This study was conducted to investigate the effects of saltwort on the quality characteristics of tofu. In addition, we examined the potential for commercialization of tofu containing saltwort. For this study, saltwort was added to tofu at 0%, 4%, 8%, 12%, 16% and 20% and quality and sensory tests were administered. Analyzing the mineral contents of saltwort juice, K was present in the greatest amount, followed by Mg, P, Ca, and F (in decreasing order). There were significant differences in yield rates and turbidity between the groups. Acidity was highest in the control group, and acidity and volume of tofu tended to decrease with an increase in saltwort powder. L value and a value decreased as the content of slaltwort powder increased, but b value increased with increasing saltwort powder concentration. Hardness, chewiness, and gumminess were rated higher in the control and the 4% supplement groups than the others groups. In the sensory evaluation, cross section and soybean flavor were the highest in the 4% saltwort supplement group, and the presence of an "off-flavor" increased with the content of saltwort powder. The saltiness score was highest in the 20% supplement group. The 4% and 8% supplement groups were favored in the "feel after swallowing" assessment. Softness was the lowest in the 20% supplement group, and the 4% supplement group had the highest overall acceptability. As demonstrated by these results, the addition of saltwort positively affected the overall sensory evaluation of tofu and supplementation with saltwort at 4% and 8% might be considered the most appropriate choices. In conclusion, saltwort tofu expected to increase the functionality of new products, particularly with respect to product variety and health improvement.
This study evaluated the storage stability of a variety of sauce products in the Korean market, determined primary quality indices for three typical products, and proposed functional relationships that are useful for determining shelf life at different temperatures. Most of the products examined were found to combine hurdles of low pH, low water activity, and the use of heat processing as methods for producing the required storage stability while maintaining the sensory quality of the products. For a meat extract solution produced for cold noodles (pH=4.3; $a_w=0.98$), the primary quality change determining shelf life was lipid oxidation, determined here by the TBA value. The primary quality index of a soybean paste seasoning mix (pH=4.0; $a_w=0.78$), which had a microbial load of 2.8 log (CFU/g), was a decrease in its pH. The primary quality index for a sandwich spread (pH=4.0; $a_w=0.88$) was changes in its surface color. The temperature dependence of changes in the primary quality indices can be described by the Arrhenius equation, which can estimate the shelf life at any arbitrary limit as a function of temperature. The activation energies for changes in the primary quality indices of the meat extract solution, the soybean paste seasoning, and the sandwich spread were 20.3, 27.2, and 43.5 kJ/mol, respectively.

A biosurfactant-producing strain, Bacillus subtilis TBM 3101 was isolated from the soil sample at Tae-Baek Mountain through an antifungal test and emulsification assessment. The strain was assessed, regarding to the microbial growth, by physical and chemical test, surface tension, emulsification activity and stability. The surface tension of the isolate sharply decreased to the minimum 29mN/m at 48 h growth. Of note, its emulsification was stabilized to the highest degree when tributyrin was utilized as a substrate, indicating that in comparison to a variety of synthetic surfactants, the biosurfactant produced by the isolate was significantly similar to synthetic surfactant, tween 20. In addition, the biosurfactant showed high emulsification activity when soybean oil, crude oil and tetradecane were used as a substrate. Thus, these studies could contribute to the detection and development of biosurfactant beneficial to the environment and humans.

A glass chamber experiment was conducted to evaluate the impact of ozone (O$_3$) on the physiology of two soybean, Glycine max L. cultivars, 'Hwanggum' and 'Jangyub'. Thirty-day old plants with 1-2 nodes were exposed to $O_3$ of <10 and 150 n1 1$^{-1}$ in the chambers for 8 h d$^{-1}$ for 3 days. Net photosynthesis, stomatal conductance, chlorophyll a, chlorophyll b and total chlorophyll contents, and foliar injury (% injured leaves) were measured. Although foliar damage was more severe on Jangyub than on Hwanggum, net photosynthesis was decreased by 60% on Hwanggum and 13% on Jangyub due to the $O_3$ treatment. Stomatal conductance on Jangyub was twice higher than that on Hwanggum and it was not changed by the $O_3$ treatment. Whereas, stomatal conductance on Hwanggum was 60-80% decreased by $O_3$, Chlorophyll contents did not change due to the $O_3$ treatment or variety. We can conclude that the reduction of net photosynthesis by $O_3$ was mainly due to the decreases of stomatal conductance and Rubisco (ribulose-1,5-bisphosphate carboxylase/oxygenase) activity on dark reaction. And foliar injury and chlorophyll content did not contribute to the net photosynthetic decrease. The gas-exchange variables measured 24 h after the termination of $O_3$ fumigation showed that there was no significant recovery within a day. Since the physiological responses on Jangyub were not much affected by the $O_3$ treatment, this variety could be $O_3$ resistant.
This study was conducted to compare the growth and yield, and to determine the optimum planting date and density in two improved black soybean varieties. The two varieties were planted by driller attached a tractor on May 21 and June 19, 1993, and treated five planting densities, respectively. Yield of Gumjeongkong 1 was similer for both planting dates, but that of Suwon 157 was remarkably reduced on June 19 planting compared to May 21. There was significant differences between planting dates in stem length, number of branches, seeds per plant, seed weight and yield. Planting density, also, significantly affected on stem length, number of branches and seeds per plant. Statistically significant interactions between planting date$\times$variety and planting date$\times$planting density were found at almost all characteristics, except between variety$\times$planting density. Optimum planting date and density of Gumjeongkong 1 for high yield were June 19 and 33, 000 plants per l0a, and those of Suwon 157 were May 21 and 22, 000 plants per l0a, respectively. The coefficient of variation at different planting densities was high at stem length, number of branches, seeds per plant and yield, but low at number of main stem node, seeds per pod and 100 seed weight.
In order to study the effect of potash on the growth and yields of Soybean at different level of soil fertility and application of fertilizer (nitrogen, phosphate and calcium), $2^3$factorical experiment was carried out by pat culture with variety 'Chang-dan-baec-muc' which is most spreaded variety in Korea. The experiment consisted of five replications in a randomized block experiment with three factors (soil, fertilization and potash). Treatment were at two levels; infertile and fertile soil, none and some of fertilization and potash. Thus, the experiment comprised eight treatment combinations which consisted of all combinations. The results of this experiment are as follows: 1. No effect of each of three factors on flowering date was found. 2. Leaf-yellowing and maturing date was quickened on the fertile soil but no effect of fertilization and potash was found. 3. More premature leaf-yellowing was found on the fertile soil. 4. Deeper leaf colour cuss showed on the fertile soil and in the case of fertilization but no effect of potash was found. 5. Increasing tendency of following character: length and width of leaf, height and dia of stem, number of branches and pods; was most remarkable on the fertile soil. Application of fertilizer showed also remarkable tendency of increasing, while increasing tendency of potash was the least. 6. Same tendency was found with following charactors; weight of total plant. stem and shell, and commercial grains, weight of 100 grain and number of commercial grains. 7. As the results of analysis of variance for weight of commercial grain it, was found the teach of the three factors increased soybean yields significantly (weight of commercial grain) but the effect of potash was less than the other two factors. No significant interaction was found among three factors. 8. Greater effect of potash on increasing soybean yields was found on the fertile soil, and in the case of fertilization.
An experiment was carried out to investigate possible use of several systemic insecticides as seed treatment to control some insect pests of rice, barley and soybean. The insecticides were impregnated with active carbon dust and $2\%$ water solution of methyl cellulose as skicker. The seeds were dressed with the insecticides: Fussol (Monofluoroacetamide), Dimethoate (0, 0-dimethyl-S-(N-methyl carbamoylmethyl) phosphorodithioate), Metasystox (0, 0-dimethyl 0-2 ethylthioethyl phosphorodithioate), Dimecron (0, 0-dimethyl (diethylamide-1-chlorocrotonyl) Phosphate). The seeds were treated at the rate of $4\%$ by grain weight. Effects of seed treatments with systemic insecticides on the seed germination and insecticidal effectiveness were tested. Fer rice, no seed germination was observed in Fussol treatment. Dimethoate, Metasystox and Dimecron showed a slight reduction in germination when seeds were sown 1 day after treatment, but they showed gradual reduction in germination when seeds were sown 20 and 45 days after treatment. Especially Diriethoate treatment showed significant reduction in germination after 20 and 45 days of storage. All the insecticides reduced seedling stands of barley somewhat. No plant emergence was observed in Fussol treatments after 25 and :to days of storage. In case of the 40 days of storge in barley seed treated with Dimethoate, Hetasystox and Dimecron there was no gignificant reduction in plant emergence except Fussol treatment. Dimethoate was highly toxic to the soybean seed viability. However, there was no significant reduction in the soybean germination after 1 day of storage. in Fussol, Metasystox and Dimecron treatments After 25 days of storag in Fussol and Dimethoate treatments, no plant emergence was observed, and there was $13.3\%$ emergence in Metasystox treatment, and $93.0\%$ emergence in Dimecron treatment. Dimethoate treatment in rice seed(variety Suwon # 82) showed $90\%$ mortality at the twentieth day and $33.3\%$ at the thirtieth day after sowing against the green rice leafhopper, Nephotettix cincticeps But no visible effectiveness was observed in Metasystox and Dimecron treatments. Dimethoate treatment in barley seed resulted in low population density of aphids. Rhopalosiphum spp. Final observation on the number of eggs per plant was made at the fiftieth day after sowing; 2 in Dimethoate, 4 in Fussol, 6 in Metasystox, 7 in Dimecron, and 13 in check plots. All the insecticides tested resulted in good insecticidal effectiveness against the aphids, Aulocorthum solani on soybean plant at the ninth day infestation after sowing. Dimethote, Metasystox, and Dimecron treated soybean plants was still effective in controlling the aphids to the eighteenth day infestation.

Beans are acknowledged to be food resources, which have more abundant proteins and fats. The constituent parts of beans (i.e. aspartic aid, glycine, arginine) are effective against diabetes, and dietary fiber contained in the beans has an important property to maintain insulin sensitivity. Based on these, using streptozotocin (STZ)-induced diabetic rats, this study examined how the rat-eye soybean, which is principal products of the Imsil province, is effective to attenuate and/or prevent the development of diabetes mellitus. We divided rats into the non-diabetic and diabetic group, and diabetic group was further subdivided into six experimental groups [DC, diabetic control; DI, diabetes with insulin treatment (4∼6 IU/rat); DB, diabetes with black bean; DY, diabetes with yellow soybean; DS, diabetes with rat-eye soybean; DSS, diabetes with vinegar-fermented rat-eye soybean. All bean treatment (1.5 mg/l g body weight).]. Food efficiency ratio (FER), body weight and insulin sensitivity in diabetic rats were significantly reduced compared to those in normal control animals. These reductions were obviously attenuated by administration of a variety of beans used in this study (20∼30%), and the recovery effects were comparable to the results obtained by insulin treatment. Taken together, this study suggests that all beans used may have an essential property to improve and/or attenuate the development of diabetes mellitus in rats.

Changes in growing periods and productivities of crops under double cropping of potato-rice, potato-soybean and potato-maize, were investigated at the Paddy Experimental Fields in Miryang City from 2015 to 2018. Spring potatoes planted in early March showed a yield of 2.1-2.3 ton/10a and a period of 90 days. In double cropping, growing period of rice, soybean, and maize was about 130, 125 and 115 days, respectively. The potato yield obtained was as much as 616, 330 and 815 kg/10a under double cropping with rice, soybean and maize, respectively. It is beneficial to sow the spring potatoes as early as possible to increase the yield and to secure the growing period of sequential crops. The introduction of summer medium-late variety grain crops into double cropping of spring potato and rice as well as into double cropping of spring potato and soybean/maize, was possible because of no sowing in the fall and plants were able to reach the heading growth stage before the safe heading limit of rice in particular. In the case of maize, the growth period was different according to the change in temperature over the year. The introduction of upland crops such as soybeans and maize instead of rice improved soil physicochemical properties in a short period of time, contributing to the increase of spring potato yields, but there was also a risk of damage by successive cropping for more than three years. Spring potato-maize showed higher yield in terms of starch production, and spring potato-soybean was found to be advantageous for net income.
A new soybean cultivar for soy-paste, 'Daeyang', was developed from the cross among 'Jangyeobkong', 'Hwaeomputkong' and 'Suwon192' by the soybean breeding team at the National Institute of Crop Science (NICS) in 2007. A promising line, SS97214-80-1, was selected and named this line 'Milyang163'. It was prominent and had good result from regional adaptation yield trials (RYT) for three years from 2005 to 2007 and released as the name of 'Daeyang'. It has a determinate growth habit, purple flower, grey pubescence, yellow seed coat, yellow hilum, large spherical seed (25.2 g per 100 seeds). 'Daeyang' is resistant to soybean mosaic virus and moderately resistant to bacterial pustule, the major soybean disease in Korea. The average yield of 'Daeyang' was 2.58 ton per hectare in the regional yield trials (RYT) carried out for three years from 2005 to 2007 which was 3 percent higher than the check variety, 'Taekwang'.
