The Microbiological Assessment of Plastic Container and Kitchen Utensils Used in Employee Feeding Foodservice Operation in Seoul (서울 시내 산업체 급식소의 plastic용기 및 기구류 위생에 관한 연구)

  • The purpose of this study was to evaluate the microbiological quality of kitchen utensils in institutional foodservices in Seoul. Total plate count of plastic container, knife, wiping clothes and cutting board are 1${\times}$$10^3$-1${\times}$10/sup/5(CFU/100 $cm^2$). There were many coliforms in plastic container (2${\times}$$10^1$CFU/100 $m^2$), knife (2-3${\times}$$10^1$CFU/100 $cm^2$), wiping clothes (4-6${\times}$$10^1$CFU/100 $cm^2$) and cutting board (4-9${\times}$$10^1$CFU/100 $cm^2$). The results of microbiological test of kitchen utensils indicated that the sanitary conditions of plastic container, knife, wiping clothes and cutting board should be improved promptly. Electron microscopic observation showed that there were too many bacteria in plastic containers.

Cold Storage, Packing and Salting Treatments Affecting the Quality Characteristics of Winter Chinese Cabbages (월동 배추의 저온 저장 방법별 포장 및 염장 처리에 따른 품질 특성)

  • Quality changes in winter Chinese cabbages were evaluated during low temperature storage. Flesh and salt-treated Chinese cabbages were put into (a) polyethylene (PE) film sacks (size: $40cm{\times}60cm$, thickness: 0.03 mm, with four perforations each 8 mm in diameter), (b) plastic containers or (c) polypropylene (PP) nets and stored at $0^{\circ}C$. Also, Cabbages were also wrapped in newspapers and stored underground where the average temperature was $2.7^{\circ}C$. The weight loss rates of Chinese cabbages stored in PP nets and plastic containers were greater than those of cabbages stored with PE or wrapped in newspaper. Chinese cabbages wrapped in newspaper and stored underground needed much greater trimming compared to cabbages stored in other ways. The firmness and the soluble solid contents of Chinese cabbages were not affected by the various storage treatments. A better appearance was retained when Chinese cabbages were stored in PE film sacks. Chinese cabbages in PE film sacks stored at $0^{\circ}C$ showed delayed weight loss, less trimming loss, and less change in appearance. The quality changes in salted Chinese cabbages (desalting losses, pH changes, osmolarities, and crude fiber content) were not significantly different after the various treatments. No storage treatment was effective in maintaining a high quality of salted winter Chinese cabbage.

Risk Assessment of Heavy Metals Migrated from Plastic Food Utensils, Containers, and Packaging Distributed in Korea (국내 유통 식품용 플라스틱 기구 및 용기, 포장의 중금속 위해도 평가)

  • Heavy metals can be intentionally or unintentionally introduced into plastic food utensils, containers, and packaging (PFUCP) as additives or contaminants, which can be ingested with food by humans. Here, seven-heavy metals (lead, cadmium, nickel, chromium, antimony, copper, and manganese) with toxicity concerns were selected, and risk assessment was done by establishing their migration from 137 PFUCP products made of 16 materials distributed in Korea. Migration of heavy metals was examined by applying 4% acetic acid as a food simulant (70℃, 30 minutes) to the PFUCP products. Inductively coupled plasma mass spectrometry (ICP-MS) was employed for the analysis of migrated heavy metals, and the reliability of quantitative results was confirmed by checking linearity, LOD, LOQ, recovery, precision, and expanded uncertainty. As a result of monitoring, heavy metals were detected at a level of non-detection to 8.76 ± 11.87 ㎍/L and most of the heavy metals investigated were only detected at trace amounts of less than 1 ㎍/L on average. However, antimony migrated from PET products was significantly higher than other groups. Risk assessment revealed that all the heavy metals investigated were safe with a margin of exposure above 311. Collectively, we demonstrated that heavy metals migrated from PFUCP products distributed in Korea appear to be within the safe range.

  • Commercial edible soybean oil was introduced into plastic containers. Colorless transparent (control), red transparent, green transparent cellophane films and, also, colorless transparent cellophane films coated respectively with Cemedine C, Cemedine C containing 10% pyridine, benzophenone, and p-aminobenzoic acid were prepared, and the % transmittance of each film to lights at U.V. and visible regions were measured. The containers were covered with the films and irradiated simultaneously with direct sunlight for 4.5 hours daily. The peroxide values of the oils in the plastic containers were determined at regular intervals. The effects of the Alms on the PV development of the oils were compared with that of the control, i.e., the colorless transparent films.The red and green films showed strong retarding effects ell the PV development. The red films showed a slightly stronger effect than the green ones. The colorless transparent films coated with Cemedine C showed an appreciable retarding effect. The films had absorbed the lights at the U.V. and visible regions considerably. The pyridine and benzophenone coated films lost their retarding effects after 10 and 4 days respectively. The p- aminobenzoic acid coated films showed a considerable retarding effect throughout the experimental period. The films had absorbed the lights strongly .As a whole, the retarding effects of the films on the PV development were, in decreasing order. as follows; Red> Green> p-Aminobenzoic acid coated > Cemedine Ccoated) Control > Pyridine coated > Benz ophenone coated

Evaluation of Food Safety Performance and Food Storage Condition in Restaurants against Climate Change (기후변화 대응 식품접객업소 식재료 안전관리 수행도 및 보관실태에 관한 연구)

  • This study was conducted to investigate the current status of hygiene performance and food preparation/storage condition in restaurants during the summer season in order to evaluate the sanitary management systems in restaurants against climate change. Total 30 restaurants located in Gyeonggi participated in a survey in which they were asked current hygiene performance, food preparation/storage condition, and purchasing practices for 5 food ingredients. As results, regarding the performance degree of respondents on food hygiene management, the average scores of 9 questions were well over 4 points. However, only 6.83% of the respondents claimed that they use sanitizers (chlorine) to disinfect food ingredients. About food storage condition, a high proportion of respondents said that they store food materials in plastic bags or airtight containers following pretreatment and use refrigerator for the storage of pretreated food materials. However, 5.55% and 14.85% of respondents answered that they store pretreated food materials in the kitchen or inside of dining room, respectively. Respondents (21.50%) answered that they store pretreated food materials for more than 6 hours before cooking. Therefore, food materials need to be disinfected properly with sanitizer to remove microbial contamination and stored at refrigerator using closed bags or containers before cooking in order to prevent foodborne disease in restaurants especially during summer season.

Evaluation of Lactic Acid Bacteria for the Resistance to Endocrine Disruptors

  • Endocrine disruptors are chemicals which can be found in our normal daily life. They can be easily ingested through plastic food containers, pesticides, etc. They include DDT, bisphenol A, benzophenone and phenylphenol, etc. Endocrine disruptor can be very harmful and toxic because it disrupts the normal function of the endogenous endocrine system. It has been reported that endocrine disruptor can cause the fatal strike in reproductive system central nervous system and the other part of the body. We have examined if the growth of lactic acid bacteria could be resistant to the endocrine disruptor. We have used Lactobacillus delbruekii as an experimental strain and benzophenone and phenylphenol for the comparison purpose. Experiments included the evaluation of turbidity, absorbance and actual cell counts. Although Lactobacillus delbruekii showed the higher resistance to benzophenone than phenylphenol it was still resistant to both benzophenone and phenylphenol. Because the experimental concentrations of benzophenone and phenylphenol were so high to compare with the actual concentration we meet in daily life, Lactobacillus delbruekii was considered to be sufficient to survive in the environmental concentration of these endocrine disruptors. This study should contribute to the development of fermented beverage with beneficial effect by lactic acid bacteria.

Investigation on the Material and Migration Tests of Gas Impermeable Plastic Vacuum Packaging Materials for Food-Contact Use (식품용 합성수지제 공기차단성 포장재에서의 재질 및 용출시험량 조사)

  • Twenty eight gas impermeable plastic films for food-contact application were collected in the domestic market and material and/or migration tests for overall migration, antioxidants, potassium permanganate consumption, heavy metal, and plasticizers were carried out. The average overall migration values for NY/PE or NY/LLDPE, PETP/PE, and PVDC packaging films obtained by using n-heptane as fatty food simulant were 7.6, 6.9 and 14.1 mg/L, respectively. These values were much lower than the limit values of 150 and 30 mg/L for polyethylene and polyvinylidene chloride prescribed in the Korea Food Code. In almost of the packaging materials tested, the antioxidants such as Irganox 1010, Irganox 1076 and Irgafos 168 were found. The migration test result showed that almost of all samples except PVDC film contained Irganox 1076 and Irgafos 168, while the maximum migration value of Irganox 1076 into n-heptane was found in the Ny/PE/LLDPE(15/25/50 ${\mu}m$) sample at the concentration of 216.9 ${\mu}g/g$. From the plastic packaging samples tested, plasticizers such as DEP, DPRP, DBP, DPP, BBP, DCHP, DEHP, DEHA and observed above the detection limit. Consumption amount of potassium permanganate was much lower than the limit value of 10 mg/L. In the material test for heavy metals, cadmium and lead were determined at the concentrations far below the limit value of 100 mg/kg. The migration test for cadmium and lead showed a lower value than the detection limit. Therefore, it can be concluded that the safety status of the plastic films tested met the requirement of limit values as prescribed for the material and migration tests of food packaging utensils, containers and packages of the Korea Food Code.

  • Bisphenol A(BPA), known as a typical endocrine disruptor, has been used commercially and widely for plastics and epoxy resins. BPA-based plastic is used extensively for the production of water bottles, food containers, CDs, DVDs, and panels that can be applied in construction. Epoxy resins containing BPA are used for coatings on the insides of water pipes, food cans, and thermal papers that are used in sales receipts. As its estrogenic effects and other adverse health effects have published, BPA has been regulated in many countries, and there have been efforts made to replace BPA. Other bisphenols substitutes such as bisphenol S(BPS) and bisphenol F(BPF) have been used. Currently, BPS- and BPF-based products labeled BPA-free products have been widely consumed. Because of structural similarities with BPA, however, these alternatives also show endocrine disruption effects like BPA, and many studies on adverse health effects of these alternatives are being reported. In this review, we describe the adverse health effects of bisphenols and the current status of regulation.

Development of Multi-functional Mulch Papers and Evaluation of Their Performance-Studies for Reducing the Basis Weight of Mulch Paper- (다기능성 멀칭지의 개발 및 적용성 평가(제l보)-멀칭지의 저평량화를 위한 연구-)

  • Soil and water contamination caused by the abundant use of agricultural chemicals including herbicides and fertilizers draws public concerns since these chemicals may pollute the agricultural lands as well as the food products grown on these lands. As a method to reduce the use of agricultural chemicals mulching with thin plastic film has been commonly practised for many years. Although use of the plastic film for mulching is very effective in preventing the growth of weed, it is almost impossible to remove all of the plastic film from the agricultural land and the remaining film eventually contaminates the soils. Therefore, it is very imperative to develop a mulching material that decomposes completely to prevent soil pollution problems and to enhance the competitive edge of domestic agriculture. Mulch papers are believed to have many positive characteristics in preventing problems caused by the plastic mulch film since it decomposes completely after use. However, the basis weight of mulch papers needs to be reduced to improve its handling properties and to reduce the raw material costs of pulps. In this paper the possibilities of using domestic old corrugated containers in producing mulch papers were examined. Also use of unbleached softwood kraft pulps and dry strength additives were exploited along with two-layered sheet forming technology in decreasing the basis weight of the mulch paper. Results showed that reduction of 20g/$m^2$ of basis weight of mulch paper was possible by the appropriate raw material selection and application of strength resin. To use the mulch papers in paddy fields, however, further research to improve its durability should be pursued.

Quality and Storage Characteristics of Low Salted Onion and Five Cereals-Doenjang (저염 양파 오곡된장의 품질 및 저장 특성)

  • The quality and storage characteristics of low salted onion and five cereals-doenjang (DFO) were investigated. At the DFO, soybean koji ($57{\sim}62%$), onion (3%) and salt (8%) were mixed with equal amount of rice, barley, glutinous millet and glutinous indian millet ($10{\sim}30%$), and water ($7{\sim}12%$). The storage of DFO was done by vacuum packing in polypropylene tube, and sterilized at $121^{\circ}C$. The fermentation and storage was conducted for 60 days at $25^{\circ}C$ at each condition. Control doenjang (GD) was the salinity of 16% soybean doenjang that was not sterilized and packed in plastic containers for storage. During the fermentation, pH of DFO was lower than GD. The pH maintained stability during the storage, and revealed to be lowered, as the proportion of mixed cereals was higher. During the fermentation of DFO, the brix degree revealed to be higher than GD and maintained s1ability during the storage. During the fermentation and storage, the amino nitrogen content of DFO was ranged $400{\sim}470mg%$ by showing higher content than GD and maintained stable content during the storage. During the fermentation, the activities of protease and ${\beta}$-amylase were maintained to be high at DFO, but the activities during the storage were high at GD. The color $L^*$ value of DFO during fermentation and storage maintained higher values than GD, but $a^*$ value revealed lower pattern. Total free amino acids of DFO was ranged $1,918{\sim}2,290mg%$ which was higher than GD that recorded 1,291 mg%. When the sensory evaluation was conducted for DFO that was fermented and stored for 60 days, the DFO mixed with $20{\sim}30%$ of cereals resulted to have more savory taste, flavor, and sweeter than GD, and overall acceptability for color and overall taste was high.
