The Effects of Added Sesame Powder on the Quality of Baechukimchi (참깨가루의 첨가가 배추김치의 품질에 미치는 영향)

  • In this study, we evaluated the effects of sesame powder on the fermentation of Baechukimchi, by assessing sensory, physicochemical, and microbiological properties during up to 25 days of fermentation. The Baechukimchi, with various levels [0, 1, 2, 3, 4%(w/w)] of sesame powder, was fermented at $10^{\circ}C$. The product containing the control and 1% sesame powder evidenced the highest scores for appearance and smell. Taste and texture were highest in the 1% and 2% sesame powder, and the overall acceptability was highest in the 2% sesame powder sample. During fermentation, titratable acidity increased while pH gradually decreased. pH was higher in the sample with sesame powder than in the control, and the titratable acidity increased with increasing sesame powder content on day O. Reducing sugar increased sharply during fermentation, and then gradually decreased. In particular, the 2% sesame powder sample maintained the highest content. Total vitamin C was slightly increased at initial fermentation and then steadily decreased. The total polyphenol content and antioxidant effect of the experimental groups with added sesame powder were higher than those of the controls. Additionally, the time required to achieve maximum levels of lactic acid bacteria, as determined by log numbers of cells and total viable cells, were more delayed in the experimental groups with added sesame powder than in the controls. Our results indicated that the Baechukimchi with $1{\sim}2%$ added sesame powder was acceptable.

Analyzing the Importance and Performance of Sanitation Management within Childcare Center Foodservice Facilities in Gyeongbuk Province (경북 지역 보육 시설 급식소의 위생 관리에 대한 중요도-수행도 조사)

  • The purpose of this study was to analyze the importance and performance of sanitation management within childcare center foodservice facilities in Gyeongbuk province. The survey involved 248 people who participated in the food hygiene and safety education for childcare center managers in Gyeongbuk province from June to July 2010. A total of 236 survey papers were analyzed statistically by SPSS program. By the method, t-test and importance-performance analysis (IPA) was performed. Among the respondents, facility managers are 40s (41.9%) which accounted the most percentage, and for the type of facility, the largest amount was home (39.9%). The number of preschool children who are under 20 people accounted for 45.3% and food service staffs were accounted for 36.7%. No significant differences were observed for the four items on the IPA, except for the topics "the immediate deal with trash and leftover food" and "minimizing time (within 2 hours) for distribution after cooking" (p<0.001). The average score on the IPA was 4.14 points, and the average score for the importance of the evaluation was 4.49 points out of 5. Finally, childcare facility managers are aware of the importance that is lower than can be done. The results suggest that continuing education is necessary to administrators to manage the health care facility effectively.

Concentration Levels and Distribution Characteristics of Polycyclic Aromatic Hydrocarbons (PAHs) at Ambient Air in Industrial Complex Area (공단지역 대기 중 다환방향족탄화수소화합물(PAHs)의 농도수준 및 분포특성)

  • The purpose of this study was to investigate the concentration levels, distribution characteristics and blood concentration of Polycyclic Aromatic Hydrocarbons (PAHs) at ambient air in Industrial Complex Area. The samples were collected at 4 sites in Industrial Complex Area and its vicinities. The result indicated that there was the difference of PAHs concentration as followed local characteristics. The level of average concentration of PAHs in the air in Industrial Complex Area was $14.52{\sim}193.48ng/m^3$. The level of average concentration of six materials with possibility of cancer creation was $1.65{\sim}13.44ng/m^3$. The concentrations of PAHs were generally low, but Jechul-dong is considered an area where consistent monitoring of PAHs is required. In addition, benzo(a)pyrene was detected in every atmospheric sample, however the concentration was not high. The level of concentration of benzo(a)pyrene in the air in the Jechul-dong was $2.89ng/m^3$. But, the concentration of the PAHs in Jechul-dong showed that the Benzo(a)pyrene concentration is above $1ng/m^3$ of air quality standard(EU). The results of the concentration level of PAHs in the blood from 240 persons who were exposed directly were surveyed, it was $1.12{\sim}11.45ng/m^3$ for man and $1.20{\sim}26.89ng/m^3$ for woman. It was indicated that the difference between the genders was very little. The accumulation inside human was anticipated as the PAHs concentration in the blood for the aged was very high. Industrial Complex Area and its vicinities are an area which has been greatly influenced by PAHs and environmental contaminants. It is necessary to control the emission sources of PAHs and to construct an observation system at Industrial Complex Area from now on. It is time to reduce the risk factors for health and environmental disease to protect the health of resident in Industrial Complex Area and its vicinities.

Effects of Propylthiouracil and Thyroxine on Thyroid Function and Body Growth in Rats (Propylthiouracil 및 Thyroxine의 처리(處理)가 흰쥐의 갑상선기능(甲狀腺機能)과 체성장(體成長)에 미치는 영향(影響))

  • This study was conducted to find out the effects of propylthiouracil and thyroxine on thyroid function and body growth in female rats. One hundred and forty-four female rats (Wistar-imamichi albino rats) of 25 days old were divided into 4 groups; thyroidectomy (Thx), propylthiouracil (PTU), thyroxine (Thyro.)and control (Cont.) groups. Thirty-six rats were allotted to each group, and changes of body weights were weekly checked. In addition, 6 rats in each group were sacrificed at 1, 2, 3, 5 and 6 weeks after treatments with time elapse for investigating changes of thyroid weights and tissues. The results obtained were as follows: 1. The weights of thyroid gland showed significant differences among all the compared groups at all observation times. The weights of thyroid glands in PTU group were higher than those in control group, but those in the Thyro. group were lower than those in control group. 2. In the histological changes of thyroid glands in the PTU group, the follicle epithelium showed columnar cells following hype trophy and hyperplasia from 1 week after treatment. The follicle epithelium in the Thyro. group were recognized inactive showing squamous cells. 3. The body weights showed significant differences among the compared groups from 2 weeks after treatment. The body weights decreased significantly in PTU and Thx. groups, while those in Thyro. group increased significantly in comparison with those in control group. No significant difference in body weight was noted between PTU and Thx. groups.

Some Adults' Opinions about Private Dental Insurance and National Dental Insurance according to Stress of Dental Treatment Cost (일부 성인의 치과진료비 부담에 따른 치과 건강보험 확대 및 민영치과보험 가입 의사)

  • The high dental treatment cost has been considered as one of the major reasons for inappropriate dental treatment in Korea. The aim of this study was to investigate the opinions of expansion of National Health Insurance (NHI) in dental treatment fields not covered with NHI and buying private dental insurance. This survey was carried out targeting 266 adults from their 30s to 50s with convenience sampling. The higher orders in stress of dental treatment cost were orthodontic treatment, dental implant, prosthodontic treatment, and caries treatment not covered with NHI. The higher orders in needs of expansion of NHI were caries treatment not covered with NHI, prosthodontic treatment, and orthodontic treatment. The agreement percentages with age restriction in NHI were scaling 57.1%, denture 23.3%, implant 14.3%, respectively. The subjective oral health had impact on the stress of dental treamtent cost and expansion on NHI. Although only 8.3% subjects had private dental insurance, 68.4% of the subjects had positive opinions buying private dental insurance. The correlation coefficients between stress of dental treatment cost and buying private dental insurance were implant 0.408, caries treatment not covered with NHI 0.404, denture 0.394, crown and bridge 0.375, and orthodontic treatment 0.313. Expansion of NHI in dental treatment and development of private dental insurance was suggested to treat dental disease in appropriate time.

The Factors Affecting Hepatitis B Vaccination of Dental Hygiene Students (일부 치위생과 학생의 B형간염 예방접종에 영향을 미치는 요인)

  • The purpose of this study was to investigate the differences in health belief related to vaccination among dental hygiene students, identify the factors affecting hepatitis B vaccination, and provide basic data for health education concerning hepatitis B prevention. Hepatitis B vaccination was positively correlated (r=0.179, p=0.003) with seriousness of believing that hepatitis B would affect psychological, physical, and social activities and negative correlation (r=-0.183, p=0.002) was also found between perceived barriers related to hepatitis B. As for the factors affecting hepatitis B vaccination, juniors were 0.39 times (95% confidence interval [CI]=0.21, 0.71) more likely to have it affected than seniors and those who were more serious, and who had greater barriers were more likely to have it affected-1.80 times (95% CI=1.29, 2.52), 0.61 times (95% CI=0.41, 0.90) respectively (p<0.05). It is therefore urgent to develop a program within a curriculum that can begin with freshmen along with specific education with the objective of obliging dental hygiene students to receive hepatitis B vaccination. It is also necessary to provide consecutive sessions of education rather than one-time education and to develop a specific plan for obligatory hepatitis B vaccination through correct and thorough education.

Mitral Valve Reconstruction in Patients with Moderate to Severe Left Ventricular Dysfunction (중등도 이상의 좌심기능부전 환자에서 승모판성형술)

  • Background: Left ventricular dysfunction is one of the important prognostic factors of early mortality and long-term survival after valve operation. We studied the intermediate term results of mitral valve reconstruction in patients with moderate to severe left ventricular dysfunction. Material and Method: Forty four patients who underwent mitral valve reconstruction with a left ventricular ejection fraction (EF) of <45% or less (20∼45%) from April 1995 through July 2001 were reviewed retrospectively. Ages ranged from 10 to 67 years (46∼14 years) and 32 patients were in NYHA class III-IV. The mitral valve diseases were regurgitation (MR) in 28 patients, stenosis(MS) in 10, and mixed lesion in 5. The etiologies of mitral valve disease were rheumatic in 20 patients, degenerative in 14, ischemic in 5, annular dilatation in 2, congenital in 2, and endocarditis in 1. Operatively, all patients had annuloplasty and/or various valvuloplasty techniques, and a total of 52 procedures were concomitantly performed. Total cardiopulmonary bypass and aortic crossclamp time were 160$\pm$57 minutes and 112$\pm$45 minutes respectively. Result: Two operative deaths occurred as a result of left ventricular failure (4.5%). After the mean follow-up of 39 months (range, 10∼83 months), there was no late death. Transthoracic echocardiography revealed no or grade I of MR in 29 patients (72.5%) and no or mild MS in 35 patients (87.5%). The actuarial survival at 5 years was 100%. Four patients required mitral valve replacement due to progressive mitral valvular disease. The actuarial freedom from valve-related reoperation at 5 years was 84$\pm$9%. Conclusion: This study suggests that mitral valve reconstruction in patients with moderate to severe left ventricular dysfunction offers good early and intermediate survival and acceptable freedom from valve-related reoperation, and it is the strategy for effective management for these patients.

  • Along with the rapid advance in internet technologies, ubiquitous mobile device usage has enabled consumers to access real-time information and increased interaction with others through various social media. Consumers can now get information more easily when making purchase decisions, and these changes are affecting the brand landscape. In a digitally connected world, brand image is not communicated to the consumers one-sidedly. Rather, with consumers' growing influence, it is a result of co-creation where consumers have an active role in building brand image. This explains a reality where people no longer purchase products just because they know the brand or because it is a famous brand. However, there has been little discussion on the matter, and many practitioners still rely on the traditional measures of brand indicators. The goal of this research is to present the limitations of traditional definition and measurement of brand and brand image, and propose a more direct and adequate measure that reflects the nature of a connected world. Inspired by the proverb, "A man is known by the company he keeps," the proposed measurement offers insight to the position of brand (or brand image) through co-purchased product networks. This paper suggests a framework of network analysis that clusters brands of cosmetics by the frequency of other products purchased together. This is done by analyzing product networks of a brand extracted from actual purchase data on Amazon.com. This is a more direct approach, compared to past measures where consumers' intention or cognitive aspects are examined through survey. The practical implication is that our research attempts to close the gap between brand indicators and actual purchase behavior. From a theoretical standpoint, this paper extends the traditional conceptualization of brand image to a network perspective that reflects the nature of a digitally connected society.

Change in the composition and enzyme activity of culturable lactic acid bacteria in Nuruk during fermentation at different temperatures (온도를 달리한 누룩 발효 기간별 배양 유산균 변화 및 분리 유산균들의 효소 활성)

  • The microbial composition in Nuruk, a Korean cereal fermentation starter, is a critical factor for the quality and organoleptic properties of traditional alcoholic beverages. This study was aimed at monitoring the compositional change and enzyme activity of culturable lactic acid bacteria (LAB) in two types of Nuruk fermented at different temperatures. All culturable LAB were isolated at various time points (0, 3, 6, 10, 20, and 30 days) and identified by 16S rRNA sequencing. In traditional Nuruk type A (TN-A), which was fermented at $36^{\circ}C$, the population of total culturable LAB during the fermentation period was between $10^4$ and $10^5$ log CFU/mL. On the other hand, the LAB population in traditional Nuruk type B (TN-B) fermented at $45^{\circ}C$ (primary fermentation for 10 days) and $35^{\circ}C$ (secondary fermentation for 20 days) was $10^2$ log CFU/mL; however, these bacteria could not be detected after 6 days. Major LAB strains were identified in both Nuruk types: (1) from the MRS-culture of TN-A, Pediococcus pentosaceus at 3-30 days; (2) from MRS-culture of TN-B, P. pentosaceus at 3 days and Enterococcus hirae at 6 days. The protease activities of the dominant LAB isolated from the TN-A and TN-B cultures were within the ranges of 0.64~1.03 mg/mL and 0.74~0.81 mg/mL (tyrosine content), respectively, whereas the ${\alpha}$-amylase activities were 0.75~0.98 mg/mL and 0.78~0.79 mg/mL (amylose content), respectively.

The Influence of Admixture of Lignosulfonic Acid Type on the Strength of Mortar (Lignosulfonic Acid계(系) 감수제(減水劑)가 모르터의 강도(强度)에 미치는 영향(影響))

  • This study is intended to find out the influence of Lignosulfonic Acid Type Admixture on compressive, tensile, flexural strength and dispersing action of mortar, and fixation of by-product of pulp industry. 1. The more Pozzolith-84 is added, the larger flow value is. The admixture of lignosulfonic acid type adhere to cement particles and the surface potential of particles is generated. On account of the repulsion among the cement particles, they are dispersed and the mortar get workable, so the production cost of precast product is curtailed and the amount of cement is reduced in a certain workability of mortar. 2. The strength of mortar is greater than plain mortar when P/C added is 0.2 and 0.4%. As time passed the potential energy is reduced and the distance of particles which lignosulfonic acid adhered to get near according as the amount of adhesion is increased. The setting and hardening reaction of morter is occurred in close state, so the strength of mortar is increased a little. The strength of mortar is less than plain mortar when amount P/C added is 0.8%. Pozzolith-84 is mainly composed of lignosulfonic acid and lignin does not influence the hardening of mortar, therefore the remained $SO_3$, $SO_3H$ are the reason of decrease of strength. 3. There is high significance between specific gravity and compressive strength. The larger specific gravity is, the more compressive strength is increased. There is high significance between 7 day's strength and 28 day's strength. The larger compressive strength is, the more tensile and flexural strength are increased. 4. Since Pozzolith-84 is a by-product of pulp industry, by using the Pozzolith-84 admixture the concreate quality is improved. The water pollusion is reduced according to fix by-products in concrete structure.
