  • In order to investigate calcium , phosphorous and magnesium intake of breast-fed infants, consumed volumes of human milk and those mineral contents of the milk were examined at 0.5, 1, 2, 3, 4 and 5 months of lactation. Calcium , phosphorus and magnesium contents of human milk during the first 5 months of lactation averaged 26.0, 13.7 and 3.70mg/100g, respectively. Calcium intake of infants averaged 192.3 and 171.0mg/day which represented 39.7 and 33.5% of the RDA for boys and girls, respectively. Phosphorus intake of infants averaged 100.7 and 85.2mg/day which represented 26.2% and 23.4 % of the RDA for boys and girls respectively. The calcium /phosphorus ratio of human milk averaged 2.00 during lactation. The results of this survey suggest that, the reevaluation of calcium , phosphorus and magnesium intake and recommended dietary allowance of these nutrients during infancy is merited.

  • Milk oligosaccharides are the complex mixture of six monosaccharides namely, D-glucose, D-galactose, N-acetyl-glucosamine, N-acetyl-galactosamine, L-fucose, and N-acetyl-neuraminic acid. The mixture is categorized as neutral and acidic classes. Previously, 25 oligosaccharides in bovine milk and 115 oligosaccharides in human milk have been characterized. Because human intestine lacks the enzyme to hydrolyze the oligosaccharide structures, these substances can reach the colon without degradation and are known to have many health beneficial functions. It has been shown that this fraction of carbohydrate can increase the bifidobacterial population in the intestine and colon, resulting in a significant reduction of pathogenic bacteria. The role of milk oligosaccharides as a barrier against pathogens binding to the cell surface has recently been demonstrated. Milk oligosaccharides have the potential to produce immuno-modulation effects. It is also well known that oligosaccharides in milk have a significant influence on intestinal mineral absorption and in the formation of the brain and central nervous system. Due to its structural resemblance, bovine milk is considered to be the most potential source of oligosaccharides to produce the same effect of oligosaccharides present in human milk. This review describes the characteristics and potential health benefits of milk oligosaccharides as well as the prospects of oligosaccharides in bovine milk for use in functional foods.

  • Cow's milk and dairy products are elements of the human diet that could play an important role in improving human health. The macronutrients and micronutrients found in milk could supply the nutrients required to maintain human health. Among them, milk-derived bioactive peptides have been identified as potential ingredients found in health promoting functional foods. These bioactive peptides target diet-related chronic diseases, particularly non-communicable ones such as cardiovascular disease, diabetes and obesity. Additionally probiotics such as lactic acid bacteria (LAB) are can be considered live microorganisms that confer health benefits for the host-, when administered in adequate amounts. Further, the calcium, vitamin D, and protein content of milk and dairy products could play a role in proving bone health. The effect of milk and calcium on bone mineral density could prevent against fracture, osteoporosis and rickets. Furthermore, milk and dairy products also contain which factors that, which protect against dental caries (anti-cariogenic properties). This paper reviews the various nutritional functions of milk and dairy products in improving human health.

  • BACKGROUND/OBJECTIVES: This study was performed to measure fat-soluble vitamins and minerals in breast milk of Korean lactating mothers who exclusively breastfed their babies. SUBJECTS/METHODS: Breast milk samples were collected from 334 mothers. Concentrations of retinol and ${\alpha}$-tocopherol were analyzed by high performance liquid chromatography ultraviolet spectrometry while concentrations of minerals were measured by inductively coupled plasma optical emission spectrometry. RESULTS: Retinol and ${\alpha}$-tocopherol contents of breast milk were $39.58{\pm}19.64{\mu}g/dL$ and $0.23{\pm}0.13mg/dL$, respectively. Average sodium, potassium, calcium, phosphorus, and magnesium levels in breast milk were $11.11{\pm}5.16$, $38.56{\pm}9.01$, $27.87{\pm}6.10$, $13.56{\pm}3.30$, and $3.05{\pm}0.65mg/dL$, respectively. Contents of trace elements such as iron, zinc, copper, and manganese were $40.26{\pm}46.21$, $98.40{\pm}62.47$, $24.09{\pm}9.03$, and $0.90{\pm}1.63{\mu}g/dL$, respectively. Fat-soluble vitamin concentration was positively correlated with total fat in milk samples, but no significant differences were observed in levels of retinol, ${\alpha}$-tocopherol, or minerals based on whether or not lactating women were taking dietary supplements. CONCLUSIONS: Micronutrient contents of breast milk samples from Korean lactating women were comparable to those of other nations. Retinol and ${\alpha}$-tocopherol levels were correlated and also with total fat in breast milk.

  • The longitudinal changes on human milk volume per day and lactational performance of Korean primiparae(n=9) and multiparae(n=6) from 0.5 month to 5 months after parturition have been studied by test-weighing method. The human milk volume per day tended to increase during lactation. The mean volume to the 3rd month of lactation was 643m1 for primiparae and 654m1 for multiparae, and it was 647 $\pm$ 182m1 for both of them. The mean volume to the 5th month of lactation was 648m1 for primiparae and 668m1 for multiparae, and it was 658$\pm$186$m\ell$ for both of them. The peak volume was observed at the 1st month of lactation in 8 women of 15 lactating women, that is, 53.3% . The high distributions of the individual mean volume to the 5th month were found 550~650$m\ell$(40.0% ) and 650~750$m\ell$(26.7% ). and 13 women of 15 lactating women(86.6% ) were observed below 750m1. The number of feeding per day was 7.7~9.3 to the 5th month and the mean volume per feeding was 65~101$m\ell$. While the former tended to decreased, the latter increased during lactation. The human milk volume was correlated with the peak volume. but not with maternal age. weight before delivery. maternal height and birth weight. As mentioned above, the human milk volume of Koreans was about 658$\pm$ 186$m\ell$ and 86.6% of it was below 750$m\ell$. So the human milk volume, referred to as 800$m\ell$ in recommended dietary allowances for Koreans might be estimated over real amount. It is necessary to study according to regions. socioeconomic levels. maternal nutritional status and the early stage of lactation.

  • Persistent organic pollutants (POPs) have spread throughout the global environment to threaten human health and damage ecosystems. with evidence of POPs contamination in wildlife, human blood. and breast milk documented worldwide. Breast milk is an ideal medium for assessing exposures to POPs. POPs enter humans largely as contaminants of dietary animal products, where they sequester in adipose tissue, serum, and breast milk and equilibrate at similar levels on a fat weight basis. • Kong chain $\omega$3 & $\omega$6 fatty acids and taurine have been suggested to have structural and /or functional roles in the brain. The purpose of this study was to evaluate the changes in the percentage of fatty acids and taurine concentration in human milk obtained from Korean mothers(n=37) as lactation proceeds from birth to 5wks postpartum , and to determine the correlation between taurine concentration and fatty acid composition in breast milk. Level of fatty acids and taurine in breast milk were measured by GLC and HPLC, respectively. The percentages of medium -chain saturated fatty acids(10 : 0, 12 : 0 & 14: 0) were increased significantly , while percentages of long-chain saturated fatty acids(22 :0 & 24 : 0), and most of the long chain $\omega$6 and $\omega$3 fatty acids(20 : 3$\omega$6 , 20 :4$\omega$6, 22 :4$\omega$6 , 22 :5$\omega$6, 22 :5$\omega$3 & 22 : 6$\omega$3) were decreased significantly in mature milk (5 wks postpartum ) as compared to the colostrum. Taurine concentrations in colostrum and mature milk from Korean mothers were 549 $\pm$58 and 233 $\pm$41nmol/ml , respectively. Taurine concentrations in human milk was negatively correlated with the percentages of medium -chain saturated fatty acids ( 10 : 0 &12 : 0), and positively correlated with the percentages of long-chain saturated fatty acids( 16 :0, 20 : 0, 22 : 0& 24 : 0) and long-chain monounsaturated fatty acids( 20 : 1, 22 : 1 & 24 ; 1). Taurine concentration in human milk was positively correlated with elongation indices of both $\omega$6 and $\omega$3 fatty acids, and negatively correlated with the desaturation index of $\omega$6 fatty acids. These close relationships between fatty acids compositions and taurine level in human milk are worth pursing further investigation, especially with regard to their common roles in retina and brain development.

  • This study investigated micro-mineral content in human milk along with nutritional intake of lactating women. Milk samples were collected from 33 healthy lactating women and mineral levels were analyzed. Copper, zinc, manganese and selenium were analyzed. The factors that affect the mineral levels in human milk were also investigated longitudinally from 2-5 days to 12 weeks postpartum. Concentrations of manganese and selenium didn't differ significantly within the lactation period. the levels of copper and zinc declined linearly over the first 12 weeks of lactation. Statistically significant quadratic trends were observed in zinc concentrations. There was no significant correlation between maternal age and mineral concentrations throughout the lactation period. In addition, no significant differences were found between the primipara and the multipara for mineral concentrations in human milk.
