The chemical composition of amino acids in the rind and fresh of Citrus Junos Sieb was studied and compared with that of Citrus natsudaidai Hayate. The results were summarized as follows. 1. Beth of them contained twenty kinds of amino acids, including three kinds of unknown amino acids. 2. Proline in the rind of Citrus Junos and aspartic acid in the rind of Citrus natsudaidai were the richest of all amino acids but on the contrary. Histidine was the poorest of all amino acids in the rind of them. The content of proline amounted to 16.48 mg/100mg in the rind of Citrus Junos and the content of aspartic acid amounted to 32.18 mg/100mg in the rind of Citrus natsudaidai. 3. Aspartic acid was the richest of all amino acids in the flesh of Citrus Junos and the content of it amounted to 32.68mg/100mg. On the other hand, Proline was the richest of all amino acids in the flesh of Citrus natsudaidai and the content of it amounted to 20.93mg/100mg. But the content of histidine as 1.32 mg/100 mg in the flesh of former and tyrosine as 1.18 mg/100 mg in the flesh of latter were relatively small. 4. In the fruits of Citrus Junos and Citrus natsudaidai, aspartic acid and Proline were rich and histidine was poor in quantity. Generally, Flesh contained more amounts of all kinds of amino acids than those rind and especially glutamic acid was richer, compared with other amino acids in flesh.
In order to screen natural inhibitor of tyrosinase which catalyzes an enzymatic browning of some foods and in vivo synthesis of melanin, inhibitory effect of 129 edible plants and 15 chemical compounds on the in vivo melanin synthesis by mushroom tyrosinase was analyzed. Among leafy vegetables tested, radish bud, red chicory, Shepherd's purse and small green onion were found to have more than 50% tyrosinase inhibition effect in the descending order. Chinese radish and garlic in root vegetables, and nameko, shiitake and oyster mushroom in mushrooms, and teas showed also more than 50% inhibition effect. Among fruit vegetables tested, red pepper, Chinese quince and avocado were found to have more than 50% tyrosinase inhibition effect, while fruits generally showed low inhibitory effect. Medicinal plants which inhibit tyrosinase more than 50% were mume fructus>cinamomi ramulus>rubi fructus>mori cortex>biotae orientalis folium>puerariae radix, and herbs with more than 50% inhibitory effect were allspice>clove>mustard. In some chemical compounds tested, 4-hexylresorcinol, L-cysteine, glutathione, sodium bisulfite and kojic acid showed powerful inhibition effect on mushroom tyrosinase.
The effects of solarization on the suppression of soilborne plant pathogen and the growth promotion of cucumber plants were examined in artificially infested soil by vinyl mulching and not mulching from July 25 to August 25, 1983. During the solarization period, the highest temperatures were $58^{\circ}C,\;45^{\circ}C,\;and\;42^{\circ}C$, at 5cm, 15cm, and 25cm of soil depth respectively. The inoculum of cucumber wilt pathogen, Fusarium oxysporum f. sp. cucumerinum, was mixed with soil 30cm deep and saturated with water. The pathogen was completely killed after 30dys of solarization in 5cm soil depth and 98 percent of inoculum was eliminated in 15cm soil depth. But the survival rate of the fungi in 25cm soil depth of solarized plot did not show significant differences compared with those in nontreated plot in 5cm and 15cm depth. Although some of the pathogenic fungi might survive from solarized soil in 15cm and 25cm depth, the ability of microconidia production was reduced significantly The number of microconidia grown on Komada's medium in isolates the primary colonies from solarized soil was less than that in isolates from nontreated soil approximately by one fourth. The first subcultured solates from the solarized soil grown on potato dextrose agar also produced a small amount of microc. onidia compare with that of subcultured isolates from nontreated soil. Cucumber seedlings planted in the soil collected from solarized plot grew much better than that in the soil from nontreated plot at any of soil loved, especially in 5cm of soil depth. And the fruits harvested from cucumber plants grown in the solarized plot were more in number and leavier in weight than that from nontreated plot. Besides the typical symptom development, significant growth suppression wvas recognized with increase of inoculum density of F. oxysporum f. sp. cucumerinum at early stage of cucumber seedlings in steam sterilized soil.

Evidence suggests that dietary indole, particularly rich in cruciferous vegetables, may reduce the risk of cardiovascular diseases. Endosulfan is a residual organochlorine pesticide, which is detected in fruits, vegetables, and crops. In this study, we investigated the effect of luminal indole on endosulfan transport in the small intestine in mesenteric lymph duct-cannulated rats. The duodenum was also cannulated and a fasting phosphate buffered saline-glucose solution was infused overnight at 3 mL/hr. After recovery, a lipid emulsion containing [2,3-$^{14}C$] endosulfan ($^{14}C$-endosulfan) was infused into the duodenum for 8 hours. The tested rats were infused with the same lipid emulsion, but with indole. Samples from the lymph-fistula were collected hourly, and the luminal contents and mucosa were collected at the end of the infusion. The lymph flow in the mesenteric lymph did not differ between the two groups. However, the intestinal absorption of both endosulfan and cholesterol were significantly decreased by indole. The amount of radioactive endosulfan, which remained in the mucosa, was greater in the indole-infused rats due to the decreased transport of endosulfan into the lymph. This study indicates that the indole decreases the intestinal transport of endosulfan into the mesenteric lymph.
At this study, we select five colorful and high-acid fruits: grape, lemon, orange, grapefruit and kiwi, and we made a composite resin specimen and dipped into fruit juice in order to figure out influence that affects on surface corrosion and coloring. We dipped resin specimen into fruit juice by three-day and seven-day interval at $37^{\circ}C$. Control group used the resin that was not dipped into fruit juice. For surface change according to the time, it was observed by using scanning electron microscopy, and it was measured by using spectrophotometer for change of coloring degree. As a result of surface change of resin by using scanning electron microscopy, furrow size between surface particles increased, and rectangular rod-shape structure was emerged, and small prominent particles on bumps disappeared. As a result of coloring degree of resin by measuring spectrophotometer, a difference between experimental group appears with the darkest brightness in the case where it is dipped into grape extracts.
Abilities of various edible plants and natural antioxidants to protect brain against oxidative damages were evaluated using brain homogenate of perfused Sprague-Dawley rat. Oxidative damage, expressed as lipid peroxidation (LPO), indicating total quantity of malondialdehyde and 4-hydroxyalkenal, increased from 4.1 to 6.9nmol/mg protein by treatment of $2.5{\mu}M$ ferrous sulfate and 7.5mM hydrogen peroxide as source of reactive oxygen species (ROS) on brain homogenate for 10min at $37^{\circ}C$ Mallow(88%) in leafy vegetables, small potato (93%) in root vegetables, green red pepper (76%) in fruit vegetables, and avocado (96%) in fruits showed highest LPO inhibition capacities. Ability of mushrooms decreased in order of nameko, shiitake, pine mushroom, oyster mushroom, and new type pine mushroom. Among natural antioxidants tested, (+)catechin (91%), (-)epigallocatechin gallate (85%), (-)epicatechin gallate (83%), and kaempferol(83%) showed high LPO inhibition capacities.
Genipin was obtained from hydrolysis of geniposide isolated from gardenia fruits with ${\beta}-glucosidase$. Reaction of genipin with glycine, alanine, histidine, lysine, phenylalanine and glutamate in aqueous buffer solution converted colorless starting materials to blue pigments. Effect of pH for the formation of blue pigments was tested using UV/Vis spectrophotometer. The optimum pH for the formation of blue pigments was 7.0. No pigment and trace amounts were formed at acidic (pH 3.0) and alkaline (pH 12.0) conditions, respectively. The amount and tincture of blue color were distinct with different amino acids. In contrast with lysine $({\lambda}_{max}=573\;nm)$, glycine $({\lambda}_{max}=595\;nm)$, phenylalanine $({\lambda}_{max}=602\;nm)$ and alanine $({\lambda}_{max}=595\;nm)$, the reaction of genipin with histidine $({\lambda}_{max}=601\;nm)$ and glutamate $({\lambda}_{max}=601\;nm)$ produced relatively small amounts of blue pigments. Rate constants for the formation of blue pigments from genipin with amino acids at various temperatures $(60,\;70,\;80,\;90^{\circ}C,\;pH\;7.0\;phosphate\;buffer)$ were obtained. Rate constants of genipin with basic amino acids were larger than neutral or acidic amino acids. Arrhenius activation energies of the formation of blue pigments indicated that activation energy of glycine $(E_A=9.8\;kcal/mol)$ was especially lower than those of other amino acids $(E_A=13.3{\sim}15.4\;kcal/mol)$.

In the $11^{th}$ month of the lunar calendar, the yang energy is finally born amid full of the ying energy. In the $12^{th}$ month, the yang energy prepares to break through the knots of the ying energy and gets ready to come out of the ground. In the first month, three kinds of the yang energy start to become vigorous and active. In the second month, the yang energy gains more force, sprouting various plants on the ground. In the third month, the yang energy arouse further, strengthening and growing plants. In the fourth month, all the yang energy is released, while the ying energy is still hiding. In the fifth month, one ying energy is born amid full of the yang energy, and there are interchanges between the yang energy and the ying energy. In the sixth month, the yang energy is still strong and vigorous, ripening the fruits in the fields. In the seventh month, the yang energy starts to hurt all creation. In the eighth month, the ying energy starts to flourish, and the yang energy starts to decline, diminishing all creation and, however, still ripening grains to be harvested. In the ninth month, one yang energy starts to hide from sight, not working its duty, while five kinds of the ying energy start to annihilate all creation. Finally, in the tenth month, the small yang energy hides to be rebirthed amid the flux and reflux of the ying-yang energy. The creative and unique interpretation of Jeongyeokwonui about twelve earthly branches is worth to be referred. It is definitely beyond the other existing explanations, as it incorporates trigrams and hexagrams from I Ching (Book of Changes) and the five primary substances.
Previously, the methanolic extracts of thirty Korean medicinal plant seeds were screened for tyrosinase inhibitors using a rapid and simple TLC method, which was superior to a conventional spectrophotometrical in vitro assay. As a result, the methanolic extracts of Thuja orientalis seeds was found to have strong tyrosinase inhibitory activity. To isolate active tyrosinase inhibitors, the seeds were defatted with n-hexane under reflux, and then extracted twice with methanol under reflux at 90$^{\circ}C$. The methanolic extract was evaporated to a small volumn in vacuo, and then successively fractionated with ether, ethyl acetate and n-butanol. The ether extract showing significant tyrosinase inhibitory activity was solubilized with 5% NaHCO$_3$and then acidified with 6N HCI. The ether souble acidic fraction was successively ohromatographed on silica gel, Sephadex LH-20 and preparative TLC. Among four compounds isolated, two of them showed stronger tyrosinase inhibitory activity, comparable to that of L-ascorbic acid (IC$\sub$50/=28$\mu\textrm{g}$/$m\ell$). These results suggest that Thuja orientalis seeds may be useful as potential sources of antibrowning agents in fruits and vegetables, and anti-melanoma agents in cosmetics and phamaceuticals.
This study analyzed components of the leaves of Elaeagnus multiflora as part of studies on the nutritional and functional materials of fruits and leaves of this plant. The moisture content of the leaves was 71.6% and the carbohydrate, crude protein, lipid and ash contents were 24.1, 1.4, 0.4 and 2.5%, respectively. Concentrations of reducing sugars, soluble proteins and polyphenols were 460.0, 503.3 and 805.6 mg/100 g, respectively. Fructose was the dominant free sugar, and arabinose, maltose, glucose, and a small amount of trehalose were also detected. Malic acid was the main organic acid in E. multiflora leaves, and acetic acid, citric acid, lactic acid, and succinic acid were also present. E. multiflora leaves were high in K, Ca and Mg. Of hydrolyzed amino acids, alanine was present at the highest concentration (112.0 mg/100 g), with threonine, leucine, valine and phenylalanine being the next most common. Glutamic acid and ornithine were the dominant free amino acid and amino acid derivative, respectively.
