보리 입국과 두류 첨가가 전통주의 품질과 혈전용해활성에 미치는 영향 (Effects of Barley Koji and Legumes on the Quality and Fibrinolytic Activity of Korean Traditional Rice Wine)

  • 혈전용해 효과를 가진 전통주를 개발하기 위하여 우선 혈전용해 활성이 있다고 확인된 몇 가지 곡류를 이용하여 입국들을 만들어 이들의 알콜 발효특성을 조사하였고 선정된 입국과 각종 두류 분말 및 기호성 음료 재료들을 술덧에 첨가하여 전통주를 제조한 후 품질 특성과 혈전용해 활성 등을 조사하였다. 보리 입국을 이용하여 전통주를 제조하였을 때 에탄올 생성량은 16.8%로 시판 입국으로 제조한 전통주(15.6%)보다 높았고 혈전용해 활성도 20.0 U로 제일 높았다. 또한 보리입국을 10% 첨가한 술덧에 녹두가루를 50% 첨가하고 대추를 3% 첨가하여 3$0^{\circ}C$에서 10일간 발효시켰을 때 혈전용해 활성이 26.0 U로 증가하였고 맛과 향도 우수하였다.

「음식절조(飮食節造)」를 통해 본 조선시대 후기의 음식문화에 대한 고찰 (A Study of the Food Culture in the Late Joseon Dynasty through Eumsikjeoljo (飮食節造))

  • Eumsikjeoljo (integrity with food) originally came from the Andong district, where the Goseong Yi clan inherited a cookbook from their ancestor Lee Jeong-Rong (1798~1871). The cookbook was written in an antiquated style and is estimated to have been written around the year 1865. Details of the era and authorship are seldom available for the extant ancient cookbooks. The authors of these books and the period during which these books were precisely written were studied through the Eumsikjeoljo which is a repository of 46 cooking disciplines. Of these 10 deal with the practice of traditional Korean crispy snack making, 4 with rice cake making, 3 of the yeonbyeong kind, 19 examples of Korean side dish making, 6 recipes of the kimchi variety, 2 examples of paste-based recipes, and 2 instances of instructions on how to make vinegar-based extracts. Also, in Eumsikjeoljo, there are descriptions of 29 different ways to brew rice wine. Of these, Danyang wine among the Leehwa wines and 13 others account for over 44% of the content. Leeyang wine and Sogok wine are represented by 10 different varieties and constitute around 34% of the entries. Samyang wine and Baek-il wine, along with 6 others, constitute 21% of the entries. The secret recipes of the Goseong Yi clan in the Andong district were recorded so that they could be transferred to the descendants of the clan. An inspection of the recipes and wine brewing techniques recorded in Eumsikjeoljo provides a clearer picture of the mid-1800s Andong noble family's traditional food habits and simultaneously sheds light on the late Joseon dynasty's food culture.

전통적 탁주증자법으로 처리한 홍삼의 일부 항산화 및 항암효과 (Antioxidant and Anticancer Activities of Ginseng Treated with Traditional Rice Wine Steam Process Method)

  • 본 연구는 인삼의 가공방법을 개발하고 제품을 다양화하기 위해 우리나라의 전통주인 탁주로 인삼을 증자한 후 홍삼의 항산화성 및 아질산염 소거능, 항암효과를 비교 연구하였다. $A1\~~A9$시료의 $60\%$ 에탄올 추출물에서의 DPPH 라디칼 소거효과는 1,000 ppm에서 인삼의 증자 횟수와 비례하여 증가하였고, 특히 A3에서 $79.5{\pm}3.3\%$로 라디칼 소거율이 뚜렷하게 증가함을 보였다. 아질산염 소거능은 pH 1.2에서 W.G는 $25.9{\pm}4.4\%$, R.G는 $12.9{\pm}1.1\%$, $A1\~A9$$26.2{\pm}0.1\~56.1{\pm}0.5\%$로 증자 횟수가 증가할수록 높은 아질산염 소거능을 나타냈다. 인체유래 간암세포(Hep3B)에서의 항암효과로 실험에서 W.G는 에탄올 추출물 5,000 ppm으로 처리했을 때, $19.6{\pm}4.5\%$로 나타나 증식 억제율이 미미하였으나, R.G는 에탄을 추출물 5,000 ppm으로 처리했을 때 $54.5{\pm}6.1\%$를 나타냈으며, A9에서는 $96.3{\pm}2.4\%$로 높은 항암효과 가 관찰되었다. 이상의 결과로 볼 때 탁주를 이용한 증자홍삼이 일반 홍삼 및 백삼보다 본 실험의 항산화 및 항암 system(in vitro)을 이용하여 실험한 결과 더 높은 항암 및 항산화 효과를 나타내었다.

전통주 이용 실태 및 활성화 방안 (The Use of Korean Traditional Liquors and Plan for Encouraging It)

  • The purpose of this study was to examine the use of different sorts of Korean traditional liquor among male and female adults in Seoul and Gyeonggi province, their awareness of them and their preference in an effort to discuss what problems Korean traditional liquors were faced with and how they could gain popularity among people in general. First, It is investigated of drinking frequency by gender, 51.3 percent of the male adults drunk once or twice a week, and 33.2 percent of the female adults drunk once or twice a month. Thus, the men drunk more often than the women. By age, the adults who were in their 20s and 30s were far different from those who were in their 50s above in drinking frequency. Second, regarding what kind of liquor they enjoyed, the men enjoyed Soju the most, followed by beer and traditional liquors. The women enjoyed beer the most, followed by Soju and wine. The favorite liquor of the men was Soju, followed by beer and traditional liquor, and the women most liked for beer, followed by wine and Soju. The female adults preferred low-proof liquor more than the male adults. Third, concerning their awareness of traditional liquor, Andong-soju was most widely viewed as traditional liquor, which were followed by Munbaeju, Gyeongju-gyodongbeopju, Gyeongju-beopju, Gukhwaju, Ssal- makgeolri, and Geumsan-insamju. Overall, they were rarely aware what traditional liquor was. Fourth, as to purchase experience, the men and the older people had more experience to buy traditional drinks than the women and the younger ones. Fifth, as for anju (dishes for traditional drinks), they believed that panfried food and Kimchi should be served with coarse liquor. Panfried and streamed dishes were considered to be good complements to Takju (rice wine) and Cheongju (clear strained rice wine), and pot stew and soup were looked upon as good complements to distilled liquor. The above-mentioned findings illustrated that in order to step up the development of the traditional liquor industry, perpetual research efforts should be put into adding new tastes to unique traditional liquor drinks. And it's required to commercialize those drinks, and multiple P.R. and marketing strategies should be prepared to promote their sales.

고정화 효모를 이용한 발포성 포도주의 휘발성 성분 (Volatile Compounds of Sparkling Wine Using Immobilized Yeast)

  • In order to investigate the possibility of using immobilizing yeast cells with the eliminating purpose of the ridding process in sparkling wine production by the traditional method, the changes in chemical components during and after bottle fermentation by immobilizing yeast cells with alginate were tested. The most volatile compounds, excepting some compounds, were not appreciable different in sparkling wines which obtained from various samples compared. After bottle fermentation, sparkling wine fermented with undergoing riddling process, and tested. The results showed that the taste and aroma of the sparkling wine produced with using immobilized cells were very similar to that produced with using free cells.

천일염과 감마선이 막걸리의 미생물 생장 억제에 미치는 효과 (Growth-inhibitory Effect of the Sun-dried Salts and Gamma rays on Microorganisms Isolated from Korean Traditional Raw Rice Wine)

  • This study was carried out to investigate the changes in the storage characteristics of the Korean traditional raw rice wine (RRW) treated with Korean sun-dried salts and gamma rays. Nowadays, RRWs have received attention because they are a nutritious food with health-stimulating properties. But the rapid deterioration of the fermented RRW is one of the serious problems for brewing and marketing in the world. Actually, the expiry date of the RRW is around a week and this has been a biggest disadvantage of the RRW. The goal of this study was to make it of high quality and extend the period of circulation of the RRW. A lactic acid bacterium was isolated from the RRW. The 16S rRNA sequences of isolates showed 98% homology with the Lactobacillus fermentum. These results suggested that could be manageable improve the shelf life with addition of the sun-dried salts and irradiation with gamma rays.

Characterization of New Antihypertensive Angiotensin I-Converting Enzyme Inhibitory Peptides from Korean Traditional Rice Wine

  • This study describes the characterization of a new angiotensin I-converting enzyme (ACE) inhibitory peptide from a Korean traditional rice wine. After purification of the ACE inhibitor peptides with ultrafiltration, Sephadex G-25 column chromatography, and successively $C_{18}$ and SCX solid-phase extraction, reverse-phase HPLC, and size exculsion chromatography, two types of the purified ACE inhibitors with $IC_{50}$ values of 0.34 mg/ml and 1.23 mg/ml were finally obtained. The two purified ACE inhibitors (F-1 and F-2) were found to have two kinds of novel oligopeptides, showing very little similarity to other ACE inhibitory peptide sequences. The amino acid sequences of the two purified oligopeptides were found to be Gln-Phe-Tyr-Ala-Val (F-1) and Ala-Gly-Pro-Val-Leu-Leu (F-2), and their molecular masses were estimated to be 468.7 Da (F-1) and 357.7 Da (F-2), respectively. They all showed a clear antihypertensive effect on spontaneously hypertensive rats at a dosage of 500 mg/kg.

조선시대(朝鮮時代) 술에 관한 분석적(分析的) 고찰(考察) -조선중기(朝鮮中期) 1600 년대(年代)를 중심(中心)으로- (A Study on Wine of Yi Dynasty in 1600)

  • As people know how to brew a wine from fruits and cereals, they continued to develope various wines good to their taste. Korean wines are also ones made from cereals and they have long been eager to improve the delicate taste. They used to drink Takju, raw rice wine, made from nonglutinous rice and Nuruk, a kind of yeast starter. During Koryo Dynasty, Soju a liquor was imported from Won(the Chinese dynasty). Nowadays this traditional folk wine, which had been developed variously and drunk all over the country, is decreasing year after year. The purpose of this study was to review on the wines ; its kinds, raw materials, brewing method, manufacturing utensils, measuring units and devices and the terms for wine making based on 20 documents published in 1600, in the middle of Yi dynesty. The results of review were as follows. 1. There were 121 kinds of wines at that time in Korea. 2. Among the raw materials for wines, major materials were glutinous rice, nonglutinous rice, wheat flour, wheat, mung bean, and black soybean. And minor materials were pepper corn, Lycium chinenisis, cinnamon, pine needles, pine nuts, jujube, mugwort leaves, lotus leaves, pine corn, pine bud, chrysanthemum, pine flowers, honey, Acanthopanox seoultenses, bamboo-root, marrowbone of blak cow, sweet flag, Ciprus noblis, Saurea lappa, honey suckle, Tricho santhes, azalea, the leaves of the paper mulberry, and bark of chungum tree. 3. There were several kinds of wines such as a wine without using Nuruk, a wine made from glutinous rice, nonglutinous rice, or glutinous and nonglutinous rice with flour. 4. There were several brewing methods for wines such as a wine boiled with ring rice cake, a wine brewed with loaves of rice cake, a wine brewed with hard boiled rice, a wine brewed with rice gruel, and a wine brewed with powdered rice gruel. 5. There were 23 kinds of utensils including measuring devices for weight and volume.

제조법을 달리하여 제조한 오디주의 품질 특성 (The Quality Characteristics of Mulberry Fruit Wine by Two Different Manufacturing Methods)

  • Oddi is a mulberry fruit that has anti-inflammatory and antioxidative effects. This study was carried out to investigate the quality characteristics of mulberry fruit wines manufactured by two different methods. Where they were processed according to the traditional Korean fruit wine methodology(A) or a modified(B). Sensory qualities, physiochemical characteristics, and biochemical activities of the Oddi wines were analyzed. From the results of the sensory evaluation, manufacturing method A showed higher acceptability. However, the two different methods was not significantly different overall. The method A wine had higher brightness(L)(77.65) redness(a), and yellowness(b). As for the antioxidant activities and ACE(angiotensin-converting enzyme) inhibitory abilities of the wines manufacturing method A had greater values.

한국의 민속주에 관한 고찰(I) -서울.경기도.강원도.충청도 지방을 중심으로- (Study on Traditional Folk Wine of Korea -In the Central Region of Korea-Seoul, Kyonnggi-do, Chungchung-do-)

  • This study delves into the general characteristics of spirits brewed in the Central Region of Korea-Seoul, Kyonnggi-do, Chungchung-do-paying particular attention to their varieties and fermenting methods and also comparing similarities and differences of their features. It is found first of all that there are a wide range of variety in the kinds of liquors. Among the 21 spirits investigated, not a single one resembles any one of the remaining in terms of the raw material, and the brewing method and process. Secondly, all of them use locally produced grains and can be classifiable as belonging to the common category of yakju (clean spirit) with fragrant elements added for the purpose of enhancing health or decreasing any harmful effects after drink. Thirdly, these traditional folk wines are characterized by the addition of secondarily fermented spirits. The more secondarily fermented spirit a wine has, the more fragrant and palatable it becomes and also the less harmful. Fourthly, all the spirits of this region are fermented by using yeast kodupap (steamed rice). The brewing temperature is usually around $15{\sim}20^{\circ}C$ for $5{\sim}8$ days or $3{\sim}4$ days for the majority of the cases. Fifthly, purifying is done with the yongsoo (strainer), the sieve, traditional Korean paper, etc. As such, we can say that all the brewers endeavor to maintain Korean traditional methods of wine making.
