경북 일부 어린이급식소에서 제공되는 간식의 섭취형태 및 당 함량 조사 (Investigation of Intake Patterns and Sugar Content of Snacks Provided at some Children's Cafeterias in Gyeongbuk)

  • The purpose of this study was to analyze the amount of sugar from the afternoon snack menu of childcare facilities in Gyeongsangbuk-do. The amount of sugar was analyzed for afternoon snacks provided by childcare facilities between March and April 2016. The snacks provided were the same for processed and non-processed foods at 50.0% respectively. White milk accounted for the largest portion with 26.4%, followed by fruits with 19.9% and grains (sweet potatoes, rice cakes, etc.). It has been confirmed that the larger the facility, the lower the frequency of provision of non-processed foods, and the higher the provision of processed foods (p<0.05). Snacks served as non-processed foods showed the highest frequency of fruits and sweet potatoes. On the other hand, processed foods provided many sugar-rich products, such as liquid yogurt, hot cakes, and cereal, excluding white milk. The average sugar content was highest in processed milk products (13.9 g), followed by white milk (8.6 g), bread and snacks (8.0 g), other (4.6 g), and mixed grains (1.6 g). Of the total 216 snacks, banana flavored milk had the highest sugar content of 27.0 g, followed by strawberry milk (15.0 g) and castella (21.6 g). The findings are expected to be used as basic data for choosing the right snacks provided by childcare facilities and practicing reducing sugar intake.

미국 식품시장에서 한국 및 아시아 식품의 현황과 전망 (Current status and prospect of Korean and Asian foods in food market of the United States)

  • Recently, a lot of consumers in the United States are trying to find out the diverse Asian foods due to the raw material used,sauce,flavor,taste, and cooking philosophy. Asian fare has boomed up in the past decades at restaurants and retail food markets. These phenomena are considered to continue since many Americans become more cautious for health since they believe the traditional Asian foods are better for health than European, Latin, and traditional American diets. The increase of Asian population in America also induce the increased consumption of Asian foods, and those who traveled and tasted Asian foods during their journey want to take Asian foods after back home. Several sauces including gochujang, ramen, and seaweed snack are examples of Asian foods consumed in a large quantity. Many Asian food and material suppliers are trying to pioneer and penetrate American food market with exotic multifaceted Asian cuisine.

우식유발식품에 의한 인공타액내 pH 변화와 당 분해 효소 활성에 관한 연구 (A Study on Artificiality Salivary pH and Sugar Fermentation Test of Caries Potentiality Foods)

  • 청소년을 대상으로 간식섭취실태를 조사하고, 간식품의 총당도, 간식품의 pH, S. mutans의 산생성능과 당분해효소활성도를 측정하여, 치아우식유발지수가 낮은 간식품을 선택할 수 있도록 표준화된 치아우식유발지수를 개발하는데 필요한 기초자료를 제시하고자 본 연구를 실시하였으며 다음과 같은 결론을 얻었다. 1. 간식품 28종류의(고체군 21가지, 액체군 7가지) 당도를 측정한 결과 오레오가 43.5로 가장 높았고, 스윙칩과 마이쮸가 39.3, 땅콩카라멜 38.8, 츄파춥스 37.2, 소보루빵 33.9 순이었으며, 포카리스웨트와 녹차가 0으로 가장 낮았다. 설탕이 많이 함유된 음식에서 총당도의 값이 높아지는 것을 볼 수 있었다. 2. S. mutans의 산생성능에 의한 pH 평균값은 pH 5.33이였으며, 실험군의 S. mutans 산생성능에 의한 평균 pH변화는 10분 배양 후 pH 5.27, 30분 후 pH 5.21, 1시간 후 pH 5.15, 24시간 배양 후에는 pH 4.80으로 S. mutans의 당분해효소활성에 의한 산생성도 증가로 대조군보다 pH값이 낮아지는 것을 볼 수 있었다. 3. S. mutans의 당분해효소활성도를 비색법으로 관찰한 결과 glucose의 활성도는 78.58%, sucrose의 활성도는 75%, galactose의 활성도는 71.42%로 대부분의 시료에서 Positive인 orange & yellow color로 나타났다.

전통음식에 대한 의식과 식생활행동에 관한 조사연구 - 서울 및 경기도 일부지역 주부들을 중심으로 - (The Study for Consciousness, Dietary Life Behaviors on Korean Traditional Food)

  • Generally, the culture of dietary life in a country is closely related to the heritage of racial culture, and it is very important to inherit and develop the culture of the traditional dietary life. This research is to investigate consciousness and behaviors of dietary life using a questionnaire survey for 521 housewives living in Seoul and Kyonggido. The data was analyzed with frequency, percentage, T-test, $X^2$ (Chi-square)-test, dispersion analysis, Pearson's correlation and hierarchical multiple-regression analysis. The results of the survey are summarized as follows; 1. Consciousness of Traditional Foods. They thought that traditional foods were Sinsollo, sorts of beverage, Dduk (Korean cake), Kim-chi, Hankwa (Korean cookies), and Kujolpan, and that traditional foods were proud for its various tastes. But they thought the cuisine of the traditional food is very complicated, accordingly the frequency of traditional food was decreased. Therefore they thought that its tastes was important to develop and spread traditional foods. 2. Dietary Life Behaviors for Traditional Food. They take traditional foods on big holidays and religious service days. It is their mother who taught them the traditional cooking method. Most ftequently used cooking method is boiling. They gave their children a traditional snack such as 'Dduk (Korean cake), noodles, and fried food. Frequency of taking beverage, Hankwa (Korean cookies), Juk (guel) and Dduk (Korean cake) have been decreased. 3. The Correlation of General Environment and Consciousness, Knowledge, Dietary Life Behaviors of Traditional food. The older they are, the more eager to teach traditional food cooking, to preserve the traditional table setting, to give their children traditional snack and the more traditional dietary life behaviors are.

초등학생의 영양교육을 위한 식습관 및 영양지식 조사 (A Survey on Dietary Habit and Nutritional Knowledge for Elementary School Children's Nutritional Education)

  • The aim of this study is to survey the eating habits and nutritional knowledge of children in Pusan, with a view to uncovering problems and their underlying causes and cultivating desirable dietary habit and nutrition for children. Three hundred and fifty six elementary school students were asked questions about their eating habits and nutritional knowledge as well as general information about their personal characteristics. The results showed: 1. Only 53.5% of the subjects had breakfast every day. Seventy-six percent of the subjects had dinner every day. Only 40% of the children took meals and talked with family at both breakfast and dinner. Thus there was little opportunity for dietary guidance by parents. 2. About half of the subjects answered that their appetite decreased after eating snack foods between meals. A third of the subjects liked the baked goods as snacks. Because of their high sugar and fat content, they can damage children's health, resulting in child diabetes and tooth decay. For this reason, careful education is necessary to allow children to be able to select snack foods that are appropriate in kind and quantity. 3. About 85% of the subjects had an unbalanced diet. Therefore systematic nutrition education at school is necessary to instill in children the value of balanced diet. 4. Children preferred rice to other cereals as a staple food. They disliked kimchi, seasoned and blanched foods and salads as subsidiary foods. It is therefore necessary to teach children systematically the nutritional advantage of cereals and vegetables and to heighten their awareness of Korean food culture. 5. Children had a low level of nutritional knowledge. The knowledge of specific nutrients was lower than that of foods. In conclusion, systematical educational programs need to be developed at elementary school. These should include information about achieving a balanced diet, good eating habit, meal management and Korean dietary culture. Nutritional education at home must be emphasized.

중학생의 간식구매행동, 식품과 영양표시의 이해도 - 나주지역 일부학생들을 대상으로 - (A study on Snack Purchasing Behavior, Understanding of Food and Nutrition Labeling of Middle School Students in Naju Area)

  • 본 연구는 전남 나주지역 중학생 424명을 대상으로 일반적 사항, 중학생의 간식 구매행동과 섭취횟수, 간식 구매태도, 식품과 영양표시의 이해에 관한 설문지를 통해 조사하여 청소년들이 올바른 식품을 선택하고 구매하는데 도움을 주고, 영양표시에 대한 인식과 활용을 향상시킬 뿐 아니라, 식생활교육에 필요한 기초 자료를 제공하고자 하였다. 성별에 따른 간식 구입장소는 성별 간 유의한 차이를 보였고(p<.05), 남 여 모두 편의점이 높게 나타났으며 하루 간식비는 남 여 모두 2,000원 이하가 가장 많았다. 간식 섭취횟수는 김밥이 남 여학생 간 유의한 차이를 보였는데(p<.05), 남학생은 일주일에 1~2회 먹는다가 가장 많았고 여학생은 한달에 1~2회 먹는다가 가장 높게 나타났다. 남학생은 일주일에 1~2회 섭취하는 간식으로 음료와 면, 과자, 빵, 김밥 순으로 조사되었고 여학생은 과자, 음료, 면, 빵 순으로 나타났다. 성별에 따른 간식 구매태도는 남학생 평균 2.76, 여학생 평균 2.87로 나타나 보통 이하 수준이었다. 성별에 따른 식품표시 확인 여부는 남 여 모두 확인하지 않는다가 높았고, 식품표시 확인 항목 중 가장 먼저 확인하는 것은 유통기한이었다. 성별에 따른 식품표시를 확인하는 이유도 유통기한이 가장 많았으며 식품표시를 확인하지 않는 이유는 습관적인 구매가 많았고 식품표시 내용이 어려운 이유는 글씨가 작고, 표시방법이 다양해서가 가장 높게 나타났다. 간식비에 따른 식품표시에 대한 이해는 간식비의 차이에 상관없이 식품표시를 확인하지 않는 학생이 많았으며, 식품표시 내용이 어려운 이유에 대해서는 간식비의 정도에 따른 유의한 차이가 나타났는데(p<.05) 간식비가 적은 집단에서 글씨가 작고, 표시방법이 다양해서가 높게 나타났다. 간식 구매태도에 따른 식품표시에 대한 이해는 유의한 차이를 보였고(p<.001) 간식 구매태도 점수가 낮을수록 식품표시를 확인하지 않았다. 성별에 따른 영양표시 확인 시 가장 먼저 확인하는 것은 성별 간 유의한 차이를 보였고(p<.01), 남 여학생 모두 열량이 가장 높았으며 여학생이 열량을 더 많이 확인하는 것으로 나타났다. 영양표시를 확인하는 이유는 성별 간 유의한 차이를 보였는데(p<.001) 체중관리를 위해서, 건강관리를 위해서 순으로 나타났고 특히, 체중관리를 위해서는 여학생이 두드러지게 높게 나타났다. 간식비에 따라 영양표시를 읽어 본 경험(p<.01), 영양표시 필요성에 대한 인식(p<.001)은 유의한 차이를 보였다. 식품/영양표시 교육 및 홍보 필요성 인식은 유의한 차이가 나타났고(p<.05) 간식비의 정도에 관계없이 모두 필요하다가 높게 나타났으며 간식비가 적을수록 필요하다가 높았다. 간식 구매태도에 따른 영양표시를 확인하는 이유는 체중관리를 위해서가 가장 높아 유의한 차이(p<.001)를 보였다. 영양표시 필요성에 대한 인식(p<.001)과 식품/영양표시 교육 및 홍보 필요성 인식(p<.01) 또한 세 집단에서 높게 유의한 차이를 보였다. 영양표시 인식 여부는 유의한 차이를 보였는데(p<.001) 간식 구매태도 점수가 높은 집단일수록 알고 있다가 높았고, 영양표시를 읽어본 경험도 간식 구매태도 점수가 높은 집단일수록 읽어본 경험이 높게 나타났다. 영양표시를 확인하는 이유는 세 집단 모두 체중관리를 위해서가 유의한 차이(p<.001)를 보였다. 식품/영양표시 교육 및 홍보 필요성 인식 또한 유의한 차이를 보였으며 (p<.01) 간식 구매태도 세 집단에서 모두 높게 나타났다. 위와 같은 결과로부터, 보다 적극적인 식생활 교육 필요성과 식품 및 영양표시 등을 확인하고 올바르게 선택할 수 있는 실천 교육이 이루어져야 하며, 이해하기 쉽고 보기 편한 식품 및 영양표시 방법의 제도 개선이 필요하고, 학부모 교육도 병행되어야 한다고 사료된다.

Preparation and Quality of Dried Yam Chip Snack Coated with Ascorbic Acid Cocrystallized Sucrose

  • The specific objectives of this study were to dry yam chips using microwave vacuum drying, freeze drying and hot air drying, then to coat the dried yam chips with ascorbic acid cocrystallized sucrose, and finally to compare the quality of yam chip snack foods with respect to drying and coating characteristics. The microwave vacuum dried sample showed the highest drying rates and much less surface damage than the hot air dried one did. The shape and color of the microwave vacuum dried/coated sample were allocated between those of the freeze dried/coated sample and the hot air dried/coated sample. The freeze dried/coated sample scored excessively low in organoleptic hardness and chewiness to be suitable as a snack. The hot air dried/coated sample was too deep in color, wrinkled, excessively high in organoleptic hardness and chewiness, and excessively low in mouthfeeling. Therefore, the microwave vacuum dried/coated sample presented the best overall attributes as a snack, with respect to organoleptic characteristics, shape, color, and drying rates.

전북 일부지역 초등학생의 식품 기호도에 관한 연구 (A Survey on Food Preference of the Elementary School Students in Chollabukdo Area)

  • This study was done to provide basic information for nutrition education and meal planning preference, Children's preference according to cooking method is high in fruit. drink, fried foods, dish food, but low in Sangchae, Sukchae, and Jangachies. The preference of staple food was that the most preferred foods were plain rice in rice, chicken gruel in gruels, rolled rice in one dish foods. and Jajangmyeon in noodles. The preference of side dishes was that the most preferred foods were seaweed in soups, Kimchi in Chigaes, beef and pork rib in steamed foods, beef in braised foods, Bulgogi in grilled foods, egg-fry in pan fried foods, Ddukbokki in stir-fried foods, pork cutlet in fried foods, Dotorimuk in Sangchaes, fruit in salads, bean sprouts in Sukchaes, Baechu Kimchi in Kimchies and Danmuji in Jangachies. The preference of snack was that the most preferred foods were citrus in fruits, Kkuldduk in rice cakes, hotdog in bread, ice cream in milk and dairy products and fruits juice in drink.

조선시대 세시음식(歲時飮食)에 대한 문헌적 고찰 (A Literature Review of Traditional Foods in Korean Festivals in the Joseon Dynasty)

  • This paper reviews 14 studies of the Joseon Dynasty(1392~1909) to examine the traditional Korean foods in Korean festivals. A total of 12 studies mentioned Seollal, Daeboreum, Dongji, Nappyeng as festivals involving. Traditional foods 10, Yudu, 9, Sambok and Junggujeol, 8, Chuseok and Seotdalgeummeum, 7, Samjinnal, Chopail, and Dano, 5, Jungwon, and 4, Hansik. In terms of the types of traditional foods, 13 studies mentioned red bean gruel, 12, Yaksik, 11, Tteokguk, 10, sudan and dog meat, 8, the custom of cracking the outer shell of different types of nuts, 7, Guibagisul(an ear-quickening wine), rice cakes(azalea hwajeon, zelkova rice cake, bean and turnip rice cake), 6, a chrysanthemum cakes, 5, Songpyeon, charunbeung(wagon-wheel rice cake), chrysanthemum wine, and sparrow meat, 4, Gangjeong, red bean grue, wine and snack, Jeonyak, 3, rice cakes, the making of soy sauce, Nabyak, roasted hare meat, foods for guests during, New Year festivities and rice cakes. The most frequently recorded festival foods were rice cakes and wine in various forms. This paper's review of ancient documents from the Joseon Dynasty provides a better understanding of Korea's folk customs, particularly traditional foods. In addition, this paper's findings are expected to help sustain Korea's traditional customs and foods and facilitrate the spread of Korea's food culture worldwide.
