  • Emulsifiers are widely accepted ingredients in food & beverage applications owing to their functional properties. The multi-functionality of emulsifiers increases its adoption in end-use applications. Also, the growing demand of natural sources of ingredients and increase in demand for convenience foods and premium products have expanded the application areas of food emulsifiers in the food & beverage industries. Emulsifiers are increasingly used by food processors to make their food products more cost-efficient and robust, enabling them to endure the rigors of harsh processing.

Generation of emulsions due to the impact of surfactant-laden droplet on a viscous oil layer on water (점착 유층과 계면활성제 액적의 충돌에 의한 에멀젼 형성)

  • We present an experimental investigation on emulsions created during the impact process between a surfactant-laden droplet and an oil layer on water. By varying the surfactant concentration and the viscosity of oil layer, we created emulsions and visualized them using multi-dimensional high-speed imaging. Our analysis shows that the emulsions are more likely to be unstable and decay within a minute if the impacting droplet contains more surfactant. We also found that there are three mechanisms of generation of emulsions depending on the concentration of surfactant and the viscosity of oil layer; the jet pinch-off, cavity pinch-off, and tearing of oil layer. Jet and cavity pinch-off turned out to be dominant mechanisms for high oil viscosities, while tearing of oil layer is dominant for low oil viscosities. Our result is potentially useful in designing optimal dispersant properties for offshore oil contamination.

Formation of Liquid Crystalline with Hydrogenated Lecithin and Its Effectiveness (수소첨가레시친을 이용한 액정 젤의 형성과 보습효과)

  • This study described about method that forms liquid crystal gel (LCG) by main ingredient with hydrogenated lechin (HL) in O/W emulsion system. Result of stability test is as following with most suitable LCG's composition. Composition of LCG is as following, to form liquid crystal, an emulsifier used 4.0wt% of cetostearyl alcohol (CA) by 4.0wt% of HL as a booster. Moisturizers contained 2wt% of glycerin and 3.0wt% of 1,3-butylene glycol (1,3-BG). Suitable emollients used 3.0wt% of cyclomethicone, 3.0wt% of isononyl isononanoate (ININ), 3.0wt% of cerpric/carprylic triglycerides (CCTG), 3.0wt% of macademia nut oil (MNO) in liquid crystal gel formation. On optimum conditions of LCG formation, the pHs were formed all well under acidity or alkalinity conditions (pH=4.0-11.0). Considering safety of skin, pH was the most suitable 6.0${\pm}$1.0 ranges. The stable hardness of LCG formation appeared best in 32 dyne/$\textrm{cm}^2$. Particle of LCG is forming size of 1-20$\mu\textrm{m}$ range, and confirmed that the most excellent LCG is formed in 1-6$\mu\textrm{m}$ range. According to result that observe shape of LCG with optical or polarization microscope, LCG could was formed, and confirmed that is forming multi -layer lamellar type structure around the LCG. Moisturizing effect measured clinical test about 20 volunteers. As a result, moisturizing effect of LCG compares to placebo cream was increased 36.6%. This could predicted that polyol group is appeared the actual state because is adsorbed much to round liquid crystal droplets to multi-lamellar layer's hydrophilic group. It could predicted that polyol group is vast quantity present phase that appear mixed because is adsorbed to round liquid crystal to multi-lamellar layer's hydrophilic group. This LCG formation theory may contribute greatly in cosmetics and pharmacy industry development.

Susceptibility of Myzus persicae on Potato field and Riptortus clavatus on Soybean field to Insecticides treated by Multi-copter (농업용 멀티콥터를 활용한 감자의 복숭아혹진딧물과 콩의 톱다리개미허리노린재의 약제방제 효율)

  • The Aphid, Myzus persicae, and the bean bug, Riptortus clavatus, are major insects in crops. This study examined the insecticide susceptibility and phytotoxicity of insecticides dispersed using an Unmanned Aerial Vehicle (UAV, multi-copter) against the insects. Sulfoxaflor suspension concentrate (SC, 16X) on potato fields and etofenprox, methoxyfenzide suspo-emulsion(SE, 8X) on soybean fields were dispersed after deploying water-sensitive paper within the field to measure the distribution pattern and coverage index of the falling insecticide. Both insecticides showed a controlled mortality of 76.4% against aphids and 97.5% and 94.4% against the 2nd nymphal, and 5th nymphal stage of the bugs, respectively. The droplet distribution was less than 0.5mm, and coverage analysis revealed an inside and outside coverage of 3.1 and 1.6, respectively. The surrounding area was affected by insecticide spraying using a multi-copter. This study is expected to help expand UAV control and use it safely in the future.

  • In this study, we investigated the possibility of Droplet digital PCR (ddPCR) for detection of foodborne pathogens. ddPCR combines partitioning of PCR reactions into several thousands or millions of individual droplets in a water-oil emulsion, and counting of positive PCR reaction using flow cytometry. Four species of foodborne pathogens, Bacillus cereus, Staphylococcus aureus, Salmonella Typhimurium and Escherichia coli O157:H7, were used to quantify the target sequence with each of the designed primers and double stranded DNA-binding Evagreen dye. All tested foodborne pathogens showed a detection limit ranging from $100fg/{\mu}L$ to $10ng/{\mu}L$. It was concluded that ddPCR could be used to detect very low concentrations of foodborne pathogens from complex food matrices. For multi-detection of target pathogens, we also tested the samples using multiplex ddPCR and obtained successful results.

A Potential Applicability of Microfluidic Techniques for Fabricating Advanced Cosmetic Materials (고급 화장품 소재 개발을 위한 마이크로플루딕스 기술의 잠재적 응용성)

  • We describe here how we can use microfluidic technologies for fabricating functional materials that could be potentially utilized in cosmetics; these include void structures, functional particulate materials, shell materials, and multi-layered colloids. We can obtain these functional materials as microfluidic approaches provide precise control over both outer dimensions and inner morphology of emulsion drops in picoliter-volume scales with high throughput. We have confirmed that this technique has a great potential to fabricate novel particles and capsules with a variety of chemical compositions as well as higher orders of layers. This microfluidic approach will allow us to develop a lot of new techniques that are useful for a variety of applications, including delivery systems, chemical separations, bio-sensing, actuators, and so on. We do believe that these new techniques will help cosmetic industry not only give rise advanced functional materials and systems but also widen its product categories.

Sustained Release of Anthocyanin from Porous Poly(lactic-co-glycolide) Microsparticles Developed for the Treatment of Chronic Obstructive Pulmonary Disease

  • This study was to fabricate the porous poly(lactide-co-glycolide) (PLGA) microparticles with anthocyanin (as a model antioxidant) for pulmonary drug delivery. The highly porous PLGA microparticles were prepared by the waterin-oil-in-water ($W_1/O/W_2$) multi-emulsion method, followed by the decomposition of ammonium bicarbonate (AB) in $W_1$ phase to the base of ammonia, carbon dioxide and water vapor at $50^{\circ}C$, making a porous structure in PLGA microparticles. Herein, hyaluronate (HA), a viscous polysaccharide, was incorporated in the porous microparticles for sustained anthocyanin release. In in vitro release studies, the anthocyanin release from the porous microparticles with HA continued up to 24 hours, while the porous microparticles without HA released 80 wt.% of encapsulated anthocyanin within 2 hours. In addition, these microparticle are expected to be effectively deposited at a lung epithelium due to its high porosity (low density) and avoid alveolar macrophage's uptake in the lung due to its large particle size. We believe that this system has a great pharmaceutical potential as a long acting antioxidant for relieving the oxidative stress in chronic obstructive pulmonary disease (COPD).

Stratum Corneum Lipids as Bioactive Materials for Atopic Dermatitis (생체활성 각질층 지질 - 아토피 피부염 관리를 중심으로 -)

  • There are two paradigms to explain the atopic dermatitis. The first is outside-inside paradigm and the second is inside-outside paradigm. According to the outside-inside paradigm the best way to treat the atopic dermatitis is recovery of skin barrier function. The barrier function is maintained by the specific structure of stratum corneum, which is constructed from corneocytes and intercellular lipids. In terms of lipid structures of SC in atopic dermatitis and lamellar ichthyosis, they contain more fluid hexagonal gel structures in SC and show deficiencies in free fatty acids, especially long chains and certain ceramides. With this reason, moisturizer which has the lamellar structure and restoring function of intrinsic intercellualr long periodicity phase can maintain and restore the lamellar structure of intercellular lipids in SC. The moisturizers containing ceramide or pseudoceramide also seem to be reasonable therapy for atopic dermatitis and several skin diseases, which interrelated with impaired skin harrier. By the way, according to the inside-outside paradigm, immune response including helper T cells, IgE, eosinophils is related. It is effective treatment of atopic dermititis to restore imbalance between Th1 and Th2 cells. Even though several kinds of immune-suppressor were introduced, these can affect the intrinsic immune function. SPC and S1P, metabolites of ceramide, would be interesting because they have the function of wound healing and immune modulating properties.

A Study on the Formation of Lamellar Liquid Crystalline Using Skin Mimicking Surfactant (피부모사체 계면활성제를 사용한 라멜라 액정의 생성에 관한 연구)

  • This study is a mixed surfactant (MimicLipid-MSM1000) that forms the same structure as that of the stratum corneum, sucrose distearate, polyglyceryl-2 dioleate, fermented squalane, ergosterol, 10-hydroxystearic acid, mixture consisting of was synthesized. When using 2~5 wt% of this mixed surfactant, it was possible to make an artificial skin mimetic that forms a multi-layer lamellar structure of 5~30 layers. An emulsion was prepared using this mixed surfactant, and a multi-layered lamellar phase was formed and analyzed mechanically. The appearance of this surfactant was a light brown hard wax, the hydrophilic lipophilic balance (HLB) was 12.53, the critical parameter value was 0.987, and the acid value was 0.13. Stability according to pH change was also stable in acidic (3.8), neutral (7.2) and alkaline (10.8). The particle size of the liquid crystal was found to be the most stable maltese cross lamellar crystalline droplet at 5~25mm. The size of the emulsified particles according to the change in the speed of the homo agitator is 2500 rpm (17.9mm±2.6mm), 3500rpm (12.5mm±2.1mm), 4500rpm (6.2mm±1.8mm) particles were formed. Liquid crystal forming particles were observed through a polarization microscope, and the formation structure of the liquid crystal was precisely analyzed with a scanning electron microscope (cryo-SEM). As an application field, it is expected that it will be widely applicable to the development of various prescriptions, such as various skin care cosmetics, makeup care cosmetics, and scalp protection cosmetics, by using a skin-mimicking surfactant.
