The Effects of Image and Awareness of Safe Restaurant Signs on Behavior Intention (안심식당 표지판에 대한 이미지와 인지도가 행동의도에 미치는 영향)

  • This study was intended to suggest the future direction of catering companies in line with the new normal in the era of COVID-19. The purpose of this study is to investigate the effect of image and awareness of signs for safe restaurant on behavioral intentions. As a result of testing the hypothesis, first, it was found that the image of the sign for the safe restaurant had a significant effect on the recognition. Second, the image of the safe restaurant sign has a significant effect on trust. Third, it was found that the awareness of the signs for the safe restaurant had a significant effect on trust. Fourth, trust had a significant effect on behavior intention. Fifth, it was found that the image and awareness of the sign in the safe restaurant did not have a statistically significant effect on the behavioral intention. Sixth, it was found that the image of the sign at the safe restaurant and the awareness of the sign at the safe restaurant completely mediate trust and have a significant effect on the behavioral intention. The results of this study show the need for publicity activities to raise awareness of the safe restaurant certification and the importance of giving trust to consumers.

A Study on Key Factors Influencing Customers' Ratings of Restaurants by Using Data Mining Method (데이터 마이닝을 활용한 외식업체의 평점에 영향을 미치는 선행 요인)

  • Purpose Customer review is a major factor in choosing certain restaurants. This study investigates the key factors affecting customer's evaluation about restaurants. With the recent intensification of competition among restaurants in the service industry, the analysis results are expected to provide in-depth insights for enhancing customer experiences. Design/methodology/approach We collected information and reviews provided at the restaurants in the Kakao Map platform. The information collected is based on the information of 3,785 restaurants in Daegu registered on Kakao Map. Based on the information collected, seven independent variables, including number of rating registered, number of reviews, presence or absence of safe restaurants, presence or absence of a posting about holding facilities, presence or absence of a posting about business hours, presence or absence of a posting about hashtags, and presence or absence of break times, were used. Dependent variable is restaurant rating. Multiple regression between independent variables and restaurant rating was carried out. Findings The results of the study confirmed that number of rating registered, presence or absence of a posting about business hours, and presence or absence of a posting about hash tags have an positive effects on the restaurant rating. The number of reviews had a negative effect on the restaurant rating. In addition, in order to confirm the role of customer's reviews, we carried out LDA topic modeling. We divided the topics into the positive review and the negative reviews.

  • The necessity of selecting food based on correct information through nutrition ingredients included in the food is being emphasized due to the recent increase in interest of restaurant users in healthy and safe food. This study verified the structural causal relationship among consumer attitude, use reason and health-consciousness regarding nutrition information labeling and their satisfaction and revisit intent. A total of 266 surveys conducted over restaurant users residing in the Busan area was used for the final analysis of the study to attain this study's objective. The suitability of the Structural Equation Modeling and organic causation relationship was verified through the statistics programs SPSS (V 23.0) and AMOS (V 21.0) in order to attain this study's objective, and the control effect of age has been verified. The results showed that a meaningful causal relationship was confirmed in all elements excluding consumer attitude. A control effect was also confirmed in the influential relationship between use reason and satisfaction level. The results of the study suggested that the nutrition information labeling system of restaurants provides practical implications and marketing strategies for restaurant managers and government policy makers.

A Study on the Website Color Analysis of the Foodservice Brand: Concentrated on Homepage of Family Restaurants (외식브랜드의 웹사이트 컬러분석에 관한 연구 - 패밀리 레스토랑 홈페이지를 중심으로 -)

  • The color and its coordination should intensify the customer's memory and awareness in a brand website, through the consistent communication strategy by which a variety of brand identification in the offline could be expressed efficiently. We evaluated top 5 brand-valuable family restaurants in this study, how they made the best use of the website as a new communication channel, and how they constructed the brand identification by the coloring of a website. We found out that they employed colors with a dynamic and lilting feelings matching the concept of a family restaurant. In addition, A color scheme was well designed for the specific character of a brand, though web-safe colors were seldom employed. This report can be a guide to a corporation for the color and its coordination in the website, when existing brand images need to be intensified and enhanced, or when a new brand image need to be constructed.

  • After COVID-19, with the emergence of social distancing, non-face-to-face services, and home economics, visiting dining out is rapidly being replaced by non-face-to-face dining out. The purpose of this study is to find ways to create a safe dining culture centered on living quarantine in line with the changing trend of the restaurant industry after the outbreak of COVID-19, establish the direction of food culture improvement projects, and enhance the effectiveness of the project. This study used TEXTOM to collect and refine search frequency, perform TF-IDF analysis, and Ucinet6 programs to implement visualization using NetDraw from January 1, 2018 to October 31, 2019 and December 31, 2021, and identified the network between nodes of key keywords. Finally, clustering between them was performed through Concor analysis. As a result of the study, if you check the frequency of searches before and after COVID-19, it can be seen that the COVID-19 pandemic greatly affects the changes in the restaurant industry.

  • This paper designs and implements a smart phone safe application program for advanced preventing a danger during a car driving with doing a smart phone. The proposed smart phone safe application program has the aim to increase easily and naturally the concentration when the driver is using of the smart phone during a car driving. Especially when sudden situation occurs, If driver gives up driving conditions, and go to the restaurant, move to tourist resort. It will continue to send the text of driving even if another person is on the phone. In this paper a traffic safety simulation was performed using a fuzzy inference rules in order to solve these problem. The simulation is predicted greatly to decrease to send the auto sending message when the driver gives up suddenly the driving because catching up whether the car is driving or not.

Application of HACCP System on Establishing Hygienic Standards in Pizza Specialty Restaurant - Focused on Salad Items - (HACCP제도를 활용한 피자 전문 패스트푸드 업체의 자체 위생관리기준 설정 - 샐러드를 중심으로 -)

  • The study was conducted to establish hygienic standards of salad items for pizza restaurant located in Seoul by applying HACCP system during the summer of 2000. The study measured temperature, time, pH, Aw and microbial assessments. The hygienic conditions of the kitchen and workers were on the average(1.21, 1.0 out of 3 pts.), but some improvement should be made: separate use of trash can and leftover disposal, separate use of knives and cutting boards, habits for hand washing and wearing hygienic gloves. For salad production, all procedures were peformed under food safety danger zone ($5{\~}60^{\circ}C$). The ingredients were mostly above pH 5.0 and high in Aw($0.94{\~}0.99$). Microbial assessments for salad production revealed that TPC($1.8{\times}10^3{\~}1.0{\times}10^{10}CFU/g$) and coliforms($1.5{\times}10{\~}5.2{\times}10^5 CFU/g$) exceeded the standards by Solberg et al.(TPC: $10^6CFU/g$, coliforms: $10^3CFU/g$). S. aureus was not detected but Salmonella was found in three food items(egg, macaroni and macaroni salad). Moreover, the workers' hands contained 3.1 104 CFU/g of TPC and 4.2 102 CFU/g of S. aureus requiring further remedy since it exceeded the safety standards suggested by Harrigan and McCance (500 CFU/g of TPC per $100cm^2$ and 10 CFU/g of coliforms per $100cm^2$). According to the critical control point(CCP) decision tree analysis, vegetable receiving, vegetable holding, mixing, display on coleslaw, macaroni draining, display on macaroni salad, egg peeling & cutting, apple cutting, and display on salad bar were determined as CCPs. From the findings it would be suggested that purchase of Quality materials, short holding and display time, storing food at right temperature, using sanitary cooking utensils, and improvement of workers' food handing practices are needed to ensure the safe salad production in this specific pizza restaurant.

Hygienic Quality of Drinking Water Served in Restaurants and Quality Characteristics of Drinking Water Boiled with Various Plant Materials (외식업소 음용수의 위생실태와 침출재료에 따른 기호성과 저장성)

  • The viable cell of 60% drinking water among 25 drinking water served in restaurant of Daegu district showed above 100 CFU/mL which is sanitary standard of drinking water. The 50 CEO of restaurant considered drinking water served in their own restaurant as just safe and were very deficient in aware of sanitation about drinking water. Sensory quality of drinking water boiled with plant materials, such as barley, Cassia semen, corn, Buckwheat, Korean solomon's seal, Chamomile, Brown rice-green and peppermint was improved in color, taste, flavor and overall acceptability compare to marketed drinking water, respectively. Especially drinking water boiled with Korean solomon's seal was the best In overall acceptability. The number of total bacteria reached above $10^2 CFU/mL$ in marketed drinking water after 4 days storage at 10. But the growth of microorganism did not occur in boiled drinking water with Brown rice-green tea, Korean solomon's seal, barley, Cassia semen and com during storage for 10 days at $10^{\circ}C$, respectively. The number of total bacteria reached above $10^2 CFU/mL$ in marketed drinking water after storage for 1 days at $25^{\circ}C$. The growth of microorganism was accelerated in boiled drinking water with corn, Korean solomon's seal, barley, Cassia semen except Brown rice-green tea during storage far 10 days at $25^{\circ}C$, respectively.

A Study on Restaurant Workers' Knowledge about Food Hygiene and Safety (패밀리 레스토랑 직원들의 식품 위생 및 안전 지식에 관한 연구)

  • The purpose of the study was to examine the restaurant workers' understanding of food hygiene and safety regulations using SPSS. From October 10th to 31st, 2008, a survey was conducted to those who work at family restaurants in Seoul and Gyeonggi-do. This program analyzed total 149 copies of the questionnaire. 79.9 percent of the respondents have completed college education; 76.7 percent out of them were domestic company workers and 82.9 percent were foreign company workers. The total average points turned out to be 14.03 points out of 20, 3.95 out of 5 for food poisoning, 2.37 out of 3 for personal hygiene, 6.41 out of 9 for food hygiene and environment, and 1.86 out of 3 for food safety. Foreign company employees scored higher points(14.3) compared to those of domestic companies. When comparing the points between domestic company workers and foreign company workers, the score of kitchen staff(p<0.001) and the score of a restaurant assistant(p<0.05) have influenced the overall points. In conclusion, people scored low points in areas as understanding of 'dangerous temperature level', 'bacterial multiplication', 'safe defrosting methods', 'cooling methods' and 'temperature control', indicating the necessity of the training on 'time/temperature control'.

Establishment of Hygienic Standards for Pizza Restaurant Based on HACCP Concept -Focused on Pizza Production- (HACCP의 적용을 위한 피자 전문 레스토랑의 위생관리 기준 설정 -피자생산을 중심으로-)

  • Hygienic standards for pizza specialty restaurant located in Seoul during summer, 2000 were established based on HACCP concept by measuring temperature, time, pH, $A_{w}$ and microbiological assessments of pizza, and evaluation of hygienic conditions of kitchens and workers. Kitchen and worker conditions were average 1.2 and 1.0 (3 point Sly's scale), respectively, Microbial contaminations occurred at $5-60^{\circ}C$, pH above 5.0, and $A_{w}$ (0.93-0.98). Microbial assessments for pizza processing revealed $1.5{\times}10^{2}-3.9{\times}10^{8}\;CFU/g$ of TPC and $0.5{\times}10^{1}-1.6{\times}10^{7}\;CFU/g$ of coliforms, exceeding standards ($TPC\;10^{6}\;CFU/g\;and\;coliform\;10^{3}\;CFU/g$) established by Solberg et al., although significantly decreased after baking. S. aureus was not discovered, but Salmonella was found in onions. Tools and containers such as pizza cutting knife, topping container, serving bowl, pizza plate, working board, and dough kneading board contained $6.2{\times}10^{2}-1.1{\times}10^{9}\;CFU/g$ of TPC, $2.0{\times}10^{1}-6.2{\times}10^{3}\;CFU/g$ of coliforms. Workers' hands contained $3.1{\times}10^{4}\;CFU/g$ of TPC and S. aureus as compared to safety standards of Harrigan and McCance (500 and 10 CFU/g of TPC and coliforms per $100cm^{2}$). CCPs (critical control points) were determined as receiving, topping, and baking according to CCP decision tree analysis. Results suggest purchase of quality materials, careful monitoring of time and temperature, hygienic use of tools and utensils, and sanitary practicer by workers are recommended as control points for safe pizza production.
