Comparisons of the Carcass Characteristics of Male White Mini Broilers, Ross Broilers and Hy-Line Brown Chicks under the Identical Rearing Condition (동일 조건에서 사육한 수컷 백세미, 브로일러 및 산란종 병아리에 있어서 도체 특성의 비교)

  • The present study was conducted to compare the carcass yields and meat characteristics of three types of commercial male chicks White mini broilers, Ross broilers and Hy-Line brown chicks under the identical feeding condition. One-hundred 1-d chicks of each type were randomly placed into four pens per group (25 chicks per pen) and fed corn-soybean meal based commercial diets for 35d, 18d or 49d, respectively. At the end of the feeding trial, the birds were sacrificed and subjected to carcass measurements. The dressing percentages of White mini broilers and Ross broilers were significantly higher (P<0.05) than that of Hy-Line brown cockerels. The rate of breast meat of Hy-Line brown cockerels was significantly lower (P<0.05) than those of White mini broilers and Ross broilers. However, Hy-Line brown cockerels showed higher (P<0.05) leg meats than the others. There were no significant differences in serum total cholesterol and the activities of glutamic-oxaloacetic transaminase and glutamic-pyruvic transaminase among the groups. The breast meats of White mini broilers presented highest lightness value. The yellowness of breast and redness of leg meats of White mini broilers and Ross broilers were significantly higher (P<0.05) than those of Hy-Line brown cockerels. There were no significant differences in the SOD-like activity and change of pH in edible meats among the groups. The meat color in White mini broilers was significantly higher than that of Hy-Line brown cockerels. No significant differences were observed in term of flavor, tenderness and overall acceptability. In conclusion, the physico-chemical properties and sensory characteristics of edible meats were not greatly affected by genotype if they were similar body weights and kept under the identical feeding condition. But the Hy-Line brown cockerels were less desirable as a meat-type strain due to lower carcass yields and inferior growth and feed conversion ratio.

Effect of Dietary Selenium Binding Yeast Peptide on Growth Performance, Tissue Se, Serum Glutathione Peroxidase Activity and Meat Quality in Finishing Pigs (비육돈에 있어서 Selenium Binding Yeast Peptide의 첨가가 생산성, 조직내 Se함량, 혈청내 GSH-Px의 활성 및 돈육의 품질에 미치는 영향)

  • This study was conducted to evaluate the effects of selenium binding yeast peptide supplementation on growth performance, tissue Se, serum glutathione peroxidase activity and meat quality in finishing pigs. A total of eighty (Duroc${\times}$Yorkshir${\times}$Landrace) pigs (82.88$\pm$1.23 kg average initial body weight) were used in a 35-day assay. Dietary treatments included 1) CON (basal diet), 2) SY1 (CON diet+0.05% selenium binding yeast peptide), 3) SY2 (CON diet+0.l% selenium binding yeast peptide) and 4) SY3 (CON diet+0.2% selenium binding yeast peptide). Overall period, average daily gain of pigs fed selenium binding yeast peptide diet was higher than that of pigs fed CON diet, however, there was not significant difference (p>0.05). L* (lightness) value of M. longissimus dorsi was higher in SY2 than CON and SY3 (p<0.05). a* (redness) value of M. longissimus dorsi was lower in CON than other treatments (p<0.05). Selenium content in serum was increased as adding selenium binding yeast peptide compared to pigs fed CON diet. However, there was not significantly different among the treatments (p>0.05). Selenium content of M. longissimus dorsi was higher in SY2 (0.021 $\mu$g/g) and SY3 (0.031 $\mu$g/g) than CON diet (0.008 $\mu$g/g) (p<0.05). Selenium content of kidney was increased in SY2 I and SY3 compared to pigs fed CON and SY1 (p<0.05). Selenium content of liver was higher in SY1 than CON (p<0.05). In conclusion, it is suggested that selenium content could be accumulated in M. longissimus dorsi, kidney and liver by selenium binding yeast peptide supplementation, and meat color of M. longissimus dorsi could be affected by selenium binding yeast peptide supplementation.

  • Objectives : The purpose of this study was to propose appropriate strategic directions and road maps for successful achievement of programs preventing winter disease in the summer. Methods : Details on programs preventing winter disease in the summer such as clear concept, theoretical basis, current status, intervention or available prescriptions and indication/contraindication/caution were prepared through the related journal review, upon which an observational study was devised and done for simulation to find out even a trivial problem and to guarantee the safety beforehand. The experimental group was divided into 5 groups by the size of pill and the way ginger is treated; 1cm pill with ginger group, 3cm pill group without ginger, 3cm pill group dipped into ginger, 3cm pill group applying ginger to acupoints and 3cm pill group with ginger Results 1. program preventing winter disease in the summer was defined as representative winter diseases such as common cold, influenza, chronic asthma, chronic bronchitis, allergic rhinitis, emphysema, chronic gastritis and rheumatoid arthritis, and preventive care in the summer, reinforcing deficient yang qi of five viscera by using exuberant yang qi from summer heat. 2. It was based upon historically established theories which is 'nourishing yang qi in the spring and summer', 'long summer, namely rainy spell in the summer overwhelms the winter, because of earth winning water according to the five phases theory' and 'To replenish yang qi is major principle to treat winter diseases, which can be most appropriately and timely applied to the patient with deficient yang qi of five viscera inherently, especially in the three dog days of the summer, because of exuberant exterior yang qi and deficient interior yang qi in the five viscera'. 3. In the adjacent China and Taiwan, acupoint applying method in the three dog days named 'San Fu Tie' have been stirring a boom throughout the nation, in which Xiaochuan Gao was used as a basic prescription and it mainly was applied at bilateral $BL_{13}$, $_{15}$ and $_{17}$ for about 4 hours. As far as domestic current status, the necessity of adopting the above method prior to Herbal formula was also recognised, because not a few koreans have apprehension for the safety of it including medicinal herbs and are reluctant to take it any more due to negative advertisement of narrow minded doctors' association. 4. Indication of acupoint applying method in the three dog days included most of winter diseases such as common cold, influenza, chronic asthma, chronic bronchitis, allergic rhinitis, emphysema, chronic gastritis. contraindication was pregnant woman and the weak such as infants and the old. More attention was paid to grasp firmly the normal reaction following the treatment for preventing side effect and teasing blister. recommendation was also given to abstain from food inducing phlegm and dampness such as meat, shrimp and crab as well as cold drinks and foods 5. In the simulation observational study based upon the above findings following review the related articles, no blister was shown on the acupoints icluding bilateral $BL_{13}$, $_{15}$ and $_{17}$ in every experimental group during 24hr observation following the acupoint applying treatment with pills made by modified and devised prescription. At 4 hr, the effectiveness of it reached a peak showing redness and mild tenderness and there is little difference between groups 3cm pills groups regardless of the way ginger was treated. abdominal distention and growling was found in all the volunteers during the treatment at CV 8. Strategic directions and road maps : Through successful fulfillment of the program preventing winter disease in the summer, Korean traditional medicine should be integrated into mainstream national health care services. Cultural access was thought to be as important as Scientific EBM approach. First of all, To evoke potential cultural homogeneity from campaigns and press advertisement was needed for promoting public awareness about preventing winter disease in the summer by enhancing immunity via acupoint applying treatment in the three dog days, and then indigenous name as Sambokcheop, protocol, Clinical Research Form for data collection of it should be developed and prepared. Once the first step was taken this summer, through a thorough data collection and scrutinized scientific evaluation, drawbacks should be compensted for and the efficacy and safety should be substantiated.

Effect of Sargassum fulvellum Extracts on Shelf-Life and Quality Improvement of Bread (모자반(Sargassum fulvellum) 추출물 첨가에 의한 빵의 저장성 및 품질증진 효과)

  • This study was performed the effect of Sargassum fulvellum extracts (SFE) on the shelf-life and quality improvement of bread. Bread was added with 0.5, 1 and 2% SFE and stored for 9 days. Total microbial counts of the bread added with 1 and 2% SFE were reduced by 2 log cycles at 9 days, and there were no significant changes in pH value or moisture content compared to the control. In addition, the protection factor of the bread added SFE measured by Rancimat showed a higher level than that of the control. Yellowness increased as bread was added with SFE while lightness and redness decreased. Springiness showed no considerable differences between the control and the group added with SFE. Hardness, shear force, gumminess and chewiness were higher than those of the control. In the sensory evaluation, right after manufacturing, taste, texture, and total preference of the bread containing 0.5 and 1% SFE were preferred compared to the control. These results suggest that the addition of 0.5% and 1% SFE to bread enhance the quality and shelf-life of bread.

Physicochemical Characteristics and Acceptability of Commercial Low-Priced French Wines (시판 저가 프랑스 와인의 이화학적 특성 및 기호도)

  • The physicochemical characteristics and acceptability of various commercial low-priced French wines were determined. A~E wines were manufactured from France and F wine was bottled in Germany using French Cabernet Sauvignon grape species. Sample wines were analyzed for pH, total soluble content, acidity, color, total sugar, total polyphenol and sulfur dioxide. The pH of the wines were ranged from 3.3 to 2.6. The total soluble contents were the highest in wine A (10.25 Brix%), followed by wine C (9.72 Brix%), wine D (9.67 Brix%) and wine B (9.61 Brix%) and were the lowest in wines E and F (9.42 Brix%). In the color analysis, wine F showed the highest L (lightness) and a (redness) value (28.11 and 23.86, respectively). The b (yellowness) value for all the samples studied ranged from 52.17 to 61.05. Wine C (62.24 g/L) and F (69.91 g/L) showed higher total sugar contents, and the total sugar contents of wines D, E, B and A were 48.58, 42.74, 37.74 and 36.99 g/L, respectively. Total polyphenol contents were the highest in wine C (2.59 g/L) and the lowest in wines A and B (1.90 g/L). The contents of sulfite in wine D (68.78 mg/L) were the highest and was the lowest in wine B (58.18 mg/L). The sensory characteristics and preference analysis (sourness, bitterness, sweetness, astringent taste, aroma, color and overall acceptability) of the red wines used in this study were determined by 15 panelists using the 7-point hedonic scale. Sourness of wines ranged between 3.8~4.9 and sweetness of wines D and F (3.0) were the highest amongst the red wines used in this study. Wines D, E and F had the higher scores in overall acceptability of sensory properties and wine E was the highest amongst the wines used in this study.

Effect of Prickly Castor-Oil Tree (Kalopanax pictus) Extract on Naengmyeon Broth during Storage (해동피 추출물이 냉면육수의 저장성에 미치는 영향)

  • Quality improvements of Naengmyeon broth were explored by adding prickly castor-oil tree extract to the broth. Samples of Naengmyeon broth containing various levels (0, 0.1, 0.2, 0.3, 0.4%) of prickly castor-oil tree extract were stored at $4^{\circ}C$ for five days. During storage, the pH decreased with an increase of total acidity; however, this decrease in pH was slowed with by increasing levels of prickly castor-oil tree extract. Turbidity levels, along with total solid contents in the liquid portion of the Naengmyeon broth, increased in all treatments as storage proceeded, although the extent was somewhat suppressed by the prickly castor-oil tree extract. As a result of storage, colorimetric lightness values decreased and redness and yellowness increased. Total viable cells and coliform bacteria were lower in the Naengmyeon broth with added prickly castor-oil tree extract compared to the control. Also, with increasing prickly castor-oil tree extract concentration, fewer total viable cells and coliform bacteria were observed. The VBN contents of the broth samples containing prickly castor-oil tree extract was higher than of control, and the more prickly castor-oil tree extract were higher than the VBN content of the control; moreover, as prickly castor-oil tree extract content increased, less VBN was detected. In sensory evaluations, the 0.3% treatment was the most favored in terms of color, smell, sour taste, carbonated taste, and the overall acceptability. In conclusion, the addition of prickly castor-oil tree extract, having antimicrobial activity and natural antiseptic qualities, improved the storage duration of Naengmyeon broth. Also, the sensory characteristics of the 03% treatment were especially preferred.

Effect of Water Uptake Rate of Chicken on Lipid Oxidation, Color of Meat, and Microbes of Chicken during Storage (닭고기 함수율이 저장기간 동안 지방산패도, 육색, 미생물 변화에 미치는 영향)

  • This study was performed to evaluate change of lipid oxidation, microbes, and color of chicken meat containing 6, 8, and 10% of water uptake rate(WUR) during cold storage. pH of chicken containing 6, 8, and 10% of WUR showed 6.00, 6.04, and 6.05%, at day 3, respectively. Lightness($L^*$) of chicken containing 6, 8, and 10% of WUR was 73.40, 75.27, and 75.31, at day 3, respectively. Redness($a^*$) of chicken with 10% of WUR was 2.52, which was the highest value, while no difference was found between chicken with 6 and 8% of WUR. Yellowness($b^*$) of chicken containing 6, 8, and 10% of WUR was 4.31, 4.33, and 4.36. Thiobarbituric acid reactive substances(TBARS) value of chicken containing 6, 8, and 10% of WUR was 0.107, 0.104, and 0.113 mg malondialdehyde/kg meat. The higher WUR, the higher TBARS value was shown. Total microbial number of chicken with 6, 8, and 10% of WUR was 4.04, 4.12, and 4.56 $log\;CFU/cm^2$ at day 3. E. coli of chicken with 6, 8, and 10% of WUR was 0.93, 1.40, and 1.28 $log\;CFU/cm^2$. From this result high WUR increases $L^*$ value, TBARS, and microbes of chicken meat during storage. Therefore, lower WUR would be beneficial to extend shelf life of chicken meat during storage.

The Effects of Doenjang (Korean Traditional Fermented Soy Bean Paste) Powder on the Quality and Shelf-Life of Chicken Sausages during Storage (분말된장의 첨가가 닭고기 소시지의 품질 및 저장성에 미치는 영향)

  • In this study, the effects of Doenjang powder (DP : Korean traditional fermented soy bean paste) addition on the quality and shelf-life of chicken sausages during storage were evaluated. The chicken sausages were manufactured with 60% of chicken breast meat, 20% of chicken skin and other ingredients. The sausages were divided into four treatments according to DP addition level such as 0, 2, 5 and 8%. The sausages were vacuum packed and stored at a refrigerator ($5^{\circ}C$) for 4 weeks. pH of sausage was in creased with DP addition after 2 weeks storage (p<0.05). The addition of 2% and 5% DP decreased the lipid oxidation (TBARS) value (p<0.05) and addition of 8% DP seemed to promote the protein deterioration (VBN) over the storage (p<0.05). In the instrumental color, the chicken sausages with 5% and 8% DP showed higher redness and lower lightness value than sausage with 0 and 2% DP (p<0.05) over the storage. The hardness and gumminess of chicken sausages added with 5% DP were significantly lower than those of other treatments during the storage (p<0.05). The addition of DP detained the growth of aerobic and anaerobic bacteria counts after 2 week of storage (p<0.05), but no significant difference was found by DP addition level (p>0.05). In conclusion, 5% DP could be used as ingredient of chicken sausage to enhance sensory quality and retard lipid oxidation.

Quality Characteristics of Commercial Oiji, Korean Cucumber Pickle (시판 오이지의 품질 특성)

  • Physicochemical and sensory characteristics of commercial Oiji, Korean pickled cucumbers (six commercial and three traditionally made products) were investigated. Saltiness values for commercial and traditionally made products were 3.424-4.47 and 3.92-7,23%, and acidity and pH were 3.43-3.85 and 0.39-0.75%, respectively, Commercial products showed lower L and higher b values than traditionally made products. Redness of both products ranged from -1.47 to -3.71. Numbers of total microbial, lactic acid bacteria, and yeast in traditionally made products ($1{\times}10^{7}-1.3{\times}10^{9},\;4{\times}10^{6}-4.7{\times}10^{8},\;and\;1.3{\times}10^{6}-3{\times}10^{8}\;cfu/mL,\;respectively$), were higher than those of commercial products ($1{\times}10^{4}-2{\times}10^{7},\;1{\times}10^{4}-6{\times}10^{6},\;and\;1{\times}10^{4}-6{\times}10^{6}cfu/mL\;respectively$). Texture analysis revealed fracturability (2,103-3,010 g) and hardness (409-890 g) varied among the products above. Overall acceptability scores of commercial products C1 and C2 were highest at 7.6-8.0 compared to other products (p<0.05). From the principal component analysis, the first principal component (PC1, 79.94%) and the second principal component (PC2, 19.94%) could describe the majority of the variability. Commercial product C1, C2, C3, and C7 having high negative loadings on the PC2 axis are closely related to over-all acceptability, over-all taste, savory taste and hardness. From Pearson correlation analysis, hardness and chewiness correlated positively with saltiness, whereas over-all acceptability, positively correlated with savory and overall taste, respectively (p<0.05).

Improvement of Rice Quality Using Grain Color Sorter During Early Transplanting Cultivation in the Southern Plain of Korea (색채선별기 이용한 남부평야지 조기재배 해담쌀의 품질향상)

  • A photoelectric grain color sorter is commonly used in postharvest technology to detect and separate grains considered to be of good quality from those of poor quality based on color. In this study, the milled rice of Haedamssal cultivated under early transplanting conditions was evaluated using the color sorting device. Rice was classified according to standard grades of 64% for grade A, 18% for grade B, and 17.2% for grade C. By head rice ratio analysis, the milled rice of Haedamssal was recorded a grade A of 72.9%, representing a 24.5% improvement compared to the 48.4% of original grains. However, the grades B and C of Haedamssal rice were lower than those of original rice. In addition, grade A whiteness of Haedamssal rice was 45.3, which was lower than that of original grains. The color affinity redness was significantly lower in Haedamssal rice than in the screening control. No significant difference was found in the amylose and protein contents of rice before and after selection by the grain color sorter. In contrast, grain viscosity analysis revealed an increase in peak and final viscosities, while the consistence viscosity increased in low grade levels. Our results suggest that the photoelectric grain color sorter could improve the head rice ratio and palatability of early transplanted Hadamssal rice.
