유기농업에 의한 복숭아 재배 (Cultivation of Peach by Orgnic Farming)

  • Cultivation of peach by organic farming and cooperative form of work was attempted. The compost was made from egg shells and bread residues(bakery residues), falling leaves, and weeds. The cooperative teams of work were farmers, students and members of citizens' movement. The responses of participants for composting, though it's laboriousness and dirtiness, were favorable with feeling of doing good for social services. 20 chickens were raised in the peach orchard as one of the mixed farming. The pH and Ca content of ripened compost were 7.7 and 1.57 %, respectively. Controlling Aphids(plant louse)by ladybug was observed vividly. The size and sugar concentration were comparable to standard values even though rainy season and the number of damaged fruits were less than half(40%).

고 이산화탄소 전처리가 '일천백봉' 복숭아의 품질 변화에 미치는 영향 (Effect of High $CO_2$ Pre-treatment on Quality of 'Hikawa Hakuho' Peach Fruits)

  • 수확 후에 실시되는 고 이산화탄소(60및 $100\%$)의 전처리(3, 6, 12시간)가 '일천백봉' 복숭아의 상온 유통 중 신선도 및 부패에 미치는 영향을 조사하였다. $60\%$ 이상의 이산화탄소를 6시간 이상 전처리할 경우 상온 유통 중 호흡, 에틸렌 발생, 과피 변색 및 연화 현상이 둔화되었으며 유통기한 중 조직감이 향상되었다. 상온에서의 부패 현상도 $60\%$$100\%$를 6시간 이상 처리함으로써 크게 억제시킬 수 있었다. 복숭아과실의 가용성 고형분 함량은상온 유통중 변화하지 않았으며 고 이산화탄소 처리에 의한 영향 또한 없으나, 관능 실험 결과 단맛 지수는 무처리에 비해 처리구가 높은 것으로 나타났다. 특히 $60\%$를 6시간 처리한 과실이 조직감과 단맛 지수가 가장 높았고 전반적인 품질지수도 가장 좋았다. $100\%$ 농도의 경우 과피 변색, 호흡, 에틸렌 발생, 연화 및 부패 억제에는 효과적이나 3시간 처리만으로도 과육에 이산화탄소가 잔류하여 이취를 발생시키므로 복숭아 과실에 부적합하였으며 $60\%$ 농도 또한 6시간을 초과하여 처리할 경우 이산화탄소가 잔류되어 전반적인 선호도가 낮았다. 따라서 '일천백봉' 복숭아의 경우, $60\%$ 이산화탄소를 6시간 동안 전처리 함으로써 상온 유통되는 과실의 변색, 연화, 부패, 식미감 감소를 효과적으로 억제시킬 수 있을 것으로 판단되었다.

Mycelial Yield of Pleurotus ostreatus Using Thinned Apple, Pear, and Peach on Submerged Culture

  • The effect of thinned fruits, apple, pear and peach, on the mycelial growth of mushrooms was investigated. The growth of mycelia with the addition of thinned fruit was clearly better than that in the control for all the tested mushrooms. The growth rate of Pleurotus ostreatus was faster than any other mushroom. The optimal concentrations of thinned apple, pear, and peach in a solid culture were 1.0%, 1.0%, and 3%, respectively, while in a liquid culture the optimal concentrations were 5,0%, 3.0%, and 5.0%, respectively. When Pleurotus ostreatus was incubated in a 20-L pilot scale fermenter with 10 L of a liquid medium containing 3% thinned fruit at 25$^{\circ}C$ and 6 vvm for 10 days, the mass-production of mycelia was 74.2 g/10 L (apple), 96.2 g/10 L (pear), and 86.3 g/10 L (peach). The mycelial yield of Pleurotus ostreatus in a medium containing thinned fruit was 2 ∼ 3 times higher than that in the control.

청과물 퇴적층에서의 공기유동 정압강하 (Static Pressure Drop of Airflow in Packed-bed of Fruits and Vegetables)

  • The purpose of this paper is to obtain the basic data for design of pressure cooling system. Static pressure drop, as a function of superficial velocity, was measured for different stacking methods and stacking heights of some fruits and vegetables. At given superficial velocity, sphericity and void fraction had a much greater influence on static pressure drop than average diameter of spherical fruits such as apple, peach, tomato and kiwi fruit. Among cylindrical vegetables such as cucumber, carrot, radish and chinese cabbage, cucumber showed different pattern of static pressure drop because of its bended shape, radish showed less static pressure drop than other vegetables because its large sizes of voids. When cucumber and spinach were stacked vertically and horizontally to air flow, a much greater static pressure drop was shown in vertical than in horizontal type, therefore static pressure drop was affected not only by void fraction but also by void shape. Also, in packed-beds of fruits and vegetables, static pressure drop could be estimated very well by Ramsins equation.

과실류 소비촉진을 위한 초등학교 급식에서의 과실류 선호도 조사 - 사과와 배를 중심으로 - (Fruits Preference of Elementary Children for Fruits Consumption Promotion in School Lunch Program - Focus on Apples and Pears -)

  • This study was performed to investigate the preference and perception on fruits especially, focusing on apples and pears served in elementary school lunch programs. The subjects of this study were 1,106 students (504 female and 595 male students)from seven elementary schools in Seoul. The survey was conducted by using self-administered questionnaire from July 10 to July 20, 2006. Based on the frequency analysis results, 45% of respondents ate fruits every day and 42% had fruits 2-3 times per week. Approximately, 53% of respondents indicated their usual time to eat fruits was after dinner and secondly 27% had fruits between lunch and dinner. Majority of respondents chose a watermelon as the most preferred fruits and the first chosen among nine fruits (apple, pear, madarin, strawberry, cherry tomato, watermelon, grape, melon, and peach). Cherry tomato was found as the least preferred fruits by 30% of students, however cherry tomato was most frequently offered fruits in elementary school lunch menu. About 50% students were satisfied with the served fruits in their school lunch program. In addition, most students said that they would have fruits more frequently in their lunch menu. However, one fifth of students addressed that they were not satisfied with the fruits in school lunch program because of kinds of fruits, freshness of fruits, taste of fruits, and quantity of fruits. Almost 71% of students preferred apples. Seventy three percents of students preferred eating apples without peel and 78% of students ate apples as slices of apples. In addition, 61% of students indicated their preference of apple salads. Many students responded they did not eat apples and pears frequently since they do not have a chance to eat them. The implications to increase the chance to eat fruits and promote elementary children's fruits consumption were discussed.

복숭아 품종별 페이스트를 이용한 고추장의 품질 특성 (Analysis of the quality characteristics of Kochujang prepared using pastes from different peach varieties)

  • 본 연구는 저장성이 낮아 폐기되는 복숭아를 활용하여 고추장을 담금하여 품질 특성을 조사하였다. pH, 당도, 염도, 환원당, 회분 및 열량은 시판 고추장에 비하여 복숭아 고추장이 낮은 경향을 보였으나, 산도 및 수분은 복숭아 과육의 높은 유기산 및 수분의 함량으로 다소 높은 결과를 얻었다. 유리당 함량의 비교에서 glucose는 시판 고추장이 복숭아 고추장에 비하여 높은 함량을 보였지만, fructose와 maltose는 복숭아 고추장에서 높은 함량을 보였다. 3대 영양소의 함량은 단백질과 탄수화물에서 시판 고추장의 함량이 높았으며, 지방은 복숭아 고추장의 함량이 높았다. 무기원소의 함량은 나트륨과 마그네슘에서 시판 고추장이 높게 측정되었으며, 칼륨 함량은 복숭아 고추장에서 높은 결과를 보였다. 페놀 및 플라보노이드의 함량을 비교한 결과, 증류수 추출물에서는 유의적인 차이가 없었지만, 페놀 함량에서 복숭아 고추장의 에탄올 추출물이 시판 고추장의 추출물 보다 더 높은 결과를 가져왔다. 또한, DPPH 및 ABTS 라디컬 소거 활성을 비교한 결과 에탄올 추출물에서는 유의적인 차이가 없었지만, 증류수 추출물에서 DPPH 라디컬 소거 활성이 더 높게 나타났다. 이와 같이 복숭아 품종별 페이스트를 이용하여 제조한 고추장의 이화학적 품질 특성을 조사한 결과, 대부분의 품종에서 시판고추장에 비해 품질이 높게 나타나 상품화의 가능성이 있는 것으로 기대된다. 향후 담금 조건, 관능적 특성, 숙성 기간 및 유통 안전성에 관한 연구가 요망되었다.

산복사나무 열매의 수확시기별 생리활성물질 함량 비교 (Comparative Biological Properties of Prunus davidiana Fruits according to Harvest Month)

  • This study was performed to determine the optimal month of harvest between May and July for wild peach (Prunus davidiana) by comparison of functional materials. The general composition, amino acid and vitamin (A, C, and E) content, and antioxidant activity were determined. With respect to the general composition of wild peach according to the month of harvest, wild peach harvested in May (HMP) and July (HJP) contained mostly carbohydrate, the contents of which amounted to 77.37 g/100 g and 77.92 g/100 g, respectively. The total amino acid content of HMP and HJP were 675.29 mg% and 573.25 mg%, respectively. Regarding the vitamin contents, vitamin A (retinol), E (${\alpha}-tocopherol$) and C in HMP were higher than those in HJP. The total polyphenol content of HMP (218.37 mg TAE/g) was higher than that of HJP (71.45 mg TAE/g). The total flavonoid content of HMP (64.95 mg RE/g) was also higher than that of HJP (32.67 mg RE/g). Moreover, the DPPH and ABTS radical scavenging activities ($IC_{50}$) were higher in HMP ($137.18{\mu}g/mL$ and $157.15{\mu}g/mL$) than those in HJP ($160.10 {\mu}g/mL$ and $186.01 {\mu}g/mL$), meaning that the former produces better antioxidant effects. It can be concluded that wild peach harvested in May contained higher functional materials such as vitamins and amino acids and had a higher antioxidant effect, than wild peach harvested in july.

Development of Automatic Peach Grading System using NIR Spectroscopy

  • The existing fruit sorter has the method of tilting tray and extracting fruits by the action of solenoid or springs. In peaches, the most sort processing is supported by man because the sorter make fatal damage to peaches. In order to sustain commodity and quality of peach non-destructive, non-contact and real time based sorter was needed. This study was performed to develop peach sorter using near-infrared spectroscopy in real time and nondestructively. The prototype was developed to decrease internal and external damage of peach caused by the sorter, which had a way of extracting tray with it. To decrease positioning error of measuring sugar contents in peaches, fiber optic with two direction diverged was developed and attached to the prototype. The program for sorting and operating the prototype was developed using visual basic 6.0 language to measure several quality index such as chlorophyll, some defect, sugar contents. The all sorting result was saved to return farmers for being index of good quality production. Using the prototype, program and MLR(multiple linear regression) model, it was possible to estimate sugar content of peaches with the determination coefficient of 0.71 and SEC of 0.42bx using 16 wavelengths. The developed MLR model had determination coefficient of 0.69, and SEP of 0.49bx, it was better result than single point measurement of 1999's. The peach sweetness grading system based on NIR reflectance method, which consists of photodiode-array sensor, quartz-halogen lamp and fiber optic diverged two bundles for transmitting the light and detecting the reflected light, was developed and evaluated. It was possible to predict the soluble solid contents of peaches in real time and nondestructively using the system which had the accuracy of 91 percentage and the capacity of 7,200 peaches per an hour for grading 2 classes by sugar contents. Draining is one of important factors for production peaches having good qualities. The reason why one farm's product belows others could be estimated for bad draining, over-much nitrogen fertilizer, soil characteristics, etc. After this, the report saved by the peach grading system will have to be good materials to farmers for production high quality peaches. They could share the result or compare with others and diagnose their cultural practice.

Inhibitory Effect of Moriniafungin Produced by Setosphaeria rostrata F3736 on the Development of Rhizopus Rot

  • Rhizopus rot is a serious postharvest disease of various crops caused by Rhizopus spp. and controlled mainly by synthetic fungicides. We detected the antifungal activity of a culture extract of Setosphaeria rostrata F3736 against Rhizopus oryzae. The active ingredient was identified as moriniafungin, a known sordarin derivative, which showed minimum inhibitory concentrations of 1-8 ㎍/ml against Colletotrichum spp. and 0.03-0.13 ㎍/ml against Rhizopus spp. in vitro. Moriniafungin showed protective control efficacies against Rhizopus rot on apple and peach fruits. Treatment with 25 ㎍/ml moriniafungin delimited the lesion diameter significantly by 100% on R. oryzae-inoculated apple fruits compared with the non-treated control. Treatment with 0.04 ㎍/ml of moriniafungin reduced the lesion diameter significantly by 56.45%, and treatment with higher concentrations of 0.2-25 ㎍/ml reduced the lesion diameter by 70-90% on Rhizopus stolonifer var. stolonifer-inoculated peach fruit. These results suggest moriniafungin has potential as a control agent of postharvest diseases caused by Rhizopus spp.

장미과 과수 5종의 해충 피해 과실에서 복숭아순나방과 복숭아순나방붙이 유충의 구성비 (Distribution Ratios of Grapholita molesta and G. dimorpha Larvae in Pest-damaged Fruits of Five Rosaceae Fruit Trees)

  • 동소동속종인 복숭아순나방과 복숭아순나방붙이는 우리나라에서 여러 가지 과수의 주요 해충으로 알려져 있다. 본 연구에서 우리는 장미과(Rosaceae) 과수인 복숭아나무, 자두나무, 사과나무, 배나무, 모과나무의 과실을 가해하는 복숭아순나방과 복숭아순나방붙이 유충을 채집하여 분자동정법을 이용하여 종을 동정하여 과종별로 두 종의 분포 비율을 비교하였다. 유충을 동정한 결과, 복숭아 과실을 가해하는 종은 거의 대부분 복숭아순나방이었던 반면, 자두 과실을 가해하는 것은 모두 복숭아순나방붙이인 것으로 나타났다. 사과, 배, 모과 과실은 두 종이 상당하는 비율로 같이 분포하였는데, 사과와 모과에서는 복숭아순나방붙이에 의한 피해가 상대적으로 많았으나 유의한 우점은 발견되지 않았고, 배 과실에서는 복숭아순나방이 유의하게 우점하여 분포하였다. 이 결과들은 과수원에서 이 해충들의 합리적인 관리전략을 수립하는데 유용할 것이다.
