  • Curcumin content of butanol fraction from C. longa was found to be 22.4942% of the highest content. However, in DPPH radical scavenging ability and antibacterial activity against methicillin resistance Staphylococcus aureus(MRSA, CCARM3696), ethylacetate fraction contained 2.5791% of curcumin was exhibited highest activity. In comparison of enhancing antibiotic(ampicillin) effect against MRSA, ethanol extract contained 1.7838% of curcumin showed more strong activity. This indicates that the ethanol extract and some fractions from C. longa can have antibacterial activity and enhancing antibiotic effect possibly without curcumin. Appropriate use of antimicrobial agent was important point prior to the development of new antibiotics. And in that sence, extract and fractions of C. longa were worth using as synergist of antibiotics and natural antimicrobial agent.

  • Antioxidant activity of crude extracts from colored sweet potato cultivars by plant parts such as root, stem and leaf was evaluated. The highest TBARS values were obtained from root samples of sweet patato, and followed by stems and leaves, indicating that leaf sample showed the strongest antioxidant activity. Sweet potato cultivars with yellow flesh and leaf part exhibited strong antioxidant activities. Antioxidant activities of leaf and stem extracts were maintained for 21 days and were a little lower than that of BHT. The DPPH radical scavenging activity was the highest in "Sinhwangmi" leaf, and followed by "Jami" root. Chlorogenic acid was detected as the most abundant antioxidant substance among all fractions. These results suggest that the antioxidant activity of sweet potato differs depending on plant part and cultivar.

  • This study examined the changes in the chemical components and antioxidant activity of Ecklonia cava according to the drying methods. As chemical components, the concentrations of minerals(K, Ca, Na, Mg, Fe, Cu, Mn and Zn), vitamins(vitamin C, ${\beta}$-carotene and ${\alpha}$-tocopherol) and the total polyphenols were analyzed. In additions, the antioxidant activity was determined by measuring the free radical(DPPH radical, superoxide anion radical, hydroxyl radical and hydrogen peroxide) scavenging activity and the linoleic acid peroxidation inhibitory activity. The mineral content was not affected by the drying methods. However, more vitamins were lost and the total polyphenol concentration was reduced as a result of sun-drying than by the other drying methods used. More of the total polyphenol was preserved by freezing-drying than by any of the other drying methods, which meant that there was a higher antioxidant activity after freeze drying.

  • The purpose of this study was to examined the antioxidant activities by water and 70% ethanol extract from durian (Durio zibethinus.) seed, sarcocarp and peel. Durian extract were studied for reducing sugar content, polyphenol content, superoxide dismutase (SOD) like activity, electron donating ability, nitrite scavenging ability, flavonoid content, hydroxy radical scavenging activity. Reducing sugar content were increased peel > sarcocarp > seed. Total polyphenol, flavonoid content, DPPH radical scavenging ability and SOD like activity were increased seed > peel > sarcocarp. Total polyphenol content was relatively high as $21.90{\pm}0.50mg/g$ in the ethanol extract of the seed. DPPH radical scavenging ability was relatively high as $62.08{\pm}2.63%$ in the water extract of the seed. Nitrite scavenging ability was no significant difference. Hydroxy radical scavenging activity was increased seed > peel > sarcocarp, was relatively high as $58.27{\pm}1.13%$ in the water extract of the seed.

  • Bactericidal activity of normal and cirrhotic patients' sera against Vibrio vulnificus was investigated and compared each other as a part of the pathogenesis study of V. vulnificus septicemia. Bactericidal activity of serum against V. vulnificus was complement-dependent and the alternative pathway played the major role. V. vulnificus strains CDC A1402 and ATCC 27562 appeared serum-sensitive, and CDC C7184, clinical isolate CNUH1 and ATCC 29307 were serum-resistant. When bactericidal activity of cirrhotic sera against serum-sensitive CDC A1402 and serum-resistant CDC C7184 was compared with that of normal sera. showed slightly poorer bactericidal activity than normal sera. Especially in the case of serum-resistant CDC C7184 strain, cirrhotic sera showed statistically significant decrease(p<0.05) in their bactericidal activity.

  • This study was conducted to investigate the antioxidant activity of Jeolpyeon containing lotus seed powder. Original Jeolpyeon and Jeolpyeon with BHT (butyl hydroxy toluene) werecompared. Antioxidant activities were measured based ontotal polyphenolic contents, total flavonoid contents, DPPH radicalscavenging activity, reducing power, and SOD-like activity. Total polyphenolic and total flavonoid contents of Jeolpyeon containing lotus seed powder were estimated at $37.81{\pm}0.45$ mg GAE/g and $26.35{\pm}0.13$ mg QE/g respectively. DPPH radical scavenging activity increased upon addition of lotus seed powder. Further, reducing power was higher in Jeolpyeon containing lotus seed powder than original Jeolpyeon or Jeolpyeon with BHT. The antioxidative effect of Jeolpyeon significantly increased uponaddition of lotus seed powder.

  • Characterization of Polyphenol oxidase (PPO) in Perillae Folium, particullarly inhibitor studies were investigated. This enzyme was stable at pH 5.0 and the residual activity of PPO at ${\geq}$ ph 5.5 was estimated to be very low. PPO activity was decreased slightly by adding amino acid with catechol as a substrate, particullary PPO activity was inhibited markedly by cystein, histidine, lysine and arginine. In the absorption spectra of the product formed when catechol was oxidized by PPO, with a ${\lambda}_{max}$ at 410nm, the peak shifted toward ${\lambda}_{max}$ 520nm by addition of L-proline. At relatively low concentrations($10^{-3}M$), sulfite and dithiothreithol completely inhibited PPO activity. Inhibition of PPO activity by amino acids and inhibitors increased or decreased depending on the pH used to measure it.

  • This study examined the antioxidant activity of methanol and water extracts from Orostachys japonicus A. Berger according to harvest times, by measuring electron donating ability(EDA), reducing power, superoxide dismutase(SOD)-like activity, thiobarbituric acid reactive substances(TBARS) and antioxidant activity within a linoleic acid emulsion. EDA increased proportionally with the extract concentration and the methanol extract had slightly stronger effects than the water extract. And reducing power and SOD-like activity were highest in the methanol extract. Overall, based on the data, the methanol extract of O. japonicus A. Berger harvested during $August{\sim}October$ presented the highest level of antioxidative activity and may be a good candidate as a natural antioxidant source.
