The role of lactic acid bacteria (LAB) in honey as antifungal activity has received little attention and their mechanism of inhibitory of fungi is not fully understood. In this study, LAB were isolated from honey samples from Malaysia, Libya, Saudi Arabia, and Yemen. Twenty-five isolates were confirmed LAB by catalase test and Gram staining, and were screened for antifungal activity. Four LAB showed inhibitory activity against Candida spp. using the dual agar overlay method. And they were identified as Lactobacillus plantarum HS isolated from Al-Seder honey, Lactobacillus curvatus HH isolated from Al-Hanon honey, Pediococcus acidilactici HC isolated from Tualang honey and Pediococcus pentosaceus HM isolated from Al-Maray honey by the 16S rDNA sequence. The growth of Candida glabrata ATCC 2001 was strongly inhibited (>15.0 mm) and (10~15 mm) by the isolates of L. curvatus HH and P. pentosaceus HM, respectively. The antifungal activity of the crude supernatant (cell free supernatant, CFS) was evaluated using well diffusion method. The CFS showed high antifungal activity against Candida spp. especially The CFS of L. curvatus HH was significantly (p < 0.05) inhibited growth of C. glabrata ATCC 2001, C. parapsilosis ATCC 2201, and C. tropicalis ATCC 750 with inhibitory zone 22.0, 15.6, and 14.7 mm, respectively. While CFS of P. pentosaceus HM was significantly (p < 0.05) effective against C. krusei, C. glabrata, and C. albicans with inhibition zone 17.2, 16.0, and 13.3 mm, respectively. The results indicated that LAB isolated from honey produced compounds which can be used to inhibit the growth of the pathogenic Candida species.
Broad range of fatty acids were reported to show antimicrobial activities against broad range of microorganisms. However, possible changes of the antibacterial activity of a fatty acid based on structural variations are largely unknown. This study was focused on determination and comparison of the antimicrobial activities of the medium chain fatty acids, based on the position of carboxyl groups on either terminal end, against the representative food-pathogenic bacteria. Over all, mono-carboxyl medium chain fatty acids (MC-MCFA) presented stronger antimicrobial activities against the food-pathogenic bacteria tested including methicillin-resistant Staphylococcus aureus (MRSA) than di-carboxyl medium chain fatty acid (DC-MCFA). In addition, some of MC-MCFA and DC-MCFA showed high possibility to be used as a synergistic adjuvant for both the commercial β-lactam family antibiotics and aminoglycoside family antibiotics against MRSA.
Distribution of pathogenic vibrios in the seawater of live fish tank and effect of environmental factors on their existence were investigated by collecting samples from fish markets and restaurants in 6 different cities. Pathogenic vibrios and coliforms were determined by using the most probable number (MPN) procedure, and aerobic plate count was enumerated by the standard pour plate method. No Vibrio chulerae O1 was detected in all the samples tested. Detection rates of V. cholerae non-O1, V. parahaemolyticus and V. vulnificus in all the smaples tested were 7.7%, 69.2% and 23.1%, respectively. Water temperature and trubidity of the seawater measured were higher in the pathogenic vibrios positive samples than in those negative samples. However, higher salinity and pH were shown in the pathogenic vibrios negative samples than in positive samples. The aerobic plate counts and MPN or total and focal coliforms in the seawater were higher in the presence of pathogenic vibrios than in the absence of pathogenic vibrios. In this study, the presence of pathogenic vibrios in the seawater tested was closely related with other physiochemical parameters and populations of coliforms, indicators far food safety.

The distributions of sanitary indicative bacteria and pathogenic bacteria in seawater and four species of farmed fishes, including oliver flounder (Paralichthys olivaceus), black rock fish (Sebastes schlegeli), red sea bream (Pagrus major) and sea bass (Lateolabrax japonicus), collected at fish farms located in the southern coastal area of Korea were investigated from May to October in 2004. The detection rates of fecal coliform and Entirococcus spp. of sanitary indicative bacteria in all samples were $38.9\%$ and $23.8\%$, respectively. The occurrence of fecal coliform was highest of $58.3\%$ in Busan, Geoje and Wando area, followed Yeosu $33.3\%$, Jeju $12.5\%$, Tongyeong $11.1\%$. The occurrence of Enterococcus spp. was highest In Wando area ($45.8\%$), followed by Yeosu ($33.3\%$), Tongyeong ($22.2\%$), Busan ($16.7\%$), Geoje and Jeju ($12.5\%$). The detection rate of fecal coliform was higher than that of Enterococcus spp., except in the Tongyeong area. There was no difference in the detection rate of fecal coliform from May to October, but the detection rate of Enterococcus spp. increased with seasonal warming seawater temperature. Among the pathogenic bacteria, the detection rate of Vibrio alginolyticus ($49.2\%$) in all samples was highest, followed by V. parahaemolyticus ($36.5\%$), Staphylococcus aureus ($6.3\%$), Salmonella sp. ($2.4\%$). However, V cholerae, V. vulnificus and Shigella sp. were not detected in all tested samples. The detection rates of V. parahaemolyticus and V. alginolyticus increased with seasonal warming seawater temperature from May to August.

PCR technology has been widely used to detect and quantify microbial pathogens in foodstuffs, because the technique is rapid, sensitive, and selective. In this study, detection of contaminating pathogenic bacteria on shells of chicken eggs was performed using both a commercial multiplex polymerase chain reaction (PCR) kit and a viable count method employing a selective medium. The PCR kit was capable of detecting Campylobacter jejuni, Escherichia coli O157:H7, Staphylococcus aureus, Bacillus cereus, Vibrio parahaemolyticus, Listeria monocytogenes, Yersinia enterocolitica, Salmonella species, and Shigella species. Using the PCR method, five bacterial species were detected from 30 samples (33.3%) of 90 batches of eggs commercially available in a market. PCR products from B. cereus, S. aureus, L. monocytogenes, Y. enterocolitica, and E. coli O157:H7 were detected, and the numbers and frequencies of positive samples were 17 (18.8%), 12 (13.3%), 15 (16.6%), 16 (17.7%),and 4 (4.4%), respectively. None of any Salmonella species, C. jejuni, V. parahaemolyticus, or Shigella species was detected in this study. The results of PCR testing were confirmed using a typical viable count method employing a selective medium. We suggest that the multiplex polymerase chain reaction (mPCR) assay is a rapid and reliable method for detection of pathogenic bacteria contaminating eggs.

Lactic acid bacteria prevent the contamination of food products by inhibiting proliferation of pathogenic bacteria. This is done mainly by the production of lactic acid and antimicrobial peptides (AMPS) known as bacteriocins. The interest in these molecules resides in both their antimicrobial spectrum and safety for human health. The application of bacteriocins or producer strains has been considered to avoid the development of pathogenic bacteria, as most bacteriocins have significant inhibitory activity against food pathogens, such as Listeria monocytogenes. This article describes the classification, structure, mode of action, biosynthesis, and main applications of bacteriocins in different fields: agri-food, aquaculture, and medicine.
This study was carried out to determine the antibacterial activity of $SeO_2$ against pathogenic bacteria, methicillin-resistant Staphylococcus aureus (MRSA). Using the disc diffusion method, $SeO_2$ showed higher antibacterial activity against Gram-positive bacteria than Gram-negative bacteria used in this study. Coccus-form bacteria showed much susceptible to $SeO_2$, compared to bacillus-form bacteria. Compared to antibiotics-susceptible S. aureus, antibiotics used in this study showed lower antibacterial activity against MRSA. As $200-500{\mu}g/disc$ of $SeO_2$ was applied, diameters of clear zone for S. aureus and MRSA were 20-32.7 mm and 13.5-17.9 mm, respectively. For MRSA, minimal inhibitory concentration of $SeO_2$ was $40{\mu}g/ml$. When $SeO_2$ was added in culture broth, cell growth of MRSA was inhibited. These results will be applied to determine antibacterial mechanism of MRSA and other pathogenic microorganisms.
The effects of ultraviolet (UV) radiation were investigated with regards to the microbial growth inhibitory effect on the shelf life of Korean native cattle (Hanwoo) beef prior to refrigerated storage. The Hanwoo samples were exposed to UV radiation ($4.5mW/cm^2$) for 0, 5, 10, 15, and 20 min. The UV-irradiated beef that was exposed for 20 min showed significantly reduced mesophilic and psychrotrophic bacterial populations to the extent of approximately 3 log cycles, as compared to that of non-irradiated beef. About 2.5 Log CFU/g of mesophilic bacteria were different compared with UV-irradiated and non-irradiated meat. UV irradiation showed the most significant growth inhibition effects on mesophilic and psychrotrophic bacteria. Coliform and Gram-negative bacteria were also reduced by 1 log cycle. The population of L. monocytogenes, S. Typhimurium, and E. coli O157:H7 decreased significantly to 53.33, 39.68, and 45.76% after 10 min of UV irradiation. They decreased significantly to 84.64, 80.76, and 84.12%, respectively, after 20 min of UV irradiation. The results show that UV irradiation time and the inhibitory effect were proportional. These results verified that UV radiation prior to refrigeration can effectively reduce the number of pathogenic bacteria on the surface of meat and improve the meat's microbial safety.

This study was conducted to investigate the effects of antagonistic microorganisms, Bacillus spp., on growth of alfalfa(Medicag0 sativa L.) in repeated cultivation soil(RCS) and unrepeated cultivation soil(URCS). Alfalfa was established by seeding into pots 12 cm in diameter and 9 cm in depth containing 1 : 1 mixture of soil and vermiculite with antagonistic bacteria and pathogenic fungi. The growth experiment of alfalfa was conducted in pots in a vinyl house. The bacteria used in this study were Bacillus subtilis and hsants. B. subtilis was isolated and identified 60m forage rhizosphere soil and hsants isolated through cell fusion fiom B. subtilis 101 and B. thuringiensis. B. subtilis was named B. subtilis 101 and hsants named F -3 and F -8. From dark culture experimenf alfalfa was longer lived in treated soil with antagonistic bacteria than that in non-treated soil, and longer lived in URCS than that in RCS. However, alfalfa was shorter lived in RCS and URCS than that in autoclaved RCS. The number of leaves of alfalfa were positively affected by the inoculation of the antagonistic bacteria in both RCS and URCS. Dry weight of shoot and root was increased by the inoculation of the antagonistic bacteria(P< 0.05). However, the growth of alfalfa was decreased by the inoculation of the pathogenic hngi both RCS apd URCS.

Antimicrobial effect of tea extracts from green tea(steamed, roasted), oolong tea and black tea was investigated. Minimal inhibitory concentration(MIC) of tea extraxcts against 9 well known strains of foodborne pathogenic bacteria such as the Gram positive and Gram negative bacteria was determined at 37$^{\circ}C$. Significant antimicrobial activity was observed in the steamed green tea and the roasted green tea of the water-soluble fraciton, and the steamed green tea of the methanol-soluble fraction, and the steamed green tea, roasted green tea and the oolong tea of the crude catechin fraction. The MIC of these extracts against B. subtillis were 700$\mu\textrm{g}$/ml, 500$\mu\textrm{g}$/ml and 120 $\mu\textrm{g}$/ml, respectively. The crude catechin fraction possessed greater antimicrobial activity than did the other fractions. Among tea extracts, extracts of steamed green tea, roasted green tea and oolong tea showed higher antimicrobial activity than them of black tea. The MIC of the crude catechin fraction obtained from tea extracts against Gram-positive bacteria such as M. Iuteus, B. subtillis and S. mutans were 30~50$\mu\textrm{g}$/ml, 120~240$\mu\textrm{g}$/ml and 120~180$\mu\textrm{g}$/ml, and against Gram-negative bacteri such as e. aerogenes and V. parahaemolyticus were 50~60$\mu\textrm{g}$/ml and 60~70$\mu\textrm{g}$/ml in the broth medium, respectively. Especially, the MIC to Streptococcus mutans which has known as a causative bacteria of a decayed tooth were 120$\mu\textrm{g}$/ml, 140$\mu\textrm{g}$/ml, 180$\mu\textrm{g}$/ml and above 1,000$\mu\textrm{g}$/ml in steamed green tea, roasted green tea, oolong tea and black tea, respectively. Tea extracts had strong growth inhibition activity against foodborne pathogenic and dental bacteria.
