  • The effects of wheat fiber (WF) and isolated soy protein (ISP) on the physicochemical and sensory properties of frankfurter-type sausages were evaluated. The frankfurters were formulated with 2% WF (T1), 2% ISP (T2), and 1% WF plus 1% ISP (T3). The pH of all the samples ranged from 5.90 to 5.94 (p>0.05), and the CIE $L^{\ast}$ values of the WF and ISP treatments were higher than those of the control, but the CIEs of $a^{\ast}$ and $b^{\ast}$ were lower than those of the control (p<0.05). The cooking losses with the treatments were lower than the cooking loss with the control, but there were no significant differences among all the treatments. The treated frankfurters showed better emulsion stability than the control, and T1 had the greatest hardness, cohesiveness, and viscosity (p<0.05). All the frankfurters scored the same for sensory color (p>0.05), and the sensory properties of flavor, juiciness, and overall acceptability of T1 resulted in satisfactory sensory scores. The best results were conclusively obtained with the frankfurters that contained 2% WF. This study showed the potential of WF to be used in frankfurters as a substitute for ISP.

  • Korean Paldal variety rice, harvested November and hulled into polished and unpolished forms in April, 1969, packed in the straw bags and the kraft paper bags. Being irradiated with 10, 30 and 50 krad ${\gamma}-ray$, the samples were stored at room temperature for testing infestation, uric acid content, fat acidity, riboflavin content and panel test. The results are as follows. 1. The kraft bag lot with polished rice or unpolished rice manifested the apparent disinfestation with $30{\sim}50$ krad irradiation. On the other hand, in the straw bag lot the irradiation effects on disinfestation were weakened through summer on account of the second contamination. 2. The changes of uric acid content in rice were proportional to the state of infestation. 3. Fat acidity, which has a close relation with the rancidity of fat in rice, increased during storage and showed some increasing tendency in the irradiated lot with $30{\sim}50$ krad. 4. In comparison with the control lot, riboflavin content was not affected by 50 krad irradiation. 5. With 10, 30 and 50 krad dose, the irradiated lot should have no significant difference in taste, odour, color and viscosity for the panel test.

  • The purpose of this study is to make a functional Hanji treated with an oriental lacquer which has various functionalities. The raw oriental lacquer produced in China was used in this study This lacquer was diluted with ethanol and terpene in different solvent ratios. The diluted lacquer in the solvents had two layers. The upper layer was solvent soluble and the lower contained precipitates. Hanji was treated with the solvent solubles and the mixture containing precipitates, and then properties of the Hanji were evaluated. The oriental lacquer consisted of 25.04% of water, 60% of urushiol, 3.13% of nitrogen-containing compounds, and 5.66% of gum. The pH of oriental lacquer was 5.3 and the viscosity was 1680 cP. The average weight, thickness, and density of Hanji treated with oriental lacquer tended to gradually decreased as the lower concentration of lacquer was used and as the solvent soluble was treated. Tensile strength of the treated Hanji decreased when the diluted lacquer was used and Hanji treated with terpene dilutes at the ratio of lacquer to solvent of 1:5 (v/v) showed higher tensile strength than ones treated with ethanol dilutes. The folding endurance decreased as the less concentrated lacquer was used and the highest value was obtained when 1:40 (v/v) of lacquer to solvent ratio in both ethanol and terpene mixture. Absorption ratio was higher in the Hanji treated with ethanol mixture, treated with the lacquer in higher concentration, and treated with ethanol mixture. Hanji treated with ethanol dilutes at 1:20 (v/v) and the lower ratio of lacquer to solvent showed a hydrophobic property. Amount of the bound dye materials tended to be decreasing as the concentration of lacquer becomes lower and it was higher in Hanji treated with ethanol mixture than with terpene mixture. Color of Hanji treated with the solvent diluted mixture was Y to YR-type, whereas that of Hanji treated with raw oriental lacquer was Y-type, terpene

  • For the elucidation of some informations on juice manufacturing properties of tomato, physical, chemical and sensory characteristic were analyzed for two groups of cultivation pattern-nonproped cultivation (5 varieties) and proped cultivation (4 varieties). The proped cultivation showed higher sugar content of juice than the nonproped on. Among the proped Jeokpung and Master 2 showed high value of sugar content. The lowest value of sugar content was observed in 79078$\times$ARC of the nonproped. There was no difference in acidity between cultivation groups but high value was observed in TM103, Jinhong from the nonproped and Jeokpung from the proped. There was no difference in pH between tomoto juice. High content of vitamin C was observed in 79078$\times$CL1561 from the nonproped and 76Moll-3-2-2 from the proped. High viscosity was observed in 79078$\times$CL1561 from the nonproped and Horgju from the proped. The nonproped showed greater value in dominant wavelength than the proped. Good Hope showed the greatest value in dominant wavelength, color score of panel test and yield. It was found that Good Hope from the nonproped and Jeokpung from the proped were suitable for juice processing. But better quality of juice can be possibly made by using various varieties rather than using single variety because each variety has each goodness of juice preparation separately.

  • When fish meat is washed for the processing of surimi, about 50ff of lipid in the fish meat is removed from the fish meat to the effluent. The removed lipid was easily recovered by centrifugation or filteration of wastewater washed fish meat. Then, the recovered lipid was utilized as a material of mayonnaise sauce processing. The major fatty acids in the recovered lipids are $C_{16:0},\;C_{18:0},\;C_{16:1},\;C_{20:5},\;and\;C_{22:6}$ Polyenoic fatty acids were composed of $33.6\%$ to total fatty acids. When the recovered lipid was substituted for soybean oil in processing of mayonnaise sauce, the maximum percentage of substitution ratio presumed to be $30\%$ according to viscosity, color difference, and emulsion stability evalution for the substituted ones.

  • Although the chitosan has many functional properties due to its cationic amino groups, the application of chitosan in foods is limited by its poor water solubility, bitter taste and astringency. This study was conducted to investigate physicochemical and sensory properties of chitosan hydrolysates in various molecular weights obtained by ultrafiltration after enzymatic hydrolysis. As molecular weight decreased, the solubility of chitosan hydrolysates increased, while the viscosity and emulsion stability decreased. High molecular weight chitosan hydrolysates (>30 kDa) exhibited 800% of fat binding capacity, while low molecular weight ones $(3{\sim}30\;kDa)$ showed 500% of fat binding capacity. Water soluble chitosan hydrolysates exhibited no color differences. Freeze-thaw stability of chitosan hydrolysates was good, without variations among fractions. Cholesterol binding capacity of chitosan hydrolysates was changed from 24% to 36% with increasing molecular weights. From sensory evaluation of chitosan hydrolysates, it was found that bitterness, astringency, chemical flavor and fish flavor of chitosan hydrolysates were very weak.

  • This study was performed to examine the quality characteristics and antioxidant activity of curd yogurt with varying content (0.5-2% (w/w)) of lemon grass hot-water extract (LGHWE). The pH decreased with higher LGHWE content until 8 h, with the treated groups showing higher pH values than the control group after 12 h. The viscosity and the viable cell counts of the yogurt with 2% LGHWE were significantly lower than those of the control group during fermentation. Color values of LGHWE yogurt were lower in terms of brightness, whereas redness and yellowness values were higher compared to the control. The DPPH radical scavenging activity and soluble content significantly increased with higher LGHWE content. Consumer acceptability score of yogurt with 0.5% LGHWE was ranked higher than that of other yogurts. Yogurt containing 0.5% LGHWE showed no differences in pH and titratable acidity compared to control after storage at $4^{\circ}C$ for 14 days.
