Peaches have soft tissues compared to other fruits and are vulnerable to softness, wounds, and loss of marketability due to the weak fruit hardness after harvest. It is necessary to develop a technology to improve the shelf-life of the fruit to expand the distribution of peaches. Calcium compounds and chitosan have an important role in improving the shelf-life of fruit by maintaining the hardness and reducing the respiration rate in peach fruits. In this study, to select useful compounds to improve the shelf-life of peaches, calcium citrate, calcium chloride, calcium nitrate, GH-Ca, OS-Ca, chitosan, and chitosan dissolved in calcium chloride were sprayed onto peach trees. The characteristics of the harvested fruits were investigated after the 'Kumhong' and 'Madoka' peach tree treatments. The hardness of the fruit was kept the highest with the combined treatment and remained high with the calcium citrate, chitosan and calcium nitrate treatments. Ethylene production and respiration were effectively inhibited by the GH-Ca and chitosan treatments. There was no significant difference in soluble solids content and acidity among the fruits treated with the chemicals. The coloration of the fruit skin was not delayed by the calcium and chitosan chemical treatments. Calcium compounds were increased in the fruits and leaves of the peach trees treated with the chemicals compared to the untreated ones. These results suggest that the calcium treatment extended the shelf-life by increasing the calcium content in the leaves and fruits of the peach trees.
This study was to investigate the effects of enzyme on quality characteristics and antioxidant activities of wild peach (Prunus persica L.) juice. pH levels and S.S (soluble solid) values in all samples ranged from 3.86 to 4.13 and from 48.0 to $55.0^{\circ}Brix$, respectively. The TA (total acidity) values of control (not treatment enzyme) were higher than those of the others. The highest 'L', 'a' and 'b' values were observed on PWP (preserved wild peach (Prunus persica L.) juice of cellulase/pectinase (1:1, w/w) sample. Glucose (26.65 g/100 g) and fructose (17.42 g/100 g) in PWP product were determined, however sucrose and maltose were not detected. The predominating organic acid components analyzed in PWP sample were tartaric (32.36 g/100 g) and lactc acids (209.34 g/100 g), whereas citric acid, acetic acid and malic acid were not detected. Higher scores for taste, flavor, color and overall acceptance were found for PWP products compared to other samples. The total phenolic content (13.31 mg GAE/mg dry weight) analyzed using Folin-Ciocalteu's reagent, of PWP sample was higher than those of the others and the total flavonoid concentrations were also 10.95 mg CE/mg dry weight. The DPPH radical scavenging and ABTS radical scavenging activities in all samples ranged from 55.16 to 74.29% and from 39.59 to 82.79%, respectively. The antioxidant activities were affected by addition of enzyme. These results indicate that the use of the mixture of cellulase and pectinase could increase the quality, and antioxidant potentials of sugar preserved wild peach (Prunus persica L.) juice by enzymatic treatment.

The experiments were conducted by supplying hosts with natural food(chestnut, peach, Quince). The developmental difference of peach pyralid moth, Dichocrocis punctiferalis was examined in the laboratory under three different natural food regime. The periods of egg, larva and pupa were $6.01{\pm}0.07$, $12.23{\pm}0.03$ and $13.32{\pm}0.01$ days on the chestnut fruit, $6.21{\pm}0.01$, $18.69{\pm}0.02$ and $13.38{\pm}0.03$ days on the peach fruit and $7.02{\pm}0.04$, $22.62{\pm}0.04$ and $13.44{\pm}0.14$ days on the quince fruit, respectively. The growth of D. punctiferalis larva was better chestnut fruit than other tested fruits. The rates(%) of hatching, pupation and emergence were 94.0, 57.0 and 63.3 on the chestnut fruit, 89.2, 77.8 and 85.7 on the peach fruit and 79.6, 52.6 and 70.7 on the quince fruit, respectively. The survival rate(%) of D. punctiferalis from hatching to emergence were 31.0 on the chestnut fruit, 4.8 on the peach fruit and 14.3 on the quince fruit, respectively. The sex ratio (female: male) of all pupae obtained on the tested natural food fruits were 52.7 : 47.3. The sex ratio of D. punctiferalis reared on three difference food fruits were no significantly. It can be used a as the basic research for the study of D. punctiferalis.
BACKGROUND: This study was performed to calculate the biological half-lives and regression coefficient of bistrifluron and cyenopyrafen dissipation in peach and to estimate the Pre-Harvest Residue Limits (PHRLs). METHODS AND RESULTS: The bistrifluron and cyenopyrafen were prepared on the basis of good agricultural practice for peach and treated with a single application. Peaches were harvested at 0, 1, 3, 5, 7, 10 and 14 days after application, prepared for analysis, and analyzed by HPLC-DAD. The limits of quantitation (LOQ) of bistifluron and cyenopyrafen were 0.02 mg/kg and 0.04 mg/kg, respectively. The recoveries of bistrifluron and cyenopyrafen were 99.5~108.7% and 88.4~98.9% at two different concentration levels. The biological half-lives of field I (Sejong) and field II (Pyeongtaek) were 6.1 and 7.0 days for bistifluron, and 6.3 and 7.0 days for cyenopyrafen, respectively. The 95% confidence intervals of dissipation rate constants of bistrifluron in peach were 0.0805~0.1457 and 0.0577~0.1417 for field I and field II, respectively, and those of cyenopyrafen were 0.0911~0.1278 and 0.0576~0.1417, respectively. CONCLUSION: Residue dissipation of bistrifluron and cyenopyrafen in peach were similar to that of correction to sample weight difference during the harvest periods. This study suggests that residue dissipation rate would be helpful to set the PHRLs that protect public health.
This experiment was carried out to investigate the prevention of bacterial shot hole by Bordeaux mixture when it was sprayed on peach trees after harvest. bordeaux mixture was sprayed on \`Mibaeko\` peach trees 1 to 3 times after mid September, and the occurrence of bacterial shot hole was examined in the next year. Bacterial shot hole in leaves appeared from mid May and thereafter increased gradually. The more times was sprayed Bordeaux mixture, the less peaches were diseased with bacterial shot hole. At the beginning of August, the peach harvest time, the disease incidence of the untreated control plot was 27.4 to 38.1%, while the disease incidence was 9.7 to 31.8% when Bordeaux mixture was sprayed. The control value ranged from 16.5 to 64.6%. Occurrence of the fruit disease was similar to that of the leaf disease. Incidence of the fruit disease in the untreated control was 17.2 to 21.6%, but incase of the chemical treatment, it was 5.0 to 12.2 %, showing 41.9 to 70.9% of the control value. Chemical injury on peach leaves were not found in the 4-12 and 408 types, but occurred in some degrees in the 6-6 type of Bordeaux mixture.
This study was performed to determine the optimal month of harvest between May and July for wild peach (Prunus davidiana) by comparison of functional materials. The general composition, amino acid and vitamin (A, C, and E) content, and antioxidant activity were determined. With respect to the general composition of wild peach according to the month of harvest, wild peach harvested in May (HMP) and July (HJP) contained mostly carbohydrate, the contents of which amounted to 77.37 g/100 g and 77.92 g/100 g, respectively. The total amino acid content of HMP and HJP were 675.29 mg% and 573.25 mg%, respectively. Regarding the vitamin contents, vitamin A (retinol), E (${\alpha}-tocopherol$) and C in HMP were higher than those in HJP. The total polyphenol content of HMP (218.37 mg TAE/g) was higher than that of HJP (71.45 mg TAE/g). The total flavonoid content of HMP (64.95 mg RE/g) was also higher than that of HJP (32.67 mg RE/g). Moreover, the DPPH and ABTS radical scavenging activities ($IC_{50}$) were higher in HMP ($137.18{\mu}g/mL$ and $157.15{\mu}g/mL$) than those in HJP ($160.10 {\mu}g/mL$ and $186.01 {\mu}g/mL$), meaning that the former produces better antioxidant effects. It can be concluded that wild peach harvested in May contained higher functional materials such as vitamins and amino acids and had a higher antioxidant effect, than wild peach harvested in july.
This study is to investigate and to suggest the most efficient roach standardization that is performed and is preferred by consumers to provide benefits for all of them. The data was collected to obtain information about peach standardization consumption and consumer preference, and marketing situation by using interviews from peach producers, wholesaler and retailer, and consumers for three years (1997-1999). The most important standardization criterion at present was found to be a weight among peach producers, a color among wholesaler and retailer and consumers. In addition, sweetness was ranked first among the producers, wholesalers and retailers, and consumer if sweetness were detected without running peaches. Especially, consumers preferred to purchase small amount with small package and presented sweetness as the most preferred criterion. Thus, it is necessary for peach producers, wholesaler and retailers, and consumers to establish the small package standard and to subdivide the present system into several grades for performing the two-way system which labels grade with sweetness and weight.

In order to determine whether peach contains compounds to regulate adipocyte differentiation, extracts of flesh/pericarp of yellow/white peach were prepared in water, ethyl acetate (EtOAc), or n-butanol solvent and determined for effects on adipocyte differentiation in C3H10T1/2 or 3T3-L1 cells. Interestingly, none of peach extracts has statistically significant stimulatory effect on the adipocyte differentiation in C3H10T1/2. Furthermore, the presence of EtOAc extract of white peach pericarp (WPP) was found to inhibit lipid accumulation in 3T3-L1 cells both by microscopic examination of Oil Red O-stained lipid droplets and by spectrophotometric quantification of extracted stain, indicating a significant inhibitory effect on adipocyte differentiation. The inhibition of lipid accumulation was accompanied by a significant decrease in the expression levels of adipocyte molecular markers-peroxisome proliferator-activated receptor $\gamma$, CAAT enhancer binding protein $\alpha$, and fatty acid-binding protein. Thus, this study determined that WPP EtOAc extract contains the inhibitory compound(s) on adipogenesis.

The existing fruit sorter has the method of tilting tray and extracting fruits by the action of solenoid or springs. In peaches, the most sort processing is supported by man because the sorter make fatal damage to peaches. In order to sustain commodity and quality of peach non-destructive, non-contact and real time based sorter was needed. This study was performed to develop peach sorter using near-infrared spectroscopy in real time and nondestructively. The prototype was developed to decrease internal and external damage of peach caused by the sorter, which had a way of extracting tray with it. To decrease positioning error of measuring sugar contents in peaches, fiber optic with two direction diverged was developed and attached to the prototype. The program for sorting and operating the prototype was developed using visual basic 6.0 language to measure several quality index such as chlorophyll, some defect, sugar contents. The all sorting result was saved to return farmers for being index of good quality production. Using the prototype, program and MLR(multiple linear regression) model, it was possible to estimate sugar content of peaches with the determination coefficient of 0.71 and SEC of 0.42bx using 16 wavelengths. The developed MLR model had determination coefficient of 0.69, and SEP of 0.49bx, it was better result than single point measurement of 1999's. The peach sweetness grading system based on NIR reflectance method, which consists of photodiode-array sensor, quartz-halogen lamp and fiber optic diverged two bundles for transmitting the light and detecting the reflected light, was developed and evaluated. It was possible to predict the soluble solid contents of peaches in real time and nondestructively using the system which had the accuracy of 91 percentage and the capacity of 7,200 peaches per an hour for grading 2 classes by sugar contents. Draining is one of important factors for production peaches having good qualities. The reason why one farm's product belows others could be estimated for bad draining, over-much nitrogen fertilizer, soil characteristics, etc. After this, the report saved by the peach grading system will have to be good materials to farmers for production high quality peaches. They could share the result or compare with others and diagnose their cultural practice.

Peach (Prunus persica) has been recognized as a food allergen for over 20 years. However, there is little information about cross-reactivity with other foods. The aim of this study was to research cross-reactivity of Korean cherry and hot pepper on patients allergic to peach and its stability by digestive enzyme treatment. Peach, Korean cherry, and hot pepper proteins were extracted and separated by Tricine-SDS-PAGE analysis. The protein extracts had a wide range of molecular weight, from 3 kDa to more than 26 kDa, and displayed different patterns of protein bands on Tricine-SDS-PAGE. Peach allergic patients' sera were used to detect the allergenic protein in three samples. Three peach allergic patients' sera reacted strongly with 9 kDa protein of peach, which was the expected lipid transfer protein (LTP) as the major allergen of peach and was detected with anti-LTP1 polyclonal antibody. However, the reactivity of the 23 kDa protein in Korean cherry and hot pepper protein was stronger than that of the 9 kDa protein. The stability of protein extracts on digestive enzyme treatment was examined using simulated gastric fluids (SGF) and simulated intestinal fluids (SIF), in which digestive enzyme stability is one of the characteristics of allergen potentially causing food allergy. Findings confirmed that allergenic proteins in peach, Korean cherry, and hot pepper were not completely digested by SGF and SIF treatments from results of SDS-PAGE analysis. These results confirmed that Korean cherry and hot pepper might cause cross-reactivity in peach allergic patients, and its allergenic proteins have stability against digestive enzymes.
