TV 요리 프로그램의 시대적 변화에 대한 연구 (Change of the Age of TV Cooking Programs)

  • 본 연구는 TV에 방영되고, 방영되었던 요리 프로그램의 시대적 변화에 관한 연구이다. 미디어는 외형적으로 많은 변화가 보인만큼 내적으로도 많은 변화를 보이고 있다. 현재 많은 사람들이 선호하고 있는 요리 및 음식에 관한 프로그램을 통해 다양한 변화와 시대적인 변화에 대하여 고찰하고자 함이다. 선행연구에서는 미디어 포맷 변화와 2000년대까지 사회적 변화와 프로그램의 변화에 대하여 알아보았다. 이를 기반으로 요리프로그램의 시대적 변화에 대하여 시대적 변화에 따라 분석하였다. 본 연구를 위하여 요리에서 조리로 변화와 역사적 변화로 구분하였으며, 이를 통해 시대별 구분을 하고 고찰하였다. 본 연구를 통해 문화변화에 따른 식단의 변화와 혼합되는 시대에 요리프로그램의 변화를 알 수 있었다. 정보의 일방적인 전달이 아닌 소비자가 느낄 수 있는 프로그램으로 변화를 알 수 있었으며, 전문가의 시대에서 문화로의 변화를 볼 수 있었다. 또한 음식을 통한 지역 문화소개 및 도전을 이를 통해 후속연구에서는 프로그램의 구분에 따른 변화와 사회현상을 보고자 한다.

  • 본 연구는 tvN의 리얼리티 프로그램 <윤식당>의 시즌1과 시즌2를 비교분석해 봄으로써 미디어를 통해 표현되는 음식과 요리 과정의 재현, 그리고 그것이 의미하는 문화적 함의에 대해 알아보았다. 이론적 논의를 통해 '요리행위 - 음식제공 - 식사행위'로 이어지는 일련의 과정이 사회 문화적으로 어떤 의미를 내포하는지 살펴보았으며, 통합체 분석, 계열체 분석, 행위주 분석, 레비-스트로스의 요리 삼각형 개념을 적용하여 분석하였다. 분석결과 리얼리티 프로그램 <윤식당>이 외국에 한식당을 운영함으로써 소박한 일상과 여행을 통해 느낄 수 있는 여유와 느림의 가치에 주목했는데 반해, 실제로는 한국음식의 소비태도와 이를 반영하기 위한 요리 및 음식 제공 행위의 변형된 의미가 발견되었다. 나아가 한국음식의 변용이 현지화 또는 세계화라는 이름에 감춰진 '한국음식의 혼종성과 비정체성'을 뜻하며 한식의 세계화를 내세웠지만 그로인해 한국음식의 고유성 훼손이라는 부작용을 낳게 되었다. 이는 오락성을 위해 한국음식을 변형하여 제공했으며, 역설적으로 한국 음식문화의 문화적 혼종성 및 정체성 훼손을 생성한 것은 아닌가 하는 우려를 낳게 했다.

식생활 및 건강관련 지상파 TV 유아 프로그램 모니터링 (Monitoring Diet and Health Related Content in Terrestrial TV Programs for Young Children)

  • Objectives: Television is the most influencing mass media. It has taken an important part in our daily life as the information source. Transmitted informations are the important sources for building one's conscience, value and behavior for all age groups from young children to aged. Methods: In this paper, all land-based TV programs for young children has been monitored by quantity and quality from July 1st 2008 'till December 31st. General programs for young children have been monitored by its theme, type, contents delivery method, proportion of diet and health information in the program, and appropriateness. For the analysis, SPSS was used. Results: Young children's program 2,771 programs and 47,169 minutes during the period were monitored. From programs for young children about 'general' and 'cooking', there were 48programs(30.6%) that has contents about dishes, 47programs(29.9%) about food and nutrition, 34programs(21.7%) about life habits. From the programs, diet and health has been delivered by 'practical exercise(38.9%)', by 'cartoon & puppet show(31.2%)', followed by 'explanation from experts(15.3%)', 'song & movement(8.9%)', and 'simple introduction(4.4%)'. From programs for young children about 'general' and 'cooking', there were 157programs that has contents about ideas and delivery method being considered, 'appropriate(45.7%)' for giving positive and 'inappropriate(54.3%)' for its negative influence to young children, the need of improvement was suggested. Conclusion: Considering the importance of infancy in one's lifetime, not only specific field but each program for young children itself should be monitored by experts of each field. A plan on how to deliver accurate content effectively to young children should be searched in various ways.

HMR 제품과 방송 속 레시피의 영양성분 분석: 국, 찌개, 탕류를 중심으로 (Comparative Analysis of Nutrients between HMR Products and TV Recipes: Focusing on Soup, Stew, and Broth)

  • This study examined the nutrient content of HMR products and recipes by television chefs. Twelve menu items from the soup, stew, and broth category were chosen from HMR products and TV chef's recipes. The data on the nutrition labeling from the HMR products and TV chef's recipes were calculated using Can-Pro 5.0. The results of the analysis were the differences between the HMR products and TV recipes per serving size. The energy content of TV recipes 236.1 kcal was significantly higher than the HMR products. On the other hand, HMR products contained significantly higher sodium (926.9 mg) levels than the TV recipes (565.8 mg). In general, HMR products contained more sodium and less energy and protein than TV recipes. The highest sodium content containing products among the 12 menu items was the Spicy soft tofu stew (1,421.4 mg) from HMR products. The results revealed the significant differences in the macronutrient and sodium content between HMR products and the TV chef's recipe. This study provides supportive data for the need to reduce the sodium content in HMR products. TV cooking programs should focus on the importance of balanced nutrition, how to reduce sodium intake, and how to achieve this without disrupting well-balanced nutrition.

방송매체에 나타난 식품영양정보 모니터링 (The Monitoring of Information about Food and Nutrition Presented Throughout Various Television Brodeast Media)

  • The purpose of this study was to analyze information about food and nutrition presented through the television broadcast media, with the aim of finding out the optimal communication method for supplying the general public with accurate information. To perform this study, a total of sixteen monitoring people were recruited and trained before and during the study. Five domestic TV channels were selected to be monitored, and the total monitoring period was six months. For maximum efficiency, the monitoring people were assigned to 8 teams. The results of the present study can be summarized as follows : First, the total reported cases of information about food and nutrition were 237, of which about 30% were judged appropriate and 70% as inappropriate. Second, classifying each case by program type, information programs made up the highest portion at 82 cases (34.6%), cooking programs accounted for 76 cases (32.1%), news programs for 40 cases (16.9%), and entertainment programs for 7 cases (3.0%). The analysis showed that the greatest amount of incorrect information was found in dramas, followed by entertainment, information, cooking and news programs. Third, classifying each case by theme of contents monitored, meal preparation and cookery made up the highest portion at 86 cases (36.3%), foods accounted for 67 cases (28.3%), disease and diet-therapy for 40 cases (16.9%), eating habits for 31 cases (13.1%), and diet and fitness for 13 cases (5.5%). Incorrect information was conveyed most often on the themes of food habits, foods, disease and diet-therapy, cookery, and diet and fitness. Fourth, classifying each case by channel, Cable TV had the highest frequency at 72 cases (30.4%), MBC had 51 cases (21.5%), SBS had 43 cases (18.1%), KBS1 had 41 cases (17.3%) and KBS2 had 30 cases (12.7%). In conclusion, systematic monitoring should be continued to reduce the frequency of incorrect information being broadcast and to help ensure that accurate information is conveyed to the general public. Moreover, there should be a system of cooperation to provide information to help broadcast production teams establish a strategic program. Finally, it is essential to organize an advisory team by promoting links between the mass media and specialists in the field, and to develop an educational program on nutrition to help ensure the communication of accurate information on food and nutrition. Science-Related Attitudes of Korean Housewives

  • The purpose of this research is to suggest the way to promote housewives' understanding of science and technology, based on the survey results of the attitude toward science and technology, the scientific attitude, and the interest in science and technology of housewives in Korea. The questionnaire was developed by researchers and administered to housewives who live in Seoul to get basic information. Housewives showed slightly positive attitudes toward science and technology, and similarly positive scientific attitudes. These scores were increased as monthly income and education level were raised. Housewives' interest of the science-technology related topics (foods, health, education, leisure, social issues, cooking, housing, everyday activity) was relatively high, and the interest of foods, health, education, and leisure was significantly correlated with the scores of housewives' attitude towards science and technology and their scientific attitudes. Housewives are shown to be curious to know these topics when they were asked by their children or do not know the terms appeared in media, or purchase home appliances and food. And they get the answers in a passive way by asking their family members or by watching TV or newspapers. They preferred TV program for enhancing their understanding of science. But such program could be proper to present science knowledge but not fulfill the role to promote scientific literacy. Specially designed programs through science centers or science museums would be suggested for their lifelong education.

조리교육생의 약선 음식 이용 특성 및 교육 참여 의사 - 인구통계학적 특성을 중심으로 - (Current State of Usage and Education Participation Intention for Yaksun Food among Culinary Students - Focused on Demographic Characteristics -)

  • Purpose: The purpose of this study was to examine the current state of usage and education participation intention for Yaksun food according to demographic characteristics. Methods: The questionnaire for the survey was distributed to 300 students, who were enrolled in culinary education program at Seoul Institute of Technology and Education from September 5, 2014 to September 20, 2014, and 264 responses were used for analysis. Results: Awareness regarding Yaksun food was low, but the intention to participate in the Yaksun food class was high. The information searching route for Yaksun food was mainly television, radio or internet. Memil-jeonbyeong ssam was the most eaten menu item and Nokdu-Samgye tang was the most popular menu item. Among the different types of Yaksun food, vegetable dishes, steamed dishes, rice dishes and roasted dishes were preferred in this order. The most preferred educational institution for Yaksun food was the cultural center, and the most preferred educational period for Yaksun food was less than three months. The most important point in the Yaksun food class was practical application in real life. Also, the current state of usage for Yaksun food and the intent to participate in an education program for Yaksun food was statistically different according to demographic characteristics. With respect to the current state of usage for Yaksun food, the information searching route for Yaksun food was statistically different according to occupation, cooking career and lives and Yaksun cuisine type preference according to gender, occupation, income and households. Also, with respect to education program participation intention for Yaksun food, educational institution preference for Yaksun food was statistically different according to gender, age, occupation, cooking career, income and lives. Conclusion: Based on these results, this research concludes that for developing an educational program for Yaksun food, it is important to analyze the target customers' demographic characteristics and their needs. Furthermore, it shows that there is a need to develop various educational programs and menus for Yaksun food.

천연염색 제품 구매 고객의 매체 프로그램 및 정보원 이용 특성 (Differences between Purchasers and Non-purchasers of Naturally Dyed-products -Usages of Media, Media Programs, and Information Sources-)

  • This study investigates the differences between purchasers and non-purchasers of naturally dyed-products in the hobby/leisure, media exposure, usage of media program type, and information sources about naturally dyed-products. Data were collected from a total 213 Korean females ranging from 20 to 59 years old, and in data analyses, there were partially significant differences between the two groups. Compared to non-purchasers of naturally dyed-products, Purchasers of those ones were more interested in traditional fields and nature. They are also more exposed to newspapers and less exposed to TV. Purchasers used more informational and educational programs as well as personal and commercial information sources (store visual presentations and sales persons) than non-purchasers. However, the differences between these two groups were not significant in the interests of fashion/cooking and sports, Internet exposure, entertainment programs and public/commercial information sources about naturally dyed-products. Marketers can use the results to access the market of naturally dyed-products for promotion.

당뇨환자의 영양지식수준에 따른 자가관리 현황 및 웹베이스 영양관리 프로그램 개발에 관한 요구도 조사 (Needs Assessment for Web-based Self-management Program by the Nutrition Knowledge Levels of Diabetic Patients)

  • This study was conducted to assess needs of self-management nutrition program for diabetic patients. The survey was conducted among 100 diabetic patients, and the mean age of the subjects was 54.2 years old. Thirty three percent of the subjects were diagnosed diabetes less than 2 years ago. The average nutrition knowledge score about diabetes was 10.2 point, and percentages of correct answers were very high in 'foods rich in fiber' (97.0%), 'relevance of exercise and insulin' (97.0%), 'quantity of insulin injection' (91.0%), and 'diabetes menu' (91.0%). The sources of nutrition information were hospitals/healthcare centers (56.1%), TV/radio (19.2%), and internet (13.1%). Sixty nine percent of the subjects have experienced nutrition education on subjects as 'menu planning skills'(22.4%), 'selecting foods' (22.4%), 'relevance of blood glucose and eating foods' (21.5%) by personal counseling (54.4%). The total score of eating behavior was higher after diagnosed diabetes (35.3) than before (30.0) (p < 0.001). The preferred topics in developing diabetes nutrition information websites were 'diabetes mellitus', 'relevance of blood glucose and foods', and 'selecting foods for diabetes'. The subjects wanted the websites developed by 'using mainly illustrations, pictures, tables' (22.8%) and 'using simple design' (19.6%). The preferred contents in developing diabetes self-management nutrition program were 'dietary life diagnosis', 'chronic disease risk diagnosis', 'calorie control by selecting foods and cooking skills', and 'dietary assessment'. In designing the program, the subjects' most wanted designs were 'be handy and simple in using' (29.3%), 'using simple design' (17.9%), and 'using mainly illustrations, pictures, tables' (15.7%).

건강신념 모델을 적용한 고혈압 영양교육 프로그램 개발 -포커스그룹 인터뷰에 기초하여- (Development of Nutrition Education Program for Hypertension Based on Health Belief Model, Applying Focus Group Interview)

  • Health Belief Model is a socio-psychological theory of decision making to individual health-related behaviors. This study was aimed to develop an effective education program for hypertension based on health belief model. The main factors of health belief model were investigated by focus group interview (FGI) with 23 hypertensive or prehypertensive subjects aged over fifty years. 'Perceived susceptibility' to hypertension was family history, neglect of health care, preference for salty food, broth of soup and stew. Lifelong medication, complications, and medical costs were reported as 'perceived severity' of hypertension. 'Perceived benefits' of hypertension management were decrease of medicinal dose, reduction of medical costs, and healthy eating habits of the family, while 'perceived barriers' were lack of palatability of low salt diet, convenience-oriented dietary habits, and limited choice of foods when eating out. Subjects mentioned TV health programs, public health center programs, and advice from doctors and family as 'cues to action' of hypertension management. These qualitative information provided basis for developing a nutrition education program for hypertension which could be implemented in the public health center. Eight week program was composed of understanding hypertension, risk factor management (eating habits, weight), low salt diet (principles, cooking), advanced management for healthy diet in 2 sessions, and summary. Each session was designed to alert the susceptibility and severity, to emphasize the benefits, and to reduce the barriers by providing dietary monitoring, practical advice, and action tips.
