The previous study reported the biological effect of magnetic field exerted by acting on endocrine and anti-oxidant system. The present study aims to study whether ELF-MF (extremely low frequency magnetic field) affects the physiological endocrine systems such as thyroid and whether ELF-MF affects the defense system against oxidative stress when it alters the function of thyroid. Finally, we correlate the effects of MF on oxidative stress, and adrenal and thyroid with an environmental stress factor. We exposed sham or MF to rats for 5 or 25 days. After the exposure, we determined pain sensitivity, level of TSH, $T_3$ and free $T_4$ in plasma. We also assayed in whole brain, lipid peroxidation, the activity of enzymatic anti-oxidant defense including superoxide dismutase(SOD) and glutathione peroxidase (GPx), and non enzymatic defense such as reduced or oxidized glutathione contents. MF induced the hypersensitivity to thermal stimuli with the reduction of latency. $T_3$ and $T_4$ levels were also increased by the exposure of MF. In addition, we observed the rise of MDA level in rat brain by MF although the MF did not change superoxide dismutase and glutathione peroxidase activity. The effect of MF on both reduced and oxidized glutathione results in decrease in reduced or oxidized glutathione in whole brain. In every experiment, there was no significant difference in MF influence between short term (5 days) and long term (25 days) exposure. Taken together, MF exposure affects the thyroid hormonal control in brain. The elevated thyroid hormone acts on brain, leading to hyper-utilization of oxygen. This phenomenon may be correlated with oxidative stress resulting from MF exposure. In conclusion, we suggest that MF exposure may be an environmental stress by exerting oxidative stress.
Present study aims to study antioxidant enzyme activity due to turbidity change in various tissues of Carassius auratus. As for the changes of antioxidant enzyme activity in tissues of C. auratus pursuant to the raising period under 50, 100, and 150 NTU with turbid water levels, there was no great difference between 50 NTU and 100 NTU compared to a control (0 NTU), however, it demonstrated a relatively noticeable difference at 150 NTU high turbid water level. When considering the antioxidant capacity in tissues of C. auratus in terms of DPPH free radical scavenging activity, there was shown a high activity in gill and liver tissues, therefore, it is thought that there appears a non-enzymatic antioxidant reaction when C. auratus is reared under the condition of highly turbid water. As for the enzymatic antioxidant reaction of antioxidant enzyme activity got increased as turbid water level went higher in order of 50, 100, 150 NTU, and the activities of superoxide dismutase (SOD), catalase (CAT), and glutathione-s-transperase (GST), increased in all tissues except for an integument, up to 20th day when it was started to be reared, and they showed a gradual decrease as time passed by. However, since the activity of glutathione reductase (GR) and glutathione peroxidase (GPX) is very low in almost all tissues, it is thought that the role of those enzymes would be quite ignorable in the course of antioxidant process.
Lipases are well known as the enzymes which catalyze the hydrolysis of ester bonds combining aliphatic chains and glycerol on mono-, di- and triglycerides. Their reactions are characterized by be-ing heterogeneous and catalyzing the water-insoluble substrates. This property has been one of the Hurdles which delayed the application of lipases in fats and oils industry, However, with the development of biological reaction system of which organic solvent is introduced in part or whole as the reaction media, enzymatic manipulation of fats and oils is attracting increasing attention from the academic and industrial sectors. Trials in two-phase system and reversed micellar system to produce fatty acids through enzymatic hydrolysis of triglycerides preyed to be efficient in respect to volumetric productivity, fat hydrolysis rate, product separation, etc. In organic solvent system lipases have been found to have the ability to catalyze aminolysis, transesterification, esterification, thiotransesterification and oximolysis that are virtually impossible to catalyze in water. The organic solvent system is being extensively used in interesterifying glycerides to produce a fat with the modified physical and chemical nature.
This work aimed to investigate the psychobiotic effects of six bacterial strains on the mind and behavior of male Wistar rats. The probiotic (PRO) group (n=7) were rats pre-treated with antibiotics for 7 days followed by 14-day probiotic administration, antibiotics (ANT) group (n=7) were rats treated with antibiotics for 21 days without probiotics. The control (CON) group (n=7) were rats that received sham treatment for 21 days. The six bacterial strains with probiotic properties were mostly isolated from Thai fermented foods; Pedicoccus pentosaceus WS11, Lactobacillus plantarum SK321, L. fermentum SK324, L. brevis TRBC 3003, Bifidobacterium adolescentis TBRC 7154 and Lactococcus lactis subsp. lactis TBRC 375. The probiotics were freeze-dried into powder (6×109 CFU/5 g) and administered to the PRO group via oral gavage. Behavioral tests were performed. The PRO group displayed significantly reduced anxiety level and increased locomotor function using a marble burying test and open field test, respectively and significantly improved short-term memory performance using a novel object recognition test. Antibiotics significantly reduced microbial counts in rat feces in the ANT group by 100 fold compared to the PRO group. Probiotics significantly enhanced antioxidant enzymatic and non-enzymatic defenses in rat brains as assessed using catalase activity and ferric reducing antioxidant power assay, respectively. Probiotics also showed neuroprotective effects with less pyknotic cells and lower frequency of vacuolization in cerebral cortex. This multi-strain probiotic formulation from Thai fermented foods may offer a potential to develop psychobiotic-rich functional foods to modulate human mind and behaviors.
With the spread of COVID-19 worldwide, non-face-to-face services have grown rapidly, but at the same time, the problem of plastic waste is getting worse. Accordingly, eco-friendly policies such as carbon neutrality and sustainable circular economy are being promoted worldwide. Due to the high demand for eco-friendly products, the packaging industry is trying to develop eco-friendly packaging materials using PLA and PBAT and create new business models. On the other hand, Ulva australis occurs in large quantities in the southern seas of Korea and off the coast of Jeju Island, causing marine environmental problems. In this study, lactic acid was produced through dilute acid pretreatment, enzymatic saccharification, and fermentation processes to utilize Ulva australis as a new alternative energy raw material. In general, seaweeds vary in carbohydrate content and sugar composition depending on the species, harvest location, and time. Seaweed is mainly composed of polysaccharides such as cellulose, alginate, mannan, and xylan, but does not contain lignin. It is difficult to expect high extraction yield of the complex polysaccharide constituting Ulva australis with only one process. However, the fusion process of dilute acid and enzymatic saccharification presented in this study can extract most of the sugars contained in Ulva australis. Therefore, the fusion process is considered to be able to expect high lactic acid production yield when a commercial-scale production process is established.

Heavy metals, including lead (Pb) toxicity, are increasing in soil and are considered toxic in small amounts. Pb contamination is mainly caused by industrialization - smelting, mining. Agricultural practices - sewage sludge, pests and urban practices - lead paint. It can seriously damage and threaten crop growth. Pb can adversely affect plant growth and development by affecting the photosystem, cell membrane integrity, and excessive production of reactive oxygen species (ROS) such as hydrogen peroxide (H2O2)andsuperoxide(O2.-). NO is produced via enzymatic and non-enzymatic antioxidants to scavenge ROS and lipid peroxidation substrates in terms of protecting cells from oxidative damage. Thus, NO improves ion homeostasis and confers resistance to metal stress. Our results here suggest that exogenous NO may aid in better growth under lead stress. These enhancements may be aided by NO's ability in sensing, signaling and stress tolerance in plants under heavy metal stress in combination with lead stress. Our results show that GSNO has a positive effect on soybean seedling growth in response to axillary pressure and that NO supplementation helps to reduce chlorophyll maturation and relative water content in leaves and roots following strong burst under lead stress. GSNO supplementation (200 µM and 100 µM) reduced compaction and approximated oxidative damage of MDA, proline and H2O2. Under plant tension, a distorted appearance was found in the relief of oxidative damage by ROS scavenging by GSNO application. In summary, modulation of these NO, PCS and prolongation of metal past reversing GSNO application confirms the detoxification of ROS induced by toxic metal rates in soybean. In summary, these NO, PCS and metal traditionally sustained rates of reverse GSNO application confirm the detoxification of ROS induced by toxic metal rates in soybean.

The physicochemical characteristics of ${\beta}-glucan$ isolated from waxy and non-waxy barley were investigated. The hull-less waxy and non-waxy barley containing 6.5% and 5.3% of total ${\beta}-glucan$ respectively, were used as a starting material. The yield and ${\beta}-glucan$ content of crude ${\beta}-glucan$ from waxy barley was 5.54% and 62.9%, respectively, and those were higher than 3.34% and 59.2% from non-waxy barley. The crude ${\beta}-glucan$ purified with selective precipitation and enzymatic treatment to obtain the ${\beta}-glucan$ isolate of high purity (>99%). The total yield of purified ${\beta}-glucan$ from waxy and non-waxy barley was 4.46% and 2.59%, respectively. The surface appearance of the purified ${\beta}-glucan$ by scanning electron microscopy (SEM) showed randomly entangled multi-net structure of ${\beta}-glucan$ microfibrils. The melting temperature of ${\beta}-glucan$ from waxy and non-waxy barley measured by differential scanning calorimetry (DSC) was $184.6^{\circ}C$, and $180.3^{\circ}C$, respectively. DSC endotherm of ${\beta}-glucan$ solution showed 2 peaks near $68^{\circ}C$ and $84^{\circ}C$. Enthalpy of phase transition was higher in non-waxy ${\beta}-glucan$ than waxy ${\beta}-glucan$, and the intrinsic viscosity of ${\beta}-glucan$ solution from waxy barley was higher than that of non-waxy ${\beta}-glucan$. The pasting viscosity of barley starch with the purified ${\beta}-glucan$ determined by Rapid Visco-Analyzer was higher than that of barley starch without ${\beta}-glucan$, and the effect of ${\beta}-glucan$ on increasing the paste viscosity was greater in non-waxy barley starch.
In order to develop a simple and effective method for determining the rate of the Maillard reaction in non-fat dry milk, the carbon dioxide content of the headspace as an indicator were used and the amount of correlation between $CO_2$ content and brown color development were determined by the gas chromatograph. There is a high correlation between brown color and $CO_2$ content. The use of gas chromatography to analyze the $CO_2$ in the headspace of samples is a quick, simple and effective method of monitoring the Maillard reaction. Volatile concentration increases with storage time and varies inversely with oxygen content. Lysine is more effective than glucose in catalyzing the Maillard reaction. Product samples can be stored at $55^{\circ}C$ and $68^{\circ}C$ to accelerate the rate of the Maillard reaction and shorten testing period, but product stored at $75^{\circ}C$ is degraded too rapidly to be of any real use.
Color is one of the most important quality factors of red ginseng (Hong-sam) which is processed from fresh ginseng (Panax ginseng C. A. Meyer). Therefore, a study of characteristics of browning mixtures of aqueous fresh ginseng extracts, factors which accelerate the browning of the aqueous extracts, and the antioxidant activity of the browning mixtures may contribute to the improvement of the color and other quality of red ginseng and other ginseng products such as ginseng extracts. In the present study, factors which affect the Maillard-type browning reaction of aqueous extracts of fresh ginseng roots were investigated firstly by adding various concentrations (0.001-0.5M) of arginine or glucose solutions, by varying the browning reaction temperatures and durations. Secondly, some characteristics such as brown color intensity, amounts of water-soluble and ether-soluble extracts, amounts of non-dialyzable materials, pH, viscosity, and reactivity with 2,2'- diphenyl -1 - picrylhydrazyl and antioxidant activity of the browning mixtures of the aqueous fresh ginseng extracts with small amounts of 0.1 M arginine, 0.1 M glucose, and distilled water at various browning temperatures and reaction time were studied. The results of the present study are as follows. 1. Color intensity (absorbance at 470 nm) of the browning mixtures was increased by adding various concentrations of arginine solution to the fresh ginseng extract, but the addition of the same amount of glucose solution did not increase the color intensity. 2 The amounts of water- or ether-soluble extracts, amounts of non-dialyzable materials were slightly greater in case of the browning mixtures of the fresh ginseng extract with 0.1M arginine solution than in case of the browning mixtures of the fresh ginseng extract with the same amount of 0.1 M glucose solution. In the process of the browning reaction, the pH of the browning mixtures of the fresh ginseng extract with 0.1 M arginine solution decreased slightly, while that of the browning mixtures with 0. 1 M glucose solution was almost constant. 3. The color intensity (absorbance at 470 nm) of the browning mixtures of the fresh ginseng extract with 0.1 M arginine or 0.1 M glucose solutions did not correlate well with the reducing power or the antioxidant power of the browning mixtures. The antioxidant activity of 90% ethanol extracts from the earlier stages of the browning mixtures of the fresh ginseng extract with the arginine solution was almost comparable to that of the 90% ethanol extracts from the later stages of the corresponding browning mixtures. The browning mixtures of only the fresh ginseng extract or of the fresh ginseng extract with the glucose solution showed considerable antioxidant activity, although both showed less brown color intensity than the fresh ginseng extract with he arginine solution.
This study investigated the physicochemical properties of rice starch isolated from broken rice using alkaline steeping (AKL) and enzymatic digestion (ENZ) methods. Broken rice starch (BRS) by AKL and ENZ possessed crude protein contents (0.6-1.4%) acceptable to commercial products of native starch and belonged to an intermediate amylose rice starch. AKL-BRS and ENZ-BRS showed a typical A-type crystal packing arrangement with small variations in their relative crystallinity. ENZ-BRS exhibited higher gelatinization onset and peak temperatures, and a narrower gelatinization temperature range than AKL-BRS, indicating that annealing occurred in ENZ-BRS. Lower swelling power and solubility were generally observed in the ENZ-BRS. ENZ-BRS also showed slower viscosity development, higher peak and trough viscosities, and lower breakdown, final, and setback viscosities, compared to those in AKL-BRS. These results are ascribed to the annealing phenomenon in ENZ-BRS. Overall, BRS from cheap broken rice using AKL and ENZ could contribute to the expansion of rice starch utilization in food and non-food industries.
