Kinetic Data for Texture Changes of Foods During Thermal Processing

  • To automate cooking processes, quantitative descriptions are needed on how quality parameters, such as texture change during heating. Understanding mechanical property changes in foods during thermal treatment due to changes in chemical composition or physical structure is important in the context of engineering models and in precise control of quality in general. Texture degradation of food materials has been studied widely and softening kinetic parameters have been reported in many studies. For a better understanding of kinetic parameters, applied kinetic models were investigated, then rate constants at $100^{\circ}C$ and activation energy from previous kinetic studies were compared. The food materials are hardly classified into similar softening kinetics. The range of parameters is wide regardless of food types due to the complexity of food material, different testing methods, sample size, and geometry. Kinetic parameters are essential for optimal process design. For broad and reliable applications, kinetic parameters should be generated by a more consistent manner so that those of foods could be compared or grouped.

Preparation of Shark Byproduct Extract and Gellan Gum based Antibacterial Film Containing Green Tea Extract

  • In this study, we tried to examine the possibility of developing a dental product such as tooth decay prevention and oral hygiene by manufacturing a natural polymer film for oral use. Natural polymer films were prepared from shark byproduct extract (SBE) and gellan gum (GG). As an antibacterial substance, the antibacterial activity of green tea extract against tooth decay-causing bacteria was measured. An film was prepared by adding green tea extract to the composition of SBE and GG. The mechanical, solubility, moisture content and antibacterial function of the prepared film were investigated in detail. Also, the incorporation of GTE into the SBE/GG film improved the physical performance of the film. Increasing the content of GTE improved the antioxidant and antibacterial properties of the film. Formulation of antimicrobial SBE/GG film containing green tea extract was established and these results evidently showed potential for cavity prevention products application.

Synthesis and Characterization of Polyurethane-silica Composite Foam (폴리우레탄-실리카 복합 발포체의 합성 및 물성에 관한 연구)

  • In this study, polyurethane-silica composite foams were synthesized to analyze thermal insulation characteristics and mechanical properties. In order to synthesize polyurethane-silica composite foams, polyester-silica composite polyols were first synthesized via a polymerization reaction with silica sol, dicarboxylic acid and glycol in monomer state. Physical properties of polyurethane-silica composite foams synthesized using the composite polyols were analyzed. From the thermal conductivity analysis, no significant differences among HPUF0, HPUF1, HPUF3 and HPUF5 were found. The compressive strength of polyurethane-silica composite foams increased as the silica content increased. The mechanical property of HPUF5 was also about 25% higher than that of HPUF0.

  • Poly-DCPD and poly-DCPD/silicates hybrids were prepared by in-situ ROMP poly-merization using $WCl_6$ catalyst. Good dispersion of silicates in DCPD medium can be accomplished by sonication method. Compared with nanocomposites prepared using $Na^+MMT$, the nanocomposites with CL 15A showed well dispersed silicate's morphology. superior thermal and mechanical properties. Additionally, well dispersed silicates in DCPD matrix enhanced the gas barrier property of the nanocomposites.

  • As the demands of environment protection increase, the pulp mold container is developed to substitute for the plastic cushion materials like EPS(expanded poly styrene). The water-absorbing ratio, tensile strength and compressive strength of pulp mold are important factors to evaluate its shock absorbing characteristics. The study was performed to investigate the effects of the mechanical property changes on the various conditions of temperature and relative humidity for pulp mold containers made of mixed materials on ONP(old newspaper) and OCC(old corrugated container). This study also is evaluated the optimized mixing ratio of materials for making pulp mold by analyzing the changes of physical properties according to a various procured temperature and relative humidity conditions. The results show that the water absorption ratio of sample increased significantly, and tensile strength decreased $20{\sim}30%$, compressive strength decreased $10{\sim}20%$ by increasing relative humidity condition. And the results show that the ONP 50% and OCC 50% was optimized mixing ratio according to the samples.

  • In this paper, a polishing pad has been analyzed in detail, to understand surface phenomena of polishing process. The polishing pad plays a key role in polishing process and is one of the important layer in polishing process, because it is a reaction layer of polishing[1]. Pad surface physical property is also ruled by pad profile. The profile and roughness of pad is controlled by different types of conditioning tool. Conditioning tool add mechanical force to pad, and make some roughness and profile. Formed pad surface will affect on polishing performance such as RR (Removal Rate) and uniformity in CMP Pad surface condition is changed by conditioning tool and dummy run and is stable at final. And this research, we want to reduce break-in and dummy polishing process by analysis of pad surface and artificial machining to make stable pad surface. The surface treatment or machining enables to control the surface of polishing pad. Therefore, this research intends to verify the effect of the buffing process on pad surface through analysis of the removal rate, friction force and temperature. In this research, urethane polishing pad which is named IC pad(Nitta-Haas Inc.) and has micro pore structure, is studied because, this type of pad is most conventional type.

  • A grating composed of elliptical cylinders (GEC), specially designed, is applicable to control of radiation heat transfer from a heated surface, as reported in our previous work. In this study, an analysis of radiation heat transfer is performed for a physical model in which the GEC is placed in front of a heated black-base surface and the major axes of the elliptical cylinders are inclined as a certain angle from the normal to the row of elliptical cylinders. Numerical solutions are obtained. Variations of the direction and the radiative energy concentration with slant angle of the major axis are shown for some parameters. It is verified that the GEC is able to widely change the direction of radiation heat transfer from the heated surface.

  • In this paper, glass surface-mat reinforced epoxy(G.S.R.E.) is developed, It is assured that the material(G.S.R.E.) can be used as photoelastic model material and it satisfy with the required properties of photoelastic model material. Therefore, the material can be used as model material of transparent photoelastic experiment when we analyze the stress distributions of transversely isotropic material by photoelastic experiment. When we use G.S.R.E. as photoelastic experiment model material, we had better use the G.S.R.E. which fiber volume ratio is less than 0.7% in the high temperature(stress freezing method) and than 1.74% in the room temperature. Relationships between stress fringe value and elastic modulus in transversely isotropic material are developed in this paper, it is assured by experiment that they are established in the room temperature or in the high temperature. Therefore we can obtain stress fringe value or elastic modulus from the relationships between stress fringe value and elastic modulus.

  • 본 연구에서는 포화수증기와 공기의 혼합기내에서 분무수적으로의 열 및 질량 전달률을 계산하기 위하여 수적의 부분혼합모형과 비혼합모형에 대하여 수적내 과도온 도분포의 해석해를 적용성이 보장되면서도 계산상의 어려움이 수반되지 않는 형태로 구하기 위하여 수적내부의 열전도해석에 있어서 적분법을 적용하였다. 적분법으로 얻어지는 과도온도분포의 해는 유한차의 다항식으로 표시되어 비혼합모형인 경우 각시 간 구간의 경계에서의 온도분포가 연속성을 유지하면서 물성치들의 온도에 대한 종속 성이 쉽게 고려되고 계산도 용이한 형태이다. 본 보에서 제시하는 해석결과의 적용 성을 조사하기 위하여 완전혼합모형을 포함하는 세가지 수적모형들에 대한 계산결과들 로부터 얻어진 시간변화에 따른 수적의 무차원 체적평균온도변동을 유효한 실험결과들 과 비교, 검토하였으며, 부분혼합모형에 대하여 혼합기의 압력, 수적의 초기온도, 혼 합기 속에 포함되어 있는 수증기의 체적분율, 수적의 초기크기, 수적의 초기속도 및 분사각도가 주위혼합기로부터 수적으로 전달되는 열 및 질량전달에 미치는 영향을 조] 사하고 도출된 대표적인 검토 결과를 제시하였다.

STOKES FLOW THROUGH A MICROCHANNEL WITH PROTUBERANCES OF STAGGERED ARRANGEMENT (엇갈린 배열의 돌출물들이 존재하는 마이크로채널 내의 스톡스 유동)

  • In this study, the Stokes flow in the microchannel is analysed where the semicircular protuberances with constant spacing are attached on the upper and lower walls with staggered arrangement. For the low Reynolds number flow in microchannel, Stokes approximation is used and the periodicity and symmetry of the flow are considered to determine the stream function and pressure distribution in the flow field by using the method of least squared error. As results, the streamline patterns and pressure distributions in the flow field are shown for some specific values of the size and spacing of the protuberances, and shear stress distributions on the surface of semicircular protuberances are plotted. Especially, for an important physical property, the average pressure gradient along the microchannel is obtained and compared with that for the case of in-phase arrangement of the upper and lower protuberances. And, for the small clearance between the protuberances of upper and lower walls or between the protuberances and the opposite wall, the average pressure gradient is derived from the lubrication theory and compared with that of the present study.
