Estimated Iron Intakes from Simulated Fortification to Selected Grain Products in the Korea Food Supply (곡류제품의 철 강화 시나리오 작성 및 평가)

  • Until now, South Korea does not have either fortification or enrichment program as intervention tools although the addition of micronutrients to foods is for the most part not regulated. The aim of this study was to determine which scenario would most effectively reduce the proportion of the population with low iron intake while not putting other population groups at risk of excessive intakes. In order to investigate potential dietary consequences of iron fortification we analyzed 2 day dietary record data (n=3,955) from the 2001 National Nutrition Surveys. The Proportion of the population consuming dietary iron less than the estimated average requirement (EAR) ranged from $12.4{\sim}87.5%$ depending upon gender and age group. Iron fortification at the level of 100% of Recommended Intake (RI) per 100g to breads and instant o. dried noodles was estimated to result in a 15% decrease of proportion of those with iron less than EAR, while putting 1.4 % of the population greater than the Upper Limit (UL). Iron fortification appeared to be the most effective for the $15{\sim}19$ year old age group, showing 39% reduction of iron intake insufficiency. The results suggest that carefully designed fortification or enrichment to staple foods may contribute to increase dietary iron intakes of Koreans, especially for the young population with a high prevalence of iron inadequacy. As the estimation in this study was based solely upon dietary intake data, iron intake from supplements should be considered in further studies.

A Study on the Future Plans for Infant Feeding Practice and Its Associated Factors among University Students (대학생의 미래 모유수유계획에 영향을 미치는 요인)

  • This study was carried out to investigate the future plan for infant feeding practice and its associated factors among university students so as to develop focus for nutritional education program for the promotion of breastfeeding. The subjects were 301 students (males 130, females 171). The results obtained were as follows. In this survey, the subjects had a basic knowledge of breastfeeding and lactation, especially of the ingredient of breastmilk. However they were not well informed about the physiology and method of breastfeeding and benefits of breastfeeding for mothers. The average scores far attitude toward breastfeeding and lactation were 3.09 points on a 4 point scale, which indicated a slightly positive attitudes toward breastfeeding. However the participants had a negative attitude toward its emotional and practical aspects. Their future plan for infant feeding was breastfeeding 40.3%, formula feeding 3.0% and mixed feeding 56.7%. A concern was that the students showed a high rate with regard to a mixed feeding plan, and Dey decided this based on an incorrect knowledge of breastfeeding. The group who planned to breastfeed in the future (BF) showed higher scores with respect to knowledge and attitudes than those who planned to formula feed or mixed feed (FF + MF). Therefore, to encourage mothers to breastfeed and support breastfeeding, breastfeeding nutritional education is urgently needed among university students. In addition, nutrition education programs should promote the benefits of breastfeeding for mothers and the physiology and practical method of breastfeeding. Also a practical and culturally sensitive course about food and nutrition is recommended to inform participants about breastfeeding. (Korean J Community Nutrition 8(2) : 240∼249, 2003)

Major Food Groups and Dishes Contributing to Sugar Intake in Korea: Korea National Health and Nutrition Examination Survey 2016-2018 (국민건강영양조사 7기 자료를 이용한 한국인의 당류 섭취에 기여하는 주요 급원 식품군 및 음식 분석)

  • The intake of processed foods containing high levels of sugar increases the incidence of chronic diseases, including obesity, diabetes, and metabolic syndrome. Limiting sugar intake is important for a healthy life at all ages. Therefore, this study analyzed food sources and sugar intake by the different age groups based on the 7th Korea National Health and Nutrition Examination Survey (KNHANES). We used 24-hour recall survey data to investigate the daily sugar intake and the major food groups and main dishes contributing to sugar intake. The mean sugar intake was 58.9-66.8 g/day. The three major food groups contributing to sugar intake were fruits (15.2-19.9 g/day), beverages (10.7-12.4 g/day), and milk and milk products (7.6-7.8 g/day). Teas and other non-alcoholic beverages (14.7-17.3 g/day), fruits (12.5-16.2 g/day), and dairy products (7.0-7.6 g/day) were the major food groups that contributed to the sugar intake. Carbonated drinks, apples, and milk were the top sources of sugar intake in each group. In conclusion, the sugar intake of Koreans is mainly from carbonated drinks, fruits, and milk. These results provided the basic data for nutrition education and nutrition program development according to the different age groups of the Korean population.

Frequency of steamed food consumption and risk of metabolic syndrome in Korean females: data from Korean Genome and Epidemiology Study

  • Purpose: This study aimed to investigate the association between steamed food intake and risk of metabolic syndrome (MetS) in Korean females. Methods: Using Ansan/Ansung data of Korean Genome and Epidemiology Study, general characteristics, nutritional intake and biochemical and anthropometric markers of a total of 4,056 females aged 40 to 69 years were analyzed. MetS was defined following National Cholesterol Education Program Adult Treatment Panel III with some minor modifications. Logistic regression models were established to present the association between steamed food intake and the risk of MetS. Levels of food and nutrient intake by the frequency of steamed food intake and MetS phenotype were analyzed using general linear models. Results: A total of 38.4% of females had MetS. Among them, 24.9% of females with MetS had steamed food more than 1-3 times per week, which reduced the risk for MetS by about 25% (95% confidence interval [CI], 0.650-0.865). However, such association was not evident when various lifestyle factors were considered in statistical models. In rural residents, the benefit of having more steamed food was observed (adjusted odds ratio: 0.747; 95% CI, 0.583-0.958). The frequency of steamed food intake was associated with various food and nutritional intakes. However, trends in those did not differ by MetS phenotype. Conclusion: Having steamed food more than 1-3 times per week may reduce the risk of MetS compared to those who had less steamed food in Korean females. This protective effect of steamed food intake may differ by lifestyle and environmental factors. Although a clear difference in food and nutritional intake was not observed in this study, steaming could be an effective cooking method for a healthy diet for disease prevention and management.

Oral Health-Related Quality of Life(OHQoL) and Related Factors among Elderly Women (여성노인의 구강건강관련 삶의 질에 영향을 미치는 요인)

  • Purpose: The purpose of this study was to identify factors associated with oral health-related quality of life among elderly women living in the community. Method: The participants were 162 elderly women aged 65 and older who lived in D city. Descriptive statistics, ANOVA, Pearson correlation coefficients and stepwise multiple regression were used with SPSS/PC windows program to analyze the data. Results: The major findings of this study are as follows: 1) there were statistical differences in OHQoL for spouse presence, educational level, monthly income, self-rated health, number of teeth and chronic disease, and types of denture. 2) OHQoL was positively related to age, number of chronic disease and nutrition. Also, OHQoL was negatively related to educational level, monthly income, number of teeth, and diet habit. 3) Significant factors influencing OHQoL were self-rated health and nutritional status. Conclusion: Based on these results, it is necessary to do further study on oral health of those who have 20 or more teeth. Oral health promotion programs focusing on prevention are necessary for elderly women in the high risk group.

Survey on Food Preferences of Athletes in a Professional Soccer Team (프로축구선수의 음식기호도 조사)

  • Questionnaire survey was performed in order to set an adequate meal table for athletes taking their food preferences into consideration. The survey was conducted against 32 athletes of a professional soccer team. Statistical data analysis was performed utilizing SAS package program. The results of this study can be summarized as follows; 18.8% of the answerers were found out to consider their autotrophic nutritional status as above average, 75.0% considered theirs as up to the average and 6.2%, below average. Among answers to the question what they consider as the most critical factor in their staying healthy; sound sleep won the most votes followed by enough rest, tranquillity and balanced eating habit. Yet, 68.8% replied their meal sizes were not settled. And 46.9% thought nutritive supplement helpful and 96.9% of the answerers said a dietitian is required as their health manager. 62.5% of them preferred Korean cuisine. Chigye and Chongol were the most preferred menus(55.6%) and Namul (28.1%), Muchim(26.3%) and Cheok.cheon(23.9%) enjoyed relatively low preference.

A Study of Female College Students' Behavior and Ideal Breakfast Types -II. Dining-out Behavior of Breakfast and Preference on Breakfast Menu- (여대생의 아침식사 실태와 이상적 아침식사 유형을 위한 연구 -II. 아침식사 외식양상과 아침식단에 대한 기호도-)

  • This study was carried out to investigate the dining-out behavior of breakfast and preference on the menu of female college students. 500 questionnaires were distributed and 417 were used for statistical analysis(SAS program). This survey was conducted from June, 2000 to October, 2000. 72.8% of the respondents thought there were problems in eating breakfast. The problems were 'skipping breakfast frequently(33.1%)', 'short eating time(20.9%)', 'simple menu(18.8%)'. Preference of dining-out breakfast menus were 'bread & milk(43.8%)', 'conventional menu(34.7%)', 'snack(15.5%)', soup or 'porridge(6.0%)'. A general preference of breakfast menus were conventional (63.7%), 'bread & milk(21.1%)', 'milk and breakfast cereal(8.7%)', 'soup or porridge(6.5%)'. Increase on the amount of monthly allowance decreased the preference of conventional type of breakfast(P<0.05). The questions about the breakfast were 'what is the best menus for breakfast(49.2%)', 'alternative to rice(17.1%)', 'the amounts of breakfast(12.1%)'. But there was no significant difference among these variables. In conclusion, development of convenient & well-balanced breakfast model and nutritional education are needed to increase the nutritional status of female college students.

An Exploratory Study on the Perimenstrual Discomforts and Dietary Intake Level of Normal Women (일부 정상 여성의 월경 전후기 불편감과 식이섭취 수준에 대한 조사 연구)

  • Purpose: The purpose of this study was to explore the perimenstrual discomforts and dietary intake levels among normal women. Method: A prospective and descriptive study examined 38 women aged 23 46years of age. The data collection period lasted from April 1 to June 30, 2003. The participants were asked to keep a diary recording perimenstrual symptoms and food intake for 50 days. Results: There was a significant difference in physical symptoms of perimenstrual discomforts (F=6.95. p=.001). but there was no significant difference in dietary intake level according to three different phases of a menstrual cycle. The significant dietary intake variables correlated to PMS included energy, protein, Vitamin E, Vitamin $B_2$, niacin, Vitamin $B_6$, folic acid, phosphorus, iron, and zinc. They were negatively related to perimenstrual discomforts. Conclusion: Balanced diet intake will be necessary for not only the perimenstrual discomforts but also the general health promotion of the entire population. The dietary and nutritional assessment should be done prior to nursing interventions, and nutritional counseling and education should be given based on individual differences. In a further study, the effects of dietary composition on specific symptoms will be replicated with a large sample, and development of a diet intervention program for perimenstrual discomforts is recommended.

Perception of Nutrition Labeling on Restaurant Menus among Adults in Suwon (수원시 거주 성인의 외식 메뉴 영양표시에 대한 인식)

  • The purposes of this study were to investigate the perception of nutrition labeling on restaurant menus, and to analyze the differences among subject's characteristics, eating-out behaviors, and dietary attitudes. Information concerning general characteristics, health status, eating-out behaviors and dietary attitudes of subjects was collected by a structured questionnaire. From January 5th to February 27th in 2009, 406 questionnaires were completed by 157 males and 249 females. Statistical analyses were performed using by SPSS 14.0 package program. The perception of the importance of nutrition labeling was 3.89, while knowledge of whether restaurants provided sufficient nutrition information scored 2.26 indicating that being highly conscious of nutrition labeling, respondents did not view the supplied information as sufficient. Nutritional perception was greater in females and varied in both genders with age and health status. Significant differences concerning the perceptions of nutrition labeling were evident, based on eating-out behaviors and dietary attitudes. The results imply that nutrition labeling on restaurant menus should be based on consumer characteristics. Relevant nutrition labeling might help improve health by encouraging proper dietary habits and providing valuable nutritional information. Recognition of the importance of nutrition labeling and strategic implementation of labeling in menus would be prudent strategies for restaurant managers. A Study on Dietary Behaviors, Nutrients Intake Status and Hematological Status of Middle School Football Players in Busan (부산지역 일부 중학교 축구부 학생의 식행동, 영양섭취상태 및 혈액성상 조사)

  • The study was carried out to investigate the dietary attitude and hematological status of the middle school football players in Busan. The survey was conducted from September 15 to October 15, 2006 by questionnaires and data analyzed by the SPSS program. The results are summarized as follows: The weights and body mass indices of the football players were significantly lower than those of the control. Dietary attitude scores showed no significant differences between the groups. Nutrition knowledge scores of the football players were lower than those of the control. Both football players and the control preferred the sweet taste rather than others. The football players preferred the hot taste, meats, and fish rather than the control did. Serum triglyceride level of the football players was significantly lower than that of the control. Blood iron level was significantly lower in the football players than in the control. Blood urea nitrogen concentration was higher in the football players than in the control. Therefore proper nutritional education programs are required for middle school football players to improve their nutritional status and physical strength.
