Estimation of dietary intake and human health risk of hexachlorobenzene by marine organism consumption in Korea

  • Hexachlorobenzene (HCB) was analyzed in various marine organisms of Korea. HCB was detected in all organism samples with residual concentrations from 0.51 to 222 pg/g wet weight. HCB residue was the highest content in crustacean, and followed by bivalves, fish, cephalopods and gastropods. The residues were comparable to or lower than those in marine organisms of other countries. Daily dietary intake of HCB from seafood was estimated to be 13.4 pg/kg body weight/day. The relative contribution of taxonomic group to the total dietary intake of HCB were in the order of crustaceans $(40.1\%)$, bivalves $(34.2\%)$, fish $(23.1\%)$, cephalopods $(2.22\%)$, and gastropods $(0.38\%)$. Daily dietary intake of HCB expressed as toxic equivalent (TEQ) value was estimated to be $1.34\times10^{-3}pg$ TEQ/kg body weight/day. This value did not exceed tolerable daily intake (TDI) proposed by the WHO, the UK toxicity committee and the KFDA. Cancer risk and target hazard quotient (THQ) due to the consumption of the marine organism in Korean adult population were evaluated using the exposure equation of food ingestion. This result suggests that dietary intake of HCB by the consumption of Korean seafood seems to be safe for human health with negligible cancer and non-cancer risks so far.

Evaluation of the Microbiological Safety for the Seawater in a Part of the South Coast, Korea (남해안 일부해역 해수의 세균학적 위생안전성 평가)

  • This study was designed to evaluate the sanitary characteristics of sea water in a part of the south coast, Korea and to check the seawater which is in compliance with the recommended bacteriological criteria for shellfish cultivation. The samples of sea water were collected at 14 sampling stations established in the survey area between March 2014 and October 2014. Food poisoning caused by seafood consumption is often associated with pathogenic microorganisms originated from fecal contamination. Therefore, fecal coliform is very important criteria for evaluating the safety of fisheries in coastal areas. The range of geometric mean (GM) and the estimated 90th percentile values of total coliform were 4.1~83.1 MPN/100 mL, and 11.7~834.1 MPN/100 mL, respectively. The GM and the estimated 90th percentile values of fecal coliform were 2.5~22.7 MPN/100 mL and 2.5~170.0 MPN/100 mL, respectively. Therefore, the bacteriological safety of seawater at this shellfish-growing area met with the Korean Shellfish Sanitation Program (KSSP) criteria for a growing area. However, the values are seasonally exceed the KSSP criteria, suggesting that the monitoring and evaluation of seawater quality is very important in shellfish-growing area.

Annual Effective Dose of 210Po from Sea Food Origin (Oysters and Mussels) in Korea

  • Background: Ingestion of $^{210}Po$ laden seafood accounts for a substantial amount of the effective dose of $^{210}Po$. Among seafood items, mollusks, especially domestically produced oysters and mussels, are highly enriched in $^{210}Po$ and are consumed in large quantities in Korea. Materials and Methods: Oysters and mussels around the Korean coasts were collected from major farm areas in November 2013. Samples were spiked with an aliquot of $^{209}Po$ as a yield tracer, and they were digested with $6mol{\cdot}L^{-1}$ $HNO_3$ and $H_2O_2$. The $^{210}Po$ and $^{209}Po$ were spontaneously deposited onto a silver disc in an acidic solution of $0.5mol{\cdot}L^{-1}$ HCl and measured using an alpha spectrometer. The activity concentrations of $^{210}Pb$ and $^{210}Po$ were decay corrected to the sampling date, accounting for the possible in-growth and decay of $^{210}Po$. Results and Discussion: $^{210}Po$ activity concentrations in oysters were in a range from 41.3 to $206Bq{\cdot}(kg-ww)^{-1}$ and mussels in a range from 42.9 to $46.7Bq{\cdot}(kg-ww)^{-1}$. The $^{210}Po$ activity concentration of oysters in the turbid Western coast was higher than the Southern coast. The $^{210}Po$ activity concentration of the oysters was positively correlated ($R^2=0.89$) with those of the suspended particulate matter in the surface water. The calculated annual effective dose of $^{210}Po$ from oysters and mussels consumed by the Korean population was 21-104 and $5.01-5.46{\mu}Sv{\cdot}y^{-1}$. The combined effective dose due to the consumption of oysters and mussels appears to account for about $35{\pm}19%$ of that arising from seafood consumption in the Korean population. Conclusion: The annual effective dose of $^{210}Po$ for oysters in the Korean population was found to be higher than other countries. The total annual effective dose of $^{210}Po$ due to consumption of oysters and mussels consumed in Korea was found to be $76{\pm}42{\mu}Sv{\cdot}y^{-1}$, accounting for $28{\pm}16%$ of the total effective dose of $^{210}Po$ from food in Korea.

Dietary inclusion effect of various levels of jack mackerel meal on the growth performance, feed efficiency and whole body composition of rockfish (Sebastes schlegeli)

  • Inclusion effect of various levels of jack mackerel meal (JMM) acting as feed attractants and/or stimulants in diets on the growth, feed consumption, feed utilization and whole body composition of rockfish was investigated. Three hundred juvenile rockfish were randomly allocated into 15 flow-through tanks. Five experimental diets supplemented with JMM at 0%, 1%, 3%, 5%, and 10% at the expense of anchovy meal were prepared and referred to as the JMM0, JMM1, JMM3, JMM5, and JMM10 diets, respectively. Weight gain, specific growth rate (SGR) and feed consumption of fish tended to improve with dietary levels of JMM. The greatest weight gain, SGR and feed consumption were observed in fish fed the JMM10 diet, followed by the JMM5, JMM3, JMM1, and JMM0 diets, in that order. Condition factor (CF) of fish tended to improve with dietary inclusion levels of JMM. Growth performance, feed consumption and CF of fish tended to improve with dietary inclusion levels of JMM ranging from 0% to 10%.

Diet of the Korean Flounder Glyptocephalus stelleri in the Coastal Waters of the East Sea of Korea (동해에 출현하는 기름가자미(Glyptocephalus stelleri)의 위내용물 조성)

  • The diet of Glyptocephalus stelleri was studied using 475 specimens collected in the coastal waters of the East Sea of Korea. The specimens ranged from 6.8 to 43.4 cm in total length (TL). G. stelleri was a crustacean feeder that consumed mainly euphausiids [percent index of relative importance (%IRI)=63.7%]. Polychaetes were the second largest prey component. The diet also included small quantities of bivalves, copepods, amphipods and shrimps. Individuals smaller than 15 cm TL fed mainly on euphausiids. The proportion of euphausiids decreased as body size increased, whereas the consumption of polychaetes increased gradually.

A Study on the Chinese Tourists' Expectation and Satisfaction Level of Marine and Fisheries Tourism in Busan (부산 해양·수산 관광지에 대한 중국관광객의 기대 및 만족도 연구)

  • Busan is a representative of ocean cities in South Korea, which attracts many Chinese tourists. As a number of Chinese tourists increase, Chinese tourists' evaluations of sightseeing resources in Busan appear extremely important. However, there are few researches on Chinese tourists' evaluations of sightseeing in Busan. The purpose of this paper is to analyze Chinese tourists' evaluations of Busan tourism. Chinese tourists who travel to Busan are chosen as research objects and several aspects including marine, fisheries and general tourism are investigated to evaluate the tourists' overall satisfaction of the tourism in Busan. IPA analysis, factor analysis multiple regression analysis are used for the research. The results are as follows. Chinese tourists' evaluations of the importance and performance level of variables on Busan tourism were significantly different (total 19 of 25 variables) and the performance was lower than importance. This means the outputs of the various Busan tourism elements do not live up to their expectations. The findings show that Chinese visitors have high satisfaction on infrastructures of fisheries tourism (e.g. cleanness of aquatic product tourism facilities and sanitary state on fishery products), but low satisfaction in terms of the contents (e.g. unique cooking method experience of seafood and traditional seafood cooking consumption). The factors of fisheries tourism (e.g. product services of fisheries tourism and the attractiveness of seafood in Busan) never affect their satisfaction and intention to revisit and recommend the city.

Improvement and Verification of a Cholesterol Analytical Method to Analyze Cholesterol Content in Seafood (수산물의 콜레스테롤 분석을 위한 콜레스테롤 분석법 개선 및 검증)

  • Cholesterol is an essential component for maintaining health; however, excessive consumption can lead to diseases. Thus, continuous monitoring of cholesterol content is important in food research. The cholesterol analysis method used in Korea follows the Korean Food Standards Codex. As this method uses gas chromatography, derivatization of the sample is required, and analysis time is more than 30 min. Kim developed a new method using liquid chromatography; however saponification by the non-heat saponification method is insufficient. To address these limitations, a new cholesterol analysis method was developed and verified. The correlation coefficients for the cholesterol standard (STD) were maintained above 0.99. The limit of detection and limit of quantitation of cholesterol STD were 2.41 ㎍/mL and 7.31 ㎍/mL, respectively. The accuracies for cholesterol were 92.21-99.02%. The developed analytical method was also verified using three standard reference materials, and their accuracies were 93.71-97.09%. In addition, the cholesterol content of fishes was analyzed, and the values were compared with those recorded by the United States Department of Agriculture. Our results suggest that this method could be used as a new analytical method for cholesterol in seafood.

Diet of the Walleye Pollock Gadus chalcogrammus in the East Sea, Korea (한국 동해에 출현하는 명태(Gadus chalcogrammus)의 위내용물 조성)

  • The diet of the walleye pollock Gadus chalcogrammus, was studied by examining the stomach contents of 864 individuals. Using gill nets, samples were collected monthly from January to December 2017 in Jugwang, Sokcho, Yangyang, Uljin, Ganggu, and Gampo, Korea. The specimens ranged in total length (TL) from 16.6 to 75.2 cm. G. chalcogrammus fed mainly on Euphausia pacifica (Euphausiacea) and less on Cephalopoda, Pisces, Mysidacea, and Macrura. The results indicated that G. chalcogrammus is a specialist feeder, feeding mainly Euphausiacea. With growth, however, its diet shifted from Euphausiacea to Cephalopoda, Macrura and Pisces. Smaller individuals (<40.0 cm TL) consumed mainly Euphausiacea. The proportion of Euphausiacea decreased with increasing body size, whereas the consumption of Cephalopoda and Macrura increased gradually.

Volatile Flavor Components in Boiled Snow Crab (Chionoecetes japonicus) and Its Concentrated Cooker Effluent

  • The volatile flavor components of snow crabs from the Young-duk coast of Korea and their concentrated cooker effluent were isolated by a modified method from Likens and Nickerson, using a simultaneous distillation and extraction apparatus. The concentrated extract was analyzed and identified by gas chromatography and GC-MS. The flavor profile of boiled crab demonstrated that the favorable flavor characteristic of crab involved a seafood-like note, and that of concentrated cooker effluent demonstrated that the weak boiled crab flavor involved a fishy note. The main flavor components of boiled crab were heterocyclic compounds including alkylpyrazines, thizoles and thiolanes, aliphatic ketones including 2-heptanone and nonanone. On the other hand, the main flavor components of cooker effluent were aldehydes including 3-methylbutanal, alipatic ketones including 2-heptanone and alkanes including 2,6,10,14-tetramethyl-pentadecane. Almost all of heterocyclic compounds, which seem to be important contributors to the flavor of boiled crab, were not identified in concentrated cooker effluent. As a result, there may be a need to add the crab flavor components formed through model experiments of Maillard reactions to the concentrated cooker effluent for human consumption.

  • This study is based on big big data base for real-time collection/analysis/processing of data, creative analysis of data assets, and intelligent processing system based on IoT, which can measure distribution phase in real time. The mobile terminal uses the SDK of the provided device to measure the data information on the consumption of specific seafood production and distribution. We use the oneM2M protocol to store various kinds of information needed for seafood production, and implement a DB Server and a system that allows the administrator to manage the system using the UI.
