인천시 주부의 풍미 증진제에 대한 인식실태 (Housewives′ Perception of Flavor Enhancer Products in Inchon)

  • The purpose of this study was to investigate the perception and use of flavor enhancer products. This study was carried out through questionnaire and the subjects were 503 housewives in Inchon. The results are summarized as follows. As for age, 51.9% of the subjects were 40 years or older. Also, 60.0% of the subjects had received a high school education. As for occupation, full-time housewives accounted for 63.7%. Monthly household income of most subjects were 1 million won or more, and monthly food expenses of most subjects were 300 thousand won or more. Also 71.0% of subjects lived in apartments. As for taste of flavor enhancer products, 58.3% of subjects perceived that it was mediocre, 31.3% said good, 6.2% said bad, and 1.8% said very bad. Most subjects perceived that the convenience of flavor enhancer products was good and there was a significant difference among the groups divided by education level. As for economy of flavor enhancer products, there were significant differences among groups divided by household income and food expenses. Most subjects perceived that the safety of flavor enhancer products was not good. Most subjects considered the date of manufacture, manufacturers, food additives, packaging and price when they purchased flavor enhancer products. Also, 70.0% of subjects were going to reduce the amount of flavor enhancer products they use in the future. Most subjects needed flavor enhancer products good for health. Therefore, it may be necessary to develop and to produce safe, nutritious, tasty, cheap and various flavor enhancer products.

단백질 가수분해물을 이용한 식품 내 소금 저감화 (Salt reduction in foods using protein hydrolysates)

  • As excessive intake of salt is regarded as a reason for health problems, the tendency of people to attempt to reduce intake of salt in their everyday lives is on the rise. In Korea, where many people have a higher intake of salt compared to those in other countries, there have been diverse efforts to improve on this eating habit. Protein hydrolysates are chemically, physically hydrolyzed protein that have been widely utilized as a material for not only regular food but health functional food due to have diverse biological effects such as anti-oxidation, anti-inflammation, prevention of diabetes, and regulation of blood pressure. Various amino acids such as glutamic acid, arginine and arginine dipeptides, which exist in the components of protein hydrolysates, have also been recently recognized as being helpful in decreasing the use of salt in foods as they can greatly enhance salty taste when used concurrently with salt due to having both salty and palatable flavors. In the case of protein hydrolysates that decompose soy protein or fish protein such as anchovy, they could reduce consumption of salt by as much as 50% without affecting people's food preferences when applied to food as they boost salty taste by approximately 10% to 70%. Although there are only a few studies on protein hydrolysates as a salty taste enhancer or salt substitute, the results of several studies are indicative of the potential of protein hydrolysates as a salty taste enhancing ingredient.

오미자 첨가량에 따른 Demi-Glace 소스의 일반성분과 유리당 함량 및 관능적 특성 (The Proximate Composition, Free Sugars Contents and Sensory Characteristics of Demi-glace Sauce according to the Varying Quantity of Omija Added)

  • This study was conducted to examine the sensory characteristics and the contents of proximate composition and the free sugars of the Demi-glace with varying quantity of Omija extracts added. First, the qualities of Demi-glace sauces with varying quantity of Omija extracts added are as follows: (1) Proximate composition: The moisture content was 66.10~73.50%, and crude ash content was 1.59~1.89%. As the Omija extracts added increased, moisture content increased, whereas crude ash content decreased. The crude protein content was 6.12~7.95%. Among them, the one with the 2% Omija added showed the highest level of the crude protein. (2) Free sugars contents: In terms of total sugar contents, the control showed 1.32% and Omija sauces showed 1.44~1.55%. Major free sugars analyzed in the order of fructose, oligosaccharide, glucose and sucrose. Second, the results of sensory evaluation of Demi-glace sauces with the different levels of Omija added are as follows: (1) The preference of Demi-glace sauces according to occupation: Students and Cooks liked the one with the 2% Omija added in terms of color, flavor, taste, texture and overall acceptability. Cooks showed higher preference than students. (2) The preference of 5 tastes: It was found that Demi-glace sauce with the 2% Omija added was the best. The one with the 2% Omija added was suitable in terms of sweet taste and bitter taste and the one with the 3% Omija added was desirable for hot taste and saline taste. In terms of sour taste, the one with 1% Omija added was regarded as the most desirable one. (3) The preference for authentic tastes for Demi-glace sauce: In terms of simple taste, females showed higher preference than males. Demi-glace sauce with the 2% Omija added was found to be the best for savory taste, flavor enhancer taste, simple taste, after taste and overall acceptability. The one with the 1 % Omija added was regarded as the best for soft taste.

Physical, chemical composition and umami compound of dried immature and mature roes of skipjack tuna (Katsuwonus pelamis)

  • In this study we investigate physical and chemical characteristics of immature and mature skipjack tuna (Katsuwonus pelamis) roes in fresh and dried forms. Fresh roes were studied for histological structure and also dried by three methods: hot air drying (HD), vacuum drying (VD) and freeze drying (FD). The obtained roe powders were analysed for proximate composition, color value, fatty acid composition, amino acid profile, equivalent umami concentration (EUC) and protein pattern. Unyolked oocytes were more common in immature roes, while fully yolked oocytes were more common in mature roes. All dried tuna roes contained high content of protein and lipid (69.31%-70.55% and 11.14%-16.02%, respectively). The powders obtained by FD provided the highest lightness value (L*). The main fatty acid found in all roe powders was docosahexaenoic acid (DHA) (23.49%-27.02%). Glutamic acid, leucine, and aspartic acid were the three most abundant amino acids found in the powders (13.58-14.61, 8.06-8.42, and 7.81-8.39 g/100 g of protein, respectively). The mature roe powder obtained from HD provided the highest EUC value (73.09 g monosodium glutamate/100 g of samples). The protein band at molecular weight of 97 kDa (vitelline) represented the major protein. Therefore, dried tuna roe could be a functional ingredient source of protein and lipid rich in DHA and it also has potential to be used as taste enhancer with umami compound.

Effect of Dry-Aged Beef Crust Levels on Quality Properties of Brown Sauce

  • This study utilized the crust by-product from dry-aged beef as a flavor enhancer for brown sauce and analyzed its physicochemical and organoleptic properties. The physiochemical properties include proximate composition, color, pH, swelling yield, viscosity, and salinity. The organoleptic properties were studied through electronic nose and sensory evaluations. The moisture content of the samples decreased while fat and protein content increased as crust content increased (p<0.05). The lightness, yellowness, and redness increased with increasing crust content (p<0.05). The pH of the samples also increased as the crust content increased. The viscosity significantly increased while salinity decreased with increasing crust content (p<0.05). The aromatic profiles of the control and samples with 5% and 10% crust addition were distinguishable; however, samples with crust additives between 10% and 15% gave similar aromatic profiles. The taste of the control sample was significantly lower than that of the samples formulated with the crust (p<0.05), and the sensory viscosity of the samples with 10% crust was significantly higher than that of the control (p<0.05). Flavor and overall acceptability tended to increase with increasing crust content of up to 10% addition (p<0.05). These results show that the crust from dry-aged beef loin crust is a suitable natural flavor enhancer for brown sauce and improves its physiochemical and organoleptic properties.

멸치 단백질 효소가수분해물의 강도평가를 통한 짠맛증진효과 (Salty Taste Enhancing Effect of Enzymatically Hydrolyzed Anchovy Protein)

  • 소금의 과량 섭취가 건강에 유해한 영향을 미칠 수 있어 이를 해결하기 위한 다양한 연구가 진행되고 있다. 최근 우리나라의 전통 발효 식품인 간장, 액젓 등이 짠맛을 증진한다는 보고가 있어 이에 대한 연구가 활발히 이루어지고 있다. 본 연구에서는 어간장과 액젓의 주요 재료로 사용되는 멸치를 효소 가수분해한 eHAP의 짠맛 증진 효과에 대해 살펴보았다. 동일한 소금농도의 용액에 eHAP의 첨가량을 달리하였을 때 첨가량이 증가할수록 짠맛 증진효과도 증가하여, 50 mmol/L의 용액에 2%의 eHAP를 첨가하였을 경우 $67.79{\pm}6.35%$의 짠맛 강도를 인지하였으며, 용액의 소금농도가 높을수록 eHAP의 첨가에 따른 짠맛 증진효과가 더 크게 나타났다. 이러한 짠맛 증진 효과는 멸치 단백질 가수분해물에 다량 함유하고 있는 $\small{L}$-lysine과 $\small{L}$-arginine과 감칠맛을 나타내는 glutamic acid와 aspartic acid에 상호작용에 의한 것으로 보인다. 0.1%에서 2%까지 eHAP의 첨가량을 달리하였을 경우 최소 0.37%에서 최대 35.58%의 짠맛 증진 효과를 나타내어 멸치단백질 효소가수분해물이 염미 증진제로서 향후 활용 가능성이 있는 것으로 판단된다.

분리 대두 단백 효소가수분해물의 강도평가를 통한 짠맛증진효과 연구 (A Study of Salty Enhanceability of Enzymatically Hydrolyzed Isolated Soy Protein)

  • 소금의 과량 섭취가 성인병, 생활습관병 등 여러 건강상에 문제가 있다는 보고에 의해 이를 해결하기 위한 다양한 연구가 진행되고 있다. 우리나라도 전통적인 식생활 습관에 의해 많은 소금을 섭취하고 있어 이를 개선하기 위한 범국가적으로 노력하고 있다. 최근 콩단백질을 활용한 우리나라의 발효 식품인 간장 등이 짠맛을 증진한다는 보고가 있어 이에 대한 연구가 활발히 이루어지고 있다. 본 연구에서는 간장의 주원료인 콩단백질을 가수분해하여 얻어진 효소가수분해(eHISP)의 짠맛 증진 효과에 대해 살펴보았다. 동일한 소금농도의 용액에 eHISP의 첨가량을 달리하였을 때 첨가량이 증가할수록 짠맛 증진효과도 증가하여, 50 mmol/L의 용액에 2%의 eHISP를 첨가하였을 경우 $70.13%{\pm}5.45%$의 짠맛 강도를 인지하였으며, 용액의 소금농도가 낮을수록 eHISP의 첨가에 따른 짠맛 증진효과가 더 크게 나타났다. 이러한 짠맛 증진효과는 콩단백질의 주요 아미노산 성분인 glutamic acid, aspartic acid와 효소가 수분해에 포함되어 있는 arginyl dipeptide와 같은 저분자량의 펩타이드 등의 상호작용에 의한 것으로 보인다. 0.1%에서 2%까지 eHISP의 첨가량을 달리하였을 경우 최소 2%에서 최대 39%의 짠맛 증진 효과를 나타내어 분리대두단백질의 효소가수분해물이 짠맛 증진물질로서 활용 가능성이 있는 것으로 판단된다.

천연 염미증강제 개발을 위한 완도산 다시마의 열수 추출 조건 최적화 및 염미증강 효능 평가 (Optimization of Hot Water Extraction Conditions of Wando Sea Tangle (Laminaria japonica) for Development of Natural Salt Enhancer)

  • 완도산 다시마를 천연 염미증강제로 개발하기 위하여 다시마로부터 정미성분이 최적으로 추출되는 열수 추출 조건을 평가하였으며, 다시마 추출분말을 이용하여 염미증강 효능과 나트륨 저감화율을 분석하였다. 정미성분 추출에 가장 적합한 완도산 다시마의 수확시기를 선정하기 위하여 5월, 6월, 7월에 수확한 다시마의 일반성분과 유리아미노산을 분석한 결과 정미성분 아미노산(glutamic acid와 aspartic acid)의 함량이 가장 높은 6월 수확 다시마를 추출 원료로 선정하였다. 다시마 열수 추출 온도와 시간 조건을 평가하기 위하여 $60^{\circ}C$, $80^{\circ}C$, $100^{\circ}C$에서 1시간, 2시간, 3시간을 각각 추출하여 추출액의 품질 특성을 분석한 결과 $100^{\circ}C$ 추출 조건에서 가용성 고형분과 조단백의 함량이 35.47~36.93%와 3.75~4.00%로 가장 높게 나타났으며, 점도는 1.96~2.19 cP로 낮게 나타나 추출 온도는 $100^{\circ}C$를 선정하였다. 추출 시간 선정을 위하여 $100^{\circ}C$에서 추출 시간에 따른 추출액의 정미성분 아미노산 함량과 관능적 특성을 평가한 결과 추출 2시간에서 정미성분 아미노산인 glutamic acid와 aspartic acid의 함량이 각각 275.33 mg%와 121.18 mg%로 가장 높게 나타났으며, 관능적 기호도도 유의적으로 높게 평가되어 다시마로부터 정미성분 추출을 위해 적합한 추출 온도와 시간은 $100^{\circ}C$, 2시간 조건으로 확인되었다. 정미성분이 최적으로 추출된 다시마의 추출분말을 제조하여 NaCl 용액에 첨가한 후 염미증강 효능을 평가한 결과 짠맛 강도 1, 5, 9의 NaCl 용액이 다시마 추출분말 1% 첨가 후 짠맛 강도 4.25, 10.08, 16.58로 상승하였다. 동일한 짠맛 강도에서 NaCl 용액과 다시마 추출분말이 첨가된 시험용액의 나트륨 함량을 측정하여 나트륨 저감화율을 분석한 결과 12.24~24.33%의 저감화율을 나타내었다. 본 연구를 통하여 감칠맛과 정미성분이 풍부한 다시마 추출물은 조미소재뿐만 아니라 식품에서 나트륨 함량을 줄이기 위한 천연 염미증강제로서 산업적 활용을 기대할 수 있다.

ʟ-아르기닌과 ʟ-아스파라긴산 혼합이 NaCl 짠맛 향상에 미치는 영향 (Combination Effect of ʟ-Arginine and ʟ-Aspartic acid on Saltiness Enhancement of NaCl Solution)

  • $\small{L}$-arginine ($\small{L}$-Arg)을 짠맛 증강소재로 활용하기 위하여 전자혀 분석으로 $\small{L}$-Arg의 맛 특성을 조사하고, $\small{L}$-Arg의 강한 쓴맛을 억제하기 위하여 $\small{L}$-aspartic acid ($\small{L}$-Asp)을 혼합하였다. 0.4% NaCl 용액에 $\small{L}$-Arg과 $\small{L}$-Asp를 혼합하여 전자혀 시스템으로 분석한 결과 $\small{L}$-Arg과 $\small{L}$-Asp의 혼합을 다르게 한 경우, 동일한 $\small{L}$-Arg 농도에서 $\small{L}$-Asp의 비율이 감소함에 따라 NaCl의 짠맛 상승효과는 증가하였다. 관능평가에서 짠맛은 동일한 경향이었으며, $\small{L}$-Asp의 첨가로 $\small{L}$-Arg의 쓴맛이 억제되는 것을 확인하였다. 즉, $\small{L}$-Arg과 $\small{L}$-Asp 혼합물은 짠맛 증강소재로 활용될 수 있으며, $\small{L}$-Arg의 쓴맛을 상쇄하기 위한 최적의 혼합비율은 $\small{L}$-Arg : $\small{L}$-Asp =1.00:0.98-1.00 범위가 적합하였다.

열수추출(熱水抽出)에 의한 어패류 추출물의 제조 및 품질 (Studies on Preparation and Quality of Oyster(Crassostrea gigas), Sea mussel(Mytilus coruscus) and Crab(Portanus tribuerculata) Extracts by Water Extraction)

  • 어패류 자원중 기호도가 높은 굴, 홍합, 게를 원료로 하여 열수추출법(熱水抽出法)에 의해 추출물을 제조하고 유리아미노산과 핵산관련물질등 품질을 조사하였다. 추출시험 결과 온도 $95^{\circ}C$에서 추출시간 40분, 가수량은 원료중량의 $1.5{\sim}2$배가 적당하였고 유리아미노산의량은 굴 추출물이 554.17mg%, 홍합 추출물은 765.95mg%, 게 추출물은 1,886.87mg%였으며 맛성분에 관여하는 glutamic acid, glycine, proline 및 alanine등의 양이 전체 유리아미노산의 약 50% 이상을 차지하였다. 핵산관련물질의 량은 굴 추출물이 581.51mg%,홍합 추출물은 941.77mg%, 게 추출물이 606.24mg%였다.
