To evaluate the functional status of ovarian cyst in Korean native cows, progesterone ($P_4$) and estrogen ($E_2$) level of cystic follicular fluid, ultrasonography for measuring the cystic diameter and thickness of cystic wall, and histological findings were investigated in cystic ovaries from slaughtered Korean native cows. Ovarian cysts were classified as single follicular cyst 51 cows (59.3%), multiple follicular cysts 19 cows (22.1%), single luteal cyst 13 cows (15.1%) and multiple luteal cysts 3 cows (3.5 %) by anatomical and ultrasonography. Ovarian cysts were classified as follicular cysts (54 cows), luteal cyst (16 cows) and non-functional ovarian cyst (16 cows) by hormone analysis, anatomical finding and ultasonography The luteal cyst was accurately diagnosed by cystic wall thickness, but follicular cysts was misdiagnosed 16 cows of 70 cystic cows The cystic fluid $P_4$ concentration was 3.3 ng/ml in follicular cysts and 30.1 ng/ml luteal cysts. There was significantly positive correlations between cystic wall thickness and serum $P_4$ concentration in follicular ($r^2=0.59$, p<0.001) and luteal cysts ($r^2=0.65$, p<0.001). These results indicated that ovarian cysts had various stages of degeneration and luteal cyst was accurately diagnosed measurement of cystic wall thickness by ultrasonography, but follicular cysts were not diagnosed only cystic diameter and cystic wall thickness.
This study was conducted to determine effects of different selenium (Se) sources on performance, carcass characteristics, blood measures (whole blood Se concentration and plasma glutathione peroxidase (GSH-Px) activity), and Se concentrations in tissues of finishing Hanwoo steers (Korean native steers). Twenty finishing Hanwoo steers (average body weight=536${\pm}$23.4 kg, average age=approximately 20 months) were allotted to treatments in four groups of five steers per pen for 16 weeks preceding slaughter. Treatments were control (CON), spent mushroom composts from Se-enriched mushrooms (Se-SMC), selenized yeast (Se-Y), and sodium selenite (SS). Dietary Se levels of all treatments except CON were 0.9 mg Se/kg on the dry matter basis. Body weight was measured at the first and final day of trial, and blood samples were collected to analyze whole blood Se concentration and plasma GSH-Px activity at 2, 4, 8, and 16 weeks. At the end of trial, steers were slaughtered to collect muscle and liver samples for their Se analyses, and carcass data were recorded. In terms of dry matter intake, body weight gain and carcass characteristics, no significant differences among treatments were observed. Whole blood Se concentrations were significantly higher (p<0.05) for Se-SMC and Se-Y treatments than for CON at each collection period, with no significant difference between SS and CON. For weeks 2 and 8, there was no significant difference for whole blood Se concentration between Se-SMC and Se-Y, but for weeks 4 and 16, Se-Y treatments were significantly higher (p<0.05) than Se-SMC. No differences were observed for plasma GSH-Px activity between Se-SMC and Se-Y. The Se concentrations in hind leg and liver were significantly different among treatments (p<0.05) and those in both tissues ranked the greatest in Se-Y, followed by Se-SMC, SS, and CON treatments. However, tissue Se concentration for SS was not different from that for CON. These results showed that feeding organic Se sources such as Se-SMC and Se-Y enhanced Se concentration in tissues, while SS, the most common supplement of inorganic Se, was inefficient in Se deposition. Even though Se-Y had a higher Se concentration in tissues than Se-SMC, replacing Se-Y with Se-SMC in diets of beef steers would be an inexpensive way to increase Se concentration in beef.

A study was conducted to investigate the effect of induced molting on the relative weight and hormone levels of thyroid, ovary, and adrenal glands in spent laying hens. Three hundred sixty 77-wk-old, Babcock White hens were divided into 36 experimental units of 10 hens each and induced to molt for seven weeks. A diet containing 16% CP and 2,800 kcal ME/kg was fed ad libitum from 84 to 126 weeks of age. Thirty-six birds were randomly selected for blood collection and slaughtered at Pre-molt, 5% egg Production, Peak, and end Phase of the egg Production. Weights of the thyroid, ovary, adrenal glands, and plasma T3, T4, cortisol, and estradiol contents were measured at each stage. Weight of the thyroid reached its highest level at 5% e99 Production stage. The ovary weight was greatly reduced during molting, but started to increase after induced molting until the end of the egg Production Phase (P<0.05). Plasma T3,T4 and cortisol were found to be the highest at the start of the Post-molt Production stage, but reached their minimum at the end Phase of e99 Production. Plasma estradiol was the lowest at the 5% egg Production stage. The Present study demonstrated that molting is a complex Process that require the involvement of endocrine glands to trigger their specific hormones, which play a key role in molt induction.
Objective: This study was conducted to compare growth performance, blood components and carcass traits by two feeding systems (concentrate with roughage separately [CON] vs total mixed ration [TMR]) in Hanwoo steers, and to learn the relationship between blood components during fattening or finishing phases and carcass traits in Hanwoo steers. Methods: Sixty steers aged 8 months were allotted to two feeding systems and fed similar amounts of average dry matter and total digestible nutrient throughout whole experimental period according to each feeding program. Steers were weighed monthly, taken blood at the end of growing, fattening and finishing periods, and slaughtered at 30 month of age. Results: Growing performance was higher (p<0.05) in the CON group compared to the TMR group during fattening and finishing periods. The CON group was lower (p<0.05) in blood aspartic acid transaminase, blood urea nitrogen and retinol levels during growing period, but higher in triglyceride and cholesterol levels during fattening and finishing periods compared to the TMR group. The CON group was greater (p<0.05) in rib-eye area, and lighter (p<0.05) red in meat color compared to the TMR group. In the correlation coefficients between blood components of steers and carcass traits, retinol had a negative (p<0.05) correlation with marbling score and rib-eye area. Leptin had a positive (p<0.05) correlation with back fat thickness. Blood cholesterol and triglyceride were positively (p<0.05) correlated with carcass weight and rib-eye area. Conclusion: Growth performance, carcass ribeye area and meat color showed a more desirable result in the CON compared to the TMR in Hanwoo steers. Assessing the accumulated data of carcass traits with blood components including hormones-particularly retinol, cholesterol, triglyceride, and leptin-during the fattening or finishing phases, it may be possible to find a biomarker for determining beef quality in living animals.

This study was carried out to investigate effects of crude protein (CP) levels in total mixed rations (TMR) on growth performance and meat quality in growing Korean black goats. Thirty-six 6-month-old growing black male goats (initial body weight =17.95${\pm}$0.13 kg) were used. The goats were randomly divided into four treatments and 9 animals were allotted to each treatment. In terms of treatments, CP levels in TMR were 14, 16, 18, and 20% of dry matter (DM) and all diets were isocaloric (2.4 Mcal ME/kg DM). The experiment lasted for 20 weeks with a 15-day adaptation period. After the end of the trial, five goats from each treatment were slaughtered to measure carcass characteristics and meat quality. Average daily gain (ADG) significantly (p<0.05) increased as dietary CP levels increased, but the highest ADG was found on the 18% CP treatment. The higher CP levels in TMR significantly (p<0.05) decreased feed conversion ratio, but the lowest ratio was on the 18% CP treatment, suggesting a higher bioavailability of nutrients by balanced energy and protein levels on this treatment. There was no significant difference in dressing percentage among treatments, but there was a tendency for levels more than 16% CP in TMR to have a comparatively higher dressing percentage than the 14% treatment. The percentages of meat, fat and bone were not significantly influenced by dietary CP levels. Dietary CP levels did not influence chemical composition of goat meat. Furthermore, there was no significant difference among treatments in any of the sensory parameters except for tenderness. Tenderness was similar for 18 and 20% treatments, which were significantly (p<0.05) higher than the 14% treatment. The results from this study suggested that an adequate CP level in TMR for achieving optimal growth performance and meat quality of growing Korean black goats might be 18% of DM, and that dietary CP level above 18% seemed not to further increase growth performance and meat quality.
This study was performed to establish the discrimination of the corpus albicans that were formed after normal parturition and abortion in Holstein, The corpus albicans were obtained from 504 cows and 506 heifers slaughtered in the Agricultural Cooperative's Livestock Products Joint Market of Seoul City from March 2007 to October 2007. The difference in a gross examination (morphology, fibrogenesis, deposit state, color, and size) among the fixtures that exist in their ovaries was investigated. All of the cows had corpus albicans in their ovaries: 423 cows (83.9%) had less than three corpus albicans, 81 (16.1%) had more than four. In the heifers, however, 463 (91.05%) had no corpus albicans, 39 (7.7%) had one, and four (0.8%) had more than two. In the types of corpus albicans 73.2% of the cows had oval-type, 14.4% had circular-shaped, 12.4% had irregular-type. In the aborted heifers, however, oval-type appeared in 88.6% and circular-shaped appeared in 11.4%, and no irregular-type was found. There was no significant difference in the fibrogenesis and size of corpus albicans between cows and aborted heifers. However, slight difference in the color of the corpus albicans was observed between two types. In conclusion, it is not easy to discriminate by gross examination of ovary between cows and aborted heifers in the slaughter house.

The present study was conducted with twenty-four Korean native (Hanwoo) steers to observe the effect of mixed oil and monensin supplementation and duration of feeding on c9,t11-CLA content in plasma and fat tissues. The steers were randomly assigned to three groups of eight animals each according to body weight. Hanwoo steers in the control group were fed the commercial concentrate for the late fattening stage. The other groups of steers were fed the same diet as control steers, but the concentrate was supplemented with high-$C_{18:2}$ oil mixture (soybean oil, sunflower oil, safflower oil) and fish oil at 6% level of concentrate (DM basis), and monensin (20 ppm). The second and third group of steers was fed the oil mixture supplemented diet with monensin for the last 10 weeks and 20 weeks, respectively, prior to being slaughtered. The oil mixture consisted of 45% soybean oil, 20% sunflower oil, 20% safflower oil and 15% fish oil. Average daily gain (p<0.049) and feed efficiency (p<0.018) of the steers fed the diet supplemented with oil mixture and monensin (OM-M) for 20 weeks were higher than those of the other groups of steers. Dressing percent, fat thickness and longissimus muscle area were not affected by the OM-M supplementation and duration of its feeding. The OM-M supplementation increased the content of total-cholesterol (p<0.0001-0.0007) and HDL-cholesterol (p<0.0001) in the plasma of steers compared to the control diet. The steers fed the OM-M diet had a higher proportion of c9,t11-CLA in plasma (p<0.048-0.044) than the control steers. Feeding the OM-M diet for 20 weeks increased the proportion of CLA in intramuscular (p<0.015), intermuscular (p<0.039) and subcutaneous (p<0.001) fat tissues compared with both steers fed the control diet and the OM-M diet for 10 weeks. Increased (p<0.007) proportion of total unsaturated fatty acids in steers fed the OM-M diet for 20 weeks compared to those in control steers was related to the increased (p<0.001) $C_{18:2}$ and decreased (p<0.001) $C_{18:0}$ proportions in subcutaneous tissue.

In Korea, it is the one of controversial problems to distinguish heifer from cow in slaughtered Holstein cattle. This study was conducted to evaluate the several criterions which could be used to discriminate heifer from cow. Some criterions have shown significant differences between heifer and cow in ante and post-mortem inspections(p<0.01). Firstly, the numbers of milk teeth of heifer and cow were $6.12{\pm}1.92$ ($Mean{\pm}Standard$ deviation) and $0.03{\pm}0.39$ respectively. The teat diameter(D) and length(L) of cow were $26.43{\pm}4.31mm$ and $47.76{\pm}6.89mm$ respectively. However, those of heifer were significantly smaller (D: $18.04{\pm}5.04mm$, L: $28.61{\pm}8.91mm$) than those of cow. The size of udder was $203.68{\pm}16.84mm$ in Holstein cow and $112.70{\pm}20.59mm$ in heifer. Secondly, the uterus size of cow was significantly bigger than that of heifer and caruncle in mucosa of uterus could be easy to be confirmed by necropsy inspection. It was also obvious that the folding and length of uterus body were significantly remarkable in cow. Lastly, the pelvic cavity was $196.33{\pm}10.01mm$ in heifer and $220.90{\pm}11.41mm$ in cow. The ossifying maturation of heifer was $2.64{\pm}0.82$ and $6.71{\pm}1.81$ in cow. As the results, this study can be helpful for meat inspectors to discriminate the non-delivery heifer from delivery cow in Holstein cattle.
This study was conducted to investigate the effects of gender on sensory scores, fatty acid and amino acid of Berkshire pork A total of 40 pigs (60 kg) were divided into 2 group (gilt and barrow) and raised up to 110 kg live weight. Pigs were conventionally slaughtered, and then chilled overnight. Pork loin (longissimus dorsi) muscle was removed from each left side and meat qualities were evaluated. The results obtained were as follows; In sensory evaluation, color, marbling score, aroma and overall acceptability of brrow groups were significantly higher than that of gilt groups (p<0.05). In fatty acid analysis, linoleic acid and arachidonic acid of gilt groups were higher than those of barrow groups, EFA (essential fatty acid) and UFA (unsaturated fatty acid) were lower in barrow groups compared to the gilt groups. In amino acid compositions, alanine, tyrosine and arginine of barrow groups were significantly higher and threonine, proline and histidine lower than those of gilt groups (p<0.05).

The proximate composition was no different between genders, and the pH was higher iii the barrow group(p<0.05). The water holding capacity, cooking loss, shear force, and cholesterol content were no different between genders. With regard to meat color, the $L^*$ value was higher in the barrow group(p<0.05), but the $a^*\;and\;b^*$ values were no different between genders. The fat color was also no different between genders. The texture properties, brittleness, hardness, and gumminess of the gilt group were higher than those of barrow group(p<0.05), but cohesiveness, springiness, and chewiness were no different. In conclusion, the pH and $L^*$ values of the barrow group were higher than those of gilt group, and tenderness was higher in the barrow group.
