Lactic acid bacteria (LAB) are microorganisms that are believed to provide health benefits. Here, we isolated LAB from Indian fermented foods, such as traditional Yogurt and Dosa. LAB from Yogurt most significantly induced TNF-α and IL-1β production, whereas LAB from Dosa induced mild cytokine production. After 16S rRNA gene sequencing and phylogenetic analysis, a Yogurt-borne lactic acid bacterium was identified and classified as Lactobacillus delbrueckii subsp. bulgaricus, and it was renamed L. delbrueckii K552 for the further studies. Our data suggest that the newly isolated L. delbrueckii can be used for the treatment of immune deficiency disorders.

In vitro acid- and bile-tolerant lactic acid bacteria isolated and identified from Indonesian traditional fermented milk dadih might be considered as potential probiotic strains after further characterization with animal models, especially for their therapeutic properties. Five dadih lactic bacteria isolates each had moderate survival rate for 2 h at pH 2.0, as well as bile tolerance. The aim of this research was to identify candidate probiotic lactic bacteria among indigenous dadih lactic isolates originated from Bukit Tinggi, West Sumatra, especially their in vivo antimutagenic property. Milk cultured with Enterococcus faecium IS-27526 significantly lowered fecal mutagenicity of rats as compared to the control group, skim milk, and milk cultured with L. plantarum IS-20506. These results suggest that Enterococcus faecium IS-27526 may serve as a potential probiotic strain with its antimutagenicity.
막걸리의 소비와 저장성을 증진시키기 위한 기초연구의 일환으로 막걸리 발효 및 유통과정에서의 효모 수, 유기산 및 총산의 변화를 조사하였다. 발효가 진행됨에 따라 막걸리의 맛을 결정하는 데 중요한 역할을 하는 유기산인 lactic acid, succinic acid 외에 malic acid, citric acid도 막걸리 발효과정 중의 주요 유기산으로 보아야 될 정도로 많이 생성되었다. 그러나 oxalic acid, phosphoric acid, acetic acid는 전 발효기간을 통하여 검출되지 않았다. 막걸리 발효 중, 총산은 증가하였으나 pH는 비례적으로 감소하지 않았다. 유통과정 중 저장온도에 따른 막걸리의 유기산 변화를 관찰한 결과, $4^{\circ}C$에서 보관 시 막걸리의 일반적인 유통기한인 10일보다 2배가 긴 20일까지도 유기산의 변화가 거의 없음이 관찰되어 유통기한을 연장시켜도 될 가능성이 있음을 알 수 있었다. 그러나 $25^{\circ}C$에서 보관한 막걸리는 citric acid가 검출되지 않았고, lactic acid가 큰 폭으로 감소된 것으로 보아 쉽게 변질될 수 있음을 알 수 있었다. 또한 산패 지표물질인 acetic acid가 생성됨으로써 유통과정에 문제가 생길 수 있음을 알 수 있었다. 따라서 유통과정에서의 저장온도를 $4^{\circ}C$로 하면 최소 20일 이상 보관 가능함을 알 수 있었다.
Bacteriocins from lactic acid bacteria have attracted much attention in recent years because of their useful worth in increasing safety and extending shelf life of foods. These substances show an inhibitory effect against some food spoilage bacteria and food-borne pathogens. The inhibitory effect fo the bacteriocin produces by lactic acid bacteria against Listeria monocytogenes(L. monocytogenes) was examined in this study. The culture supernatants of 5 kinds of bacteria among the 10 kinds of testes lactic acid bacteria had the inhibitory activity against Listeria sp., various Gram positive and Gram negative bacteria. Bacteriocin produced by Lactobacillus plantarum(Lact. plantarum) LMG 7945 was the most active toward L. monocytogenes. Bacteriocin production of the Lact. plantarum LMG 7945 cultured on MRS broth was increased late logarithmic phase over early stationary phase. This bacteriocin was stable at heat treatment and acidic pH relatively; The activity was retained after heating at 121$^{\circ}C$ for 15min and was active in the pH range of 2~4 but was lost above pH 5.
The purpose of this research was to study the effects of kefir whey (kefir whey, peptides, lactic acid) on skin care properties including skin lightening effect and acne treatment. The final aim was to develop a new cosmetic product and enhance the value of dairy products. The results of skin lightening tests showed that all three kefir whey components (kefir whey, peptides and lactic acid) had inhibitory ability against melanin synthesis. Furthermore, copper chelating analysis demonstrated that both kefir whey and kefir whey peptides could chelate the copper in tyrosinase, which might explain the mechanism of inhibition. The ability for acne treatment indicated that lactic acid level higher than 60 mg/ml could inhibit the growth of Propionibacterium acne, whereas no inhibition was found with other components.
The effects of lactic acid fermented yam yogurt (Yam/YG) on colon mucosal tissue were investigated in a loperamide-induced constipation rat models. Sprague-Dawley rats were fed for 6 weeks with 3 types of diets (normal, supplemented with lactic acid bacteria, and supplemented with Yam/YG), and were then administered loperamide intraperitoneally twice daily for 5 days. Administration of loperamide decreased fecal excretion and the moisture content of feces with increasing of numbers of pellets in the colon. On the histopathologic findings from hematoxylin and eosin (H& E) and alcian blue stainings, supplementation with Yam/YG resulted in the recovery of depleted goblet cells and mucin, and increased the numbers of Ki-67 positive cells, indicating restoration of colonic mucosa through cell proliferation and crypt regeneration against damages observed in crypt epithelial cells of loperamide-induced rats. These results indicate that Yam/YG improves evacuation and mucus production in the gastrointestinal tracts of constipated-induced rats.
Bacterial antibiotic resistance is a real and growing problem for both Gram positive and Gram negative bacterial pathogens in the hospital setting. Among Gram negative bacteria, the ubiquitous bacterium Pseudomonas aeruginosa is a particular concern in immunocompromised and burn patients. The present study evaluated antibacterial activity and efficacy of a Korean herbal medicine against eight multi-drug resistant clinical isolates of P. aeruginosa (0225, 0254, 0347, 0826, 1113, 1378, 1731, and 2492) isolated at Daegu Catholic University Hospital. Methanol extracts of Galla rhois (5 and 10 mg/mL) displayed inhibition diameters for isolate 2492 of 10 and 12 mm, respectively, in a conventional disc diffusion assay. In seven kinds of Korean herbal medicines, increased inhibitory power of Lonicera japonica, Gardenia jasminoides, Galla rhois, and Scultellaria baicalensis was evident with the fermentation of six kinds of lactic acid bacteria. Three lactic acid bacteria (Lactobacillus plantarum subsp. plantarum KCTC 3108, L. casei KCTC 3109, and L. fermentum KCTC 3112) were identified as excellent strains for the production of antibacterial materials. In the six Korean herbal medicine extracts, strong inhibitory activity of fermented Forsythia suspensa, Glycyrrhizae radix, Lycium chinense, Platycodon grum, and Schizandra chinensis with five kinds of lactic acid bacteria was evident for seven multi-drug resistant P. aeruginosa isolates.

Administration of milk and fermented milks produced from indigenous dadih lactic acid bacteria on serum lipids and bile acids, fecal bile acids and microflora was estimated in hypercholesterolemic rats. Anaerobic lactic acid bacteria decreased and coliforms increased in the feces of the control group; however, the number of fecal lactic acid bacteria remained unchanged when rats were administered milk and fermented milks. Only fermented milk made from Lc. lactis subsp. lactis IS-10285 significantly reduced serum total cholesterol, LDL cholesterol and total bile acids. Milk and fermented milks did not influence the HDL cholesterol. Triglyceride and phospholipid levels were significantly lower in the rats fed fermented milk of Lc. lactis subsp. lactis IS-10285 than rats fed milk and fermented milk of Lc. lactis subsp. lactis IS-29862, but not significantly different from the control group. Hypocholesterolemic effect of Lc. lactis subsp. lactis IS-10285 was attributed to its ability to suppress the reabsorption of bile acids into the enterohepatic circulation and to enhance the excretion of bile acids in feces of hypercholesterolemic rats.
유산균이 생성하는 다당류에 관한 연구의 일환으로서 Str. themophilus 와 Lb. bulgaricus를 10% 환원탈지유와 12% 환원전지유에 배양하면서 다당류 생성에 따른 우유 배양액 점도의 경시적 변화 및 그의 유체역학적인 특성에 대하여 조사하였다. 1. Str. themophilus 510의 10% 탈지유 배양액의 의가소성 유체의 유동양식을 가장 강하게 나타냈다. 한편 14% 농도에서 가장 높은 점도의 경시적 변화 및 그의 유체역학적인 특성에 대하여 조사하였다. 1. 12% 전지유배양액의 경우 의가소성유체의 유동양식을 나타내지만 탈지유 배양액에 비해서 현저한 점도의 저하를 나타냈다. 1. Str. themophilus 510 배양액의 최대 점조도 계수와 최소 유동지수는 각각 43, 0.09 이며 Lb. bulgaricus는 35, 0.09이다.
본 연구는 농축대두단백으로 만든 두유에 L-methionine을 여러가지 농도로 첨가하여 6종의 유산균 (Lactobacillus 4종, Leuconostoc 1종, Streptococcus 1종)의 생육과 산생성에 미치는 영향을 조사하고 아울러 DL-methionine, D-methionine 또는 L-cysteine이 L. acidophilus에 미치는 영향을 조사한 것으로서 그 결과를 요약하면 다음과 같다. 두유에 첨가된 L-methionine은 6종의 유산균 가운데 4종 (L. bulgaricus, L. casei, Leuconostoc mesenteroides, S. lactis)의 생육과 산생성에 거의 영향을 미치지 않았으나 L. acidophilus 2종의 산생성을 억제시켰으며, 같은 L. acidophilus 중에서도 KFCC 12731은 AKU 1122보다 더 큰 영향을 받는 것으로 나타났다. 두유에 첨가된 DL-methionine은 L-methionine과 동일하게 L. acidophilus(KFCC 12731)의 산생성을 현저하게 억제시켰으나, D-methionine은 높은 농도에서도 생육과 산생성에 전혀 영향을 미치지 않았다. 한편 L-cysteine에 의하여 L. acidophilus (KFCC 12731)의 산생성이 다소 억제되었으나 그 정도는 L-methionine이 비하여 매우 완만한 것이었다.
