Effect of Canthaxanthin Supplementation on Skin, Muscle and Egg Yolk Pigmentation of Laying Hens (Canthaxanthin을 이용한 산란계의 피부, 근육 및 난황의 착색 효과)

  • A total of 225 ISA Brown layers, 63-wk-old, were used in a 5-wk feeding trial to measure the effect of dietary canthaxanthin(0, 50, 100, 200, and 300mg/kg feed) on its accumulation in various body parts and the egg yolk. There were three replications per treatment and 15 birds per replication. The redness(a$\^$*/) and yellowness(b$\^$*/) of wing and thigh skin significantly(P<0.05) increased when canthaxanthin was fed at 2200 and 250mg/kg feed, respectively. However, the color of breast skin was not significantly affected by the canthaxanthin supplementation. Skin lightness(L$\^$*/) was not influenced by the dietary canthaxanthin. The dietary canthaxanthin supplementation did not significantly affect the redness or the yellowness of breast and thigh muscles. However, feeding canthaxanthin at 300mg/kg, compared to the control(0mg/kg feed), significantly(P<0.05) decreased the lightness of wing and breast muscles. Feeding of canthaxanthin for 1-3d also significantly increased the color of egg yolks. In conclusion, canthaxanthin can be used to improve the color of skin and egg yolks, but it should be used cautiously because too intense egg yolk redness could be rejected by consumers.

Quality Changes of Apple Juice Concentrates with Different Storage Temperature (사과주스 농축품의 저장온도에 따른 품질 변화)

  • During storage of 45°Bx cloudy and 72°Bx clear apple juice concentrates for up to 16 weeks at 4$\^{C}$ , -3$\^{C}$ and -15$\^{C}$ respectively, the changes of viable microbial counts, physicochemical properties were investigated and the correlation between the physicochemical properties were determined. During storage for up to 16 weeks, any viable microbes were not found in 45°Bx cloudy apple juice concentrate stored at -3 and -15$\^{C}$ and in 72° Bx clear stored at all three temperature. There were little change in pH and tillable acidity except 45°Bx cloudy apple juice concentrate stored at -4$\^{C}$ . As longer storage time and higher storage temperature, was shown higher redness of color(a value) and alcohol soluble color(ASC) in common. Vitamin C contents were more rapid decreased proportionally to time and temperature of storage. The high correlation coefficients were shown of 0.957∼0.967 between redness and ASC and -0.936∼ -0.864 between redness and vitamin C contents of apple juice concentrate during storage.

Effects of Irradiation and Fumigation on Color and Sensory Properties in the Parts of Dried Red Pepper during Storage (방사선과 훈증 처리된 건고추의 저장 중 부위별 색도 및 관능적 특성)

  • Associated with microbial decontamination and quarantine treatment of dried red pepper, the samples was gamma-irradiated (5, 10 kGy) and fumigated (methyl bromide/MeBr, phosphine/$PH_3$) to compare their Hunter's color (L, a, b, ${\Delta}E$) and sensory properties by types (whole, powder, pericarp, seed) during storage under room conditions($18{\pm}12^{\circ}C$). Whole pepper maintained higher lightness (L value) than other groups, while powdered pepper showed higher redness (a value) during storage. Immediately after treatments there was little difference in the overall color difference (${\Delta}E$) among the groups. After 8 months, a higher redness was observed in $PH_3$ group of whole pepper and 5 kGy group of powdered pepper, respectively(p<0.05). Redness of irradiated pericarps was apparently reduced following 8 months of storage and a similar pattern was found in fumigated samples. The yellowness (b value) of pepper seed was lowest in 10 kGy sample (p<0.05), but insignificant difference was observed among treatment groups with storage time. Sensory properties of whole and powdered peppery were little changed by both treatments under commercial conditions. Sensory scores of irradiated or fumigated samples were higher than that of non-treated control with storage time, which was more significant in the powdered than in the whole samples.

Quality of 4-Recommended Soybean Cultivars for Meju and Doenjang (장려품종 콩을 이용한 메주 및 된장 품질 특성)

  • In order to selection of the suitable soybean varieties, the quality characteristics of meju and doenjang on 4 domestic soybean cultivars(Daeweon, Sodam, Jinpeum and Hwangkeum) were evaluated. Crude protein and lipid content was 26.7∼30.5% and 16.89∼19.31%. The content of total free sugar among 4 soybean cultivars were 4.99∼5.26% and composed mainly stachyose(2.59∼3.51%), raffinose and sucrose. The content of total free sugar of meju were the highest in Jinpeum among 2.10∼2.66% and composed mainly glucose. The lightness of meju lump in Hwangkeum was larger decrease than the others, the redness were higher in Daeweon and Hwangkeum, the yellowness was the highest in Sodam. The lightness of meju powder was the highest in Sodam, the redness was the lowest in Sodam, the yellowness was the highest in Hwangkeum. The chemical composition of doenjang were that : was the highest in Jinpeum among the 7.90∼9.71% crude lipid, in Daeweon among 9.67∼13.50% crude protein, in Sodam among 2739∼3825 mg% Formol nitrogen and in Daeweon among 6.88∼8.36% crude saponin, respectively. The content of total free sugar of doenjang were the highest in Hwangkeum among 1.88∼2.22% and composed mainly fructose and glucose. The lightness and yellowness of doenjang was the highest in Sodam, the redness was the highest in Hwangkeum. Doenjang by Hwangkeum had good score for taste, texture and overall quality in sensory evaluation.

Effect of Nitrite and Ascorbic Acid-derived Gas on Color Development and Physical Characteristics in Emulsified Sausage (아질산염과 아스코르브산 유래 가스가 유화형 소시지의 발색 및 물리적 특성에 미치는 영향)

  • In order to improve or replace the direct addition method of nitrite and ascorbic acid, the effect of nitrite and ascorbic acid-derived gas addition on color development and physical characteristics in emulsified sausage was investigated. Nitrite (150 ppm) and ascorbic acid (450 ppm) were added directly to emulsion in the control group, but in the treatment group nitrite and ascorbic acid-derived gas was used for emulsion. In the control and treatment groups, pH values were higher than raw meat, but these values did not show significant change during the storage in both groups. In the meat color, lightness (CIE $L^*$) and redness ($a^*$) values of control and treatment groups were higher compared to raw meat. The treatment group has lower redness and higher yellowness ($b^*$) values than control group during the storage (p<0.05). However, lightness was not significantly different between control and treatment groups. The cook and storage loss values were significantly different between control and treatment groups (p<0.05), but the water holding capacity and shear force values were not significantly different between groups. These results showed that treatment of nitrite and ascorbic acid-derived gas has a similar effect to direct addition of nitrite and ascorbic acid on color development and physical characteristics in emulsified sausage. Also, these results showed that nitrite and ascorbic acid-derived gas addition may be a good possible alternative of nitrite and ascorbic acid using in emulsified sausage.

Sensory Quality Improvement of Gamma-irradiated Kimchi after Addition of Paprika Oleoresin and Artificial Kimchi Flavor (파프리카색소와 김치향 첨가 후 감마선 조사된 김치의 관능적 품질 개선)

  • Paprika oleoresin (PO) and artificial Kimchi flavor (AKF) were added to Kimchi to improve the sensory qualities deteriorated by gamma irradiation in terms of color and flavor. Optimum concentration of both PO and AKF resulting from the sensory evaluation was 0.2%. The redness and capsanthin contents of Kimchi decreased by gamma irradiation at 25 kGy during storage at $35^{\circ}C$. However, the redness and capsanthin contents of gamma-irradiated Kimchi was increased by the addition of 0.2% PO, and maintained during the storage at $35^{\circ}C$ for 30 days. The result from the sensory evaluation indicated that sensory qualities of gamma-irradiated Kimchi were effectively improved by the addition of PO and AKF during storage at $35^{\circ}C$. Therefore, the combined treatment of additives (PO and AKF) and gamma irradiation can be considered as an effective method to improve the redness and sensory qualities of Kimchi sterilized by high-dose gamma irradiation.

Carotenoid의 급여가 산란노계의 도체 착색에 미치는 영향

  • This study was performed to measure the effect of carotenoid polarity on absorption and Pigmentation in blood, muscle, and skin of laying hens. Carotenoids used in this study and Polarity were ${\beta}$-8-Apo-carotenoic acid ethyl ester(ACAEE) > astaxanthin > canthaxanthin > ${\beta}$-carotene. The chickens used in this study were 61∼78 weeks old ISA brown laying hens. Experiment #1 was designed to measure the effect of carotenoid level on the accumulation of carotenoids in carcass of laying hens after feeding for 6 weeks. D-carotene was accumulated in skin only at a detectable level when it was fed at 300 mg/kg feed. The skin was pigmented as yellow when it was measured by colorimeter. The concentration of ${\beta}$-carotene in blood was proportional to that in the feed. Pigmentation of muscle by 9-carotene was not effective. Canthaxanthin significantly increased redness of the skin(p<0.05). However, canthaxanthin did not pigment muscle. The level of canthaxanthin in the blood and skin increased as the concentration in feed increased. ACAEE at 200 and 300 mg/kg feed significantly increased yellowness of the skin(p<0.05). At all levels of ACAEE used($\geq$50 mg/kg feed) the b values of colorimeter increased. With increases in the contents of ACAEE, the concentration of ACAEE in the blood and skin increased. Compared to ${\beta}$-carotene, ACAEE and canthaxanthin were absorbed 9- and 3-fold more into the blood, respectively. The concentration of ACAEE and canthaxanthin in the skin was 1/10 of those in the blood. The lower were the concentrations of carotenoids in the feed, the higher were the absorption rates(from feed to blood and from blood to skin) The results indicated that the higher was the polarity of carotenoids, the more effective were the absorption and pigmentation. In experiment #2, the effect of carotenoid levels of feed on the accumulation of carotenoids in each body part of laying hens was determined. The colorimeter values for redness and yellowness significantly increased when canthaxanthin was fed at $\geq$50 mg/kg feed(p<0.05). Breast and thigh were not affected by feeding of canthaxanthin at the levels used. The L values of muscle but not the a and b values were significantly affected by feeding at $\geq$200 mg/kg feed for wings and breasts, respectively. The yellowness of skin and muscle significantly increased when ACAEE was fed at $\geq$ 100 and $\geq$ 200 mg/kg feed, respectively(p<0.05).

Physicochemical Properties of Chicken Thigh Meat Sausage Manufactured with Red Yeast Rice Powder (홍국분말 첨가에 따른 닭다리살 소시지의 품질특성 변화)

  • The effects of red yeast rice powder on physicochemical properties of chicken thigh meat sausage were investigated. Control sausages were prepared with 1.2% NPS (nitrite pickling salt). Others samples were prepared with 1%, 2%, and 3% red yeast rice powder and 1.2% NaCl. With increasing red yeast rice powder content, the pH of uncooked and cooked samples generally decreased. In addition, lightness, and yellowness decreased with increasing content of red yeast powder (P<0.05), whilst redness increased with increasing content of red yeast powder in sausage samples (P<0.05). In addition, the samples with red rice powder showed more than 3 times higher redness compared to samples with 1.2% NPS, regardless of addition level. No significant difference in cooking yield among the treatments. The hardness of samples increased with increasing red yeast rice powder content, while the cohesiveness of samples containing red yeast rice powder was less than those observed for the control. Consequently, red yeast rice powder can be used to improve redness in sausages without adverse effect on cooking yield.

Evaluation of the Discoloration of Pyropia yezoensis Ueda Using a Colorimeter (색차계를 이용한 방사무늬김(Pyropia yezoensis Ueda)의 황백화 평가)

  • Pyropia yezoensis is one of the most extensively cultivated seaweeds used as food in Korea. However, the quality and yield of Pyropia farms are frequently affected by outbreaks of thallus discoloration. The objective of this study was to develop a simple and rapid method to evaluate P. yezoensis discoloration caused by nutrient deficiencies. A colorimeter was used to quantify the color of P. yezoensis in nutrient deficient media over 10 days. Quantitative values of lightness (L), redness (a), and yellowness (b) measured with a colorimeter were used as indicators of P. yezoensis discoloration. The vacuoles of P. yezoensis were observed at 4 days and swelled gradually from 6 days onward. The three colorimeter parameters L, a, and b values showed significantly different values with culture period. The lightness (L) value was darker initially, and continued to lighten over culture period. The yellowness (b) value increased, but the redness (a) value decreased throughout this study. The a/b ratio and redness (a) values from the colorimeter were important P. yezoensis color change indicators. The discoloration group of P. yezoensis had quantitative values for parameters of L above 70, a below 2.6, and b above 15.0. The results of this study showed that quantitative colorimetric measurements can be used as tools for simple and rapid detection of P. yezoensis discoloration.

Development of Color Changing Technology for Domestic Softwood (국산 침엽수재의 재색변화 기술 개발)

  • Three major domestic softwoods, Korean red pine, Korean pine and larch, were heat-treated at $220^{\circ}C$ and for various treatment times for color changing. A new heat treatment equipment was developed for this study and was revealed working well for changing the colors of the three softwoods. The color difference index of 15 was obtained after 8 hours for Korean red pine and Korean pine, and 10 hours for Larch. The correlations of brightness, redness and yellowness with treatment time were different between species.
