Nutritional Components of Alaska Pollock Theragra chalcogramma Roe of Various Grades (명란의 등급별 영양 특성)

  • The objective of this study was to investigate Alaska pollock Theragra chalcogramma roe grade distribution among blocks and its nutritional components by grade. M grade roe was predominantly distributed in blocks labeled as L and M (52.1 and 82.8%, respectively), and S grade roe was mainly found in blocks labeled as S (98.6%). Products labeled as containing KB and KC grade roe contained 77.1 and 65.5% normal roe, respectively. Among the five roe grades (L, M, S, G, and Off), total amino acid content was higher in normal roe than in abnormal roe. The major amino acids found in normal roe were leucine, aspartic acid, and glutamic acid, whereas G and Off grade roe contained leucine and glutamic acid, but not aspartic acid. The calcium, phosphorus, potassium, and iron contents of the five roe grades were within the ranges 13.0-20.0, 314.4-392.0, 124.1-157.7, and 1.7-2.2 mg/100 g, respectively. The five roe grades contained total fatty acid contents of 765-1,252 mg/100 g, with no significant differences among grades. The major fatty acids were 16:0, 18:1n-9, 20:5n-3, and 22:6n-3.

Accurate and Robust Computations of Gas-Liquid Two-Phase Flows Part 1: Development of Shock-Stable Two-Phase Schemes (액체-기체 2상 유동장의 정확하고 강건한 해석 Part 1: 충격파 안정적인 2상 유동 수치기법의 개발)

  • In this paper, we introduce two-phase versions of RoeM and AUSMPW+ schemes. Both schemes are originally developed for the gas dynamic problems, and have shown superior accuracy, efficiency and robustness. A new shock discontinuity sensing term is derived from the mixture equation of state, which is commonly used in the RoeM and AUSMPW+ schemes for the stable numerical flux calculation. The developed two-phase versions of the schemes are applied to several liquid-gas, large property discrepancy two-phase test problems, including several shock stability test problems. The results show that both schemes maintain the merits exhibited in gas dynamic problems even in two-phase flows.

Comparisons of the Sensory and Physicochemical Characterizations of Alaska Pollock Theragra chalcogramma Roe by Grade (명란의 등급별 관능적 및 이화학적 품질 특성 비교)

  • The present study compared the sensory and physicochemical characterizations of Alaska pollock Theragra chalcogramma roe according to the L, M, S, 2S, KA, KB, KC, and G grades. The mean weights of the Alaska pollock roe were 81.2 g (74.1-85.7 g) in the L grade, 48.4 g (41.1-54.8 g) in the M grade, 38.6 g (33.5-45.6 g) in the S grade, 29.3 g (25.7-34.2 g) in the 2S grade, 45.7 g (41.4-50.0 g) in the KA grade, 41.4 g (37.7-46.1 g) in the KB grade, 38.3 g (36.0-42.6 g) in the KC grade, and 15.0 g (14.2-15.6 g) in the G grade. The results of the sensory (transparency, physical damage, texture, and odor) and physicochemical (moisture, amino nitrogen and volatile basic nitrogen contents, Hunter redness, and texture) evaluations revealed that, in the normal group, the quality of Alaska pollock roe was highest in the L grade followed by the M, S, and 2S grades whereas, in the cut-group order, the quality was highest in the KA grade followed by the KB, KC, and G grades. The present results suggest that the L, M, S, 2S, KA, and KB grades could be used for high-quality Alaska pollock roe products.

Computations of Compressible Two-phase Flow using Accurate and Efficient Numerical Schemes

  • RoeM and AUSMPW+ schemes are two of the most accurate and efficient schemes which are recently developed for the analysis of single phase gas dynamics. In this paper, we developed two-phase versions of these schemes for the analysis of gas-liquid large density ratio two-phase flow. We adopt homogeneous equilibrium model (HEM) using mass fraction to describe different two phases. In the Eulerian-Eulerian framework, HEM assumes dynamic and thermal equilibrium of the two phases in the same computational mesh. From the mixture equation of state (EOS), we derived new shock-discontinuity sensing term (SDST), which is commonly used in RoeM and AUSMPW+ for the stable numerical flux calculation. The proposed two-phase versions of RoeM and AUSMPW+ schemes are applied on several air-water two-phase test problems. In spite of the large discrepancy of material properties such as density, enthalpy, and speed of sound, the numerical results show that both schemes provide very satisfactory solutions.

  • 본 논문은 충격파 불안정성이 나타나지 않는 충격파 안정적인 수치기법의 개발을 목표로 하고 있다. Roe의 수치기법은 유동의 수치계산에 있어 높은 정확도를 보장하지만 carbuncle 현상과 같은 충격파 불안정성이 나타나는 것으로 알려져 있다. Roe의 수치기법과 HLLE 수치기법의 수치점성을 비교하여 충격파 불안정성의 원인을 살펴보았으며, Roe의 수치기법에 나타나는 반감쇠항에 마하수의 함수인 조절함수 f와 g를 도입하여 충격파 안정성을 획득하였다. 본 논문에서 제안된 수치기법을 다양한 유동문제에 적용하여 수치기법의 충격파 안정성과 정확성을 검증하였다

Isolation of antioxidant peptide from sandfish (Arctoscopus japonicus) roe hydrolysate

  • In this study, a peptide exhibiting antioxidant activity was isolated from sandfish (Arctoscopus japonicus) roe hydrolysate (SRH) in order to evaluate their practical uses as materials for manufacturing functional foods. The A. japonicus roe protein was hydrolyzed using Collupulin MG, and isolation of antioxidant peptide was performed using ultrafiltration (UF), prep-HPLC, and RP-HPLC. The SRH with a molecular weight below 3 kDa constituted about 38% of the whole hydrolysate, and the fraction with a molecular weight below 3 kDa showed significantly greater antioxidant activity compared to the original SRH and other fractions. The isolation fold of the antioxidant peptide isolated from SRH throughout the four-step procedure was 7.11-fold, and protein yield was 14.8%. The DPPH radical scavenging activity of isolated antioxidant peptide was above 90% at a concentration of 1.0 mg/mL, which was similar to that of the Trolox at a concentration of 0.1 mg/mL. These results suggested that the antioxidant peptide derived from A. japonicus roe could be a useful additive for producing functional foods and protein supplements. However, it is necessary to perform further study the structural characteristics of this antioxidant peptide isolated from A. japonicus roe.

  • Two-phase RoeM and AUSMPW+ schemes are preconditioned for the simulation of all Mach number flows, which are generally of interest for many gas-liquid two-phase application problems, because of large speed of sound in liquid region and low speed of sound in mixture or gas region. Conventional characteristic based schemes lose their accuracy or robustness in low Mach number flows, because their numerical dissipation terms are scaled by speed of sound, which is too large compared with local velocity magnitude in a low Mach region. All speed versions of RoeM and AUSMPW+ reflect the eigenvalues of the preconditioned governing system, which have the same order of magnitude even in low Mach number region. From the asymptotic analysis, it is observed that the discretized system by the developed schemes is consistent with the continuum system in the incompressible limit. The numerical results show the accurate and robust behavior of the proposed shcemes for all speed two-phase flows.

Effect of Drying Air Velocity on the Quality of Salted and Dried Mullet Roe (영암어라인의 품질에 대한 건조풍속의 영향)

  • The salted and dried mullet(Mugil Japonicus) roe had about 42% of protein and 41% of lipid content as major compoments. Therefore the lipid oxidation and the deterioration of protein occurred during drying and storage periods. In order to keep the good quality of the dried roe, acid, peroxide, thiobarbituric acid value and the contitutional amino acid were studied in the different drying air velocities at the conditions of 60% R.H. and $20^{\circ}C$ of drying air temperature. The optimum air velocity showed 2m/sec, which was excellently superior to the lipid and protein quality than those of other air velocities on the dried mullet roe. The drying period shortened from 20 days in the conventional processing method to 7 days in the modified processing method that had 2m/sec of drying air velocity. The drying rate curve had only a falling-rate drying period and not to have a constant-rate drying period.

Characteristics of Habitat-using of Siberian Roe Deer in Seoraksan(Mt.) National Park (설악산국립공원 지역의 노루 서식지 이용 특성에 관한 연구)

  • This study was conducted to obtain the basic research about Siberian roe deer (Capreolus pygargus), and to establish a conservation area into Seoraksan(Mt.) National Park, South Korea. We recorded Siberian roe deer field signs (bedding sites, feeding areas, feces and tracks etc), and habitat variables such as nearest distance to the watercourse, trails, slope, aspect, forest type and land cover etc. from Jan. 2006 to Dec. 2007 in Seoraksan(Mt.) National Park. According to the research of habitat characteristics of Siberian roe deer inhabited in Seoraksan(Mt.) National Park preferred mixed forest consisted of aged forest and middle-aged forest on the gentle slope which was close to hydrosphere in the middle elevation area of altitude of 400~600m above sea level in Seoraksan(Mt.) National Park. The results indicated that Siberian roe deer appeared to prefer south slope or north slope during the snow season and west or east slope during the non-snow season. The area of most suitable habitat for Siberian roe deer in Seoraksan(Mt.) National Park was $128.5km^2$ (32% of the total area) followed by $244.3km^2$ buffer area (62.2% of the total area), and $22.9km^2$ unsuitable habitat area (5.8% of the total area), which means environmentally unsuitable habitat for Siberian roe deer was rare in Seoraksan(Mt.) National Park. Thus, the area classified as major area in Seoraksan(Mt.) National Park appeared to be most important for the protection of Siberian roe deer.

The Actual Conditions of the Management of the Factory Ship GAECHEOG (공모선(工母船) 개척호(開拓號)의 운용(運用)에 관한 실태(實態) 분석(分析))

  • This thesis is studied by means of operation diary of the factory ship GAECHEOG in the Sea of Okhotsk and the Sea of Bering from Jul. 1993 to Dec. 1996, We summarize these results as follows : 1. The factory ship GAECHEOG equipped trawl winch able to haul raw fish 700M/T per day and cargo winch able to unload manufactured goods 900M/T. The crews consist of 290~330 persons. 2. Factory machineries equipped surimi making plant able to process about 150M/T per day and fish meal plant able to manufacture about 70M/T per day. 3. The fishing ground from June to Nov. was the western Bering sea lying in the eastern Kamchaka peninsula and from Dec. to May, the fishing period to gather roe of a Pollack, was the Sea of Ohotsk lying in the western Kamchaka peninsula. 4. The buying catch of fish per each voyage from Dec. to May, the fishing period gathering Pollack-roe, was about 17,000~33,000M/T and from Jul. to Oct., the fishing period gathering non Pollack-roe, was about 10,000~21,000 M/T. 5. Raw fish was the most about 33,000M/T of the 2nd voyage in 1994 and was the least about 8,300M/T of the 1st voyage in 1993. Other voyages were about 13,000~18,000M/T. 6. The Pollack buying from Jul. to Nov. in the Bering sea was 5~7 fishes for one row in pan and body length about 40~50cm, and from Dec. to May in the Sea of Ohotsk was 6~8 fishes for one row in pan and body length about 37~45cm. 7. Surimi production in the 2nd voyage in 1994 was the most about 7,300 M/T, in the 1st voyage in 1993 was the least 1,900M/T and in other voyages was about 2,500~3,800M/T. The extraction rate of surimi goods for raw fish was about 17.4~26.5%. 8. Fish meal production in the 2nd voyage in 1994 was the most about 2,300 M/T, in the 1st voyage in 1993 was the least about 780M/T and in other voyages was about 1,100~1,700M/T. The extraction rate of fish meal goods for raw fish was about 7.3~10.7%. 9. Pollack-roe production was very much from Jan. to Apr. and was about 380~700M/T per each voyage. The extraction rate of Pollack-roe for raw fish was about 1.2~4.9%.
