Quality Characteristics of Chiffon Cake Made with Loquat Fruits (Eriobotrya japonica) Powder (비파열매 분말을 첨가한 쉬폰 케이크의 품질 특성)

  • The loquat (Eriobotrya japonica) is a plant belonging to the Rosaceae family, native to south-central China. It is cultivated in relatively warm areas such as Spain, Japan and South Korea. It is used commercially as an ornamental plant and for its yellow fruit, which contains much carotenoid, sugar and a little organic acid. In this study, chiffon cakes were prepared with the addition of 3%, 6%, 9% and 12% loquat fruit powder (LFP) in order to invest the mixing conditions. When more LFP was added to the dough, the pH level of the dough became lower. Specific gravity and viscosity of the dough significantly increased as higher amounts of LFP were added. In baked cakes, the weight and baking loss rate of LFP were not significantly different between samples, and the height of the risen test samples were lower than that of the controls. Moisture content was 33.58% in the 12% LFP sample (12% LFPS), which was the highest of all the samples. With respect to crust color, lightness, redness and, yellowness, these significantly decreased as the amount of LFP was increased, the 12% LFP being the lowest of all the samples. Lightness and yellowness of crumbs significantly decreased as the amount of LFP was increased, whereas redness showed the reverse effect. When looking at hardness and adhesiveness, the 12% LFPS was the highest of all the samples, nevertheless a difference in resilience was not significant among the samples. According to consumer perception, bitterness was significantly increased as amounts of LFP increased, however a difference in salty, astringency and oily tastes were not significant among the samples. The 12% LFPS showed the lowest score with respect to softness and overall acceptability. In conclusion, LFP could be considered a functional material, with the optimum amount of LFP for a chiffon cake of 3~9%.

  • The aim of this research is to examine the tendency of national tastes reflected in global SPA brands based on the theories of Gans' taste culture and Bourdieu's cultural capital. In this study, the leading global SPA brands such as H&M, ZARA, GAP and UNIQLO can be considered as a representative taste culture as well as an icon of popular culture in the $21^{st}$ century global fashion and also the aesthetic taste of each brand differentiated from their national aesthetic values based on socio-cultural backgrounds. H&M represents fashionableness, practicality and environmental friendliness based on naturalism, democratic humanism, and functional practicality of Sweden. ZARA emerges as the most trend oriented brand as well as customer centered on the basis of cultural diversity, passion and glamorous artistic sensibility of Spain. GAP shows American iconic style, which is the functional sports casual wear, originated from American leisure culture and mass production. Lastly, UNIQLO represents high-tech functionalism and practical simplicity based on Japanese delicate workmanship and simple, concise lifestyle while relatively does not much follow the fashion forward trends. Consequently, the national taste has been proved as a solid foundation to identify each global brand. This should be the key component also applied to Korean global brands for developing their concepts and strategies more successfully based on our own national aesthetic taste.

  • As the role of soccer game analyst who analyzes soccer games and creates soccer wining strategies is emphasized, it is required to have high-level analysis beyond the procedural ones such as main event detection in the context of IT based broadcasting soccer game research community. In this paper, we propose a novel approach to generate the high-level in-depth analysis results via real-time text based soccer Webcast and text mining. Proposed method creates a metadata such as attribute, action and event, build index, and then generate available knowledges via text mining techniques such as association rule mining, event growth index, and pathfinder network analysis using Webcast and domain knowledges. We carried out a feasibility experiment on the proposed technique with the Webcast text about Spain team's 2010 World Cup games.

  • The Philippines was colonized by Spain for about centuries, from 1521 to 1898, and ruled by America for around four decades, from 1899 to 1946. After recovering from the Second World War, the government started to harness human labor as export itself. In the present time the overseas Filipinos keep the economy afloat with their steady transfer of money to relatives and dependents. Through the art works, the issue which Filipinos were exploited and exported by its government has been reflected as the various allegories. As Filipinos traditionally follow and keep Catholic belief, themes of Christ's sacrifice has allegorically been represented as salvation, struggle, suppression, and emancipation of people. Through the allegory, we can interpret both the intrinsic and superficial texts. Also we can identity certain modes of the visuality of allegory in selected works from Philippine art history that in their complex mediations materialize the people and dignity of their predicament and their prevailing. Philippine art can be divided as three different features: passion, vagrancy, and mass formation. The passion stage was depicted as deep structure of Christian thought and devotional feeling, harsh capitalist system. In the pictures of vagrancy, under the regime of Ferdinand Marcos, the themes of drift, deprivation, and homelessness are reckoned through the images of pictures. The stories represented with allegory have been played an important role to bring local issues up as national ones. Those stages take us to the processes of mass formation or the depiction of the people as a moment in the totality of force. The allegorical sign refers to another sign that precedes it, but with which it will never able to coincide reach back to a previous stage and in this constant attempt at return incorporates a structural distance from its origin. The true people's art is one that radically generates transformative technologies and techniques so that it irrevocably breaks the plane of "art". In the painting, the truth is represented by functioning as foundation of a rhetoric of the image. And at this axis, the passional, the vagrant, and the mass formation tend to come together because they render the form of contingency that must be suffered and hopefully surpassed, a Filipino subjectivity that must be stitched in time.

  • For effective utilization of downtown area, many studies about underground have been performed around the world, and double-deck tunnel have being operated in USA, Europe and China, etc. (A86 East Duplex in France, M30 tunnel project in Spain, SR-99 in seattle, USA, Yangtze river tunnel in China) In Korea, the research about network type double-deck tunnel in deep underground space is in progress to solve the traffic jam and secure the ground space. In this study, a number of factors required for double-deck tunnel in deep underground are analyzed through the existing ventilation design outline and unique ventilation design factors for network type double-deck tunnel are established by reviewing design cases of overseas double-deck tunnel.

A GSADF bubble test analysis for COVID-19 pandemic (COVID-19 펜데믹에 대한 GSADF 버블 검정 분석)

  • We apply the GSADF bubble test and its date-stamping method for the daily number of new COVID-19 cases. The test indicates statistically significant explosive expansions of the number of new cases whose periods of panic explosion are identified by the date-stamping method of the bubble test. The date-stamping analysis reveals that as of June 30 2020, the number of daily COVID-19 new cases are still explosively increasing for India; however, they stop explosively increasing (or are under control) for USA, Brazil, Russia, Spain, Turkey, China, and South Korea. It also reveals that South Korea has two disjoint periods of explosion: a stable period follows after the first explosion of 2020.02.20-2020.03.06, and then the second explosion occurs 2020.05.27-2020.06.01 with a stable period that continues up to 2020.06.30.

A Cross-Cultural Study of the Spiral of Silence Theory with Individualism-Collectivism and Uncertainty-Avoidance (문화적 차이에 따른 침묵의 나선 효과 검증)

  • This study explores how fear of isolation and willingness to speak out are affected by cultural values. The cross-cultural studies on the spiral of silent theory were conducted mostly in Eastern and Western countries and compared the results. It attributed to the results to the "individualist-collective" attitude difference. However, it did not explain the differences in the same individualism societies as well as in the collectivism societies. Thus, this study examined the impact of cultural values on the spiral of silence theory with 'individualism-collectivism' and 'uncertainty-avoidance'. To that end, the current study conducted online surveys in India, South Korea, the United States and Spain where have different levels of individualism, collectivism, and uncertainty-avoidance. As a result, individualism contributed to lower the fear of isolation, and collectivism and uncertainty avoidance have raised the fear of isolation. Besides, individualism and uncertainty avoidance also reinforce the willingness to speak out, while fear of social isolation has been shown to weaken the willingness to speak out. The study also found that fear of isolation has the mediated effect of individualism and collectivism on the willingness to speak out.

  • SolarPACES(Solar Power and Chemical Energy systems) is an international organization under the REWP(Renewable Energy Working Party)in the IEA(International Energy Agency) and focuses on the technology development and market expansion of CSP(Concentrating Solar Power). Seventeen countries including Rep. of Korea participate in the ExCo(Executive Committee) of SolarPACES. The ExCo meeting helds two times in a year and the second ExCo meeting opens in company with the five Task meetings. Rep. of Korea takes part in the Task-1officially. The 81th ExCo and Task meetings were held during September 18 and 19 in Spain with SolarPACES conference which also continued in succession to September 23 in this year. This paper introduces the activities which have been under progressed in the Task-1 and Task-3based on this time attendance of the meeting. In accordance with the expansion of CSP market and technology development, the needs for the standardization and project status underway in the world are increasing. Therefore, build an international project database and standard of the CSP technology are the main activities in the Task-1 and the standardization is also connected with the Task-3. In addition, to increase the reliability of the new technology of CSP and to reduce the concern of investors, the Task-1 is making guidelines for CSP performance prediction which can provide medium quality calculated performance data of PTC(Parabolic Trough Concentrator) type technology widely used and occupies over 90% CSP market.

  • Brown Ring Disease (BRD) is a bacterial disease caused by Vibrio tapetis which affects cultured clam Ruditapes philippinarum and causes heavy economic losses on Atlantic coasts of france, Spain and England. In this study, to evaluate the effective detection of the pathogen, specific primer set based on 16S ribosomal RNA (rRNA) sequences designed for rapid detection of V. tapetis. Polymerase chain reaction (PCR) with this primer set produced the specific band for each V. tapetis. The length of PCR product using designed primer set of Vbts-F and Vbts-R was about 400 bp. Therefore, these primers will be provided with a basic tool for rapid detection of V. tapetis in the various cases such as examination of imported aquatic products, diagnosis of aquatic organisms, and etc.

  • As a result of making an inquiry into the ethnic look of each region appearing in present-day fashion by Asia. America and Oceania. Africa and Europe as mentioned above, its characteristics could be summarized as follows: Firstly the Asian ethnic look consists of Indian, Chinese and Japanese looks as mainstream. In terms of form, the draped form constituted its mainstream, and both the draped form and the tunic form are appearing Simultaneously in the Chinese look. And in respect to color the Indian look is using luxurious primary colors red, blue, yellow and green and other regions are making overall use of natural colors. With respect to ornament various kinds of ornaments is utilized in Indian's Sari and turban. Chines's Coolie hat, straw hat and embroidery, knotted button, and bead ornament, and Japan's Obi and Obijime, etc. Secondly in America and Oceania, costurme representing the Indian look in North America and the picture of Western pioneer, and the Peruvian, Mexican and chilean ethnic looks in South America were expressing much. Here, the form consistied a draped form as its main strem, such colors as yellow, purple, grey, etc were much utilized, and the material of costume comprised knits, cotton and the like. And the ornament consisted of hats, tassel ornaments, bead ornaments, metal chain belt, long braided hair, etc. Thirdly, the African ethnic look had an exposing form and a draped form, and such colors as black, white, yellow, brown, etc were used as the fashion color. Ornaments such as precious stone, bead ornaments, animal bones, straw metal ornament, etc were used as fashion decorations. Fourthly, Russia's Cossack look, Bulgaria's Bavshika look, spain's ethnic look cane to the fore as the European look Both the draped form and the tunic form were used simultaneously as fashion form. And grey, brown, purple, etc were much used as fashion color in the European look. Such ornaments as Cossack. Bavshka, boots, tassel ornaments were much used and paisley pattern also was used.
