Westerner's View of Korean Food in Modern Period - Centering on Analyzing Westerners' Books - (근대시기 서양인 시각에서 본 조선음식과 음식문화 - 서양인 저술을 중심으로 -)

  • The purpose of this study is to examine the Western perspective on the food and food culture of Modern Times in Korea (from the late of Joseon Dynasty until Japanese colonial era). Literature and written records were analyzed. This analysis revealed that the heart of the mill in this period involved rice, and that a common beverage was sungnyung made from boiled scorched rice (in contrast to tea as the common beverage in Japan or China). The most important subsidiary food in Joseon was vegetables, especially Kimchi. Westerners viewed Kimchi as a smell symbolizing Joseon and their meal times. Even though both Kimchi and cheese are fermented food, just like Westerners could not stand the smell of Kimchi, Koreans viewed the smell of cheese unpleasant. Westerners viewed German sauerkraut as Western food counterpart to Kimchi, as sauerkraut is also fermented food made of cabbage. Regarding the eating of dog meat in Joseon, most Westerners viewed it as brutal; however some interpreted it as a difference in food culture. In addition, the eating of raw fish and its intestines felt crude to Westerners. The biggest difference between Joseon's food and Western food was that Joseon had no dairy products and no sugar. The most highly preferred fruit for Westerners was the persimmon, and ginseng was already widely recognized and recorded as a medicinal plant. Joseon's desserts were also favorably evaluated. In contrast, the excessive gluttony, heavy drinking, and unsanitary conditions in Joseon were problems pointed out in many records.

Construction of the Digital Archive System from the Records of Westerners Who Stayed in Korea during the Enlightenment Period of Chosun (개화기 조선 체류 서양인 기록물의 디지털 아카이브 시스템 구축)

  • This study was conducted to create a digital archive for local cultural contents compiled from the records of westerners who stayed in Korea during the Enlightenment Period of Chosun. The compiled information were gathered from 22 records, and 10 main subjects, 40 sub-subjects and 239 mini-subjects were derived through the subject classification scheme. Item analysis was conducted through 38 metadata and input data types were classified and databased in Excel. Finally, a web-based digital archiving system was developed for searching and providing information through various access points. Suggestions for future research were made to expand archive contents through continuous excavation of westerners' records, to build an integrated information system of Korean digital archives incorporating individual archive systems, to develop standardization of classification schemes and a multidimensional classification system considering facet structure in cultural heritage areas, to keep consistency of contents through standardization of metadata format, and to build ontology using semantic search functions and data mining functions.

Study on Modern Food Culture History through Records from Foreigners' Chosun Dynasty Travel in the Enlightenment Period (서양인의 조선여행 기록문을 통한 근대 식생활사(食生活史) 연구)

  • The study presented attempts to analyze and categorize Chosun's food ingredients and culture through a Western perspective based on 32 representative Western documents pertaining to old Korea. Before modernization, Westerners visited Chosun during their visits to old China or Japan. Westerners were most active in Chosun from the open port period to the annexation of Korea to Japan occupation. They were teachers, missionaries, diplomats, and doctors visiting Chosun with personal goals. In 31 book traveler's journal, it records Chosen's mainly produced ingredients, such as grains, spices, fruits, cabbage, chicken, and chestnuts; foods from Chosen include kimchi, soup, and tofu. Foreigners especially liked foods made of eggs and chicken, but they did not enjoy Chosun's lack of sugar and dairy. Thirty-one book foreigners' records describe Chosun's Ondol, kitchen, crock, fermented foods, low dining tables, and chopsticks. Chosun people liked dog meat, unrestrained drinking culture, sungnyung, and tea culture. Foreign documentation on Chosun's food culture allows modern scholars to learn about Chosun people's lifestyles, as if their lives were a vivid picture.

  • The Enlightenment period (1876~1910) of Joseon was the age of turbulence in terms of introduction of the Western science and technology. The interaction of modern and oriental science in the enlightenment period can be got insights from the records of Westerners. This study especially focuses to the viewpoints of Western visitors toward the weather and climate of the Korean peninsula. As a result, there are three characteristics in Westerners' awareness of Korean climate: quantitative records using numeric; interpretation of weather in the system of the modern science; and the distinct records about rainfall. In conclusion, from these result, it can be suggested that the Western visitors systematically grasped the climate of Korean peninsula.

Developing Digital Archives from the Records of Westerners who visited Korea during the Enlightenment Period of Chosun (개화기 방한 서양인 기록물의 디지털 아카이브 구축에 관한 연구)

  • This study was conducted to create a digital archive for local cultural contents compiled from the records of westerners who visited Korea during the Enlightenment Period of Chosun. The compiled information were gathered from 11 records, and 10 main subjects and 120 sub-subjects were derived through the subject classification scheme. Item analysis was conducted through 37 metadata, and input data types were classified and databased in Excel. Finally, a model of the digital archive system was simulated, and a webpage consisting of five menus was presented. Suggestions for future research were extensive aggregation of new data for archive expansion, active connections between archive systems, standardization of systems, and improved system design for compatibility and user-friendliness.

  • This study reviews Korean population geographic documents and description by Westerners, from the mid 1800s to the Great Han Empire. The major findings are as follows. First I search and find about 20 literatures including the population contents. Second I trace their narration related Korean population, and confirm the key themes; the total population in national and local scale, distribution, density and migration. Finally I try to interpret the Westerners' recognition and perspective on Korean through their representing and depicting the Korean population.

Study on the Acceptance Process of Milk and Dairy Products in Korea during the 19th Century and the Japanese Colonial Period (1884~1938) - Focused on the Analysis of a Westerner's Records and Newspaper Advertisements - (19세기 이후(1884~1938) 조선에서의 우유 및 유제품 수용과정 고찰 - 신문광고와 서양인 기록물 중심으로 -)

  • Although milk, which is a representative western food, has a more than 100-year history in Korea, the preference is controversial. This study examined the milk history of Choseon in 1884~1938. This period was divided into 4 periods regarding the westerner's records and advertisements. Westerners who visited Choseon in 1884~1895 ($1^{st}$ period) recorded the eating habits of Choseon,i.e., no milk consumed, even in insufficient food situation. Among the westerners, medical missionaries began to show or/and recommend condensed milk for sick children. In 1896~1909 ($2^{nd}$ period) newspapers, general shops in Hanseong for westerners showed advertisements of dairy products. In the 1900s, condensed and raw milk were advertised through newspapers. Domestic ranching systems to produce raw milk were established at that time mainly by Japanese. In the 1910s ($3^{rd}$ period), raw milk and condensed milk were advertised in newspapers. Since the mid-1920s ($4^{th}$ period), dairy products were bisected into condensed and powdered (dried) milk. Moreover, many Japanese manufacturers appeared in the advertisement in the 1920s. These results suggest that milk has been recognized as a symbol of an enlightenment food in Korea since the late 1900s, but the old negative wisdom, unfamiliar taste, and high price of milk at that time limited its appeal.

The social changes and food situation in the late period of Joseon (구한말 사회변혁과 식량사정)

  • The influence of the social changes on the food and nutritional status of Korean during the late period of Joseon Kingdom (1800-1910) was analysed by using old literatures and the records of the Westerners visited Korea during the period. The late period of Joseon can be designated the most poor and miserable period in the history of Korea. The people suffered from the corrupted and incompetent government and social disturbances. The main driving forces to reforming the society at that time were 'Silhak' (Practical Learning), introduction of Catholic church and Donghak movement. The food related literatures written in this period in Korea described the life of upper classes (Yangban) and paid little attention to the life of the poor majority. This paper introduces the food availability and habits of Korean observed by the Westerners visited Korea at that time.

A Landscape of Joseon Dynasty in Late 19th Century through Experience Record of Modern Westerners - Focused on Landscape Vocabulary and Content Analysis - (근대기 서양인들의 조선견문기를 통해 본 19세기 말 조선의 경관 - 경관 관련 어휘와 내용 분석을 중심으로 -)

  • This study aims to illuminated landscape of Joseon Dynasty in the end of 19th century when Joseon dynasty began to modernize through the perspective of Westerners. Historical meaning to Western people's landscape records has been preceded. And landscape typology and their perception were analyzed. The results were as follows. First, the Westerners who visited Joseon dynasty at that time were involved in the historical and political situation of the Joseon Dynasty or understood their culture through traveling for so long. And record of Westerners is a significant data to analyze scenery at that time because common contents appear in various books. Second, the landscape of Joseon dynasty that appears in Western records was mainly recorded in small towns and villages, natural environments, scenic sites, historic sites, modern facilities, and cultivated areas. Small towns and villages are mainly mentioned with shabby alleys and dense houses. And natural landscape were identified to mountain landscapes and diverse geomorphological landscape that surrounding vegetation along the coast and rivers. The palaces, fortress and temples were recorded as main objects of scenic sites and historic site. And western-style buildings such as foreign legations and settlements, churches and schools were mentioned in the modernized facilities. A cultivated land was confirmed to be underdeveloped and neglected, but as range of view became wider, it was seen to a peaceful and prosperous rural landscape. Third, Westerners' landscape perception of Joseon dynasty at that time can be deduced from positive or negative perceptions. The residential environment was perceived as negative because it was unsanitary and backward. On the contrary, outstanding natural landscapes, scenic sites and historic sites, and upper class gardens were perceived as positive. For modernized landscapes, positive and negative perceptions were similarly mentioned. Positive perceptions were formed in improvement of civilized landscape, and appeared negative perception because damaged traditional landscapes and heterogeneity.

The Facets of Photographic Records on Korea in Modern Era (조선말과 대한제국 시기 사진기록물의 성격과 생산, 유통 과정)

  • Since the opening of Joseon in 1876, the photographic records of the late Joseon Dynasty and the period of the Korean Empire exist more than expected, considering the technological level and the social situations at that time. Photographs related to Korea can be distributed in various forms, such as illustrations of books printed to introduce Korea to Western society, plates of graphic journalism like newspapers or magazines, vintage prints, photo-postcards, stereo-photographs, card-type photographs, and lantern slides. There are still a great deal left in various archives of the Europe, America, Japan and Korea. According to related researchers, Korean-related photographs taken between 1863 and 1910, since Koreans were first photographed, were at least 3,000 to 4,000 cuts and the photo postcards issued was 25,000. It is said that most of them exist. This paper categorizes two ways of producing and distributing photographic records related to Korea, which were early modern times. The subjects of the photographs are clearly Korea or Koreans, but most of the producers of these photographs were Westerners and Japanese, who were imperial servants of imperialism. In the case of photography, there is a great possibility of distortion of the facts depending on the needs or perspectives of the producers. In order to correct the distortion, not only the contents of the photograph but also the intention of the producer, the production and the communication status should be grasped. This is because the problem of reading photograph records accurately and fairly in an age where there is no real experience is the cornerstone for understanding modern Korea correctly and broadly studying the Modern History of Korea.
