The purpose of this study was to test whether moderate alcohol consumption has any positive effect on lowering blood pressure among Koreans. Study subjects were Korean adults 20 years or older (n=5,234) who participated in the 2001 Korean National Health and Nutrition Examination Survey (KNHANES). Analysis of variance and analysis of covariance were used to construct univariate and multivariate models relating alcohol consumption to blood pressure for the analysis. After adjustment for possible covariates, drinkers (regardless of drinking level) had significantly higher systolic and diastolic blood pressure, compared with never-drinker for male subjects. Diastolic and systolic blood pressures were also significantly elevated with the drinking frequency and amount of alcohol intake among male subjects. For the female subjects, only diastolic blood pressure was significantly associated with the alcohol consumption at multivariate model. however, low level alcohol consumption did not show any sign of lowing effects on blood pressure. The result implies that moderate alcohol consumption did not have any positive effect on lowering blood pressure among Koreans for either sex.
Objectives: This study was undertaken to compare dietary life of the elderly living alone and in a family, and to compare differences based on gender, for the 2013-2016 Korea National Health and Nutrition Examination Survey (KNHANES). Methods: The subjects included 2,612 elderly people aged over 65 years who participated in the health survey, health examination and nutrition survey. Subjects on a diet therapy were excluded. This study analyzed the general characteristics, dietary habits, daily energy and nutrient intakes, CPF ratio, estimated average requirement (EAR), nutrient adequacy ratio (NAR) and mean adequacy ratio (MAR), index of nutrient quality (INQ), and food consumption of the elderly living alone and in a family. We also compared the differences based on gender. Results: Daily intake of food, water, dietary fiber, potassium, retinol, and riboflavin were low in the male elderly subjects living alone. The elderly living with family revealed higher NAR and MAR as compared to the elderly living alone. Although all MAR values were <1, the elderly living alone had lower values. Considering the intake of food, the consumption of seaweed, fish and shellfish, and oils (animal) was higher in elderly men living with families, whereas women living with families consumed more vegetables, fruits, seaweeds and seafood, as compared to their counterparts living alone. Furthermore, analyzing the foods consumed by the elderly people living alone, female subjects consumed more seaweed, milk and animal oil as compared to male subjects. Conclusions: The results of this study indicate that the elderly living alone have poor nutrient intake as compared to the elderly living with families. Based on this research data, we recommend that it is necessary to improve the health and nutritional status of the elderly living alone.
The purpose of this study was to examine the status of coffee intake in South Korea by analyzing the 4th Korea National Health and Nutrition Examination Survey. The results showed that 52.3% of Koreans consumed coffee at least once a day. Males consumed coffee more frequently than females and those aged 20-39 years and 40-59 years consumed coffee most frequently. Coffee drinkers consumed coffee two times a day and 138 mL each time on average. Coffee was mainly consumed either at home (44.8%) or in the workplace (36.1%); males drank coffee most frequently in the workplace and females did so at home. Milk coffee including coffee from vending machines and coffee mix (73.8%) was the most common type of coffee consumed. The results of this study would extend the understanding of the general status of coffee intake in South Korea, which has shown steady growth but remains a relatively overlooked research area.
The present study assessed the relation of dietary fiber to food habits in Korean adults aged 20 and over, using a newly established dietary fiber, as well as the 2001 Korean National Health and Nutrition Survey. The per capita average dietary fiber intake of Koreans was estimated to be 12.25 ${\pm}$ 5.23 g/1,000 kcal. Calorie-based dietary fiber intakes for females was over the KDRl, but for males it was below the KDRI. The levels of total dietary fiber and energy corresponded with frequent snacking but calorie-based dietary fiber intake did not. The subjects who skipped meals, frequently ate out and consumed fried foods tended to have lower levels of calorie-based dietary fiber although the levels of energy and total dietary fiber corresponded with frequent eating-out and consumption of fried foods. The results of this study suggest that Koreans must make efforts to regularly have three meals a day, reduce the frequency of eating out and consume fewer fried foods in order to maintain the optimum intake levels of dietary fiber that protect against chronic diseases.

This survey was carried out to obtain an information for the improvement of nutrition and the enlightment of dietary life in a near by area of DMZ during the later part of July, 1981. A total of 50 households were selected from Tonghyun-ri, Yunchun-eup, Yunchun, Gyunggi province. As a results of survey, the average intake of vegetable food was as high as 98% and that of the protein intake of good quality was not sufficient. Generally energy and nutrition intake were higher than the recommended dietary allowances and national nutrition survey data of Korean. There were no remarkable clinical symptoms related with nutritional deficiency on the entire target, but were some clinical symptoms related with vitamin deficiency on the children. The housewives lived at target area have a tendency to like the food which they are sued to eat daily and that food was mostly self-supplyed.
This study aimed to develop a nutrition education internet program for correcting the eating-out behaviorial problems of youth. A survey was performed to investigate the eating-out behavior patterns of youth by questionnaires. A nutrition education program was developed on the basis of the survey results, and evaluated by teenagers. The results of the developed homepage are summarized as follows: The contents of this program (www.health14.net) consist of '${\times}$ Health (Teenager, My Health, Healthy life, Beautiful life)', '+ Nutrition (To find slow foods, Fast foods campaign, Selecting fast foods, The best menu for eating-out, Recipes for health, Golden bell nutrition quiz)', '${\div}$ Information (Diet mini-homepage, Q & A, My knowhow, Game, Community)' and 'Basic Menu (home, Log in, Information and news, Mini-homepage, Site map, Free bulletin board)'. It can be used as educational material for dietary behaviorial changes in school. Also teachers and parents could get information on eating-out menus. Through this site, we anticipate contributing to nutritional health promotion by correcting the eating-out habits of youth.
BACKGROUND/OBJECTIVES: Assessing changes in energy intake and dietary sources is important to understand trends in the prevalence of obesity. Thus, we examined trends in energy intake and its nutrient and food sources in Korean adults from 1998 through 2015. SUBJECTS/METHODS: This study included 70,769 subjects aged ${\geq}19$ years who completed a nutrition survey. Subject data were obtained from the 1998, 2001, 2005, 2007-2009, 2010-2012, and 2013-2015 Korea National Health and Nutrition Examination Surveys. Dietary intake was assessed by a 1-day 24-hour recall method. RESULTS: In men, the daily energy intake significantly increased from 2,196 kcal in 1998 to 2,489 kcal in 2013-2015 (P for trend < 0.0001). However, the daily energy intake among women did not change significantly over the same period (P for trend = 0.5772). The percentages of energy intake from animal foods (e.g., meat and milk) and beverages increased during the study period in both men and women. However, the percentage of energy intake from plant foods decreased due to a marked decrease in the intake of white rice. Changes in food sources of energy intake led to changes in the nutrient sources of energy intake; for example, the increase of energy intake from fat and decrease of energy intake from carbohydrate. CONCLUSIONS: This study suggests that since 1998, energy intake has increased among Korean adult men, but not among women. However, the composition of food and nutrient sources of energy intake has changed in both men and women. Energy intake and its nutrient and food sources should continue to be monitored regularly in the Korean adult population.
Differences in food and nutrient intake among Korean adults based on different stress levels were investigated using information obtained from 7,370 adults who participated in the 1998 Korean National Health and Nutrition Survey. The twenty-four hour recall method was used for this dietary survey. Data pertaining to indivisual stress levels were collected by means of interviews as part of the National Health Behavior Survey. Following the analysis of variance, Duncan's Multiple Range Test was used to test the differences in food and nutrient intake among groups with different levels of stress. Eighty-three percent of the study subjects were reported to have a certain level of stress. Unlike the observations made in European and American studies, there were no significant differences observed in food and nutrient intake based on the stress levels among Korean adults of either sexes. These results may imply that even though stress was clustered with other health related behavior, the association between food intake and stress among Koreans was very weak. The objective of this study was to investigate how to improve job satisfaction for dietitians and nutrition teachers by identifying influencing factors in Daejeon and Chungnam Province, South Korea. A survey was conducted among school foodservice dietitians and nutrition teachers from selected primary, middle and high school in the area. This survey consisted of general characteristics, status of their job, job satisfaction, work satisfaction and work performance. In this study we found current state of general characteristics and status of their job according to frequency analysis and the level of work satisfaction, work performance and job satisfaction using descriptive statistics. The t-test, ANOVA and Duncan-test were also conducted in order to searching for tendency of job satisfaction according to the general characteristics and the status of their job. Pearson's correlation was carried out in order to find correlation with job satisfaction. Also, factors, which influenced job satisfaction according to regression analysis, were drawn. We describe the difference of job satisfaction between irregular dietitians and nutrition teachers as well. Besides we discussed the improvement of dietitians' (nutrition teachers') work environment to raise their job satisfaction through this study.
The purpose of this study was to estimate the minimum monthly food cost for the low income population. The food consumption data of 9,311 individuals from the 2001 Korean National Health and Nutrition Survey was used. The monthly food cost was calculated using the Consumer Food Price Database for the year 2001 provided by the Public Health Nutrition Laboratory, Seoul National University. The low income population (n = 1,310) was characterized as older age, lower income, smaller family size, lower education level, and lower energy intake as compared with the total population (n = 8,001). The estimated food cost showed that men in the low income population needed 15% more money for purchasing food to maintain the energy intake level at the average energy intake level of men in the total population. It was also estimated that women in the low income population needed 9% more money for purchasing food to maintain the energy intake level at the average energy intake level of women in the total population. There were differences in monthly food costs depending on the sex and age, and family size. The results of this study could be used as basic information to establish minimum food cost for the low income population in Korea.
