한식당의 경영관리가 경영성과에 미치는 영향 - 수도권을 중심으로 - (The Effect of Business Management on the Business Performance of Korean Restaurants - Focusing on the Seoul metropolitan region -)

  • 본 연구의 목적은 한식당 경영관리가 경영성과에 어떠한 영향이 미치는지를 살펴보고 대안을 제시하고자 하였다. 본 조사를 위하여 수도권 소재 한식당 경영자를 대상으로 설문조사를 실시하였으며, 360부를 표본으로 요인분석, 차이검증, 다중회귀분석 등을 실시하였다. 분석결과 한식당 경영관리 요인 중 정보관리와 자금관리만이 재무성과와 비재무성과 모두에 영향을 미치는 것으로 나타났다. 이는 한식당의 경우 외식업 경영에 대한 제반환경, 고객의 욕구 등을 잘 파악하여 적재적소에 자금을 투자하고 비효율적 비용을 관리함으로써 경영성과를 높일 수 있다는 것이다. 그러므로 한식당 경영자는 경영지식 함양과 전직원의 비용절감 노력을 기울이는 것이 무엇보다 중요하리라 생각된다.

음식물쓰레기의 자원화를 위한 배출업종별 성상 및 특성의 비교분석 (Comparison and Analysis on Characteristics for recycling of Multifarious Food Waste)

  • 본 연구는 각 업종별로 배출되는 음식물쓰레기의 다양한 성상 및 그 특성을 분석하여 검토함으로서 그 특성에 맞는 적절한 처리방안과 설계단계에 있어서 기초자료로 활용하기 위하여 실시하였다. 전체적으로 업종별로 성상이 차이가 있었고, 일식업소가 다른 업소에 비교하여 많은 차이를 보였다. 조성면에서는 채소류가 가장 많이 차지하였고 또한 계절에 따라 채소류의 함량은 차이가 많았다 이물질은 조개껍질류가 가장 많았으며, 요식업소에서 배출되는 이물질 비율이 공동주택에서 보다 높아 사전분리가 필요한 것으로 조사되었다. 염분은 일식업소에서 가장 높았고, 대부분의 업소에서는 1% 전후로 자원화에 바람직하지 않지만, 전단계에서 세척공정을 둔다면 큰 문제가 없을 것으로 사료되었다. 사료성분은 조섬유가 28%, 조단백질이 25%, 조지방이 11%로 나타났다. 유해균 및 중금속에 대한 분석도 동시에 실시하였으나, 병원성미생물은 검출되지 않았고, 각종 유해물질은 규제농도이하 값을 보였다. 각종 성상의 분석결과, 자원화에 있어서 계절요인과 요식업소와 공동주택의 수거비율을 설계에 반영하는 것이 필요하며, 공동주택은 부패 등의 문제로 인하여 사료화보다는 퇴비화가 적합하고, 요식업소중 중식, 분식, 집단급식업소 등에서 배출되는 음식물쓰레기는 사료화가 유리한 것으로 평가되었다.

레스토랑 식공간 연출에서의 식기와 고명의 색채 조화 (Tableware Coordination and Garnish Decoration for Restaurant Space Design)

  • 본 연구는 푸드 스타일링 잡지에 제시된 식공간 연출 사진의 내용 분석과 실제 레스토랑에서 사용하고 있는 식공간 구성 요소인 식기와 고명을 색채와 재질로 나누어 비교 분석하였다. 식공간 연출 1,357사진은 국내 잡지인 "쿠켄"과 "행복이 가득한 집"에서 선정하였고, 레스토랑은 서울 지역 84군데를 선정하여 직접 방문 조사하였다. 그 결과는 다음과 같았다. 첫째, 식기 재질의분석 결과, 고가 레스토랑과 식공간 연출가의 트랜드는 일치 즉, 백자를 가장 선호하였으며, 저가 레스토랑은 플라스틱 식기 사용이 높은 것으로 나타내었다. 둘째, 식기의 색채로는 청결을 상징하는 흰색이 가장 선호되고 있었다. 음식을 무난하게 소화하고 돋보이게 하는 고급 흰색 도자기가 많이 사용되고 있었으며, 저가 레스토랑에서 흰색 플라스틱의 사용이 일반화되어 있음을 알 수 있었다. 셋째, 음식 고명으로는 녹색 계열이 가장 많이 사용되고 있었고, 식공간 연출가들은 적색과 녹색의 보색 대비 고명도 많이 제시하고 있었다. 고가 레스토랑에서는 오방색 고명을 이용하는 경우도 많았다.

대학생들의 패스트 푸드의 외식 행동에 관한 실태조사 - 김천, 서울지역간의 차이조사 - (A Survey of College Student Behaviors on Fast Food Restaurants)

  • 226 college students in Kimchun and Seoul area were surveyed for consumer behaviors and opinions about fast food restaurants from August 1 to 31 1994. The purpose of this study Is to Investigate eating behavior, nutrition knowledge and utilization state of fast foods of college students In Seoul and Kimchun. All statistical data analysis was conducted using the SAS program package. The results were summarized as follows : Eating behavior score of the subjects were higher in Seoul than Kimchun. Nutrition knowledge of the subjects had not significant difference In Seoul and Kimchun. Also eating behavior and nutrition knowledge had not correlationship in Seoul and Kimchun. Utilization state of fast food restaurant was most frequently in noodles, also more frequently in Seoul. The reasons the customers visiting the fast food restaurant by the highest percentage were the following in the order : "the atmosphere in which fast food is eaten Is enjoyable for the companionship", "convenient to dining", "the surroundings and dining equipment are pleasant and hygienic" and "to be able to stay as long as I want". The fast foods purchsed by the customers were mostly for a full meal rather than snack. Majority of college students selected their fast food by preference and price.their fast food by preference and price.

서울시 일부 음식점 종업원의 간접흡연 노출량 측정 (Environmental Tobacco Smoke Exposure of Workers at Restaurants in Seoul Metropolitan City)

  • Exposure to environmental tobacco smoke(ETS) increases the risk of lung cancer and other diverse health effect for nonsmokers. Health risk assessment of nonsmokers related to ETS exposure requires large and exact data of ETS exposure to nonsmokers. This study presented the data of ETS exposure to workers at three category of restaurants(Korean restaurant, coffee shop, wine shop) in Seoul. Markers of ETS exposure measured in this study were area and personal NO$_2$, area and urine nicotine, area respiratory suspended particulate(RSP) and urine cotinine. The mean concentration of RSP and nicotine of all restaurant indoor samples was 177.8$\mu\textrm{g}$/㎥(range:75.3~317.0$\mu\textrm{g}$/㎥) and 7.8$\mu\textrm{g}$/㎥(range:0~57.3$\mu\textrm{g}$/㎥). The mean concentration of urine cotinine measured for the biomarker of ETS exposure was 77.3ng/mL(range:17.3~174.6ng/mL). In all measurements, the concentration of ETS markers at the wine shop was higher than those at other restaurants. The correlation coefficient among the ETS markers measured in the study was significant between area RSP and nicotine concentration and between area NO$_2$and nicotine concentration.

패밀리레스토랑의 서비스마케팅믹스가 외식고객의 가치에 미치는 영향 (서울지역의 패밀리레스토랑을 위주로) (The Influence of Service Marketing Mix on Eating-out Customers' Perceptions Values(Focused on Family Restaurants in Seoul))

  • The purpose of this study was to investigate the influence of service marketing mix on customers' perceptions of values at family restaurants in Seoul. Frequency analysis, ANOVA, reliability analysis, factor analysis, multi-regression analysis were employed to analyze the data. First, perceptions for items such as food (p<.001), price (p<.001), process (p<.001), and employees were significantly different with regard to monthly spending money, and food (p<.001), physical evidence (p<.001), and employees (p<.001) were also significantly different by partner. All of the mixes (food, price, place, employees p<.001; promotion, process, physical evidence p<.05) had positive influences on the customers' monetary and overall values. And the mixes of place p<.001; price and employees p<.01; and food, process and physical evidence p<.05 negatively affected non-monetary values, whereas promotion had a positive influence. As a result, we conclude that the service marketing mix is an efficient marketing tactic to remove intangible factors from restaurant businesses. Likewise it is highly recommended that food-service companies manage the marketing mix in a customerfriendly manner to minimize the negative characteristics of services toward customers, and to promote the customer appreciation of family restaurants.

서울지역 패밀리레스토랑 외식고객의 가치인지에 미치는 물리적 증거 영향 (The Influence of Physical Evidence on Perception of Eating-out Customer's Value at Family Restaurants in Seoul)

  • The principal objective of this study was to determine the influence of physical evidence's performance on perception of value at family restaurants in Seoul. Frequency analysis, t-test, ANOVA, reliability analysis, factor analysis, multiregression analysis were employed to analyze the data. The physical evidence was divided into 3 factors. Factor 1, 'matters related to appearances and decoration'; and Factor 3, matters related to atmosphere' differed significantly with monthly pocket money. However, all factors differed significantly by partner. Additionally, all factors positively(+) influenced customer's perception of value. In particular, factor 1, 'matters related to appearances and decoration' was the most positive factor. As a result, physical evidence can be regarded as efficient marketing tactic by which the intangible factors of restaurant-business may be removed. Therefore, food-service companies should endeavor to manage physical evidence ideally as a means of reducing the negative characteristics of service toward customers and inducing customers perceptions of value at family restaurants.

외식 고객의 지각된 위험이 가치인지에 미치는 영향 (서울 지역의 패밀리레스토랑을 대상으로) (The Influence of Customer's Perceived Risk on Perception of Value (Focused on Family Restaurants in Seoul))

  • The purpose of this study was to investigate the influence of customers' perceived risks on their perception of value at family restaurants in Seoul. Frequency analysis, reliability analysis, factor analysis, multiple-regression analysis were employed to analyze the data. The customers' perceived risk were divided into 6 factors. Three of the perceived risk factors(financial, time, performance risk) negatively(-) influenced the perception of value. In particular, 'financial risk' was the most negative. However, 3 factors(physical risk, psychological risk, social risk) didn't have significant influence on perceived risk. As a result, customers of family restaurants appear to perceive various risks, and these risks have significant impacts on their perception of value. Therefore, food-service corporations need to reduce customers' perceived risks, possibly by various and efficient pricing-policies, discount, price-bundling, using coupon, effective physical evidence and offering unique compensation.

약선음식 제공 레스토랑의 선택속성이 구매의도와 고객만족도에 미치는 영향: 약선음식 가치 인식의 매개효과를 중심으로 (Impact of the Selection Attributes of Restaurants Specialized in Yaksun Foods on Purchase Intention and Customer Satisfaction: Focused on Mediating Effects of the Value Awareness of Yaksun Food)

  • The purpose of this study was to examine the influence of selection attributes of restaurants specialized in Yaksun food on purchase intentions and satisfaction level of consumers as well as mediating effects of value awareness of Yaksun food on relationships among the variables. The subjects in this study were 200 female adults in Seoul and Busan. The findings of the study were as follows: First, purchase intentions for Yaksun food were positively influenced by food quality, human service, and health effect among selection attributes for restaurants specialized in Yaksun food. Second, customer satisfaction with Yaksun food was positively affected by food quality and human service among selection attributes. Third, purchase intention for Yaksun food and customer satisfaction were positively influenced awareness of functional value, emotional value and economic value of Yaksun food. Fourth, awareness of emotional and economic value of Yaksun food had mediating effects on relationships between selection attributes for restaurants specialized in Yaksun food and purchase intentions, and awareness of functional value of Yaksun food had mediating effects on relationships between the selection attributes of restaurants specialized in Yaksun food and customer satisfaction. The findings of the study illustrate that selection attributes for restaurants specialized in Yaksun food and value awareness have an impact on purchase intentions and customer satisfaction, and value awareness of Yaksun foods has mediating effects on the relationship of selection attributes with purchase intentions and customer satisfaction.

패밀리 레스토랑의 경쟁 관계와 고객 선호도에 대한 포지셔닝 연구 - 수도권의 6개 패밀리 레스토랑을 중심으로 - (A Study on Positioning of Restaurants Based on Their Competitive Relationships and Consumer Preferences - Focused on Six Family Restaurants in the Metropolitan Area -)

  • This study investigated an effective countermeasure of each restaurant under the present market conditions by grasping consumers‘ brand recognition and preferences over six restaurants in the metropolitan area centering around Seoul and comparing and analyzing selection properties that satisfy customers. The survey used a self-recording method that respondents write in the answers in person, and its subjects were the customers of restaurants in the metropolitan area from July to August, 2006. We made the MDS(multidimensional scaling) analysis of the available data from 408 respondents, using the SPSS statistical analysis program. The result was as follows. First, there were intensely competitive relationships between Nolboo Bossam and Wonhalmeoni Bossam, and between Outback Steakhouse and TGIF. Marche and Bennigan’s, however, didn‘t have a competitive relationship but kept a complementary one. Second, Wonhalmeoni Bossam was most favorably commented upon in its facilities, atmosphere, location, services, convenience(business hours, parking, transportation), recognition(popularity, fame, advertisement), sanitation and cleanliness, reasonable prices (food and drinks), etc., and then came Nolboo Bossam, TGIF, Outback Steakhouse, Bennigan’s, and Marche in that order. Third, in case of selection properties on taste of food, TGIF was estimated as the best, and then came Outback Steakhouse, Bennigan's, Marche, Wonhalmeoni Bossam, and Nolboo Bossam.
