Application of Electron-Beam Irradiation Combined with Aging for Improvement of Microbiological and Physicochemical Quality of Beef Loin

  • The combined effects of irradiation and aging temperature on the microbial and chemical quality of beef loin were investigated. The samples were vacuum-packaged, irradiated at 0 or 2 kGy using electron-beam (EB), and stored for 10 d at different aging temperatures (2, 14, or 25℃). The microbial growth, shear values, meat color, and nucleotide-related flavor compounds of the samples were analyzed. The irradiation effect on inactivation of foodborne pathogens was also investigated. The population of Listeria monocytogenes and Escherhia coli O157:H7 inoculated in beef samples decreased in proportion to the irradiation dose. Irradiation reduced the total aerobic bacteria (TAB) over the storage, but higher aging temperature increased the TBA. Thus TAB increased sharply in non-irradiated and high temperature-aged (14, 25℃) beef samples after 5 d. With increasing aging temperature and aging time, shear force values decreased. Lipid oxidation could be reduced by short aging time at low aging temperature. The color a* values of the irradiated beef were lower than those of the non-irradiated throughout the aging period. As aging period and temperature increased, IMP decreased and hypoxanthine increased. Considering microbial and physicochemical properties, irradiation can be used for raw beef to be aged at relatively high temperature to shorten aging time and cost.

  • Cu-Zn-Al catalysts were prepared via co-precipitation method for low-temperature water-gas shift (LT-WGS) reaction under practical reaction condition. Aging time was systematically changed to find optimum point for LT-WGS under practical condition. The Cu-Zn-Al catalyst aged for 72 hours showed the highest CO conversion within low-temperature range as well as very stable catalytic activity for 200 hours despite the practical reaction condition.

Yielding Behavior and Strain Aging Properties of Bake Hardening Steel with Dual-Phase Microstructure (2상 조직을 갖는 소부경화강의 항복 거동과 변형 시효 특성)

  • This study deals with the yielding behavior and strain aging properties of three bake hardening steels with dual-phase microstructure, fabricated by varying the annealing temperature. Bake hardening and aging tests are performed to examine the correlation of martensite volume fraction with yielding behavior and strain aging properties of the bake hardening steels with dual-phase microstructure. The volume fraction of martensite increases with increasing annealing temperature. Room-temperature tensile test results show that the yielding behavior changes from discontinuous-type to continuous-type with increasing volume fraction of martensite due to higher mobile dislocation density. According to the bake hardening and aging tests, the specimen with the highest fraction of martensite exhibited high bake hardening with low aging index because solute carbon atoms in ferrite and martensite effectively diffuse to dislocations during the bake hardening test, while in the aging test they diffuse at only ferrite due to lower aging temperature.

Effect of Thermal Aging on Electrical Properties of Low Density Polyethylene

  • The thermal degradation of low density polyethylene (LDPE) will accelerate the production of carbonyl groups (C=O), which can act as the induced dipoles under high voltage. In this paper, we researched the dielectric properties and space charge behavior of LDPE after thermal aging, which can help us to understand the correlation between carbonyl groups (C=O) and electrical properties of LDPE. The spectra results show that LDPE exhibit obvious thermooxidative reactions when the aging time is 35 days and the productions mainly contain carboxylic acid, carboxylic eater and carboxylic anhydride, whose amount increase with the increasing of aging time. The dielectric properties show that the real permittivity of LDPE is inversely proportional to temperature before aging and subsequently become proportional to temperature after thermal aging. Furthermore, both the real and imaginary permittivity increase sharply with the increasing of aging time. The fitting results of imaginary permittivity show that DC conductivity become more sensitive about temperature after thermal aging. On this basis, the active energies of materials calculated from DC conductivity increase first and then decrease with the increasing of aging time. In addition, the space charge results show that the heterocharges accumulated near electrodes in LDPE change to the homocharges after thermal aging and the mean volume charge density increase with the increasing of aging time. It is considered that the overlaps caused by electrical potential area is the main reason for the increase of DC conductivity.

  • The effects of room temperature and strain aging treatment are discussed on the critical condition for the onset of growth of non-propagating cracks on 0.15% C low carbon steel, with special emphasis on the length of the critical non-propagating crack and on the crack opening displacement(COD) at the crack tip. It is found from the experimental analysis that room temperature and strain aging of a fatigue pre-cracked specimen introduced the closure of a crack tip of the pre-crack and the reduction of crack opening displacement at the wake of crack, together with an improvement in crack growth resistance of the microstructure. This may cause an increase in the endurance limit of the specimen, through the enhancement of effective stress for the onset of growth of the critical non-propagating crack.

Effects of Pre-Aging Treatment on the Corrosion Resistance of Low Temperature Plasma Nitrocarburized AISI 630 Martensitic Precipitation Hardening Stainless Steel (저온 플라즈마 침질탄화처리된 마르텐사이트계 석출경화형 스테인리스강의 내식성에 미치는 시효 전처리의 영향)

  • Various aging treatments were conducted on AISI 630 martensitic precipitation hardening stainless steel in order to optimize aging condition. Aging treatment was carried out in the vacuum chamber of Ar gas with changing aging temperature from 380℃ to 430℃ and aging time from 2h to 8h at 400℃. After obtaining the optimized aging condition, several nitrocarburizing treatments were done without and with the aging treatment. Nitrocarburizing was performed on the samples with a gas mixture of H2, N2 and CH4 for 15 h at vacuum pressure of 4.0 Torr and discharge voltage of 400V. The corrosion resistance was improved noticeably by combined process of aging and nitrocarburizing treatment, which is attributed to higher chromium and nitrogen content in the passive layer, as confirmed by XPS analysis. The optimized condition is finalized as, 4h aging at 400℃ and then subsequent nitrocarburizing at 400℃ with 25% nitrogen and 4% methane gas for 15h at vacuum pressure of 4.0 Torr and discharge voltage of 400V, resulting in the surface hardness of around 1300 HV0.05 and α'N layer thickness of around 11 ㎛ respectively.

Effect of Freezing Temperature on the Quality of Beef Loin Aged after Thawing (동결온도가 해동후 숙성한 우육의 품질에 미치는 영향)

  • This study was carried out to investigate the effects of freezing temperature on the quality of thawing aged beef loin. Drip loss was higher at 3oC freezing than at 20oC freezing, showing 17.21% drip loss after 6 days aging by 3oC freezing, 14.92% drip loss 12 days aging by 20oC freezing. Cooking loss by both water bath and pan boiling were decreased with increased in aging days. The salt soluble protein extractability of the beef loin was increased until 9 days aging by both 3oC and 20oC freezing, after that was decreased. The L value of the beef loin was high until 9 days aging by 3oC freezing, after that the L value of that was decreased. And the aging at 20oC freezing was high significantly with increased aging days. The a value of the beef loin was low significantly in 6 and 9 days aging by 3oC freezing, 20oC freezing was low significantly with increased aging days. The b value of the beginning of aging was higher with increased aging days. The percentage of denatured myoglobin of the beginning of aging was the highest, then those of 3oC and 20oC freezing showed 89.70% and 88.00%, respectively. The shear force of the beef loin was decreased with aging days, but the myofibrillar fragmentation index increased with aging days. The pH of the beef loin increased until 6 days of aging by both 3oC and 20oC freezing, after that the pH decreased.

The Influence of Dynamic Strain Aging on Tensile and LCF Properties of Prior Cold Worked 316L Stainless Steel (냉간가공된 316L 스테인리스 강의 인장 및 저주기 피로 물성치에 미치는 동적변형시효의 영향)

  • Tensile and LCF(low cycle fatigue) tests were carried out in air at wide temperature range 20$^{\circ}C$-750$^{\circ}C$ and strain rates of 1${\times}$10$\^$-4//s-1${\times}$10$\^$-2/ to ascertain the influence of strain rate on tensile and LCF properties of prior cold worked 316L stainless steel, especially focused on the DSA(dynamic strain aging) regime. Dynamic strain aging induced the change of tensile properties such as strength and ductility in the temperature region 250$^{\circ}C$-600$^{\circ}C$ and this temperature region well coincided with the negative strain rate sensitivity regime. Cyclic stress response at all test conditions was characterized by the initial hardening during a few cycles, followed by gradual softening until final failure. Temperature and strain rate dependence on cyclic softening behavior appears to result from the change of the cyclic plastic deformation mechanism and DSA effect. The DSA regimes between tensile and LCF loading conditions in terms of the negative strain rate sensitivity were well consistent with each other. The drastic reduction in fatigue resistance at elevated temperature was observed, and it was attributed to the effects of oxidation, creep and dynamic strain aging or interactions among them. Especially, in the DSA regime, dynamic strain aging accelerated the reduction of fatigue resistance by enhancing crack initiation and propagation.

  • The precipitation behavior of solute carbon and nitrogen strongly affects the mechanical properties of low-carbon automotive panel. In the present study, the effects of aluminum and solute nitrogen on the bake hardenability and strain aging of extremely low-carbon steel with carbon content below 15 ppm has been investigated. The ferrite grain size and distribution of precipitates were varied with the amount of aluminum content of 0.003 to ~ 0.100 wt% in a constant solute carbon and nitrogen. With increasing the aluminum content, the ferrite grain size is increased and strain aging is delayed. The strain aging is also delayed by increasing the annealing temperature, although the ferrite grain size is not much changed.

Characteristics of Dynamic Shear Modulus Mastercurve of Aged or Unaged Asphalt Binders (동전단 마스터곡선을 이용한 아스팔트 바인더의 노화 특성 평가)

  • PURPOSES: To characterize the aging effect on asphalt binder, dynamic shear modulus mastercurve of two typical asphalt binders are developed. METHODS: To develop dynamic shear modulus mastercurve, dynamic shear modulus at high temperature and creep stiffness at low temperature are measured by temperature sweep test and bending beam rheometer test, respectively. RESULTS: It is observed that the aging effect on asphalt binder can be clearly observed from dynamic shear modulus mastercurve and the mastercurve can be utilized to predict behavior of asphalt binder at wide range of temperature. CONCLUSIONS: It is confirmed that SBS 5% modified binder has more desirable mechanical property at low and high temperature as a pavement material comparing to PG64-22 binder and the mastercurve is an effective tool to evaluate the property of asphalt binder.
