시흥지역 초등학생의 간식섭취 실태 및 간식관련 영양지식에 관한 연구 (Snack Consumption Behaviors and Nutrition Knowledge among Elementary School Students in Siheung-si)

  • Good snack consumption behaviors are important among elementary students because snack provides additional energy and nutrients and because good dietary behaviors should be formed during early stages of life. This study investigated, among elementary school students, 1) snack consumption behaviors, 2) snack-related nutrition knowledge level, and 3) relationships between snack behaviors and snack-related nutrition knowledge. A convenience sample (N = 372), drawn from 5th and 6th graders of an elementary schools in Siheung-si, Gyeonggi-do, completed a pre-tested questionnaire. More than 85% of the participants snacked more than once per week. Most (77%) had their snacks at home. Fruit and fruit juice were the most frequently consumed and the most liked snack items. Taste was the most important in choosing a snack item closely followed by health/nutrition. Snack-related knowledge level was relatively high and the participants obtained their nutrition knowledge through mass media (30.4%) and family/friends (29.0%). Snack-related nutrition knowledge level and snack consumption behaviors showed positive relationships in various areas such as choosing more nutritious snack items and checking nutrition labels. Although this study was limited by its cross-sectional study design, these positive relationships suggest that better nutrition knowledge could result in better behaviors. Results of this study indicated that factual nutritional knowledge has been well transmitted to students. Therefore, future nutrition education on snacking could focus more on providing problem-solving and operational knowledge.

고등학교 급식 조리종사원의 영양지식과 영양교육 경험과의 관계 연구 (Influence of School Food Service Employees' Nutrition Education on Nutrition Knowledge)

  • This study was designed to investigate the relationships between nutrition education, nutrition awareness and nutrition knowledge of school food service employees. We analyzed 288 self-administered questionnaires. Most of the employees (89.8%) were with contract-managed food services, 45.1% were $41{\sim}50$ years old, and 45.4% had chef certification. Two-thirds of the employees received nutrition education on 'nutritionally balanced diet' and 'sources of calcium', whereas less than 50% received education on 'problems with carbohydrates', 'functions of iron', 'deficiency and sources of iron'. The degree of nutrition awareness was generally higher than the level of nutrition education experience. The mean nutrition knowledge score was 11.7 out of 20 possible points, The majority of employees correctly identified 'sources of calcium (91.8%)', 'functions of carbohydrates (91.4%)', 'sources of cholesterol (91.0%)', and 'problems with lipids (90.4%)'; less than 50% correctly answered 'sources of proteins (18.9%)', 'functions of iron (27.9%)', 'recommended dietary allowances (32.0%)', 'functions of lipids (40.2%)', and 'sources of vitamins (44.3%)'. A chi-square analysis revealed that the employees' actual knowledge did not differ significantly by nutrition education - with the exception of three topics; 'recommended dietary allowances', 'changes in vitamins during cooking', 'functions of water' - or by their nutrition awareness. Nutrition knowledge scores did not differ by sex, decreased with age, increased with academic background, and increased in careers of >10 years or that were contract managed. There were significant correlations between nutrition education scores and nutrition awareness scores (p<0.001); nutrition knowledge scores and nutrition education scores (p<0.001); nutrition knowledge scores and nutrition awareness scores (p<0.001).

전북지역 초등학교 남.여 교사의 식습관과 영양지식 (A Study on Food Habit and Nutrition Konwledge of Elementary School Teachers in Jeonbuk Area)

  • This study was carried out to investigate dietary habits and nutrition knowledge of teachers, who are in charge of actual education of nutrition knowledge and dietary habits for students, of the elementary schools. Five hundred male and female teachers, who attended the programs for teacher's qualification of 1st and 2nd grades and function education during summer vacations, were surveyed using of questionnaire at Jeollabuk-do Educational Training Institute. A lot of teachers have had undesirable dietary habits. The most frequently(65.4%) used sources of nutrition knowledge were mass media such as TV, radio, magazines and newspapers, About 93% of teachers recognized nutrition education for the students, and 75.6% of them answered that their dietary habits may have an influence on students' dietary habits. Or, teachers' nutrition knowledge level was found to be low in general. The improvement of dietary habits and their nutrition knowledge of the teachers are very important because their dietary habits and nutrition knowledge have an influence on formation of students' dietary habits.

식이 지방에 대한 영양 지식과 태도에 관한 조사 (The Nutrition Knowledge and Attitudes toward Dietary Fats)

  • Knowledge and attitudes on current selection of fats and oils were surveyed among college students and USDA extension off campus faculties. The objective of this survey was to obtain information about the nutrition knowledge and attitudes toward fats and to assess relationships between the nutrition knowledge, general attitudes toward dietary fats, and specific attitudes toward the eating of certain foods. The attitudes toward and nutrition knowledge of dietary fat sections consisted of 22 and 39 statements respectively. Avoiding red meat and eggs and avoiding fats as a flavoring were attitudes whose maintenance may require special, long-term intervention strategies. Replacing high-fat foods with low-fat foods, modification(cutting fat off any meat) and substitution were easily adopted and maintained low-fat habit. The responses to wanting to lose some weight and feeling better if increasing exercise were favorable. The attitudes toward the possible relationships between fat consumption and health were favorable. Respondents on the nutrition knowledge test attained a mean score of 129.69 and a median score of 127 our of the highest possible score of 200. Extension off campus faculties, nutrition majoring/majored subjects, and over 41-year-olds tended to have more favorable general attitudes and specific attitudes toward the consumption of certain foods and higher knowledge. Senior students had more negative general attitudes and specific attitudes, and college graduates and graduate students had more nutrition knowledge. Nutrition know-ledge was related to general attitudes toward dietary fats, but not to more specific attitudes toward the eating of certain foods. Nutrition education will not be effective in modifying the intake of dietary fats in the population because nutrition knowledge related to general attitudes toward dietary fats and general nutrition practice but not the eating of certain foods.

경기지역 일부 초등학교 비만아 및 정상아의 영양지식, 식사 및 생활 습관의 비교 (Comparison of the Nutrition Knowledge, food Habits and Life Styles of Obese Children and Normal Children in Elementary School in Kyeong-gi Province)

  • The nutrition knowledge and food attitude of obese children were assessed and compared with their normal children counterparts to provide information for nutrition education programs. One hundred forty six obese children and 92 normal children from the fourth to sixth grade in Bucheon and Anyang elementary schools of Kyeong-gi Province were selected for the study. A multiple choice questionnaire, including 12 items of general nutrition knowledge and 13 items of weight control, were used to test the nutrition knowledge of children. The results of this study are as follows : 1) 57.5% of male and 40.9% of female obese children had experience with weight control, but the rate of correct answers on the nutrition knowledge test ranged from 53% to 58%, which does not show any significant difference between the two groups. The rate of correct answers on items conrerning 'general nutrition knowledge' and 'nutrition knowledge for weight control' did not show any significant difference among the two groups. 2) Obese male students showed a higher rate of correct answers(59.2%) on items of 'the proper food selection for obese children', compared with their counterparts and also obese female students showed a higher rate of correct answers(88.6%) on 'physical exercise', compared with their counterparts. 3) The rate of correct answers on nutrition knowledge of 'basic food groups', 'the functions of iron and vitamins', 'the concept of energy', and 'the principle of weight change' were lower than 40%. 4) The obese children frequently did not have breakfast, overate during lunch in many cases, and had low recognition on knowledge that was necessary to weight control. 5) Only 30.9% and 22.7% of male and female obese children replied that they would participate in weight control programs. However, 53.6% of males and 68.2% of females did not show any concern in participating the programs. From these results, it was suggested that it is necessary to motivate the obese to participate in weight-control program. When developing nutrition education programs for the obese, the contents of the questions that showed a low correct answering rates should be emphasized.

식품영양전공과 비전공 여대생의 식행동과 영양지식에 관한연구 (A Study on Dietry Attitudes Food Behaviors and nutriton Know-ledge of Food and ANutrition Major and Non-Major Female Students)

  • The purpose of this study was to investigate dietary attitudes food behaviors and nutrition knowledge of food nutrition major and non-major female students. The subjects of this study consisted of 98 food and nutrition majors and 98 non-majors. Questionnaires were completed by them. Food and nutrition majors gave a serious consideration of taste and nutrition in selecting foods while non-majors considered taste food price amount of food and preparing time. Food and nutrition majors got higher scores in hig-her level of nutrition knowledge than non-majors and both got about the same scores in basic nutrition knowledge. The mean body weights of both were about the same and mean height of non-majors was hig-her than food and nutrition majors. Accrding to obesity index ideal body weight was more in food and nutrition ajors and underweight was more in non-majors. Dietary attitudes food behaviors and nu-trition knowledge of food and nutrition majors were better than those of non-majors. Therefore nutrition non-majors need nutrition education in order to improve their food behaviors and nutrition knowledge.

대학생들의 영양표시에 대한 지식, 태도 및 행동 조사에 관한 연구 (The Study of Knowledge, Attitudes, and Behaviors of University Students Regarding Nutritional Labeling)

  • This study investigated the knowledge, attitude, and behavior of 280 University students towards nutrition labels. The purpose of the study was to examine knowledge, attitudes, and behaviors of university students regarding nutrition labeling, and whether body mass index (BMI) with nutrition labeling was associated with knowledge, attitudes, and behaviors. Descriptive statistics analyzed knowledge, attitudes, and behaviors of university students regarding food labeling. The ANOVA and ${\chi}^2$ analysis was evaluated and assessed for its relationship with BMI. Pearson's correlation coefficient analysis examined relationships between knowledge, attitudes, and behaviors. More than 90 percent of answers relating to 11 nutritional knowledge questions were correct. Only 30% of participants answered correctly regarding questions about plan source oil and cholesterol content. Attitudes and behaviors of nutrition labels were significantly higher among participants who were obese (p<0.001). Knowledge score was positively correlated with general label usage behavior (r=.169, p<0.01), and item buying behavior (r=0.142, p<0.05). Attitude also was positively correlated with behavior (p<0.01). Nutrition labeling education efforts are needed to provide university students with a nutritional education program and information on how to read nutritional labels and apply this information to their lives. University students need to understand their need for numerous nutrients instead of merely focusing on the fat and calories of foods.

학교급식 영양사가 인식하는 영양교사의 효과적인 직무수행을 위한 지식 및 기술의 요구도와 자기평가 (Requirements and Self-evaluation of Knowledge and Skills Necessary for Effective Nutrition Teachers Perceived by School Foodservice Deititians)

  • The purposes of the study were to identify knowledge and skill levels required for effective nutrition teachers and to compare perceived need and dietitians' self-evaluation of the knowledge and skills. A total of 60 knowledge statements and 70 skill statements associated with 11 job functional areas were specified through a literature review and expert panel reviews. A total of 457 dietitians working at school foodservices in Seoul and Gyeonggi province were surveyed using a self-administrated questionnaire and 148 responses were returned. Excluding responses with significant missing data, 142 responses were used for data analysis. In terms of knowledge, 'sanitation, food safety and employee safety(4.60)' category received the highest perceived need score, followed by 'nutrition education(4.56)' and 'nutrition counseling(4.45).' The knowledge category that received the highest self-evaluation was 'nutrition and menu management(3.66)' while the category that received the lowest self-evaluation was 'teaching practices(2.83).' In terms of skills, the highest perceived need was associated with 'nutrition education(4.49)', followed by 'sanitation, food safety and employee safety(4.46)' and 'nutrition counseling(4.39).' The dietitians rated their skills related to 'sanitation, food safety and employee safety(3.67)' the highest but their skills related to 'teaching practices(2.84)' the lowest. The dietitians' self-evaluated knowledge and skill scores were significantly lower than their perceived need of the knowledge and skills in all job functional areas(p<0.001). A quadratic analysis based on the requirement and self-evaluation of the knowledge and skills revealed that priorities of the education programs targeting school nutrition teachers or students preparing to be a nutrition teacher should be placed on improving knowledge and skills related to nutrition education, nutrition counseling, teaching practices, sanitation and employee safety, and nutrition and menu management. Educational programs for nutrition teachers should be designed to decrease the gaps between the need and self-evaluation of the knowledge and skills for effective nutrition teachers. The findings of the study can be used to develop education materials for nutrition teachers. The knowledge and skills identified in the study should be updated and revised regularly to reflect changes in regulations and current practices in school foodservice programs.

주부(主婦)들의 영양지식(營養知識)과 태도(態度)에 관한 연구(硏究) - 서울시(市) 일부지역(一部地域)을 중심(中心)으로 - (A Study on the Homemakers Knowledge and Attitudes About Nutrition)

  • The objective of this study is to collect basic data which can lead effective direction in performing nutritional education, by investigating 273 homemakers' knowledge and attitudes about nutrition. This study was performed using questionnaire about the knowledge and the attitudes of nutrition according to the age, education level, occupation, food cost, and total income. Results were summarized as follows; 1) sources in the knowledge of nutrition appeared by order of T.V., cookbooks, magazines newspapers, mothers, friends, lecturers in cooking school, and nutritionist. 2) A level in the knowledge of nutrition which scord an average marks 154.7(the highest marks 210) was higher compared to other studies. Informations about food composition scord lower marks than other studies. 3) Attitudes about nutrition showed high score in the aspects that nutrition has an important role in health, and desirable eating habits were formed in childhood. 4) The knowledge of nutrition had no significant differences with age, occupation, and food cost whereas it had significant correlation with education level and total income. The higher the level in education and total income, the higher the level in the knowledge of nutrition. 5) The attitudes about nutrition had no correlation with age, occupation, but it had a significant correlation with education level, food cost and total income. 6) There was an significant correlation between the knowledge and attitudes about nutrition. In order to promote children's nutrition status, nutrition education for mothers must be accomplished in the first place. Development of T.V. program for children's nutrition education is desirable.

주부의 영양지식과 식습관에 관한 연구-서울을 중심으로- (Nutrition knowledge and food habits of housewives)

  • The completely answered questionnaires were analyzed for the nutrition knowledge, food habits, value orientation, and the sources of nutrition information of housewives of 20's to 40's. The subjects had a high level of perceived knowledge, that is the knowledge that each subject believed she hadm but the accuracy of the knowledge was only 51.6%. The mean nutrition knowledge score was 6.63 out of possible 15 points, and food habit score was 5.31 out of 10 points. Most of the subjects belonged to "Good" to "Fair" food habit group, which is considered to be relatively good. With increasing age and decreasing level of education, the percent of perceived knowledge and accuracy, and nutricion knowledge score were getting lower. However, the food habit score was getting higher with increasing age. This suggests that food habit was dependent more upon the length of married life than the nutrition knowledge in housewives. The corelation between nutrition knowledge score and food habit score was low. The economic area was the most concerned area of the subjects, followed by health and social. The scores of utrition knowledge and food abits of the subjects who ranked the health the highest were not different from those of economic and social. TV, radio, newspapers, and magazines were the most important sources of nutrition information.
