Soft X-ray is useful to identify the quality of fresh ginseng causing the inside cavity or white pan of red ginseng. The portion of low mass density identified by the difference in absorption of soft X-ray showed lower dry matter density and less or no response to iodine test indicating less accumulation or excess consumption of starch. The inside white part of red ginseng absorbed less X-ray than the normal part did. Probability for identification of the inside cavity or white at fresh ginseng was rather high (80-90%) in screen observation than f'3m reading and seemed to be increased further by using the developed screen and with training. The inside white of red ginseng appeared to be due to starch deficiency. Dry matter density appeared to be better than fresh weight density for the quality criterion.
This study was devised to observe the inhibitory effects of 3 kinds of petroleum ether extracts (percolation by petroleum ether) from Korean red ginseng, Chinese red ginseng and American white ginseng on a lipolytic action of Toxohormone-L which has been known as lipolytic and anorexigenic factors. Toxohormone-L was obtained by partial purification of the ascites fluid from mice which had been Inoculated with sarcoma-180. The yields of petroleum ether extract from Korean red ginseng, Chinese red ginseng and American white ginseng were 0.64, 0.47 and 0.58 and respectively, indicating that the yield of Korean red ginseng was the highest. In vitro, at the concentration of 2 mg /ml, the inhibition rate of lipolysis by the petroleum ether extract of Korean red ginseng, Chinese red ginseng and American white ginseng were 55.1, 50.0 and 44.9% respectively, and the total inhibitory activity per gram of ginseng material were 18, 12 and 13 unit respectively, indicating that the Korean red ginseng was the most effective in the inhibition of the lipolysis.
Total saponins and ether extracts of red and white ginseng were obtained and their effects on blood pressure in cat and their histamine liberating activities in rabbits were measured. 1) Ether extract of red ginseng showed a transient hypotensive effect and subsequently showed a remarkable and persistent hypotensive effect, whereas other three fractions, such as saponin fractions of red and white ginseng and ether extract of white ginseng showed only a initial transient hypotensive effects. 2) Histamine levels liberated into blood after administration of each fractions measured by the bioassay with guinea pig ileum. Ether extract of red ginseng immediately increased histamine contents in plasma but the histamine levels decreased to normal level within 10min in spite of decreased blood pressure was sustained. Although white ginseng saponin lowered blood pressure immediately when it is administered, histamine release was observed after 10min. The results suggest that hypotensive effects of ginseng seems to have no correlation with the histamine liberating activity. Ginseng appears to show hypotensive effect via some other mechanisms.
Free amino acids were extracted and analyzed from Korean mountain ginsengs. Chinese mountain ginsengs and Korean white ginsengs by HPLC. The highest total free amino acid content was 12.46 mg/g in Korean white ginseg(P) and the lowest total free amino acid content was 6.86 mg/g in Korean mountain ginseng (Kㅡ6) The content of arginine in a Korean white ginseng(Y) was 8.77 mg/g Arginine was 77.80% of total free amino acids in a Korean mountin ginseng (KM2) The amount of histidine and methionine in Korean mountain ginsengs were higher than any other ginsengs. The highest amount of threonine and lysine were observed in Korean white ginseng and Chinese mountain ginseng respectively, The contents of glycine in Korean mountain ginseng and korean white ginseng were higher than Chinses mountain ginseng. There is no significant difference between two mountain ginsengs and Korean white ginseng.
The pith and xylem parts of fresh root that turned into inside-white during processing for red ginseng was investigated under scanning electron microscope in comparison with the sa31e position of fresh root processed into normal reddening. In the inside-white part starch storage cells remain mostly in vacancy or with small number of starch granules and with large hollow by missing cell membranes between cells. Many starch seed granules appeared on the surface of storage cell wall in the inside-white part. Fresh root sample showed better picture than dried powder.

Sclerotinia white rot disease was observed on 5 and 6-year-old ginseng (Panax ginseng) roots in Hongchun, Cheorwon, and Yanggu, Gangwon Province, Korea from 2006 to 2010. Symptoms included a brownish watery soft rot of the roots, and black sclerotia were often found on the rotten roots. The causal agent of the disease was identified as Sclerotinia nivalis based on cultural characteristics and sequence analyses of the internal transcribed spacer region of rDNA and ${\beta}$-tubulin gene with 100% sequence similarity. Pathogenicity tests were performed on 2-year-old ginseng roots with mycelium plugs without wounds. A watery soft rot of the roots and black sclerotia were observed 10 days after inoculation. These symptoms were identical to those observed on naturally infected roots. The same fungus was re-isolated from the lesions induced by artificial inoculation. This is the first report of sclerotinia white rot caused by S. nivalis on P. ginseng in Korea.

The quality attributes of coffee treated with different concentrations of white ginseng extract were examined. Increased concentration of white ginseng extract was associated with higher color values (Hunter L. a, b scale). The crude saponin contents of untreated roasted coffee beans (control) and those coated with $5^{\circ}$ Brix (WGC-1) and $20^{\circ}$ Brix white ginseng extract (WGC-2) were 8.29%, 8.74%, and 8.93%, respectively. The total ginsenoside contents of WGC-1 and WGC-2 were 0.3 mg/g and 0.6 mg/g, respectively. In the case of major ginsenosides, the contents of ginsenosides $Rg_1,\;Rg_2,\;Rb_1,\;Rb_2,\;Rg_2,\;Rh_1$, and $Rg_3$ increased directly with the concentration of white ginseng extract. Total sugar and acidic polysaccharide contents also increased directly with the concentration of white ginseng extract. The coffee beans coated with ginseng extract scored significantly higher ginseng taste scores than the control (p<0.005) in sensory evaluation. In terms of coffee taste, WGC-2 had significantly lower scores than the commercial coffee bean. In the consumer sensory evaluation, overall preference did not differ significantly among the treatments.
The present study was performed to evaluate the cytotoxicity of white and red ginseng extracts against cancer cells in vitro. We also examined the effects of those ginseng extracts on the cell cycle by using flow cytometry. We divided each white and red ginseng into two parts, main body and rhizome, and tested the cytotoxicity of each fraction against various mouse-originated cancer cells and mouse peritoneal macrophages. The red ginseng was more cytotoxic to the cancer cells in comparison with white ginseng, and the rhizome fractions were more cytotoxic than the mainbody fractions in the both of white and red ginseng. Among the cells tested, RAW264.7 cancer cells were most sensitive to all the ginseng fractions. In cell cycle analysis, all the fractions of white and red ginseng arrested the cell cycle at G$_2$/M phase.

This study was conducted to provide basic information on ginseng saponin of dried ginseng radices. In order to achieve the proposed objective ginsenoside compositions of dried ginseng radices extract with 70% ethyl alcohol were examined by HPLC. The total saponin content, the sum of all ginsenosides, showed that Wild simulated ginseng (WSG), White fine ginseng (WFG), Skin White ginseng (SWG), and White ginseng (WG) stood at 2.510%, 1.643%, 0.587, and 0.429%, respectively. WSG in PPD/PPT ratio was highest at 3.190, WFG (1.934), WG (1.600), SWG (1.386) in order. In the content of ginsenoside Rb1, one of the marker compounds of ginseng, WSG (1.095%) showed the highest content, and WFG (0.527%), SWG (0.246%), WG (0.133%) in this order. The content of ginsenoside Rb1 of WSG (1.095%) was 4.5 times higher than SWG (0.246%). WSG (0.230%) showed the highest content in ginsenoside Rg1, a marker compounds of ginseng, followed by WFG (0.180%), SWG (0.141%) and WG (0.086%). The content of ginsenoside Rg1 of WSG (0.230%) was 1.6 times higher than SWG (0.141%).
The contents of some chemical constituents in several parts of Panax ginseng were investigated. Each part of ginseng was extracted with 70% ethanol and then water. The yield of extract was the highest in fine root, and relatively low in roughly dried ginseng and white ginseng, On the other hand, the contents of total sugars in white ginseng and seedling ginseng were high, but low in leaf and peel. The contents of crude protein in roughly dried ginseng and white ginseng were high, but those in leaf, rhizome (nod) and peel were low. The content of crude fat was higher in leaf than in other parts of ginseng plants and that was the lowest in fine root. Among free sugars, the content of fructose was high in leaf and rhizome, but that was the lowest in fine root. In the case of glucose content, leaf contained the highest amount, but fine root did the lowest. Sucrose contents in white, roughly dried and lateral roots were high, whereas that in leaf was low.
