UV-B irradiation, respectively, at 5% level. Although there was no significant difference between the UV-B irradiated groups, total plate counts were significantly decreased from $1.0{\times}10^5$ (control) to $9.4{\times}10^3$ and $1.9{\times}10^3$at $20\;kj/m^2$ and $40\;kj/m^2$ of UV-B irradiation, respectively, at 5% level. There was no significant difference in L values and consumer acceptability between the groups. Therefore, UV-B irradiated oyster mushrooms could be used as health promoting ingredients for many foods.
This experiment was conducted to compare the effects of vitamin C supplemented in either feed or water on the performance and carcass characteristics of broilers during the hot season. For a 6 week feeding trial, a total of 330 broiler chicks (Ross, 4 d old, average 57 g BW) were alloted to five treatments. The treatments of vitamin C (VC) supplementation were 1) 0 ppm VC, 2) 10 ppm VC in feed, 3) 20 ppm VC in feed, 4) 5 ppm VC in water and 5) 10 ppm VC in water. During the starter phase (0-3 week), chicks on non-supplemented group grew slower (p<0.01) than the supplemented ones, and a similar trend was also noted during finisher stage and the overall stage. Feed intake was significantly (p<0.05) higher in supplemented groups and higher when fed in feed as compared with water during all stages. But feed conversion efficiency was significantly improved in non-supplemented groups compared to supplemented ones in finisher and overall stage. The digestibility of gross energy and ether extract was significantly (p<0.05) higher during starter phase in supplemented, given in feed, and at higher levels as compared with non-supplemented, given in water, and at lower levels, respectively. The bone resistance was significantly (p<0.05) higher in supplemented, supplied in feed groups as compared with their counterparts. Except breast meat, the dressing percentage and abdominal fat were also higher in supplemented group and the dressing percentage was significantly (p<0.05) higher in VC supplemented in feed as to water, but no effect of supplementation was noticed on meat color when compared between the methods of feeding (feed vs. water). The levels of VC in plasma and liver increased linearly, as the level of supplementation both in feed and water increased and it was significantly (p<0.05) higher in feed group as compared with water group. It can be concluded that, retention and availability of vitamin C in feed was higher than those in water, and supplementation of VC during summer was beneficial for poultry.
Cheongkukjang is a traditional fermented soybean food in Korea that is used in the manufacture of functional foods. This study was conducted to assess vitamin contents and sensory qualities of powdered Cheongkukjang dried by oven drying, far-infrared drying and freeze drying. Vitamins $B_1$, $B_2$, $B_6$, E, niacin and pantothenic acid were detected using all drying methods. However, vitamin D was not detected in the oven drying samples, and was most prevalent($82.47{\mu}g$/100 g) in the far-infrared drying samples. The sensory characteristics included color, off flavor, salty taste, bitter taste, sweet taste, roasted taste and after-taste. Oven drying and freeze drying samples exhibited highest and lowest color scores(5.62 and 2.0, respectively). Oven drying samples also exhibited the highest roasted taste score(4.76), although not significantly different from far-infrared drying samples(4.0, p<0.05), while the score of freeze drying samples(2.38) was significantly different from the other methods(p<0.05). It is concluded that freeze drying is most suitable.
