The Historical study of Beef Cooking - I. cookery of soup based on beef - (우육조리법(牛肉調理法)의 역사적(歷史的) 고찰(考察) - I. 우육을 사용한 국류의 조리법을 중심으로 -)

  • 1. There were 21 kinds foods and preservation of beef and the number of dishes were 346 in the literatures written before 1943. 2.Soup(羹) was appeared first, and followed by dried beef(肉脯), steamed(蒸), sliced of boiled beef(熟肉과 片肉), preservation(貯臟), pan broiled beef(濕熱炒), salted beef(肉醬), raw beef(膾), shish kebab(算炙), roasted with seasoning(炙), beef with vegetables cooked in pan(煎鐵), calf`s-hoof jelly(gelatin)(足片), jaban(佐飯), hardboiled beef(boiled in soy sauce), ravioli (饅頭), beef juice(肉汁), thick broth(heavy soup, 助致), grilled beef (煎油魚), mix with the season(muchim), sun(膳) and gruel(粥). 3.The total of 14 different names of soup were found in the literatures which are Yang tang(stomach soup), Dunggol tang(marrow soup), Dogol tang(medulla soup), Sungi kuk(ox-blood soup), Sogogi kuk(beef soup), Gom kuk(bone attached beef and organs soup), Jap tang(bone attached beef, organs and tough beef soup), Yukgaejang(fresh beef, organs and green onion soup), Joujeo tang(foot starched soup), Jok tang(foot soup), Kori tang(ox-tail soup), Kalbi tang(rib soup), Malgun jangkuk(clear soup), Wan ja tang(beef ball soup). 4.The number of staple ingredient were Tripe and fresh meat among 26 kinds of major ingredient, radish, wheat flour, egg among 21 kinds of miner ingredient black pepper, soy sauce and seasame among 22 kinds of seasonings, and Thin layer-fried egg among 9 kinds of decorating ingredient were used commonly in cooking for soup.

A YEAR REVIEW OF OUTPATIENTS IN DENTAL CLINIC OF THE MUNICIPAL HOSPITAL FOR THE DISABLED CHILDREN (1년간 일개 장애 어린이 전문병원에 내원한 치과 외래 환자에 대한 고찰)

  • Objectives: The goal of this study is to establish data baseline to ameliorate oral health policies for patient. The research was conducted in dental clinic at Seoul Metropolitan Children's Hospital - the major municipal hospital for the disabled. The outpatients' visiting patterns to the dental clinic were analyzed, compared to other medical departments. For further research related to TMD, the questionnaires were given to the subjects. Material and methods: Data for visiting patterns/frequencies was collected from patient records of 1419 outpatients who visited the dental clinic at Seoul Municipal Children's Hospital in 2011. Then TMD-related questionnaires were given to 127 outpatients who were over 13 years old. Results: 1. 219 out of 1419 patients (15.4%) who visited the dental clinic at Seoul Municipal Children's Hospital in 2011 were the disabled. 2. Compared to normal patients, disabled patients visited the dental clinic and rehabilitation medicine department more frequently.(p<0.05) However, there was no apparent difference in visiting frequencies between the disabled and the normal patients in the psychiatric department.(p=0.3237) 3. 44% of the TMD-related questionnaire subjects responded that they often consumed relatively hard or tough food, 53% answered they had unilateral chewing habit, 3% had bruxism, and 12% had clenching habit. Conclusion: In the dental clinic at Seoul Municipal Children's Hospital, 19% of outpatients over 13 years old had TMD such as clicking and pain. Also, the disabled patients' visits to the dental clinic were considerably more frequent, compared to the normal patients and to other medical departments. Accordingly, the result may suggest that the proper systematic supports from the government are essential to the dental clinic at municipal hospital for the disabled.

Modeling of coupled liquid-gas-solid three-phase processes due to fluid injection

  • A coupled liquid-gas-solid three-phase model, linking two numerical codes (TOUGH2/EOS3 and $FLAC^{3D}$), was firstly established and validated by simulating an in-situ air flow test in Essen. Then the coupled model was employed to investigate responses of multiphase flow and soil skeleton deformation to compressed air or freshwater injection using the same simulation conditions in an aquifer of Tianjin, China. The simulation results show that with injecting pressurized fluids, the vertical effective stress in some area decreases owing to the pore pressure increasing, an expansion of soil skeleton appears, and land uplift occurs due to support actions from lower deformed soils. After fluids injection stops, soil deformation decreases overall due to injecting fluids dissipating. With the same applied pressure, changes in multiphase flow and geo-mechanical deformation caused by compressed air injection are relatively greater than those by freshwater injection. Furthermore, the expansion of soil skeleton induced by compressed air injection transfers upward and laterally continuously with time, while during and after freshwater injection, this expansion reaches rapidly a quasi-steady state. These differences induced by two fluids injection are mainly because air could spread upward and laterally easily for its lower density and phase state transition appears for compressed air injection.

Morphological and cultural characteristics of a novel Phellinus linteus KACC93057P (신규 목질진흙버섯 KACC93057P의 배양적, 형태적 특성)

  • Morphological and culture characteristics of the novel Phellinus linteus variant KACC93057P collected in Korea were characterized in this study. The surface of the was angular, sessile, tough-woody, concentrically zonate, and dark brown in color. Basidiocarppores were circular, with 5-7 pores per mm. The hyphal system was dimitic, and basidiospores were ellipsoid or oval, $4.5-6{\times}4-5$, exhibiting characteristics typical of P. linteus. The optimum temperature for mycelial growth was $25-30^{\circ}C$, and optimal pH for growth was 5-7. The mycelial growth rate of P. linteus KACC93057P was faster than that of other P. baumii isolates. On growth medium, KACC93057P formed aerial mycelia with density higher than that of other isolates. The internal transcribed spacer (ITS)-ribosomal DNA sequences were closely related to the sequences P. linteus complex.

Tough High Thermal-Conductivity Tool Steel for Hot Press Forming (핫 프레스 포밍을 위한 고열전도성 금형에 대한 연구)

  • Due to the need for advanced technologies in the automotive industry, the demand for lighter and safer vehicles has increased. Even though various nonferrous metals, like Aluminum, Magnesium and also Carbon Fiber Reinforced Plastic (CFRP), have been implemented in the automotive industry, a lot of technical research and development is still focused on ferrous metals. In particular, the market volume of High Strength Steel (HSS) parts and Ultra High Strength Steel (UHSS) by hot press forming parts has expanded significantly in all countries' automotive industries. A new tool steel, High Thermal-Conductivity Tool Steel (HTCS), for stamping punches and dies has been developed and introduced by Rovalma Company (Spain), and it is able to support better productivity and quality during hot press forming. The HTCS punches and dies could help to reduce cycle time due to their high thermal conductivity, one of the major factors in hot press forming operation. In this study, test dies were manufactured in order to verify the high thermal conductivity of HTCS material compared to SKD6. In addition, thermal deformation was inspected after the heating and cooling process of hot press forming. After heating and cooling, the test dies were measured by a 3D scanner and compared with the original geometry. The results showed that the thermal deformation and distortion were very small even though the cooling time was reduced by 2 seconds.

Changes in Plant Species on a Grass Roof over Time (초지지붕에서의 시간경과에 따른 식생변화)

  • Unlike conventional roof landscaping, where various kinds of plants and structures are employed, a grass roof is a roof on which herbaceous plants are grown in planting medium and which is not accessed or maintained, mainly because it doesn't have sufficient load capacity to support a regular roof garden. They are mostly built on existing roofs, whether flat slab or gabled. Planting on roofs has numerous advantages, such as creating a biotope, purifying urban air, adding moisture to the atmosphere, storing rain water, preventing flash floods, reducing energy use for heating and air conditioning, enhancing the urban landscape and providing relaxation to the city dwellers, not to mention the alleviation of global warming by absorbing $CO_2$. In addition to the general merits of roof planting, the grass roof has its own unique qualities. Only herbaceous species are planted on the roof, resulting in light weight which allows roofs of existing buildings to be planted without structural reinforcement. The species chosen are mostly short, tough perennials that don't need to be maintained. These conditions provide an ideal situation where massive planting can be done in urban areas where roofs are often the only and definitely the largest space available to be planted. If roofs are planted on a massive scale they can play a significant role in alleviating global warming, heat island effects and energy shortages. Despite the advantages of grass roofs, there are some problems. The most significant problem is the invasion of neighboring plants. They may be brought in with the planting medium, by birds or by wind. These plants have little aesthetic value comparing to the chosen species and are usually taller. Eventually they dominate and prevail over the original species. The intended planting design disappears and the roof comes to look wild. Since the primary value of a grass roof is ecological, a change in attitude towards what constitutes beauty on the roofscape is necessary. Instead of keeping the roof neat through constant maintenance, people must learn that the wild grass with bird's nests on their roof is more beautiful as it is.

  • This paper is an observation on the woman's warming hoods such as Nambawi, Pungchae, Ahyam, Jnbawi and Gullae worn form 1800's through 1930's. At the late era of Chosun dynasty, The every day lifes of people were greatly influenced by invasion of western world, in particular the styles of clothing are changed from original one to Western-like. So the hoods of our own's were dissappcared gradually, and the interests of them were reduced accordingly by the western culture invaded. Therefore this paper is intended to participate in the study of clothing culture by considering of hoods, one of the almost disappeared clothes, and review the wisdom and sense of beauty of our ancestor by unique ornament. The warming hoods in this paper are from a category of ear-protection gear and also deformed from man's one. The ear-protection gear was a warming hood from Tae Jong, the king of the early era of Chosun, and usage classifications of them were strict according to the class division at the early and mid era of Chosun, but generally diminised at the late era, thery were used freely, but the differences in decorations represented the division of the rich and poor. General feature of it is open top, but covers all of head and is used for warming clothes, with has many decorations on it, this decorative tendency was more clear at the late era. Namely, the shape had been modified from tough one to modish one, and fur, the material of it, are from stiff and long to soft short and well refined. This warming hoods were used until 1930's then disappeared by the population of western mufflers and wraps. Jobawi is now already forgotten even its name except for the ornament in picturing the baby in first birth day. In revewing the consideration of warming hoods mentioned. It is found that the subtlety of the ancestor, and there are supplication for the happiness of life even in the decorations.

Effects of Washing and Desinewing Treatments on the Composition and Quality Characteristics of Spent Layer Meat (세척 및 결체조직 제거 처리가 노계육의 성분 및 품질 특성에 미치는 영향)

  • The effects of washing and desinewing on the composition, fuctional properties, storage stability and texture of spent layer meat were investigated. Spent layer meat subjected to treatments involving water washing, bicarbonate washing and desinewing showed increases in moisture content and decreases in protein content, hydroxyproline content and heme pigment content. Increases in salt extractable protein content and water holding capacity and decreases in buffering capacity and emulsifying capacity were also observed. The 2-thiobarbituric acid values of washed and desinewed samples increased slowly during storage indicated the increase in storage stability compared to the control. Sample rolls prepared from bicarbonate washed and desinewed thigh and drumstick meats were scored by trained sensory panelists as less tough than the products made of ground thigh and drumstick meats.

A high-effective method to separate nicotine from the tobacco-specific carcinogen 4-(methylnitrosamino)-1-(3-pyridyl)-1-butanone (NNK) mixtures using electrodialysis

  • The separation of nicotine and tobacco-specific N-nitrosamines is a tough problem in tobacco industry. In this study, separation of nicotine from 4-(methylnitrosamino) -1-(3-pyridyl)-1-butanone (NNK) mixtures was investigated using electrodialysis by taking the principle of the protonation status difference between these two components. The results indicated that the solution pH has a dominant impact on the separation process. In a pH range of 5-7, nicotine molecules are existed as mono- and di-protonated ions and can be separated from the uncharged NNK molecules. The acidic electrolyte is conducive to the separation process from the point of flux and energy consumption; while the alkaline electrolyte has negative impact on the separation process. A current density of $10mA/cm^2$ is an appropriate value for the separation process. The lowest energy consumption of the separation process is 0.58 kWh/kg nicotine with the process cost to be estimated at only $0.208 /kg nicotine. Naturally, electrodialysis is a high-efficiency, cost-effective, and environmentally friendly process to separate and purify nicotine from tobacco juice.

A STUDY ON THE INTERRELATION OF MAIN AXIS AND OFFICIAL INSTITUTION OF THE PROVINCIAL GOVERNMENT(KAMYOUNG) IN LATE CHOSEON DYNASTY (조선후기(朝鮮後期) 감영(監營) 중심축(中心軸)의 구성(構成)과 직제별(職制別) 상관성(相關性)에 관한 연구(硏究))

  • The KAMYOUNG is the supreme local government office in CHOSEON dynasty. This study aims to propose the new methodology on research of local government office's prototype in CHOSEON dynasty. Especially this study is the zoning plan of the KAMYOUNG in the late CHOSEON dynasty, It is meant to present the first trial that pursue to total frame of local government in CHOSEON dynasty through the new methodology. The 18th century is the transitional era when the system of norm was deconstructed. The institution and organization of the supreme lacal government office(KAMYOUNG) was united nationwidely and at the same time its deconstruction was carried out in the 18th century. The domain of the governer has fixed in the 18th century, though the scale of 街e KAMYOUNG was enlarged. These domain expressed a strong symbolization according to hierarchy in exterior appearance of the traditional architecture. With the entire execution of a local government coming soon, the concerns about the localization have been increased rapidly. Under this time situation, as the discussion centered on the creation or change of the local self-governing community, so the concerns regarding the traditional aspects of a local government office have been increasing. Hower, without the recognition of this history, as the research of these existing historical materials has been progressed, so the misunderstanding is still left. Especially, because the government office of CHOSEON is a Confucian nation thinking much of a hierarchy based on Yae - Jae, the hierarchy of this architecture has a deep correlation with the organization of an office. The method of this study is like following: Firstly, prescribed characteristic of KAMYOUNG tough syudys of hierarchy in a local government system, human and material composition. secondly, as the changing progress of KAMYOUNG is compared and analyzed with organization of an office in the center. So characteristics of KAMYOUNG are abstracted. And finally, from this, the interpretation methodology of KAMYOUNG is revealed, with a deep correlation between specific characters of organization and architectural structurals. And also, with these methodologies, the interpretation method of the local government office and normative frame in CHOSEON dynasty are suggested.
