A survey on the kimchi preference among elementray school students in Pusan was conducted in April of 1995 to get basic information needed for the development of special kimchi for the children. Total of 1100 children in 2nd, 4th and 6th grade from public and private elementary school participated in this survey. Sixty eight percent of students answered that they like kimchi. However, kimchi preference(17.6%) among other side dishes-pork cuttlet.ham.sausage(54.1%), egg roll(9.4%), soysauced beef(8.2%), toasted laver(6.3%), bean sprout namul(3.0%), danmooji(1.0%), and squash namul(0.4%)-was relatively low. It can be interpreted that elementary school student prefers processed food specially animal food to kimchi. The hot taste of the kimchi was the number one reason of their dislike of kimchi, and it was the most important reason for those also like kimchi. Thus it can be thought as the representative taste of kimchi. Chinese cabbage kimchi was found to be the most favorite kimchi and kakdugi(seasoned pickles of cubed radish), nabak-kimchi(mildly seasoned water based kimchi that is mixture of chinese cabbage and cubed radish) and jchonggag kimcchi(seasoned pickles of pony tail radish) and cucumber kimchi were followed in order. Among the various ingredients in kimchim children like cabbage best but they didn't like galic, ginger, green onion and fermented fish sauce which give strong flavor in kimchi.

Sweet pumpkin is a squash fruit that contains low total solids but is rich in carotene, pectin, mineral salts, vitamins, and other substances beneficial to health. An attempt was made to develop a value-added food product; sweet pumpkin powders (SPP) were incorporated into a model system of noodles as a healthy food ingredient, and selected physicochemical properties and consumer preferences were determined. Elevated SPP concentration was associated with increased pH, soluble solids, and turbidity; however, moisture absorption decreased (P<0.05). Increasing amounts of SPP significantly reduced both raw and cooked noodle brightness (L*); however, yellowness (b*) appeared to increase. In addition, 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity increased significantly (P<0.05). The consumer acceptance test indicated that incorporation of 10% SPP to the formulation is recommended to take advantage of the health benefits of SPP without major sacrificing the quality acceptance of consumers.

In this study, we monitored the residues of organophosphate pesticides (OP) in eight fruit vegetables grown in Korea, and assessed risk levels of acute and chronic exposure of OP through the consumption of fruit vegetables. Chlorpyrifos, EPN, methidathion and phosphamidon in eight fruit vegetables were detected in this study. The results of cumulative assessment of national estimated short term intake for acute exposure of OP were due to the following order; eggplant, tomato, squash and cucumber. Total theoretical maximum daily intake calculated at first step of chronic exposure assessment for registered OP in Korea was 76.14%, compared with acceptable daily intake ADI) based on chlorpyrifos. In addition, total national estimated maximum daily intake calculated at second step of chronic exposure assessment was 13.949%, compared with ADI. Third chronic assessment was conducted by probabilistic approach using OP residues detected in eight fruit vegetables and showed that total exposure risk was very low, corresponding to 0.0001% compared to ADI. Based on those finding, the risk of organophosphate pesticides in fruit vegetables was considered quantitatively negligible. In future, further investigation to expand the target should be followed to do more accurate and detailed risk assessment.
The electron donating ability and nitrite scavenging activity were measured in ethanol extracts from the raw, simple cooked and seasoned materials of Bibimbab (mixed rice), a Korean traditional one-dish meal. The ethanol extracts of raw fragrant edible wild aster exhibited the highest electron donating ability $(80.28\%)$, as measured by the DPPH method. When Bibimbab was compared with Kimbab and hamburgers, which are popular food, it showed the highest antioxidative activity by the DPPH method. The nitrite scavenging ability was measured in an environment similar to in human digestive organs, i.e. pH $1.2\~6.0$. Generally, the antioxidative activity decreased in the sequence pH 1.2, 3.0 and then 6.0. The simple cooked materials, with the exception of fragrant edible wild aster, increased the antioxidative potential. The seasoned materials also had a tendency to increase the antioxidative potential. In conclusion, the ethanol extract of Bibimbab showed the highest nitrite scavenging activity. Therefore, the nutritional superiority of Bibimbab was confirmed through its electron donating ability, as measured by the DPPH method, and nitrite scavenging effect.
This paper deals with the studies on the occurence of a new virus disease of sesame and the identification of the causal virus. The virus disease of sesame has been regarded as a widespread disease in the sesame-growing areas in the southern part of Korea. The disease was found to be caused by watermelon mosaic virus (WMV). During the years since 1978, stunting of sesame plants, with yellow mosaic, necrotic spot, and malformation, were collected from 17 different places. Virus isolates from 27 out of 32 samples were identified as WMV. Natural infection of squash, pumpkin, cucumber, and watermelon by WMV as well as sesame was proved. The virus is inactivated at temperatures of 55 to $60^{\circ}C$, at dilution of $10^{-3}\;to\;10^{-4}$, and in the aging of 10 to 14 days at about $20^{\circ}C$. Sesame, Chenopodium amaranticelor, pea, bean, as well as many plants of the Cucurbitaceae, are susceptible to the sesame-isolates of WMV. In negatively stained preparations, particles of the virus appear under the electron microscope as flexible filaments of about $750\~800nm$ in length. Cylindrical inclusions and virus particles were found in the cytoplasm of mesophyll cells by ultra-thin sections of WMV infected tissues.
Cucurbitaceous vegetable crops grown in greenhouses in Korea were surveyed from 1995 to 1997. Incidence of Sclerotinia rot was as high as $30{\sim}70%$ at its maximum on Cucumis melo var. reticulatus (netted melon), Cucumis sativus (cucumber), Cucurbita moschata (pumpkin) and Cucurbita pepo (summer squash) but relatively low on Citrullus lanatus (watermelon) and Cucumis melo var. makuwa (oriental melon). Symptoms of Sclerotinia rot developed on stems of all the cucurbits, fruits of five cucurbits except C. lanatus, petioles of two Cucurbita spp. and leaves of C. moschata. A total of 126 isolates of Sclerotinia sp. were obtained from the lesions and identified as Sclerotinia sclerotiorum based on the morphological and cultural characteristics. The fungus was very frequently isolated from stems and fruits of the cucurbits but rarely from petioles and leaves. Six isolates of the fungus were pathogenic to six cucurbits tested although there was some difference in virulence among the isolates to some of the hosts. C. lanatus was the most susceptible to the isolates, whereas C. melo var. makuwa was the most resistant. C. melo var. reticulatus and C. sativus were relatively susceptible to the isolates, and C. moschata and C. pepo relatively resistant.

To determine the amount of total bromide as 2-bromoethanol, the domestic agricultural products such as rice, barley, carrot, cucumber, apple, tomato, squash, green pepper, melon, strawberry, grape, peach, potato and celery were analyzed by GC/MSD as well as GC/ECD. The bromide was detected in most of the domestic samples and the highest bromide residue determined was 13.2 ppm in barley. The imported agricultural products including melon, kiwi, lemon, pineapple, banana, orange and grape were also analyzed for the bromide. The bromide was also detected in most of the imported ones and the highest bromide residue determined was 12.3 ppm in pineapple. In addition, the bromide residue in instant noodle spices was monitored for 4 years, recently. As results, in 1994, the bromide content was in the range of non-detection to 2.4 ppm (average 1.1 ppm) from 22 out of 24 samples; in 1995, the bromide content was 1.0 and 2.2 ppm from 2 out of 37 samples; in 1996, the bromide content was in the range of 0.7 to 37 ppm (average 12.4 ppm) from all 11 samples; and in 1997, the bromide content was in the range of 0.2 to 4.6 ppm (average 1.2 ppm) from all 59 samples. However, none of sample analyzed for the bromide was exceeded Maximum Residue Limit(s) of Korea and Codex in these survey.
An isolate of Cucumber mosaic virus (CMV), called as Lag-CMV, was identified from Lagenaria leucantha var. gourda showing mosaic symptom, and its properties was compared to Fny-CMV (subgroup IA) and As-CMV (subgroup IB) by host reaction in several indicator plants, dsRNA analysis, RT-PCR analysis, restriction enzyme profile of the PCR products and nucleotide sequence of coat protein gene. Lag-CMV was similar to As-CMV used as a control CMV by the induced chlorotic spot on inoculated leaves and mosaic symptoms on upper leaves of N. tabacum. cv. Xanthi nc. In the cucumber and zucchini squash, Lag-CMV and As-CMV induced a mild mosaic symptoms than that of Fny-CMV. Size and shapes of local lesions on Chenophodium amaranticolor and Vigna unguiculata induced by Lag-CMV was similar those by Fny-CMV or As-CMV. In experiments of dsRNA profiles and RT-PCR analysis of coat protein gene, Lag-CMV was come within subgroup I CMV. Moreover, restriction enzyme analysis using EcoRI, SalI, MspI, XhoI, and HindIII of the RTPCR products and nucleotide sequence analysis of the coat protein gene showed that Lag-CMV belong to a member of CMV subgroup IB of the same to As-CMV.
Contents of mineral element and cytokinin in the xylem sap of 'Keumdongee' and 'Tongilhwang' oriental melons were compared with those in oriental melons grafted onto 8 rootstocks. The effect of grafting on the fruit quality of oriental melon was also investigated. Flesh firmness varied with rootstocks. Soluble solids contents in the placenta tissue of grafted 'Tongilhwang' were higher than that in the 'Keumdongee'. Electric conductivity of the xylem sap in own-rooted plants was higher in 'Keumdongee' than in 'Tongilhwang', but it increased in 'Tongilhwang' once they were grafted. The sap volume per plant was greater in 'Keumdongee' than in 'Tongilhwang'. The mineral concentrations varied considerably depending on the rootstock used. Xylem sap of grafted oriental melons contained a higher amount of mineral ions, especially $NO_3{^-}$ and $PO_4{^-}$, than did the sap in own-rooted plants. The increase in the mineral levels in sap due to grafting was most apparent in 'Tongilhwang'. Xylem sap from both 'Keumdongee' and 'Tongilhwang' contained trans-zeatin (t-Z), trans-zeatin riboside (t-ZR), and dihydrozeatin riboside (DHZR). Small amounts of isopentenyl adenine (IPA) and isopentenyl adenine riboside (IPAR) were also detected. Trans-zeatin riboside was the most abundant, followed by t-Z. Cytokinin concentration in 'Keumdongee' was not significantly influenced by rootstock type used, although the highest concentration of cytokinins in 'Keumdongee' was obtained with 'Chamtozwa' rootstock. However, the cytokinin concentration in 'Tongilhwang' increased with grafting irrespective of rootstock type used.
In order to determine the effects of different degrees of moisture stress on germination of various plant species, hundred seeds of six vegetables and six turfgrasses were germinated in petri dishes on filter papers moistened with water-mannitol solutions of 0, 2, 4, 8, 10, and 12 atmosphere osmotic concentration (degrees of moisture stress). The percentages and rates of germination of all species tested were generally decreased with: increase in moisture stress. Chinese cabbage and cucumber were quite resistant to physiological drought as the germination was not appreciably affected until moisture stress exceeded 10 atmosphere. However, increase in moisture stress decreased germination affecting most seriously tomato, carrot and squash. Weeping lovegrass, Italian ryegrass and perennial ryegrass germinated well at 10 atmosphere but the germination of Kentucky bluegrass, meadow fescue and orchardgrass was greatly reduced by increasing osmotic pressure. The result indicates that it may be possible to select drought resistant species and varieties by their ability to germinate in osmotic solutions.
