Physicochemical Characteristics and Antioxidant Capacity of Rice Cake (Sulgitteok) Supplemented with Lyophilized Sedum sarmentosum (Dolnamul) Powder

  • This study was performed to increase the availability of Sedum sarmentosum (Dolnamul) and to improve the nutraceutical value of rice cakes (sulgitteok). The contents of crude protein, mineral, dietary fiber, water holding capacity, and hardness significantly and directly increased with lyophilized sedum powder (SP). Pore ratio and expansion rate decreased in samples containing more than 10% SP compared to the control. In a sensory evaluation, a positive correlation was detected between overall acceptability and taste ($R^2$=0.99, p<0.01), and color ($R^2$=0.72, p<0.05). Total polyphenol contents of the SP-treated groups were significantly elevated, accompanied by an increase in radical scavenging ability estimated by the 1,1-diphenyl-2-picrylhydrazyl (DPPH) assay. Replacing 10% of the rice powder with SP efficiently improved the antioxidant and nutritional values of sulgitteok as well as its the sensory quality.

울금(Curcuma longa L.)이 이상지질혈증 흰쥐의 혈액요소질소(BUN) 및 효소활성에 미치는 영향 (Effects of Turmeric (Curcuma longa L.) Supplementation on Blood Urea Nitrogen and Enzyme Activities in Dyslipidemic Rats)

  • The purpose this study was to investigate the influences of 5% turmeric (Curcuma longa L.) supplementation on enzyme activities such as aspartate aminotransferase (AST), alanine aminotransferase (ALT), alkaline phosphatase (ALP), lactate dehydrogenase (LDH), amylase, lipase and catalase in serum of dyslipidemic rats. Sprague-Dawley (SD) rats (24 male) were divided into four groups, namely the ND group (normal-nondyslipidemic diet), NT group (normal-nondyslipidemic diet+5% turmeric), DD group (control-dyslipidemic diet), and DT groups (dyslipidemic diet+5% turmeric). Serum concentrations of blood urea nitrogen (BUN), creatinine and uric acid were significantly decreased (p<0.05) by turmeric supplementation diet. The activities of AST, ALT, ALP, LDH, amylase and lipase in sera of turmeric diet group were significantly decreased (p<0.05). The catalase activity in serum of turmeric supplementation group was significantly increased than dyslipidemic diet (p<0.05). In vivo experiment with dyslipidemic rats showed that ingestion of turmeric were effective in kidney and hepatic functional enzyme activities. Which suggests that turmeric material could be used for further studies as a potential source for nutraceutical foods.

  • Burdock (Arctium sp.) is known as a nutraceutical vegetable, especially in Japanese and Korean cuisine. While burdock plants are generally harvested for their tap roots, different parts of the plant are consumed as food or used as traditional medicines. This study investigated the physicochemical properties of the leaves, stems, roots, and peeled roots of the burdock plant based on their pH, soluble solid content, titratable acidity, color values, and mineral content. The pH differed significantly among the different plant parts, with the highest value in the leaves and the lowest in the stems. However, for the soluble solid content, the leaves had the lowest, while the peeled roots had the highest. The titratable acidity of the stems was significantly lower than that of the leaves, roots, and peeled roots. As regards the color values, the lightness value was highest for the stems, while the roots showed the highest redness value, followed by the peeled roots, and the leaves had the highest yellowness value. The leaves and stems contained almost three times more potassium than the roots and peeled roots. Thus, the higher content of different minerals in the leaves and stems of the burdock plant shows that these plant parts could be used as potential sources of dietary minerals.

천년초 발효물의 라디칼 소거능 (Radical-Scavenging Activities of Fermented Cactus Cladodes (Opuntia humifusa Raf.))

  • The aim of this work was to select suitable fermentation treatments for the efficient bioconversion of cactus (Opuntia humifusa Raf.) bioactive components with an improved radical scavenging activity for use as a nutraceutical. To obtain microorganisms for the microbial conversion of cactus, Leuconostoc mesenteroides ATCC8294, Lactobacillus plantarum KCTC 3099, Lactobacillus plantarum KERI 236 and Monascus pilosus KCCM 60029 (ATCC 22080) were used for fermentation. Fermentation by Lac. plantarum KCTC 3099 was the most effective at scavenging 1,1-diphenyl-2-picrylhydrazyl hydrate (DPPH) and 2,2-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radicals and reducing iron (III). In particular, uronic acid levels showed a remarkable increase in fermentation. The polyphenol and quercetin content of the fermented cactus showed large increases from $108.65{\mu}g/mL$ and $2.71{\mu}g/mL$ to $227.83{\mu}g/mL$ and $9.73{\mu}g/mL$, respectively, showing a maximum level at 36 h of fermentation with Lac. plantarum KCTC 3099. Thus, cactus fermentation with Lac. plantarum is an useful process for the enhancement of antioxidant contents and activity of fresh cactus.

진도산 울금(Curcuma longa L.) 추출물의 총 플라보노이드 함량 및 항산화 활성 (Total Flavonoid Content and Antioxidant Activities of Turmeric (Curcuma longa L.) Extracts in Jindo Korea)

  • The present study were conducted to determine physiological activities and antioxidant effects [2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, 2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging activity, reducing power, Ferric Reducing Antioxidant Power (FRAP) and Fe2+ (ferrous ion) chelating capacity] of 70% methanol, chloroform:methanol, 2:1 volume ratio (CM) and ethyl acetate extract of turmeric (Curcuma longa L.). Bioactive compound of tannin $0.125{\pm}0.007mg$ Catechin Equivalent (CE)/g dry weight. Turmeric extracts yield were 70% methanol 16.54%, CM 5.64% and ethyl acetate 4.14%, respectively. Antioxidant activity of the samples exhibited a dose-dependent increase. Results showed that extraction solvent had significant effects on total flavonoid content and antioxidant effects of ethyl acetate. But ferrous ion-chelating capacity of 70% methanol extract was higher than CM and ethyl acetate extract. From the results of this study, turmeric can be utilized as a valuable and potential nutraceutical for the functional food industry.

Soyasaponin의 RBL-2H3 세포에서 탈과립화 억제 효과 (Inhibitory Effects of Soyasaponins on Antigen-induced Degranulation in RBL-2H3 Cells)

  • 본 연구에서는 콩의 배축(hypocotyls)에서 분리된 4종의 soyasaponin(Aa, Ab, bg, DDMP)에 대해 RBL-2H3 세포를 이용하여 항알레르기 활성을 확인하고자 하였다. RBL-2H3 세포에서 soyasaponin 화합물들의 세포독성을 확인해 본 결과, 4종 모두 세포독성이 없었고 ${\beta}$-hexosaminidase assay를 통해 비만세포의 탈과립 억제 효능을 확인해 본 결과 대조군으로 사용한 Ketotifen fumarate($IC_{50}$: 38.77mM)와 비교하여 4종 모두 ${\beta}$-hexosaminidase 억제 효능이 있는 것을 확인하였다. 또한, soyasaponin 화합물들은 RBL-2H3 세포에서 탈과립 후 유리되는 대표적인 물질인 histamine의 분비 억제에도 효능이 있음을 확인하였고 이 중 Soyasaponin DDMP가 가장 효능이 우수한 것으로 판단된다.

발효 청미래덩굴잎 용매 추출물 및 분획물의 xanthine 및 aldehyde oxidase 저해활성과 항고요산혈증 효과 (Xanthine and Aldehyde Oxidase Inhibitory Activities, and Antihyperuricemic Effects of Fermented Smilax china L. Leaf Extracts and Fractions)

  • Aspergillus oryzae로 발효시킨 청미래덩굴잎 용매추출분획물의 xanthine oxidase (XO) 및 aldehyde oxidase (AO) 저해활성과 항고요산혈증에 미치는 영향을 조사하였다. 용매별 추출수율(g/kg)은 80% ethanol (EtOH)은 13.56이었으며, n-hexane, dichloromethane (DICM), ethylacetate (EtOAc) 및 n-butanol fraction (BuOH)은 1.35-3.33 범위였다. Total polyphenol 함량(mg/g-extract)은 EtOAc fraction 478.07-501.26, BuOH fraction 259.49-289.02, DICM fraction 165.03-232.27, EtOH fraction 134.02-196.54이었으며 EtOAc 및 DICM fraction에서는 발효시킨 경우가 비발효에 비하여 각각 4.85 및 40.74%가 높았으나 그 외 모든 fraction에서는 발효시킨 경우가 낮았다. 총 flavonoid 함량은 EtOAc fraction이 여타 fraction에 비하여 높았다. EtOAc 및 BuOH fraction의 TF 함량은 발효시킨 경우가 비 발효에 비하여 각각 10.56% 및 60.17%가 높았으나 여타 fraction들에서는 발효시킨 경우가 낮았다. XO 저해활성은 모든 분획물에서 발효시킨 경우가 비발효에 비하여 현저하게 높았으며 EtOAc 및 BuOH fraction의 경우 발효시킨 경우는 각각 75.02 및 65.59%로 비발효 경우 39.42 및 5.34% 보다 현저하게 높았다. AO 저해활성은 DICM과 EtOAc fraction에서 각각 81.82 및 77.93%로 여타 fraction들에 비하여 높았으며 XO의 경우와 마찬가지로 발효시킨 경우가 비발효에 비하여 현저하게 높았다. 고요산혈증 mouse의 혈중 요산(SU) 함량에 미치는 영향을 조사한 결과, 고요산혈증 대조군의 SU 함량은 6.98 mg/dL로 정상대조군 (NC)의 3.82 mg/dL에 비하여 1.83배가 높았으나, EtOAc fraction은 투여량에 의존적으로 SU의 함량이 감소하였으며, 발효시킨 경우가 비발효에 비하여 유의적인 감소를 보였다. 이상의 결과, A. oryzae와 청미래덩굴잎의 발효과정을 통해, glycoside형태의 flavonoid를 aglycone화하여 비발효에 비해 높은 XO 및 AO 저해활성과 함께 항고요산혈증 효과를 나타내는 것으로 사료된다.

발효 청미래덩굴잎 추출물의 혼합에 의한 토복령의 항산화활성 증진효과 (Enhanced Anti-oxidant Activity Effects of Smilax china L. Rhizome Water Extracts Added with Its Fermented Leaf Water Extracts)

  • Aspergillus oryzae로 발효시킨 청미래덩굴(Smilax china L) 잎열수추출물(FSCL)의 첨가가 토복령 열수추출물(SCLR)의 항산화능에 미치는 영향을 조사하기 위하여 각 2% 열수추출물을 0:100 (A), 20:80 (B), 40:60 (C), 60:40 (D), 80:20 (E), 100:0 (F) (v/v)의 조건으로 혼합하였을 때 total polypheno l(TP) 및 total flavonoid (TF) 함량, $OD_{475}$, 전자공여능(EDA), 철환원력(FRAP), xanthine oxidase (XO) 및 aldehyde oxidase (AO)에 대한 저해활성과 관능적 품질을 조사하였다. A와 F의 TP 함량은 각각 3.78 및 9.37 mg/100 mL, TF 함량은 각각 0.24 및 1.84 mg/100 mL로 FSCL이 SCLR에 비하여 TP는 2.48배, TF는 7.67배가 높았으며 FSCL의 첨가비율이 높아질수록 비례적으로 높았다($R^2=0.9887$, $R^2=0.9592$). $OD_{475}$는 FSCL의 첨가비율이 높아질수록 거의 비례적으로 높은 흡광도를 나타내었다($R^2=0.9850$). EDA (% at mL)는 A (25.75%)에 비하여 F (54.63%)에서 2.12배가 높았으며 FSCL의 첨가비율이 높을수록 높아지는 경향을 보였다($R^2=0.9668$). FRAP ($Fe^{2+}{\mu}mole/g$ of dry basis)의 경우도 EDA와 마찬가지로 A (1.18)에 비하여 F (4.92)에서 4.17배가 높았으며, FSCL의 첨가비율이 높아질수록 비례적으로 높았다($R^2$=0.9907). A의 XO에 대한 저해활성(mg/mL of $IC_{50}$)은 1.19로 F의 2.96에 비하여 59.80%가 높았으며, FSCL의 첨가비율이 높아질수록 비례적으로 감소하였다($R^2$=0.9490). 그러나 AO에 대한 저해활성(mg/mL of $IC_{50}$)은 XO의 경우와 반대로 A (3.37)에 비하여 F (1.41)에서 58.16%의 높은 저해활성을 나타내었으며, FSCL의 첨가비율이 높아질수록 높아지는 경향을 보였다. 향에 대한 기호도는 A와 F에서는 각각 2.77 및 2.72점으로 비슷한 값을 보였으며 발효청미래덩굴잎 열수추출물을 20-80 비율로 혼합하였을 때는 다소 향상되는 경향을 나타내었으나 상호간의 유의적인 차이는 없었다. 그러나 40% 혼합(C) 하였을 때는 무첨가 경우(A 또는 F)에 비하여 유의적으로 향상되었다. 맛에 대한 기호도는 F에 비하여 A에서 다소 높은 값을 나타내었으며 C에서 가장 높은 값을 나타내었다. 색상에 대한 기호도는 40-80% 첨가한 경우가 A, F 및 B보다 높았다. 입맛과 종합적인 품질에 대한 기호도는 C, D에서 가장 높았다. 이상의 결과 A. oryzae로 발효시킨 청미래덩굴잎의 열수추출물은 보이차 스타일의 적갈색을 나타내며, 토복령 열수추출물과 혼합함으로써 음료로서의 기호성이 높아짐과 동시에 EDA 및 FRAP와 같은 항산화활성이 높아지나, ROS 생성계 효소로 알려져 있는 XO와 AO의 활성 억제현상은 상반된 결과를 나타내고 있어 이와 관련된 기능성 식품 개발에 대한 기초자료로 활용할 수 있을 것으로 생각한다. 그러나 현재 실험의 결과만으로는 어떠한 성분이 이러한 항산화활성의 변화에 관여하는지는 확인할 수 없으며 추후 계속적인 연구 검토가 필요하다.

Nanofood and Its Materials as Nutrient Delivery System (NDS)

  • Incorporation of bioactive compounds such as vitamins, probiotics, bioactive peptides, and antioxidants into Nutrient Delivery System (NDS) for 'nanofood' provides simple way to develop novel functional foods that may have physiological benefits or reduce risks of diseases. As vital nutrient in nanofood, proteins possess unique functional properties including ability to form gels and emulsions, which allow them to be ideal nanofood materials for encapsulation of bioactive compounds. Based on protein physico-chemical properties, this review describes potential role of nanofood materials for development of NDS in hydrogel form, micro-or nano-particles. Applications of these nanofood materials to protect delivery-sensitive nutraceutical compounds are illustrated, and impacts of particle size on release properties are emphasized.

  • Zingiber officinale is a spice which is having a strong historical medicinal background and used by different systems of medicine for various ailments. It is also used to maintain the characteristic sharpness and tangy essence of food and beverages and used in carbonated drinks, as a conserve in sugar syrup. Ginger considered as an incredible drug for inflammation, gastrointestinal problems, pain and sexual problems since centuries. There are many studies carried out in recent years, which proves that the active constituents of ginger shows a variety of pharmacological effects like antiemetic, hepatoprotective, anti hyperlipidemic and antibacterial. The most momentous among all the nutraceutical aspects of ginger are its positive control on gastrointestinal tract including digestive stimulant action, anticancer effect and anti-inflammatory effect.
