This study described about method that forms liquid crystal gel (LCG) by main ingredient with hydrogenated lechin (HL) in O/W emulsion system. Result of stability test is as following with most suitable LCG's composition. Composition of LCG is as following, to form liquid crystal, an emulsifier used 4.0wt% of cetostearyl alcohol (CA) by 4.0wt% of HL as a booster. Moisturizers contained 2wt% of glycerin and 3.0wt% of 1,3-butylene glycol (1,3-BG). Suitable emollients used 3.0wt% of cyclomethicone, 3.0wt% of isononyl isononanoate (ININ), 3.0wt% of cerpric/carprylic triglycerides (CCTG), 3.0wt% of macademia nut oil (MNO) in liquid crystal gel formation. On optimum conditions of LCG formation, the pHs were formed all well under acidity or alkalinity conditions (pH=4.0-11.0). Considering safety of skin, pH was the most suitable 6.0${\pm}$1.0 ranges. The stable hardness of LCG formation appeared best in 32 dyne/$\textrm{cm}^2$. Particle of LCG is forming size of 1-20$\mu\textrm{m}$ range, and confirmed that the most excellent LCG is formed in 1-6$\mu\textrm{m}$ range. According to result that observe shape of LCG with optical or polarization microscope, LCG could was formed, and confirmed that is forming multi -layer lamellar type structure around the LCG. Moisturizing effect measured clinical test about 20 volunteers. As a result, moisturizing effect of LCG compares to placebo cream was increased 36.6%. This could predicted that polyol group is appeared the actual state because is adsorbed much to round liquid crystal droplets to multi-lamellar layer's hydrophilic group. It could predicted that polyol group is vast quantity present phase that appear mixed because is adsorbed to round liquid crystal to multi-lamellar layer's hydrophilic group. This LCG formation theory may contribute greatly in cosmetics and pharmacy industry development.
In this study, we found that the moisture content of black sesame seeds increased in proportion to steaming time, and it decreased in reverse proportion to the roasting temperature and time. The crude fat and crude ash contents were shown to be in the order of steamed black sesame>raw black sesame and roasted black sesame>raw black sesame, Crude protein decreased in reverse proportion to the steaming time, and more crude protein was found in the raw black sesame samples than in the roasted black sesame samples. The contents of sesamin, sesamolin, and total lignans were shown to be in the order of roasted black sesame>raw black sesame>steamed black sesame. In the steamed black sesame samples, sesamin showed its highest level with 20 minutes of treatment, and sesamolin showed its highest level with 15 minutes of treatment. In the roasted black sesame samples, sesamin, sesamolin, and total lignans showed their highest levels with 15 minutes of treatment at $100^{\circ}C$. The phenolic compound content increased in proportion to steaming time in the steamed samples, and reached a peak after 15 minutes of treatment at $100^{\circ}C$, and then decreased after 20 minutes. SOD-like activity reached a peak after 15 minutes of treatment, and in the roasted sample it reached a peak after 15 minutes of treatment, and then decreased after 20 minutes. SOD-like activity was comparatively lower than tocopherol and higher than sesamol. The intensity of electron donating ability, following 30 minute treatments, was shown to be highest in the steamed black sesame samples after 25 minutes of treatment, and next highest in the roasted black sesame samples after 15 minutes at $100^{\circ}C$. The electron donating ability was comparatively lower than tocopherol and sesamol. With regard to lecithin's antioxidant effects, the steamed samples showed a higher oxidation restriction rate in proportion to time, and the roasted samples showed the highest rate after 15 minutes of treatment, and then decreased after 20 minutes of treatment. for hydroxyl radical scavenging, similar scavenging activity to tocopherol, and comparatively higher scavenging activity than sesamol, was shown in all samples: all samples showed scavenging abilities of 90% or higher. In summary, this study applied three different treatment methods to black sesame to determine the optimum treatment conditions, and also examined the antioxidant effects and functional characteristics. The results showed that roasting can be used for other purposes than producing oil, and also suggested that methods other than roasting can be used in a variety of ways in cooking. Also, the different treatment methods can be applied in cooking in a variety of ways, to enhance functionality and preference.
Powdery and downy mildews caused by Sphaerotheca fusca and Pseudoperonospora cubensis are the most common and serious diseases of cucumber worldwide. In spite of the introduction of highly effective systemic fungicides, control of these diseases remains elusive. Hence, this study aimed to develop an alternative method to chemicals in controlling the diseases by using different types of cooking oil. Egg yolk, which contains a natural emulsifier, lecithin, was selected as a surfactant to emulsify the oils. Among the different cooking oils used, soybean, canola (rape seed), safflower, sunflower, olive, and corn oils showed over 95% control values against powdery mildew of cucumber in a greenhouse test. In particular, 0.3% canola oil emulsified with 0.08% yolk (1 yolk and 60 ml canola in 20 l spray) was found to be the most effective. The treatment resulted in 98.9% and 96.3% control efficacies on powdery and downy mildews, respectively, of cucumber in the field. Canola oil exhibited direct and systemic effect, wherein powdery mildew of cucumber was suppressed only on treated leaves but not on non-treated leaves in a plant, while mycelia and conidia of the pathogen were severely distorted or destroyed by the treatment. The prospect of using the canola oil and yolk mixture as a natural fungicide is highly promising because of its effectiveness, availability, low cost, simple preparation, and safety to humans and the environment. The use of the canola oil and yolk mixture is expected to be an effective fungicide for use in organic farming and home gardening.
Commercially available duck-meat was subjected to proximate analysis. On a wet basis, the duck-meat contained 62.87, 17.05, 19.06 ana 1.02 percent of moisture, crude fat, crude protein and ash, respectively. Almost all the essential amino acids contained in the duck-meat protein, ana the tryptophan was the limiting one by amino acid analysis of GLC. An analysis of the fatty acid composition by GLC showed a relatively high concentration of oleic acid. There was also a considerable content of linoleic acid. The content of polyunsaturated fatty acids of duck-meat was 70.9% and the P/S ratio of fatty acids was 3.4. The cholesterol content in duck-meat was determined to be approximately 70. 5mg/100g ofm sample. According to blood analysis, it was understood that the content of phospholipids was relatively high, particulary in lecithin. ATP-phosphorus, at the higher temperature, was released faster than at the lower temperature, by two hours after postmortem. The ATPase activity of Myogibril was inhibited at the relatively high concentration of added EDTA and metallic ions, but the activity was very high in the lower concentrations. According to the cooking conditions, boiled duck-meat showed good digestion by pepsin. It was understood that the digestibility of duck meat was relatively high, so the duck-meat protein is good source of animal protein. Therefore, it is able to be recommended that duck-meat is good nitrogen source animal food.
Livestock products like meat, milk and egg have been principal food sources for human beings since the historic periods of time. Nowadays consumption of these food items have been avoided due to its high contents of SFA, cholesterol and total fat which are major culprits of chronic adult diseases causing major deaths of people. Low cholesterol eggs and high omega-3 eggs can be produced in several different ways, but popular way to increase is feeding the feeds with different oil sources containing high omega-3 and 6 fatty acids such as fish oil, perilla oil, linseed oil and lecithin etc. But proper compositon of feed formula should be found and economically beneficial. Brand eggs fortified with vitamin, mineral, unknown growth factors are also manufactured. Low cholesterol and high $\omega$-3 PUFA milk are marketed recently Cholesterol removal technology is not completely established and has several limitations to be overcome. Milk fortified with $\omega$-3 fatty acids is made by incorporating high &13 fatty acid foods in feed despite of extraordinary way of fatty acid metabolism In cow. All these biologically active products will be very beneficial and useful for human consumption when limitations of manufacturing technology such as safety and lowered sensory qualities are resolved. Furthermore, thorough and precise tests and quality control for these products should be performed to ensure the effectiveness and usefulness in terms of improving health and nutritional status in general. However one caution should be pointed out to lay people informing that these items are nothing but a food and not panacea. Therefore, it is important to remember that the only way of maintaining good health is absolutely through consuming balanced diet.
The purpose of this study was designed to observe the effects of the Prunus persica Batsch var. davidiana Max. hot-water extract on the improvement of the glucide and lipid metabolism in the serum of streptozotocin (STZ, 55, mg/kg B.W., I.P. injection)-induced diabetic rats(S.D. strain, male) fed the experimental diets for 5 weeks. Electrolyte(Na, K, Cl) concentration in serum were fairly reduced in the group BSP(basal diet+STZ+Prunus persica $5.0g\%$ extract) than in the STZ(I.P.)-induced diabetic rats group(group BSW, basal diet+STZ(I.P.)+water). Although there was no significant difference among the groups. Concentrations of free fatty acid and lipid peroxide in serum were significantly higher in the STZ-induced diabetic group(group BSW) and STZ+Prunus persica $5.0;g\%$ extract group(group BSP) than those in the control group(group BW, basal diet+water). However, the concentrations of free fatty acid and lipid peroxide in serum were remarkably reduced in the group BSP than those in the group BSW, The activity of creatine phophokinase In serum was significantly lower in the group BSP than in the group BSW However, the activity of LCAT in serum was increased in the group BSP(Prunus persica $5.0\;g\%$ hot-water extract administration group) than in the STZ-induced diabetic group(group BSW). The above results shows that Prunus persica Batsch var. davidiana Max. were effective on the improvement of the glucide and lipid metabolism in serum of streptozotocin-induced diabetic rats.
This study was aimed at investigating the differences in chemical composition of antler according to growing days (80 d and 90 d after casting) and sections (upper, middle, base) in elk. Antlers of six bulls (aged 3 years) cutted on day 80 and 90 after casting were used in this trial and compared chemical composition such as crude protein, crude fat, crude ash, calcium, magnesium, amino acids, lipids, and fatty acids. The contents of crude protein and ether extract were higher in antlers cutted on day 80 than in antlers cutted on day 90, but that of crude ash was higher in antlers cutted on day 90. Significantly difference was observed in crude protein content between growing days in middle part of antler (p<0.05). Calcium and magnesium contents were higher on 90 d than 80 d, but there was no significant difference between growing days of antler. Based on the growing period of antler, there were significant differences (p<0.05) in aspartic acid, threonine, valine, leucine, phenylalanine and lysine, and essential amino acids content was higher in antlers cutted on day 80. Total lipid, neutral lipid, and phospholipid contents were higher in antlers cutted on day 80 than in those cutted on day 90, sphingo-phospholipid content was higher than glycerophospholipid content and values was higher in antlers cutted on day 80 than in those cutted on day 90. For total fatty acids, unsaturated fatty acids composition, there was no significant difference between growing periods of antlers, but values was higher on day 80 than on day 90. Essential fatty acids contents were lower in antler cutted on day 90 than antlers cutted on day 80 and higher for upper part than lower part.
The purpose of this study was to examine the effects of a cheonggukjang diet and aerobic exercise on lipid metabolism and antioxidant enzyme activity in rats. Thirty-two Sprague Dawley rats were randomized into a cheonggukjang diet with aerobic exercise (A), aerobic exercise (B), cheonggukjang diet (C), and control group (D). The cheonggukjang diet group consumed 20 g of 20% cheonggukjang a day with their normal diet. Exercise training consisted of treadmill running (25~40 min, 5 day/wk) and the exercise intensity was gradually increased. The results are as follows: T-C was significantly lower (p<0.05) in A compared to B and C. TG was significantly lower (p<0.001) in A compared to D. B and C were significantly lower than D. HDL-C was significantly higher (p<0.05) in C compared to D. LDL-C was not statistically different across the groups. Additionally, TBARS were not statistically different in the control or experimental groups. SOD was significantly lower (p<0.05) in A compared to D. C was significantly lower (p<0.05) that of D. CAT and GPx failed to reach the statistical difference between experimental and control groups. The major findings of this study were that aerobic exercise with a chenggukjang diet intervention improved lipid profiles and antioxidant capacity in this animal model. Therefore, a cheonggukjang diet and aerobic exercise will help to improve antioxidant capacity and prevent lifestyle related diseases.

The nano-ceramide capsulation is a technique that capsulates ceramide III and tocopheryl linoleate at the mono-vesicle to act on the horny layer in skin. In this technique, $0.5{\~}5.0\;wt\%$ of hydrogenated lecithin and $0.01{\~}2.00\;wt\%$ of lysolecithin are used as the membrane-strengthen agents of the mono-vesicle and $5.0{\~}10.0\;wt\%$ of propylene glycol and $5.0{\~}10.0\;wt\%$ of ethyl alcohol are used as solvents. Active ingredients such ceramide III and tocopheryl linoleate are utilized to enhance the moisturizing efficacy and treat atopy skin. These materials do not contain synthetic emulsifiers. The optimal conditions or nano-ceramide capsulation are such that particles pass Microfludizdizer 3 times at 1,000 bar and $60{\~}70^{\circ}C$ and pH of nano capsules is $5.8{\pm}0.5.$ The average size of particles is $63.1{\pm}7.34\;nm$ showing lucid state like water by the laser light scattering. A zeta potential value is $-55.1\pm0.84\;mV.$ Through clinical tests, the moisturizing effect (in-vivo, n=8, p-value<0.05) showed $21.15\%$ of improvement comparison to comparison-samples and $36.31\%$ of improvement compared to the state before treatment. Moreover, the effectiveness of atopy skin showed positive reaction from 10 volunteers.

In this study, liquid crystalline (LC) is formed using Gemini surfactant (GS) type and moisturizing effect in vivo is measured. $3.0\;wt\%$ of sodium dicocoyl ethylene diamine (PEG)-15 sulfate (SCD-PEG-15S) is used as GS and $4.0\;wt\%$ of hydrogenated dimer acid esters (HDAE) as booster. For stabilizers, $2.0\;wt\%$ of behenyl alcohol (BA) and $1.0\;wt\%$ of Iyso-lecithin (LyL) are utilized. It is stabilized in pH from 4.0 to 10.5 and the best condition is in pH 6.5. The value of viscosity is $8,000\pm500$ cP. The most excellent particles are formed within the range of 4.0 to 15.5 um. Formed LC is observed around LC particles using polarization microscope. It is also observed that lamellar gel network structure is formed around LC particles. Moisturizing effect is improved by $13.6\%$ (P<0.05) compared to control when measured 30 min later after coating samples. After 1 h, moisturizing effect is improved by 1$12.6\%$ (P<0.05) than control while showing $28.3\%$ (P<0.05) of improvement after 4 h. These results may be caused from that manufactured LC forms lamellar structure so that it has better water-holding ability and absorbance of oil increases. This formula could be utilized by delivery system (DS) on skin so that this technology can be applied for manufactuing pharmaceuticals and cosmetics.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
