Changes of Physicochemical Properties during the Preparation of Persimmon Pickles and its Optimal Preparation Conditions (감장아찌의 제조중 이화학적 특성변화 및 최적제조조건)

  • Changes of physicochemical properties during the preparation of persimmon pickles and its optimal preparing conditions including salt concentration, soaking temperature, soaking time, amount of fermented soy paste, and ripeness of fresh pesimmon were investigated. The salinity and pH of soaking solution were rapidly dropped during 40 days of soaking, while their changes were negligible after 40 days of soaking. When the fermented soy paste was added to the soaking solution with $10{\sim}40%$ the pH dropped more slowly. Salt content in persimmon pickles was gradually increased during soaking and soluble tannin content was rapidly decreased during the first 10 days of soaking. L value of persimmon pickles was gradually decreased, but a/b value was slightly increased. The hardness of persimmon pickles was slightly increased up to the 20th day of soaking and then decreased. Most acceptable persimmon pickles were prepared when the less ripened fresh persimmons were soaked in 10% salt solution at $15^{\circ}C$ for 40 days, and the suitable amount of soy paste added to the soaking solution for preparing persimmon pickles was 20%.

  • During soaking of 4 varieties of Korean soybeans in water at $4-98^{\circ}C$, an equilibrium state was reached after 3 hr at $60-98^{\circ}C$ but no equilibrium state was observed at $4-40^{\circ}C$ during soaking for 10 hrs. The moisture gain of soybeans held a linear relation with the square root of soaking time regardless of soaking temperatures, which indicated that the basic mechanism of water absorption was diffusion of water. The log time to reach a fixed moisture content showed a linear relation with the soaking temperature during soaking of soybeans at $4-60^{\circ}C$. The z-value decreased in proportions to the increase of hydration. The z-value to reach 50% hydration was the same in all soybeans.

  • In order to optimization germination condition of broccoli, we carried out germination ratio experiment under soaking time, soaking temperature, oxygen concentration. The germination ratio results 98.5% following as soaking water having 10 ppm DO(demanded oxygen) during 4 hr at $20{\sim}30^{\circ}C$. The result of provide the dissolved oxygen water, when the concentration of oxygen water were 7, 12 ppm, germination ratio were observed about 76%, 92%. Also, we showed the growth rate of 2 times in 12 ppm compared with 7 ppm. Consequently, germination ratio of broccoli increased cultivation condition at soaking water having high concentration oxygen more than supply to oxygen water of high concentration.

  • Effects of aqueous ammonia soaking to three annual plants (hemp woody core, tobacco stalk and corn stover) awere investigated to focus on the enzymatic saccharification characteristics change by this treatment. At two different levels of treatment ($90^{\circ}C$-16 h and $45^{\circ}C$-6 days), higher temperature treatment led to more enzymatic saccharification of cellulose to glucose by commercial cellulase mixtures (Celluclast 1.5L and Novozym 342 from Novozyme Korea). Difference among annual plants were significant. corn stover was the best response to enzymatic saccharification of cellulose and xylan by comercial enzymes all treatment conditions but tobacco stalk was the worst response to all of them. chemical composition or physical structure difference may brought this difference.

  • Korean soybean varieties, 'Seonyu' and 'Hwangkeum' were planted in 2012, and three temperature gradient, Tc($19.8^{\circ}C$, ambient temperatured), $Tc+1.7^{\circ}C$, and $Tc+2.5^{\circ}C$, were artificially created by controlling the green house system during seed filling period. Mature seeds that developed under these conditions were analyzed for variances in physicochemical properties. The 100-seed weight and seed-coat ratio of soybean were decreased, but small seed rate was increased by high temperature during seed filling period. Protein content was increased, but oil content was decreased significantly with increasing the seed filling temperature. The decrement of carbon to nitrogen ratio (C/N), and the increment of monosaccharide, fructose and sucrose, in seeds explained that carbohydrate assimilation during seed filling was restricted by high temperature. Rapid increments of seed volume and weight were observed in the seeds of high seed filling temperature, but as soaking time increased the highest values were observed in the seeds of ambient seed filling temperature. The 100-seed weight and seed-coat ratio of soybean were closely related not only to the increment of soaking volume and weight, but also the increments of total dissolved solids (TDS) and electro conductivity (EC). Whereas protein content and C/N ratio showed less relationship with the soaking properties, but they had a positive correlation with TDS and EC. From the results, it was considered that high values of TDS and EC in the seeds of high temperature were mainly due to the incomplete conversion of assimilates into storage compounds. However, sugar content showed less influence on the soaking properties and the values of TDS and EC.

  • The amounts of salt diffused into radish after immersing in various concentrations of salt solution at different temperatures were measured and the changes of radish texture by the salt diffusion were estimated with the viscoelastic constants of a 3 element solid model determined by a stress relaxation test. The amount of salt diffused through radish was increased with increasing the salt concentration and soaking temperature. While the instantaneous stress, equilibrium elastic solid content and viscoelastic constants of radish were decreased as salt concentration and soaking temperature increased, the stress relaxed fast. Viscoelastic constants as well as the diffusivity were influenced by salt concentration more than by soaking temperature. The rheological equations for the predictable stress changes of radish after immersed in the salt solution at various conditions (temperature, salt concentration and impure salt) were suggested as a function of time.

  • This study evaluated the germination rate of $Rheum$ $palmatum$ L. in Korea as affected by storage temperature, germination temperature, and a soaking treatment. The germination rate of $R.$ $palmatum$ L. stored at various conditions for 8 weeks was > 60%. The highest germination rate occurred at $25^{\circ}C$. The germination point of $R.$ $palmatum$ L. with soaking was started 1 day after application, and non soaked seeds germinated in 2 days. When $R.$ $palmatum$ L. was soaked with water, the germination rate was lower, but mean germination velocity was the highest. These results may help our understanding of variations in germination characteristics for seeds treated under different germination conditions.

  • A serious problem of the 21st century is the supply of energy resources. Reserves of fossil fuels are facing depletion: renewable energy resources must be developed in this era. Dye sensitizedsolar cells(DSC) have been very economical and easy method to convert solar energy to electricity. DSC can reach low costs in future outdoor power applications. However, to commercialize the DSC, there are still many shortages to overcome. When the DSC is commercialized in the near future, the productivity is an important factor. In the process of soaking in a dye, it usually takes $12\sim24$ hours. In this study, we varied the dye coloring temperature from $0^{\circ}C$ to $60^{\circ}C$. At the temperature of $40^{\circ}C$, DSC cell showed the best performance. We also expect the reduction of the time soaking in a dye. Counter electrode surface of DSC is deposited by RF magnetron sputtering under the conditions of Ar $2.8{\times}10^{-3}$ torr, RF power of 120W and substrate temperature of $100^{\circ}C$.

A Study on the Adsorption of Anionic Surfactant by Various Textile Fibers and Rinsing Efficiency in Washing Process (세척시 섬유의 음이온계 계면활성제 흡착과 헹구기 효과에 관한 연구)

  • Authors have studied the adsorption of anionic surfactant from detergent solutions on cotton fabric during washing process and have measured the concentration of the residual surfactant in rinsing solution. The relations with temperature and pre-soaking time to rinsing process have been studied. The adsorption of sodium dodecylbenzene sulfonate by various textile fibers has also been investigated. The results of this study are; 1. Three times rinsing is sufficient as, without pre-soaking, the concentration of the surfactant on fabric is stable from that time on. 2. The rinsing efficiency increases with temperature; at $25^{\circ}C$, $40^{\circ}C$, and $55^{\circ}C$, the concentrations of surfactant on the fabric after-rinsing are 68, 59, 51 mg/100 g of fiber respectively. 3. The longer the pre-soaking time, the lower the rinsing efficiency is; the 4hrs presoaked fabric shows increased surfactant concentration than the one without-soaking. And the increment is 35.8%. 4. The adsorption of sodium dodecylbenzene sulfonate on fabrics differs greatly with the chemical nature of the fiber; wool, silk and nylon which are thought to be ionic-adsorbants shows greater adsorption. 5. The adsorption of surfactant is more affected by the ionic character than the physical one, and the one with higher crystallinity such as cotton and polyester shows lower value than rayon or acetate.

  • Plywood, the representative interior decorative or structural material, is so inflammable that it may cause big fires. Therefore, it is required inevitably to manufacture the "Fire retardant treated plywood", and it will be a study on the redrying of treated plywood that we ought to solve. This study was carried out to investigate the absorption of 20% $(NH_4)_2HPO_4$ solution into the soaked plywoods by hot/cold soaking for 3/3, 6/3, 9/3 and 12/3 hours and to study drying process with drying curves and drying rates by press-drying at the platen temperature of 130, 145, 160 and $175^{\circ}C$. Solution absorption of plywoods in hot/cold soaking method increased steadily with the prolonged soaking time, and water absorption is higher than DAP absorption, and then chemical retention (DAP) exceeded the minimum retention [$1.125kg/(30cm)^3$] even in the shortest soaking treatment. Drying curves of water-soaked plywoods inclined more steeply than those of DAP soaked plywoods. And the drying proceeded rapidly with the increase in platen temperature and terminated in 2.5-4 minutes at the temperature of 160 and $170^{\circ}C$. Drying rate also increased generally with the increase of platen temperature. So it was at $175^{\circ}C$ in DAP-soaking and at $160^{\circ}C$ in water-soaking when the drying rate became above 10%/min.
